Cornmeal Dumplings

Ingredients
  

  • 1 box corn muffin mix, Shortcut
  • cup milk
  • 1 egg
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Prepare the box of corn muffin mix according to package instructions, except use only ⅓ cup milk and the egg for the liquid the package states.
  • Drop by rounded tablespoonfuls onto a hot bubbling stew, sprinkle with parsley. Cover and steam for 10 minutes or until the dumplings are cooked through.
  • Serve with the stew, enjoy.

Instructions
 

  • Place biscuits on a hot bubbling stew, top each with parsley. Cover and steam the biscuits 15 or until done.
  • Serve with the stew, enjoy.

Ingredients
  

  • ¾ cup milk
  • 2 cups biscuit mix, Shortcut

Instructions
 

  • Add the biscuit mix to a mixing bowl, add the milk all at once. Stir just until the mix is dampened.
  • Drop by rounded tablespoons onto hot stew, cook uncovered 10 minutes, then cover and cook 10 more minutes.
  • Serve with stew. Enjoy.

Ingredients
  

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup fresh parsley, chopped
  • ½ cup milk
  • 2 tablespoons vegetable oil

Instructions
 

  • In a mixing bowl, add the flour, baking powder, and salt. Whisk together.
  • Mix in the parsley.
  • In a measuring cup, add the milk and vegetable oil and stir to mix.
  • Pour milk mixture into dry ingredients, mix just until the flour is dampened.
  • Drop by spoonful's on a hot stew, and are generally cooked by covering the stew and letting the dumplings cook for 15 to 20 minutes.
  • Enjoy.

Instructions
 

  • Mix all ingredients together, makes about 1 cup of dressing.

Ingredients
  

  • 2 tablespoons butter
  • 1 cup fresh mushrooms, coarsely chopped
  • 1 can condensed cream of chicken soup, (10½ oz / 298 g), Shortcut
  • cup chicken broth

Instructions
 

  • Melt the butter in a medium sauce pan, add the mushrooms and cook for 1-2 minutes, just to soften them.
  • Add the soup and broth, mix together, heat through until just bubbly, stirring often.
  • Use as other recipes state or use as a gravy.

  • 1 cup yellow cornmeal
  • ½ teaspoon salt
  • 1 cup boiling water
  • ½ cup cold milk
  • 2 eggs
  • 1 tablespoon butter, melted
  • 2 teaspoons baking powder

Instructions
 

  • In a mixing bowl, mix together the cornmeal and salt, mix in the boiling water.
  • Add the milk and beat. Add the eggs and beat those in. Mix in the melted butter and baking powder.
  • Spoon over hot casserole before it goes in the oven.
  • Serve casserole and enjoy.

Ingredients
  

  • 1 tablespoon butter
  • ¾ cup onion, finely diced
  • cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon celery seed
  • ¼ cup vegetable shortening
  • 1 egg, slightly beaten
  • cup milk

Instructions
 

  • Melt the butter in a non stick pan, when hot, add the onion, cook until just tender. Drain excess liquid. Set aside.
  • In a mixing bowl, whisk together the flour, baking powder, and salt. Stir in the celery seed.
  • Cut in the shortening until mixture resembles coarse crumbs.
  • Stir in the onion.
  • In a small bowl, mix together the egg and milk.
  • Pour the milk mixture all at once into the flour mixture.
  • Stir with a fork until just combined or the dough follows the fork.
  • Turn out onto a lightly floured surface and kneed or 30 seconds.
  • Roll out to ½ inch thick, cut with a biscuit cutter or a doughnut cutter.
  • Place biscuits on a hot casserole before it goes in a hot oven (230° C / 450° F) OR place on a baking sheet, and bake for 10-15 minutes or until golden brown and done.
  • Serve and enjoy.
Pinwheel Biscuits

Ingredients
  

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup shortening
  • cup milk
  • cups Cheddar cheese, shredded
  • ¼ cup pimento, diced
  • 1 tablespoon butter, melted

Instructions
 

  • Add the flour, baking powder, and salt to a mixing bowl, whisk to mix together.
  • Cut in shortening until mixture resembles coarse crumbs.
  • Add milk all at once, stir with a fork and mix until dough follows the fork around the bowl.
  • Turn out onto a floured surface, kneed gently 30 seconds.
  • Roll out to a triangle ½ inch thick.
  • Sprinkle the dough evenly with the cheese and pimento.
  • Roll up like a jelly roll.
  • Cut into 1 inch slices.
  • Arrange slices on their sides on top of a hot casserole, and brush with the melted butter.
  • Bake in a 230° C (450° F) oven for 15-20 minutes or until biscuits are done.

Scratch Method

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 tablespoons shortening
  • cup milk
  • ½ cup sharp Cheddar cheese, shredded

Biscuit Mix Method

  • 1 cup biscuit mix, Shortcut
  • cup milk
  • ½ cup sharp Cheddar cheese

Instructions
 

Scratch Method

  • In a mixing bowl, add the first 3 ingredients and whisk together.
  • Cut in the shortening with a sturdy fork until the mixture looks like coarse crumbs.
  • Add the milk all at once and use the fork to mix just until the dough is mixed and balled to the fork and moves around with it.
  • Place dough on a floured surface and gently kneed for 30 seconds.
  • Roll dough out to a rectangle, ¼ inch thick.
  • Sprinkle cheese evenly over dough.
  • Roll up like a jelly roll.
  • Start on one end of the roll and cut into ½ inch slices.
  • Place slices, cut side down, on your hot casserole before it goes in the oven.
  • Bake in a hot oven, about 220° C (425° F), for 15-20 minutes or until the biscuits are done.

Biscuit Mix Method

  • In a mixing bowl, add the biscuit mix, then add the milk all at once and use the fork to mix just until the dough is mixed and balled to the fork and moves around with it.
  • Now follow the Scratch Method steps from Step 4 onwards.
