Yam Biscuits

This recipe is from a cookbook titled Casserole Cook Book by Better Homes & Gardens, printed in 1961. This recipe sounds very good, on my to make and taste list.

- 1 cup sweet potato, cooked, mashed
- ⅓ cup melted butter
- 1 egg, beaten
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
In a mixing bowl, mix together the mashed sweet potato, butter, and egg.
Whisk together the flour, baking powder, and salt.
Mix the flour mixture into the sweet potato mixture.
Drop by tablespoons onto casserole, bake 30 minutes.
