Ingredients
  

  • 8 hard boiled eggs, chicken or duck, peeled, Shortcut
  • ½ cup mayo
  • ½ cup Ranch dressing, Shortcut
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 8 cooked shrimp, peeled, deveined, tails removed
  • 1 teaspoon Old Bay seasoning, Shortcut

Instructions
 

  • Slice eggs in half lengthwise, put yolks in a mixing bowl and the whites on a plate or egg serving tray.
  • Mash the yolks with a fork, then add all ingredients except the shrimp and Old Bay seasoning. Mix together.
  • Fill whites with yolk mixture using two spoons or pipe in.
  • Place the shrimp in a bowl, sprinkle with a little Old Bay seasoning and mix them to coat the shrimp.
  • Place 1 shrimp on 1 egg, sprinkle with remaining OId Bay seasoning. Cover and place in the fridge until serving.
  • Serve and enjoy as a an appetizer or side dish, enjoy.

I like hard boiled eggs and I love deviled eggs, and this is the less fancy version but just as tasty. Although this is low cost, there is shortcuts for even greater savings. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 6 hard boiled eggs, chicken, peeled, Shortcut
  • 2 teaspoons salsa, heaping, Shortcut
  • sour cream, as needed, Shortcut
  • 2 teaspoons taco seasoning mix, rounded, and as needed, Shortcut

Instructions
 

  • Cut the cooled and peeled eggs in half, remove the yolks to a small mixing bowl and place the whites on a serving tray or plate.
  • Mash the yolks with a fork then add the salsa, 1 heaping tablespoons of sour cream, and the taco seasoning, mix together, mixture will be a little dry. Mix in a teaspoon or so of sour cream until mixture consistency you desire.
  • Spoon or pipe the mixture into the egg whites.
  • Sprinkle each egg with a little taco seasoning. Cover the eggs and chill them in the fridge until you serve. Enjoy.

Notes

This version has been tested with chicken eggs only, but duck eggs should work equally as well.

Variant: 1. Use hard boiled quail eggs for tiny versions of this recipe.
Baked French Eggs

These sound easy and tasty, and only 4 ingredients. On my to make and taste list.

Ingredients
  

  • 4 eggs
  • heavy cream, as needed, or melted butter
  • Parmesan cheese, grated, as needed
  • salt and pepper, as desired

Instructions
 

  • Preheat your oven to 215° C (425° F). Lightly grease the muffin cups of the pan with butter.
  • Crack in one egg per cup.
  • Add 1-2 tablespoons of heavy cream to the top of each cup.
  • Season each cup with salt and pepper as desired. Sprinkle each cup with 1 tablespoon of Parmesan.
  • Place muffin pan in the oven and bake: 7-8 minutes for soft eggs (yolks), 9-10 minutes for semi soft eggs, or 11-12 minutes for firm eggs.
  • Serve with additional Parmesan as desired.

Notes

Variants: 1. Use duck eggs in place of chicken eggs. 2. Place a cooked sausage patty or slice of ham in the cup first, then add the egg. 3. Use a cheese of your choice.

Fried Egg Sandwich II

Fried Egg Sandwich II

This is an excellent egg sandwich to enjoy for dinner, two variants, one with fresh bread and the other with toasted bread.

Ingredients
  

  • 2 eggs, chicken or duck
  • 2 slices bread, white, wheat,whole grain, your choice
  • salt and pepper, as desired
  • mayo, as desired
  • butter, as needed
  • 1 slice Cheddar cheese

Instructions
 

  • Heat a small non stick pan on medium heat, many people use a dedicated pan as their 'egg pan', with 1-2 teaspoons of butter. When hot, crack in the eggs and poke the yolks to break them. Season with salt and pepper as desired.
  • Fry the eggs until the bottom is set as well as the top is starting to set, then turn the eggs over. If using a small pan, you may be able to flip the eggs in round shape like the pan. Cook for another 2 minutes or until the whites are no longer runny. If using duck eggs, ensure they are cooked completely through.
  • While the eggs are cooking, place the bread on a plate and spread some mayo on each slice, using as much mayo as you like.
  • If using toasted bread, just toast the slices then spread mayo on each piece of toast.
  • If the eggs are separate when cooked, place one fried egg on a slice of bread or toast. If the eggs cook in a circle like the pan, use the spatula to cut the circle in half, then place one half of that on a slice of bread or toast.
  • Top the egg with a slice of Cheddar cheese.
  • Top the cheese with another fried egg or the other half if you cut the two in half.
  • Top the sandwich with the other slice of bread or toast, mayo side down. Cut the sandwich in half diagonally, serve and enjoy.

Ranch Deviled Eggs

Ranch Deviled Eggs

Another tasty deviled egg recipe. Measurements are approximate, basic rule is more Ranch dressing than mayo.

Ingredients
  

  • 6 hard boiled eggs, chicken or duck
  • 1 tablespoon mayo
  • 1/2 teaspoon Dijon mustard, yellow works just as well
  • 2-3 tablespoons Ranch dressing, as needed
  • BBQ sauce, as needed
  • spring onion, sliced, as needed

Instructions
 

  • Cut the eggs in half, removing the yolk to a bowl and placing the whites, cut side up, on a serving tray.
  • Mash the yolks with a fork, mix in the mayo, mustard, and Ranch dressing, start with 1 tablespoon of Ranch and add more as desired for a creamy consistency. Spoon the yolk mixture evenly into the whites.
  • Place a drop or two of BBQ sauce on top of each egg then sprinkle on some sliced spring onion.
  • Chill until serving.

Bacon, Egg, Cheese, No Bun Required

Bacon, Egg, Cheese, No Bun Required

Not really meant to be a sandwich unless you have plenty of napkins nearby. Use egg rings to cook the eggs, layer, sounds good!

Ingredients
  

  • 2 eggs
  • 2 tablespoons hot water
  • 2 slices bacon, cooked crispy, or as desired
  • 1/4 cup Cheddar cheese, shredded
  • salt and black pepper, as desired

Instructions
 

  • First thing, is cook up the bacon, your preferred is fine. Me, I will just fry it. When the bacon is cooked, remove from the pan to paper towels to drain. Pour out most of the bacon fat (I save the fat in a jar).
  • Place two egg rings or quart size large mouth mason jar rings in the pan. Crack in an egg into each ring, break the yolks with a fork, season each with salt and pepper as desired.
  • Add the water to the pan and cover, let the eggs cook (steam) for about 3 minutes or until the whites are cooked through.
  • Remove the lid and add the cheese to one egg only, cover and cook for another minute or until the cheese is melted and gooey.
  • To plate, turn the egg over with no cheese onto a plate, add the crispy bacon strips, turn the egg with cheese over the top of the bacon, cheese side down.
  • Serve with toast, enjoy, with a fork.

Notes

Variants: 1. Add some ham slices. 2. Add some sliced spring onion to each egg after cracking into the rings. 3. Add some chopped mushrooms to the eggs after cracking into the rings. 4. For more cheese, add a slice of cheese, your choice, to the first egg on the plate. 5. Use duck eggs in place of chicken eggs.

Easiest Deviled Eggs, Ever!

Easiest Deviled Eggs, Ever!

For a basic deviled egg, the egg yolks are mixed with mayo and mustard, well we are not going to do that. So actually, you could call this the laziest way to make deviled eggs, ever. This recipe assumes you already have hard boiled eggs available, and if someone else prepared those, and peeled them, bonus for being even more easy (or lazy). Basically if you have hard boiled eggs, this is just another way to enjoy them.

  • 2 hard boiled eggs, peeled
  • Kewpie mayo, or mayo of your choice in a squirt bottle
  • mustard, of your choice, in a squirt bottle is preferred
  • black pepper, as desired

Instructions
 

  • Slice eggs in half lengthwise and place on a plate flat side up.
  • Squirt some mayo all over the top of each egg, be generous. Then squirt a small amount of mustard on top of the mayo, and add a sprinkle of black pepper as desired. Enjoy.

Egg Lettuce and Tomato Sandwich (ELT)

A straightforward sandwich with many variants. This recipe assumes you have hard boiled eggs already on hand.

Ingredients
  

  • 2 hard boiled eggs, chicken or duck, sliced
  • lettuce leaves, as desired
  • fresh tomato, sliced, as desired
  • 4 slices bread, toasted
  • mayo, or mayo of your choice, as desired
  • salt and pepper, as desired

Instructions
 

  • Prep the lettuce and tomato. slice the hard boiled egg.
  • Toast the bread then spread some mayo on each slice, to two slices, add a layer of tomato slices and season with salt and pepper as desired. I used Tor tomatoes.
  • Top with lettuce leaves.
  • Top the lettuce with egg slices.
  • Top with the other slice of bread, mayo side down, slice in half, enjoy.

Omelet Sandwich

Omelet Sandwich

This is not a recipe, this was a spur of the moment sandwich, and it is brilliant. Omelet fillings of your choice, here is what I used.

Ingredients
  

  • 4 eggs, chicken or duck
  • 4 slices bread, your choice
  • 1 spring onion, sliced, white and green parts
  • 1 plum tomato, diced
  • 1/4 cup Cheddar cheese, shredded
  • 1-2 teaspoons fish sauce, or to taste
  • white pepper powder, as desired
  • butter, as needed

Instructions
 

  • Prep the spring onion, tomato, and cheese.
  • Crack the eggs into a bowl, add the fish sauce, and a good shake of white pepper or as desired. Mix with a fork.
  • Heat a tablespoon of butter in a non stick pan, when hot, pour in the mixed eggs. I use a wok pan so I rotate it around a bit to spread out the egg mixture. When the eggs are almost set, sprinkle in the spring onion, tomato, and top with the cheese, (or fillings of your choice) on one half of the eggs, use a large spatula and fold the other half over the filling, cook for another 30 seconds and remove from heat.
  • Toast the bread then butter the slices. Cut the omelet in half with the spatula and top a slice of toast with the half an omelet and top the sandwich with another slice of toast, butter side down. Enjoy!
