Ingredients
  

  • 2 tins sardines in olive oil, undrained, (about 4 oz / 113 g per tin), Shortcut
  • 56 grams cream cheese, softened, (2 oz / ¼ of 8 oz / 226 g block)
  • 2 tablespoons mayo
  • 1 teaspoon lemon juice
  • pinch dried tarragon, crushed
  • pinch lemon pepper
  • chives, chopped, for garnish, optional
  • assorted crackers, for serving, or toast points

Instructions
 

  • Add all ingredients to a small mixing bowl. I used two tins of Great Value brand sardines in olive oil, feel free to use your favorite brand of sardines in olive oil or even water.
  • Mash and mix everything together.
  • Spoon mixture into a smaller bowl for serving, optionally garnish with some chopped chives. Cover and place in the fridge for 1-2 hours.
  • Serve with assorted crackers of your choice or toast points. Enjoy.
Tempura Sardines

Ingredients
  

  • 1 tin sardines in olive oil, (120 g / 4¼ oz, Ayam or any brand), Shortcut
  • 2 spring onions, sliced, white and green parts
  • 2 cloves garlic, minced
  • 1 red chili, seeded and finely sliced, optional
  • ½ teaspoon white pepper powder
  • salt and sugar, to taste
  • 100 grams tempura flour, (4 oz)
  • 200 ml ice water, (bit over ¾ cup)
  • cooking oil, for frying

Instructions
 

  • Mix the batter by adding the tempura flour to a mixing bowl and adding ½ cup of ice water, stir to make a thick batter, add water a tablespoon at a time to make the batter with a dripping consistency.
  • Open the tin of sardines and drain the olive oil into a small bowl, remove sardines and split each in half.
  • Heat some oil in a pan, about ¾ inch for a minimal deep fry. When the oil is hot but not smoking, dip the sardines in the batter and let the excess drip off, then deep fry until golden brown and crispy, work in batches. Remove to paper towels to drain.
  • In another pan, heat the olive oil from the sardines, when hot, add the garlic and chili if using, until fragrant. Add the spring onion and the tempura sardines. Toss with salt as desired, the white pepper, and sugar as desired.
  • Serve.

Ingredients
  

  • 1 tin sardines in olive oil, (120 g / 4¼ oz, Ayam or other brand), Shortcut
  • 2 packages wonton skins
  • 50 grams cheese, your choice, cut into small cubes, (1¾ oz)
  • 2 spring onions, finely sliced, white and green parts
  • 50 grams carrot, finely diced (1¾ oz)
  • salt and pepper, as desired, to taste
  • 1 egg, lightly beaten
  • cooking oil, for frying

Instructions
 

  • In a mixing bowl, add the sardines and the oil from the tin. Mash with fork and mix in the oil.
  • Add the carrot and spring onion and mix in, season with salt and pepper to taste if desired. (I use a mandolin with a julienne blade and chop after, resulting in a fine dice.)
  • Beat the egg in a small bowl and set that near you. Place a wonton skin on your work surface with a corner pointed towards you.
  • Place a teaspoon of the sardine mixture in the center of the skin, place a cube of cheese on top. Brush the 2 edges of the skin that are farthest away from you with some beaten egg.
  • Take the corner closest to you and fold away from you to the opposite corner and pat down the edge to seal the wonton. Set the wonton on a plate, there, you just made a wonton.
  • Repeat using the rest of the sardine mixture and wonton skins.
  • Heat oil in a pan for shallow frying, about ½ inch oil. When hot but not smoking, add some wontons and fry until golden brown on the bottom, then turn them over and fry the other side. Remove to paper towels to drain.
  • Serve and enjoy with dipping sauces of your choice.

Ingredients
  

  • 1 tin sardines in olive oil, (120 g / 4¼ oz, Ayam or any brand)
  • ½ inch fresh ginger, grated
  • 1 spring onion, sliced, green and white
  • 2 tablespoons cooking oil
  • 3 tablespoons water
  • 2 tablespoons light soy sauce
  • sugar, to taste

Instructions
 

  • Heat your steamer. I will use my tiny rice cooker with a steamer tray. You can also use a pot and a steamer basket.
  • Drain the oil from the tin into a small bowl. Remove the sardines from the tin, split in half and arrange on a heat proof dish.
  • Mix the ginger and spring onion (keep a pinch of the spring onion aside for garnish) with the oil from the tin to make a paste.
  • Heat the oil in a small pan and cook the paste until fragrant.
  • Pour the oil mixture over the sardines and place the dish in your steamer. Cover and steam for 5 minutes.
  • While the sardines are steaming, using the same pan the oil was heated in, add the soy sauce and water and heat that up, add sugar to taste.
  • When the sardines have steamed for 5 minutes, carefully remove the dish, pour the soy sauce mixture over the sardines, serve and enjoy.

Notes

One tin of sardines in olive oil at Tesco is 59 Baht. For 2 servings, this is about 46 cents per serving.

Sardine Salad Sandwich

  • 1 tin sardines in olive oil, (120 g / 4¼ oz, Ayam or any brand), Shortcut

  • 1 tablespoon pickles, chopped, Shortcut
  • 4 slices bread
  • 1 tomato, sliced
  • lettuce leaves
  • 1-2 hard boiled egg, sliced, Shortcut
  • salt and pepper, to taste

Instructions
 

  • Drain the sardines and place in a bowl, add the mayo and chopped pickle. Mix with a fork, mashing up the sardines. If using homemade sardines, use about 3 pieces.
  • Lay out the 4 slices of bread, spread mayo on each slice. On 2 slices, add a layer of sliced tomato, divide sardine mixture on top of the tomato, top that with lettuce leaves, then add a layer of sliced egg, season with salt and pepper as desired. Top with a slice of bread, mayo side down. Cut in half and enjoy.

Notes

One tin of sardines in olive oil at Tesco is 59 Baht. For two sandwiches, 1 per serving, this is about 92 cents per serving.

  • 500 grams dry spaghetti, (1 lb)
  • ¼ cup olive oil
  • 6 cloves garlic, minced
  • 2 tins sardines in olive oil, (120 g / 4¼ oz each, Ayam or any brand), Shortcut
  • 1 cup seasoned breadcrumbs, Shortcut
  • cup Parmesan cheese, grated + plus more for garnish
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon black pepper

Instructions
 

  • Bring a pot of salted water to a boil, then add the spaghetti and cook until just tender, drain, rinse under cold water, toss with ¼ cup of olive oil, cover and set aside.
  • Open the tins of sardines and drain the oil into a non stick pan, heat the pan over medium heat then add the garlic and saute until just golden brown, then split the sardines in half and add them to the pan, breaking them up a bit with the spatula, and saute another minute or so more,
  • Stir in the breadcrumbs and cheese, when mixed in, add the parsley, black pepper, remove from heat and add the pasta and mix, serve.

Notes

For sardines in olive oil, I have only seen one brand, Ayam, for 59 Baht per 120 gram tin, these are very good. If you make your own sardines in olive oil, you can reduce this price just a bit. Using 2 tins of sardines and 4 servings, this is about 87 cents per serving.

Sardine & Sliced Egg Sandwich

  • 4 slices bread, toasted, wheat would be good
  • mayo, as desired
  • 1 tin sardines in olive oil, (120 g / 4¼ oz, Ayam or any brand), Shortcut
  • 2 hard boiled eggs, sliced, Shortcut
  • lettuce leaves, as needed
  • red onion, thinly sliced, as needed, think mandolin
  • ½ teaspoon lemon juice, or lime juice

Instructions
 

  • Spread some mayo on the toast and add lettuce leaves to two slices of toast.
  • Divide the sardines between the two sandwiches and split them, the tin I used had 5 sardines. The bones are are tender, don't worry about those, it's calcium.
  • Sprinkle some lemon juice on the sardines, top with some onion slices (which I skipped as had no onion) and top that with the egg slices.
  • Top each sandwich with the other slices of toast, cut each sandwich in half. Enjoy.

Notes

Low cost if using homemade sardines. I make sardines using small mackerel which is sold per fish anywhere from 10 to 25 Baht each, so about 29 to 74 cents per sandwich. (I cut each fish into 3 pieces when making sardines.)
If using tinned sardines, figure 1 tin at 59 Baht for 2 sandwiches, this is about 87 cents per sandwich.

Variant: 1. In place of mayo, just drizzle olive oil on each slice of toast.

  • tomato, sliced as needed
  • red onion, sliced, seperated into rings, as needed
  • 2 slices sandwich bread, toasted
  • mayo, as needed
  • white pepper, to taste

Instructions
 

  • Toast the bread, spread mayo on one side of each slice. Layer tomato slices on one slice, top with some red onion slice rings.
  • Top with sardines that are split in half lengthwise. Season with some white pepper, top with the other slice of bread.
  • Enjoy. (And that is a cracking great photo as well, thank you Samantha!)

Notes

If using tinned sardines in olive oil, figure about 59 Baht/tin/2 sandwiches. This would cost about 87 Baht per sandwich, reasonable and healthy.
Variants: As with any sandwich, use your imagination. Open faced or closed, substitute olive oil for mayo, substitute mustard for mayo, and spicy mustard even better! Add veggies you like, sprinkle with lemon juice.

  • 1 egg, lightly beaten
  • 1 cup breadcrumbs, Shortcut

  • chili powder, for garnish

For the Garlic Mayo

  • ½ cup mayo
  • 3 cloves garlic, minced
  • 1-2 tablespoons oil from the sardine can
  • salt, to taste

Instructions
 

  • Drain the tin of sardines and reserve the olive oil, this is the 120 gram tin, then split each sardine in half lengthwise. Or use 3-4 pieces of homemade sardines in olive oil.
  • For garlic mayo, mix all the garlic mayo ingredients. Season to taste with salt and leave it in the fridge to let flavors to build.
  • Lightly coat sardines in flour, followed by egg, then breadcrumbs. Heat oil in pan and pan fry till golden brown and crispy. (I did not have breadcrumbs, totally forgot that so I used tempura flour after the egg wash, that works well too.)
  • Serve hot with garlic mayonnaise and a sprinkle of chili powder.

  • 1 tin sardines in olive oil, (120 g / 4¼ oz), see Step 2, Shortcut
  • 1 small shallot, sliced
  • fresh parsley, chopped
  • 2 cloves garlic, minced
  • black pepper, to taste
  • 2 eggs, chicken or duck

Instructions
 

  • Preheat your oven to 220°° C (425° F). When the oven is hot, heat a small baking dish for 5 minutes in the oven. I used a Pyrex serving dish, the 1¼ cup size dish.
  • For the sardines, use a tin of sardines in olive oil, Ayam brand is the only one I found with oil and is highly recommended. Or use 2-3 pieces of sardines from a homemade batch of sardines. Drain the tin and place the sardines in another small bowl and use a spoon and just break the sardines into chunks. Add the shallot, garlic, and parsley and mix together, season with black pepper as desired.
  • Remove the baking dish from the oven, add the sardine mixture to the heated dish and return to the oven for 5-6 minutes.
  • Remove the dish from the oven, crack two eggs into a bowl, and slide them into the heated dish, season with salt and pepper to your liking, return the dish to the oven for another 7 minutes or until the whites are set. Remove the dish and place on the counter and cover with a lid for 5 minutes (the eggs will continue to cook, and it needs to cool, can actually let it sit for 10 minutes and you will have hot sardines and eggs).
  • Serve with toast for a good breakfast or with a salad for a dinner.

Notes

If using tinned sardines, 1 tin per serving at 59 Baht, this is about $1.74 per serving. If making sardines at home, the cost will only be slightly less due to the cost of the olive oil needed. Not a inexpensive meal but certainly healthy.
