Creamy Seafood Pasta

This sounds tasty but there is some prep work involved to get all the seafood ready. This can be tailored to suit your taste.

Ingredients
  

For the Seafood

  • 1 cup shrimp, peeled, deveined, tails removed
  • 1 cup squid, cut into rings
  • 1 cup mussel meat, grass removed, fresh preferred, frozen will work
  • 1 cup crab meat, or imitation crab (crab sticks), chopped
  • butter, or olive oil, as needed
  • salt and pepper, as desired

For the Pasta

  • 500 grams dry pasta, bite size or spaghetti, (1 lb)
  • 3 cloves garlic, smashed and minced
  • 1 handful fresh mushrooms, sliced
  • 1 stalk celery, chopped
  • ½ onion, diced
  • 1 leek, sliced
  • ¾ cup whipping cream, and as needed
  • ¼ teaspoon dried oregano

To Prepare the Seafood

  • Shrimp can be fresh, frozen raw, or frozen cooked. For fresh shrimp, peel, devein, and remove the tails, heat a non stick pan with a tablespoon or two of butter or olive oil, when hot add the shrimp, stir them around and turn them, cook until pink, remove from the pan. For frozen raw, thaw them and saute them as you would fresh. For frozen cooked, thaw them and check for any shell still attached. Now the shrimp is ready.
  • Squid will normally be fresh, pull off the head end, remove the skin, the clear bone (called a pen), and insides. you can turn them inside out to facilitate cleaning the inside. Slice the body into ½ inch rings. Cut the tentacles off past the beak, discard the head. Heat a non stick pan with a tablespoon or two of butter or olive oil, when hot add the shrimp, stir them around and turn them, cook for about 2-3 minutes, season with salt and pepper as desired. Remove from the pan. Now the squid is cooked.
  • Mussels can be frozen cooked, or fresh raw. For frozen, simply thaw, check for and remove any beards. For fresh, clean the shells, remove visible beards outside of the shell, and discard any open or cracked shells, steam the mussels until the shells open, about 6-8 minutes, allow to cool to handle, discard any shells that did not open, remove the mussel meat from each shell, and again, check for and remove any beards. Now the mussels are read.
  • Crab can be canned, frozen, or imitation. For canned crab meat, just drain and check for any shell fragments. For frozen, thaw and check for any shell fragments. For imitation, simply unwrap the crab sticks and slice at an angle, about ¼ inch slices. Now the crab is ready.

To Prepare the Pasta

  • Heat a pot of salted water to boiling, then add the pasta and cook until just tender. Drain.
  • While the water is heating, heat a large non stick pan on medium heat with 1-2 tablespoons of butter or olive oil, when hot, add the garlic, mushrooms, celery, onion, and leek.
  • Saute until the onion and leak are tender, season with salt and pepper as desired.
  • Lower the heat to low and pour in the whipping cream, feel free to add another tablespoon or two, and mix with well.
  • The pasta should be done now, drain it well, then add the pasta to the pan and mix together.
  • Add the seafood to the pan and toss with the pasta, simmer for just a minute or two to heat the seafood through.
  • Serve and enjoy.

Notes

I will price this after I source all the seafood. For now, I will say High cost per serving.
Variants: 1. Replace or reduce an item of seafood and add some poached whitefish or salmon. 2. Replace a seafood item with an equal amount of a favored item. 3. Reduce a seafood item and add cooked oyster meat.
Squid Macaroni

Sounds tasty! This is a cheater version of the Greek dish called Macarontha, which is squid in a tomato sauce served over macaroni pasta and topped with sheep's cheese. I'll pass on that type of cheese however. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 250 grams dry macaroni, (8 oz)
  • 500 grams squid, cleaned inside and out, skin removed, (1 lb)
  • 4 tablespoons red wine vinegar
  • 6 tablespoons olive oil
  • 1 large onion, chopped
  • cups tomato puree, Shortcut
  • ¼ cup dry white wine
  • juice from ½ lemon
  • 1 stick cinnamon, broken in half, OR use ½ teaspoon ground cinnamon
  • 2 bay leaves
  • ½ teaspoon dried oregano
  • salt and pepper, to taste
  • Parmesan cheese, grated, for garnish

Instructions
 

  • Cook macaroni in a pot of boiling water until tender, drain and set aside.
  • In a small saucepan, boil the squid in cups of water mixed with the red wine vinegar for 4-5 minutes. Drain, cut into rings, reserve the tentacles and set aside.
  • Heat the olive oil in a large heavy non stick skillet. Cook the onion and garlic until onion is tender but not brown. Stir in the squid and cook for 2 more minutes. Pour in the tomato puree, white wine, and lemon juice. Season with cinnamon stick, bay leaves, oregano, salt and pepper. Bring to a boil then reduce the heat and simmer partially covered for 15-20 minutes, stirring occasionally.
  • Remove from heat, remove the bay leaves and cinnamon stick pieces then mix in the macaroni. Serve with Parmesan cheese for topping.

Notes

Squid will run about 100 Baht/500 grams, for 4 servings this is about 74 cents per serving.

Ingredients
  

  • 6 squid, about 7-8 inches long is perfect, if you use smaller squid, you need more
  • 150 grams fresh shrimp, peeled, deveined, tails removed, cooked, (5-6 oz)
  • 1 Pangasius fillet, cooked and chopped
  • 6-8 spring onions, chopped, green and white parts, divided
  • 6 cloves garlic, smashed and minced, this is for the filling
  • 1 tablespoon lemon juice
  • ¾ cup butter, (¾ block)
  • 375 grams Cream cheese, cubed, room temp, (1½ blocks / 12 oz)
  • 2 cloves garlic, smashed and minced, this is for the sauce
  • 3 cups milk
  • cups Parmesan cheese, grated
  • black pepper, to taste
  • 500 grams pasta, Fettuccine would be perfect, or Spagheti, (1 lb)

Instructions
 

  • Clean your squid, there is a Tip on this site for how to do this if you are not sure. Remove the skin, pull out the clear bone, and turn inside out to thoroughly clean the inside, then turn right side out, place squid on a plate and put in the fridge. Cut the tentacles off in front of the beak and cook when you cook the shrimp, discard the head.
  • Preheat your oven to 180° C (350° F), get out a 9x13 inch baking pan.
  • In a large bowl, stir together the half of the spring onion, 6 cloves of the garlic, shrimp, tentacles, fish and lemon juice. Spoon the mixture into the squid, there may be left over filling, no problem, that goes into the sauce. As each squid is filled, place in a single layer in the bottom of baking dish. Set aside.
  • Melt the butter in a saucepan over medium heat. Stir in Cream cheese and 2 cloves of garlic. Cook and stir until cream cheese has melted. Gradually whisk in the milk. Cook until heated through and then remove from the heat and stir in the Parmesan cheese, remaining spring onion, black pepper, AND any remaining filling. Pour over the squid in the baking dish. If you like cheese, sprinkle more Parmesan cheese on the top.
  • Bake uncovered until the cheese is browned and sauce is bubbly. While the squid is baking, cook your pasta and drain (a splash of olive oil tossed with the pasta will prevent it from sticking. Serve the stuffed squid and sauce over a pasta. Add a side of steamed yard beans or asparagus for a complete meal.

Notes

In May 2016 I bought 6 medium squid (about 7-8 inches long) for 60 Baht. The shrimp will run about 60 Baht. The Cream cheese will run about 120 Baht/block, you will need 1½ for 180 Baht, and the Parmesan cheese will run about 270 for the amount stated. This comes out to about $2.80 per serving for 6 servings. Use local suppliers for the shrimp, buy the Parmesan cheese in larger quantity to reduce the cost. Not a cheap meal. I have to try this one out as I think the sauce and filling is a bit much.

Yep, everyone calls squid "calamari" however I call it squid. This recipe is easy, and well worth it. I made this on 10 May 2016, and this is really good!   • 10-15 raw medium shrimp, peeled, deveined, tails removed
  • 2 plum tomatoes, finely diced
  • ½ teaspoon lemon zest
  • ¼ teaspoon fresh ginger, grated or finely minced
  • 1 teaspoon fresh parsley, chopped, OR use Thai celery
  • ¼ teaspoon ground black pepper
  • 2 cups tomato sauce, Shortcut
  • hot cooked pasta, of your choice
  • Parmesan cheese, couple of teaspoons to sprinkle onthe top, optional

Instructions
 

  • Clean your squid, I will write a 101 topic on this if you are not sure. Remove the skin, pull out the clear bone, and turn inside out to thoroughly clean the inside, then turn right side out, place the squid on a plate and put in the fridge. Cut the tentacles off in front of the beak, discard the head. Photo shows the squid cleaned, I used 4 squid.
  • Heat your oven to 190° C (375° F), get out a 8x11 or 9x13 baking dish depending on number of squid you are using.
  • Dice the the tentacles and the shrimp (remember to remove the tails), place this in the bowl with the diced tomatoes, zest, ginger, parsley, and pepper. Mix well.
  • Heat the olive oil in a medium pan over medium heat, add the onions and salt and cook until the onions turn translucent, about 1 to 2 minutes, do not brown them, add the garlic and continue to cook for another minute. Remove from heat and put this into a medium mixing bowl and set aside to cool.
  • Once the onions and garlic are cool, add to the squid, shrimp mixture and mix well. Photo shows the stuffing mixed.
  • Using either a long ice tea spoon or a bag with a corner cut off, fill each squid with the mixture, do not over stuff them.
  • Place each filled squid in the baking dish.
  • Once all are filled, cover with tomato sauce of your choice (can be home made sauce or canned spaghetti sauce). Sprinkle with Parmesan cheese if desired.
  • Cover with foil and bake for 30 minutes. Photo shows foil removed after baking.
  • Serve over pasta of your choice.

Notes

I bought 6 squid (about 7-8 inches long) for 60 Baht. A can of tomato sauce will be about 55 Baht, a can of paste will cost 17 Baht and you can make the sauce. Everything else is minimal.
Using the cost for squid and canned sauce, the cost for 3 servings is $1.12 per meal. If using home made sauce, the cost for 3 servings is 75 cents per meal. Add a side dish and a salad, you can stretch this to 6 servings, which reduces the cost even more.
Now for the shrimp, do yourself a favor, buy a kilo for use in another recipe, take out 10-15 shrimp for this, cost is minimal, freeze the rest for another dish, problem solved.
Variants: For fillings, ground pork or pork sausage (home made will reduce cost), or ground chicken or chicken sausage (home made will reduce cost), chopped fresh fish, etc.
