This sounds like an excellent chili powder, on my to make and taste list. This makes about ⅓ cup of chili powder.

Ingredients
  

  • 2 tablespoons sweet paprika
  • ½ teaspoon smoked paprika
  • teaspoons garlic powder
  • teaspoons onion powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano

Instructions
 

  • Add all ingredients to a bowl, mix well.
  • Store in a sealed container and use before 1 year.

  • 1 tablespoon dried thyme
  • 1 tablespoon dried basil
  • 1 tablespoon dried rosemary, crushed in spice grinder or finely chopped
  • 1 tablespoon dried tarragon
  • 1 tablespoon dried summer savory
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried oregano
  • 1 bay leaf, crushed

Instructions
 

  • Add all ingredients to a bowl and mix together. Store in an airtight container and use as called for in recipes.

This recipe is from a friend on social media and this spice mix sounds very good and would be great for tacos or enchiladas. This is on my make, taste list.

Ingredients
  

  • 2 tablespoons ancho chili powder, or chili powder of your choice
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes

Instructions
 

  • Whisk together all ingredients, store in an airtight container for up to 6 months.
  • To use, simply mix 2-3 tablespoons into browned, drained, ground beef and use in tacos or enchiladas.
Spaghetti Sauce Mix

I got this from the internet doing a search, it does sound very good, and easy to put together, then you just need a few items to make spaghetti sauce. On my to make and taste list.

Ingredients
  

For the Mix

  • ¼ cup cornstarch
  • ¼ cup dried minced onion, OR 2 tablespoons onion powder
  • 3 tablespoons dried celery flakes, OR 1 tablespoon celery seed
  • ¼ cup dried parsley flakes
  • 2 tablespoons Italian seasoning, Shortcut
  • 4 teaspoons salt
  • 4 teaspoons sugar
  • 2 teaspoons dried minced garlic, OR 1 teaspoon garlic powder

To make the Sauce

  • 500 grams ground beef, (1 lb)
  • 2 cups water
  • 1 can tomato paste, (6 oz / 170 g)
  • ¼ cup spaghetti mix

Instructions
 

To make the Mix

  • Mix together all the Mix ingredients and store in an airtight container until use. This makes 4 batches, ¼ cup each.

To make the Sauce

  • Cook the ground beef in a large non stick pan, breaking it up with your spatula, when browned and no pink is visible, drain excess fat.
  • Stir in water, tomato paste, and the ¼ cup of mix. Bring to a boil and stir for 2 minutes.
  • Reduce heat to a simmer, cover, and cook 20 minutes, stirring occasionally.
  • Serve over your favorite pasta, enjoy.

Ingredients
  

  • 1 tablespoon sea salt
  • 1 tablespoon paprika
  • ½ teaspoon ground sumac
  • ½ teaspoon onion powder
  • ½ teaspoon granulated garlic
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ½ teaspoon sugar

Instructions
 

  • Mix all ingredients together.
  • Rub chicken with spice mix.
  • Cook chicken per the recipe you are using.
  • Enjoy.
Shake & Bake Mix

This comes from a good friend, and chef. Feel free to use store bought fine breadcrumbs or make your own. The main rule is do not use panko which does not absorb oil like regular breadcrumbs do. Link to the Shortcut is listed in the Recipe Notes section.

Ingredients
  

  • ½ cup cornmeal
  • 1 tablespoon black pepper
  • 1 tablespoon parsley flakes, crushed
  • ½ teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried thyme, crushed
  • 1 teaspoon garlic powder
  • 3 cups fine breadcrumbs, Shortcut

Instructions
 

  • Add all ingredients except the breadcrumbs to a mixing bowl.
  • Mix together.
  • Add the breadcrumbs and mix together. Now you are done if you are just making this ahead of time. Place in an airtight container, label, and use as needed.
  • To use, simply add some mix to a zip lock bag, preheat your oven to 200° C (400° F), brush olive oil on chicken or pork chops, add a few chicken pieces or pork chops to the bag, seal and shake, for chicken place on a baking sheet lined with foil or parchment; for chops, place on a rack and place rack on a foil or parchment lined sheet. Bake 20-30 minutes depending on thickness or until cooked through.

  • ¼ teaspoon cayenne pepper, none for mild, as stated for hot
  • ¼ teaspoon garlic powder

  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • About the cayenne pepper, for a mild mix, omit the cayenne, for a hot mix use the amount as stated.
  • Add everything to a small bowl and mix, use as 1 packet of store bought chili mix.

  • 1 tablespoon ground nutmeg

Homemade Lemon Pepper

Homemade Lemon Pepper

Your first question is probably, why? Well, for me this sounds good because the bottled lemon pepper is not where I live, and I use it a lot (a good friend in the states has sent me two bottles). This is worth a try at least! Now for me, lemons, I have never seen the regulation sized lemons like the states, but I have seen lemons grown here in Thailand, in the village where I live, and they were huge! Think 1 kilo (2 lb lemons!). As a variant, I will try this with lime, Lime Pepper! If you add salt, then you have Lemon or Lime Pepper Seasoning.

Ingredients
  

  • 5 lemons
  • cup ground pepper, see Step 1
  • ¼ cup kosher salt, only if making the if making the seasoning version

Instructions
 

  • For the pepper, get yourself several jars with the grinder attachment of black pepper or pepper medley, which is black, pink, green, and white pepper. Grind that into a measuring cup to get ⅓ cup. Place that in a mixing bowl.
  • Zest the lemons, add to the mixing bowl with the pepper and mix together.
  • Heat your oven to the lowest setting, line a baking sheet with parchment paper.
  • Spread the pepper and zest mixture out on the parchment paper evenly. When the oven is warmed, place the baking sheet in the oven. Your goal is to dry out the zest.
  • Bake until the zest is completely dry, toss the pepper and zest several times and smooth out to an even layer and continue until the zest is completely dry, about 1 hour.
  • After the zest is completely dry, run through a spice grinder, in batches if needed until the mixture resembles, fine sand, or you know, lemon pepper.
  • For the salt, this is optional. If you are avoiding salt, simply do not add it and you will have Lemon Pepper. If you add it, start with less than stated and taste and adjust to your liking. Simply mix the salt into the Lemon Pepper, and you will then have what I will call Lemon Pepper Seasoning.

Notes

Variant: 1. Use lime zest in place of lemon zest (I will try this).
Quatre Épices (Four Spices)

This is a common French blend of 4 basic spices and used in soups, grilled chicken, salt pork. Since I am not teaching French here, I will stick with the name, Four Spices.

  • 2 tablespoons ground white pepper
  • 1 tablespoon ground ginger
  • 1 tablespoon ground nutmeg

  • In a small bowl, stir together all the ingredients. Pour into an airtight container and store in a cool dark place.
