Ingredients
  

  • 1 cup all-purpose flour
  • teaspoons baking powder
  • ¼ teaspoon salt
  • 2 tablespoons shortening
  • ½ cup milk
  • 2 tablespoons pimento, diced

Instructions
 

  • Add the flour, baking powder, and salt to a mixing bowl and whisk together.
  • Cut in shortening until mixture resembles course crumbs.
  • Add milk and pimento and mix until the flour is just moistened.
  • Drop by tablespoons around edge of a casserole.
  • Bake 15 minutes following the casserole recipe. Enjoy.

Ingredients
  

  • 1 cup sweet potato, cooked, mashed
  • cup melted butter
  • 1 egg, beaten
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions
 

  • In a mixing bowl, mix together the mashed sweet potato, butter, and egg.
  • Whisk together the flour, baking powder, and salt.
  • Mix the flour mixture into the sweet potato mixture.
  • Drop by tablespoons onto casserole, bake 30 minutes.

Ingredients
  

  • 5 medium potatoes, cooked, drained
  • ½ cup warm milk
  • 1 egg, beaten
  • salt and pepper, as desired

Instructions
 

  • Mash potatoes while hot, while adding the milk and egg. Taste and season with salt and pepper as desired.
  • Drop in mounds over casseroles.

Notes

Variant: 1. Prepare 4 portions of instant mashed potatoes if desired.

Shake & Bake Mix

This comes from a good friend, and chef. Feel free to use store bought fine breadcrumbs or make your own. The main rule is do not use panko which does not absorb oil like regular breadcrumbs do. Link to the Shortcut is listed in the Recipe Notes section.

Ingredients
  

  • ½ cup cornmeal
  • 1 tablespoon black pepper
  • 1 tablespoon parsley flakes, crushed
  • ½ teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried thyme, crushed
  • 1 teaspoon garlic powder
  • 3 cups fine breadcrumbs, Shortcut

Instructions
 

  • Add all ingredients except the breadcrumbs to a mixing bowl.
  • Mix together.
  • Add the breadcrumbs and mix together. Now you are done if you are just making this ahead of time. Place in an airtight container, label, and use as needed.
  • To use, simply add some mix to a zip lock bag, preheat your oven to 200° C (400° F), brush olive oil on chicken or pork chops, add a few chicken pieces or pork chops to the bag, seal and shake, for chicken place on a baking sheet lined with foil or parchment; for chops, place on a rack and place rack on a foil or parchment lined sheet. Bake 20-30 minutes depending on thickness or until cooked through.

I found this soup mix at a Mennonite store in Tennessee, and it does sound good. So in order to prepare this in Thailand, I bought a package of this and separated all the items and weighed them. Here is the recipe for the dry mix, soup recipe is listed in the Recipe Notes section. This makes about 1 1/2 cups of soup mix, which is the amount to prepare the soup. If you like the soup after making this, just make again and double or triple the recipe and you have the soup mix on hand anytime you want to make this soup. Measurements are given in grams for accuracy.

  • Weigh each item, place in a zip lock bag, label, use as directed in a recipe to make Hearty Soup. This makes about 1 1/2 cups or 1 batch of dry soup mix.

Notes

These are common items in Thailand, except the alphabet pasta, which I will bring from the US with me. You could certainly use orzo, rings, or ditalini pasta. Overall, this is low cost per mix.

Basic Vinaigrette Dressing

Basic Vinaigrette Dressing

This is more of a guide than a recipe, and can be tailored in many ways.

Ingredients
  

  • 9 tablespoons extra virgin olive oil
  • 3 tablespoons rice vinegar
  • 1-2 pinches sea salt
  • 1-2 pinches coursely ground black pepper

Instructions
 

  • Add everything to a pint mason jar (or any small jar), cap, then shake. As easy as that.
  • Use on a salad, enjoy.

Notes

Variants: 1. Add a tablespoon of herbs such as dill, basil, parsley, cilantro, mint, or thyme. 2. Add a minced clove of garlic. 3. Add a teaspoon of grated ginger. 4. Add a tablespoon of horseradish. 5. Add a teaspoon of Dijon mustard. 6. Add a teaspoon of honey. 7. Use white wine vinegar in place of rice vinegar.

Chicken Sausage

This sausage sounds great! This can be made into patties, links, meatballs, or just cooked in bulk. On my to make and taste list for certain, I look forward to making meatballs and cooking then freezing them, and freezing some links as well. Feel free to use turkey or chicken for this.

Ingredients
  

  • 500 grams ground chicken, or turkey, (1 lb)
  • 3 teaspoons garlic, minced
  • cup red onion, finely diced
  • 1 teaspoon ground cumin
  • ½ teaspoon black pepper
  • ¼ cup chicken broth,

Instructions
 

  • Add everything to a mixing bowl.
  • Mix together with your hands.
  • Form into 12 patties, stuff into collagen casings for links, make meatballs, or use as bulk. For links and meatballs, I will add those quantities when I prepare this and will update this.
  • For patties and meatballs, go ahead and cook those then freeze if desired for a quick go to ingredient. Bake patties and meatballs in a 190° C (375° F) oven for 25 minutes. Allow to cool, then freeze for later use.

Italian Bean Soup Mix

 

Italian Bean Soup Mix

This is a straight forward bean mix using common beans. This makes 1 bean mix of 452 grams (1 pound). Measurements are in grams as that is more accurate. This is a make ahead recipe, and you can make several types of bean mixes at one time and the beans are then all prepped for use in another recipe. The recipe that uses this mix is in the Recipe Notes section at the end.

Smoky Hard Boiled Eggs

Smoky Hard Boiled Eggs

Adapted from an internet recipe.
I made these on 30 Dec 2021 and taste tested on 31 Dec, and these are excellent hard boiled eggs salty from the soy sauce and a nice flavor from the liquid smoke. This recipe assumes you have hard boiled eggs on hand, if not, a Shortcut is provided to my preferred way to make them. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • hard boiled eggs, amount is up to you, Shortcut
  • 1 cup light soy sauce, for less salty, use ½ cup light soy sauce and ½ cup water
  • 2 tablespoons liquid smoke

Instructions
 

  • Prepare the hard boiled eggs with your preferred method. Cool and peel. Place eggs in a glass or ceramic container, preferably with a watertight lid, makes for turning the eggs easier. I used just 4 eggs to test out the recipe.
  • Measure out the light soy sauce and liquid smoke.
  • Add the liquid smoke to the soy sauce and mix together, pour over the eggs, cover and soak eggs for 3 hours or even overnight, rotating the eggs occasionally until all the sides are a nice brown, containers with waterproof seal, just shake the eggs around to turn them. Soak longer for a darker brown.
  • Serve as is, make into deviled eggs, slice for salad or a sandwich, enjoy.
