Beer Can Burgers

These sound very good, and I will give two variants to try. This is a 'filled' burger as opposed to a 'stuffed' burger. Cooked on a grill and no flipping required. This is written for 2 burgers of each variant, just adjust the variant ingredients to make more or less of each. On my to cook list.

Ingredients
  

  • 1 kilo ground beef
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • salt and pepper, to taste
  • 8 slices bacon
  • 4 hamburger buns
  • tomato slices, as needed
  • lettuce leaves, as needed
  • 1 beer or soda can

Cheddar & Jalapeno Filling (for 2 burgers)

  • 2 cups Cheddar cheese, cubed
  • 1 fresh Jalapeno pepper, thinly sliced

Instructions
 

  • Heat your grill to medium with either charcoal or gas. You will be cooking over indirect heat.
  • In a large mixing bowl, combine the beef, Worcestershire sauce and garlic powder, divide into 4 half pound balls. Place a beer can on top of a ball and push down and form the beef around the can and just a bit up the side. Wrap two slices of bacon the burger. Twist the can to remove that, the burger should have a nice deep indentation in it. Repeat this for the remaining balls. Season each indentation and the rest of the burger with ample salt and pepper to taste.
  • For 2 burgers, add cubed Cheddar and Jalapeno slices in each indentation.
  • For the 2 burgers with Bell Pepper, add the bell pepper and onion in each indentation then top each with a slice of Provolone.
  • Grill the burgers over indirect heat, and covered, until cooked through, 30 minutes should be a medium burger.
  • To serve, place lettuce and tomato on the bottom bun, place a burger on top, top with the top bun.

Notes

Beef will cost about 200 Baht/kilo. Cheddar about 180 Baht for 2 cups cubed, Provolone about 45 Baht for 2 slices. For 4 servings, this is about $3.13 per serving. Not cheap but sounds really good for a once in a while cookout with friends and family.

Ham-O, Egg-O, Cheese-O Sandwich

Ham-O, Egg-O, Cheese-O Sandwich

I don't know why I thought of this last night, I must have been chatting with some of my Navy friends. For anyone that has been in South Korea, in the bar districts when the Navy visited, there was a street vendor with a cart, they made and sold Ham-O, Egg-O, Cheese-O sandwiches. This is a basic sandwich, and they made bank with these! These were made when you ordered, wrapped in paper and placed in a bag. I recall these were $1 each.

Ingredients
  

  • 1 slice ham
  • 1 egg
  • 1 slice cheese
  • 1 hamburger bun
  • mayo, as needed

Instructions
 

  • Keep in mind this was done on a large griddle, the woman running the cart was probably making up to 6 of these at a time.
  • Fry the ham, while the ham is cooking, fry an egg hard, breaking the yolk, flipping it once.
  • Spread mayo on the top and bottom bun, add the fried ham slice on the bottom bun.
  • Top the ham with the fried egg.
  • Top the egg with a slice of cheese (I used Gouda).
  • Add the top bun. As simple as that. Enjoy.

Low cost.

Beef on Weck

Beef on Weck

This is a popular sandwich in New York state, particularly in the Buffalo area. The name comes from the type of roll, or rather what is added to a Kaiser roll to make a Kummelweck roll, This is also a leftover dish since you are using roast beef.

Ingredients
  

  • 1 Kaiser roll
  • pinch coarse salt, be generous
  • pinch caraway seeds, be generous
  • egg, beaten (egg wash)
  • roast beef, thinly sliced, as much as you like
  • au jus, OR make from a shortcut
  • prepared horseradish
  • 1 pickle spear

Instructions
 

  • Warm your oven to 65 C / 150 F.
  • Slice the kaiser roll in half. Brush the top with the egg wash, then sprinkle the caraway seeds and coarse salt on top. Be generous with the salt and seeds.
  • Place both parts of the roll in the oven for 3-4 minutes.
  • Heat the au jus on the stove or microwave to just under a simmer.
  • When the rolls are warmed, remove from the oven, spread some au jus on the cut side of the top part of the roll, or you can just dip the top into the au jus, do not dunk the whole top in, you just want to coat the cut part.
  • Optional, if the roast beef seems a bit dry, go ahead and dip that into the au jus as well.
  • Pile on the roast beef on the bottom of the roll, add a heaping spoon of horseradish on top of the beef, cover that with the top part of the roll, serve with a pickle spear.

Notes

Low cost as this is mainly a leftover type sandwich.

Sardine & Olive Sandwich

Sardine & Olive Sandwich

Just a few olives are used, but this does sound really good. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 1 tin sardines in olive oil, OR make from a shortcut
  • 4-6 green olives with pimento, chopped
  • 1 shallot, chopped
  • 1-2 slices bread, toasted optional
  • lettuce leaves, as needed
  • cucumber, slices, as needed

Instructions
 

  • Drain the oil from the tin and retain, mash the sardines in a small bowl, add the oil from tin as needed for your correct consistency. Mix in the olives and shallot.
  • Place lettuce leaves on a slice of bread or toast, top with cucumber slices, then top with the sardine mixture.
  • Serve open faced or with the second slice of bread or toast on top.

Notes

If using tinned sardines in olive oil, figure about 59 Baht/tin/1 sandwich. This would cost about $1.73 per sandwich, if you make two sandwiches, this would be about 87 Baht per sandwich, reasonable and healthy.

This recipe will use another recipe as a base, listed in the Recipe Notes section, you make that one first, then you can assemble the sliders.

  • 1 recipe Chicken Fritters, plus dipping sauce, see Recipe Notes
  • 1 12 pack dinner rolls
  • Bleu cheese, as needed, about 1/2 to 3/4 cup
  • 2 tablespoons butter, melted
  • poppy seeds, optional

Instructions
 

  • First thing to do is to make the Chicken Fritters and the Garlic Aioli dipping sauce, listed in the Recipe Notes section. Make the fritters small, about 2 to 2 1/2 inches in diameter.
  • Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  • Spread the Garlic Aioli dipping sauce on the buns in the baking dish, top with the fritters try to put a fritter on each bun section, sprinkle with Bleu cheese to your liking.
  • Place the top layer of the rolls on the top, brush with melted butter, sprinkle with poppy seeds if desired. Bake for 20 minutes.
  • Slice into individual sliders, serve.

Notes

The Chicken Fritters recipe comes out to about 44 cents per serving. For the Bleu cheese, figure about 115 Baht/100 grams, about a cup, crumbled. For 4 servings, this is about $1.29 per serving.

  • 1 12 pack Hawaiian rolls, OR make from a shortcut
  • 12 slices ham
  • 6 slices Swiss cheese
  • mayo, as needed

  • 1 1/2 tablespoons Dijon mustard
  • 1/2 cup butter, melted
  • 1 tablespoon onion powder
  • 1/2 teaspoon Worcestershire sauce
  • 6 pineapple rings, optional

Instructions
 

  • For the rolls, you can use plain rolls like what is in Tesco and you would add thin pineapple slices, I would use fresh pineapple but canned is also ok. Link to the Hawaiian Rolls is listed in the recipe notes section, However, I have not tested that recipe yet.
  • Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  • Spread mayo on the layer of buns in the pan, top that with 2 layers of ham, followed by the cheese. Place the top layer of the rolls on the top. If using regular buns, ass 6 slices of pineapple on the top of the cheese, the top with remaining roll section.
  • In a medium bowl, mix together the melted butter, onion powder, mustard, and poppy seeds. Brush the top of the rolls with the butter mixture. Cover with foil and let sit for 10 minutes. Bake for 10 minutes or until the cheese is melted, uncover and bake for another 2 minutes or until the top is golden brown and slightly crisp.
  • Slice into individual sliders, serve, and watch your fingers!

Notes

I will say low cost for now until I make these, they do sound delicious!

Cheeseburger Sliders

  • 1 12 pack rolls
  • 1 kilo ground beef
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 teaspoons garlic powder
  • 1/2 onion, diced
  • 6 slices Cheddar cheese
  • 2 tablespoons melted butter
  • 1 tablespoon white sesame seeds

Instructions
 

  • Preheat your oven to 180 C. In a 9x13 baking dish, add the ground beef, salt, pepper, and garlic powder, mixing thoroughly and pressing it into a flat, even layer. Bake for 20 minutes.
  • Using a large spatula or two, remove the cooked beef and set aside, drain the fat from the dish and just use paper towels to wipe out the dish, DO NOT pour cold water in the dish if you are using a Pyrex dish!
  • Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  • Place the cooked beef layer on the rolls, followed by the onions and cheddar. Place the remaining half of the rolls on top.
  • Brush with melted butter and sprinkle with sesame seeds to your liking. Bake for 20 minutes.
  • Slice into individual sliders, serve, and watch your fingers!

Notes

Figure 200 Baht for the beef. For the Cheddar cheese, figure about 100 Baht for 6 slices. For 4 servings, this is about $2.20 per serving.

  • 2 tablespoons fresh parsley, finely minced
  • 2 tablespoons Parmesan cheese, grated

Instructions
 

  • Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  • Spread the chicken evenly on the rolls, followed by the tomato sauce, Mozzarella, and basil. Place the top layer of the rolls on the top,
  • In a small bowl, mix together the melted butter, garlic, parsley, and Parmesan. Brush the top of the rolls with the butter mixture. Bake for 20 minutes.
  • Slice into individual sliders, serve, and watch your fingers!

  • 85 grams baby spinach, blanched and squeezed dry
  • 2 tablespoons butter, melted
  • black pepper, to taste

Instructions
 

  • Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  • Spread the scrambled eggs on the layer of rolls, then the ham slices, then the cheese slices, then the bacon.
  • Place the top layer of the rolls on the top, brush with melted butter and sprinkle with black pepper to your liking. Bake for 20 minutes.

  • For those in Thailand, the big cities may have Pepper Jack cheese, for those not in the big cities (such as myself), use a mix of shredded Cheddar and Mozzarella and add a pinch of red pepper flakes, aka, Thai Chili Powder, which a is crushed type, not a powder.
  • Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  • Spread the chicken on the layer of rolls, then spread the BBQ sauce, then the onion, cheese, and parsley.
  • Place the top layer of the rolls on the top, brush with melted butter. Bake for 20 minutes.
  • Slice into individual sliders, serve, and watch your fingers!
