Ingredients
  

  • 1 tablespoon vegetable oil
  • 4-5 pork chops
  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 1/2 cup milk
  • 1/2 cup sour cream, OR make from a shortcut
  • 550 grams hash browns, OR make from a shortcut
  • 1 cup Cheddar cheese, shredded
  • 1 1/2 cups french fried onions, OR make from a shortcut
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 180 C. Heat oil in a large skillet over medium-high heat. Add pork chops and saute until browned. Remove from skillet and drain on paper towel.
  • In a medium bowl mix together the soup, milk, sour cream, and salt and pepper to taste. Stir in potatoes, 1/2 cup cheese and 1/2 cup onions. Mix together and spread mixture in the bottom of a 9×13 inch baking dish. Arrange pork chops over potato mixture.
  • Cover dish and bake for about 40 minutes, or until internal temperature of pork has reached 71 C. Remove cover, top with remaining cheese and onions and bake uncovered for 5 more minutes.
  • Serve with a steamed vegetable for a complete meal.

Notes

Tops has pork loin steaks for 83 Baht for 2, 4 loin steaks would be 166 Baht. The cheese will cost about 90 Baht. For 4 servings, this is about $1.88 per serving.

Ingredients
  

  • 1 recipe Grandma Style Pie Dough, Shortcut
  • 340 grams Mozzarella Cheese, shredded, (12 oz)
  • 120 grams Provolone cheese, shredded, (6 oz)
  • cups pasta sauce, Shortcut
  • ¼ red onion, thinly sliced
  • ½ cup black olives, oil cured or brined is fine, coarsely chopped
  • red pepper flakes, for serving, optional
  • ½ cup olive oil

Instructions
 

  • Take the prepared dough out of the fridge, coat a 18x13 inch rimmed baking sheet with the olive oil. Gently and gradually stretch dough until it reaches the edges of baking sheet. (If dough springs back or is stiff to work with, let it rest 10 minutes before continuing. You may need to let it rest more than once.)
  • Preheat your oven to 250° C (480° F).
  • Cover dough on baking sheet tightly with plastic wrap and let sit in a warm place until it is puffed and full of air bubbles, 30 to 40 minutes.
  • Once dough has risen in baking sheet, top with mozzarella and provolone, dot pie with tomato sauce, and top with the onion and olives.
  • Bake until golden brown and crisp on bottom and sides, 20 to 30 minutes.
  • Cut into squares and serve.

Ingredients
  

For the Salad

  • 1 1/2 kilos fresh broccoli, about 3-4 heads
  • 1/2 red onion, diced
  • 1 cup sunflower seeds, roasted
  • 3/4 cup golden raisins
  • 250 grams bacon, cooked crispy, crumbled
  • 1 cup Cheddar cheese, shredded

For the Dressing

  • 1 cup mayo
  • 1/3 cup sour cream, OR make from a shortcut
  • 3 tablespoons lemon juice
  • 1/4 cup sugar, more to taste
  • salt and pepper, to taste

Instructions
 

  • Cut the broccoli into bite size pieces, including the stems. Bring a large pot of water to a boil. Add the broccoli and cook for 1 minute. Place broccoli in an ice bath or rinse with cold water to stop cooking, drain well.
  • While the broccoli is draining, in a medium bowl, whisk together the Dressing ingredients.
  • In a large bowl, add the broccoli and the remaining Salad ingredients. Pour the Dressing over the top and gently toss to coat all ingredients. Season with salt and pepper to taste.
  • Chill the salad for several hours or overnight before serving.

Notes

Figure about 40 Baht/head for the broccoli. Going with 4 heads, as they are normally small, about 160 Baht. Figure 90 Baht for the cheese (about half a 250 gram block). Figure about 150 Baht/250 grams bacon. For 6 servings, this is about $1.96 per serving, not a cheap salad but it does sound good tasting.

Ingredients
  

  • 750 grams ground beef, or beef and pork
  • 4 cloves garlic, smashed and roughly chopped
  • handful fresh parsley, chopped
  • 1 cup bread crumbs, OR make from a shortcut
  • 1 cup Parmesan cheese, shredded, not grated
  • 2 eggs
  • 2 teaspoons dried oregano
  • 1 tablespoon Italian seasoning, OR make from a shortcut
  • salt and pepper, to taste
  • 1-2 cups Mozzarella Cheese
  • 4-6 cups pasta sauce, OR make from a shortcut

Instructions
 

  • Preheat your oven to 200 C.
  • Mix all of the meatball ingredients, except the Mozzarella cheese and pasta sauce, and form your meatballs, not too large. Pour 1-2 tablespoons oil on a foil lined baking sheet and bake the meatballs for 20 minutes.
  • Lower oven temp to 190 C.
  • Spoon some sauce into the bottom of a large baking dish. Place meatballs on top of the sauce. Cover with more sauce and dress the top up with plenty of mozzarella. Cover with foil and bake for 20 minutes.
  • Remove foil and bake an additional 20 minutes or until meatballs are cooked through and cheese is browning. For the last few minutes you can raise the oven temperature to help with browning.
  • Serve on pasta or rice.

Notes

Estimate about 150 Baht for ground beef, less if using beef and pork mix. I cannot price Parmesan cheese in a block yet, I will estimate 150 Baht, for the Mozzarella cheese, I would go with 400 grams at 280 Baht. For 6 servings, this is about $2.85 per serving.

Ingredients
  

  • 2 kilos potatoes, diced, peeled is up to you
  • 10-12 slices bacon, cooked crispy and crumbled
  • 250 grams Cream cheese, room temperature
  • 2 cups Cheddar cheese, shredded, divided
  • 2/3 cup sour cream, OR make from a shortcut
  • 1/2 cup milk
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup unsalted butter, room temperature
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt and pepper, to taste

Instructions
 

  • Place potatoes in a large pot and cover with 1-2 inches of cold water. Bring up to a boil, then reduce heat and cook for 20 minutes, or until fork tender.
  • Remove pot from heat, drain potatoes and return to empty pot. Preheat your oven to 180 C. Smash potatoes to desired consistency, season to taste with onion powder, garlic powder, salt and pepper.
  • Mix in cream cheese, sour cream, milk, Parmesan cheese, butter, and 1 cup Cheddar cheese, then transfer to a 9×13-inch baking dish.
  • Sprinkle bacon and remaining cheddar cheese over the top and place in oven; bake for 15-20 minutes. Remove from oven and let cool 5 minutes before serving.
  • This would be good with pork chops, pork steaks or fried chicken.

Notes

Figure about 130 Baht for the bacon, 120 Baht for the Cream cheese, and 180 Baht for the Cheddar cheese. For 8 servings, this is about $1.58 per serving, expensive for a side but would be great for visiting friends and family.

This is delicious! This is a great alternative to regular stuffed peppers. Not a $1 per serving meal due to the cheese used, but is certainly worth it. I made this on 1 June 2017 Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 3-4 bell peppers, any colors, halved, seeded
  • 3-4 chicken breasts, boneless, skinless, cubed
  • 3 cups Mozzarella Cheese, shredded, divided
  • 1/2 cup Parmesan cheese, grated
  • 3 cloves garlic, smashed and minced
  • 1 1/2 cups pasta sauce, OR make from a shortcut
  • 1 teaspoon dried parsley
  • pinch red pepper flakes
  • 1/2 cup chicken stock, fresh or from powder
  • salt and pepper, to taste
  • olive oil as needed

Instructions
 

  • Preheat your oven to 200 C (390 F). Get out a 9x13 baking dish.
  • Heat a skillet with a splash of olive oil and add the cubed chicken, season with salt and pepper as desired.
  • Cook until just cooked through for tender chicken, drain any oil, I use a colander for this and just let the chicken sit in the colander until it is needed.
  • Cut bell peppers in half and remove the stem and seeds. Place in a 9x13 baking dish, fit them in there tight.
  • In a large bowl, combine 2 cups Mozzarella, Parmesan, garlic, pasta sauce, parsley, and red pepper flakes, and season with salt and pepper to your liking. Stir until combined, then gently fold in chicken.
  • Spoon chicken mixture into halved bell peppers and sprinkle with remaining 1 cup Mozzarella cheese.
  • Pour chicken broth into baking dish to help the peppers steam and cover the dish with foil.
  • Bake until peppers are tender, about 1 hour. Uncover and broil 2 minutes.
  • Garnish with fresh chopped parsley and Parmesan cheese, serve.

Notes

Chicken will cost about 75 Baht/kilo, that should be 5-6 breasts, get a kilo and use the rest in another recipe. The Mozzarella will cost about 280 Baht for two 200 gram blocks. For 4 servings, this is about $2.60 per serving.

  • 1/4 cup onion, finely diced

  • 1 can crescent rolls, OR make from a shortcut
  • 2 tablespoons butter, melted
  • 1/3 cup Parmesan cheese, grated
  • 1/2 teaspoon Italian seasoning
  • salt and black pepper, to taste

Instructions
 

  • Preheat your oven to 190 C.
  • In a skillet, brown ground beef with chopped onions, season to taste with salt and black pepper. Drain any fat. Pour beef into a 9-inch deep-dish pie pan.
  • Pour pasta sauce over the meat, then the sour cream over the top. Top with the shredded cheese.
  • Cover the top of the dish with crescent rolls, making sure all edges are sealed. Combine the butter, Parmesan, and Italian seasoning in a small bowl. Brush over the top of the pie.
  • Bake for 20 minutes, or until the top is lightly browned and cooked through. Remove from the oven and allow to cool for 10-15 minutes before slicing.

  • 4 chicken breasts, boneless, skinless
  • 3 cups mushrooms, sliced, canned or fresh button
  • 2 onions, sliced
  • 2 cloves garlic, smashed and minced
  • 3 tablespoons butter
  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 2 eggs, lightly beaten
  • 1 cup seasoned breadcrumbs, OR make from a shortcut
  • 3 cups Mozzarella Cheese, shredded
  • 3/4 cup chicken broth, or stock, fresh or from powder
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 180 C. Cook mushrooms and onions in a skillet with 1 tablespoon of butter until just tender. Remove from the skillet and set aside.
  • Place the eggs in a shallow bowl and in a separate bowl place the breadcrumbs. Dip chicken into beaten eggs, then roll in bread crumbs.
  • Same skillet, melt the remaining butter over medium heat. Brown both sides of chicken then place chicken in a 7x11 baking dish (browning, no need to cook through), arrange onions and mushrooms on top of chicken, and top with mozzarella cheese.
  • Add chicken broth and cream of mushroom soup together in a bowl and whisk until blended then pour over top of mushroom, onion, and chicken. Bake for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.

Notes

The chicken will run about 70 Baht/4 breasts. The cheese will run about 220 Baht/3 cups. For 4 servings this is about $2.13 per serving.

  • 500 grams ground beef
  • 1/2 cup onion, diced
  • 1 packet taco seasoning mix, OR make from a shortcut
  • 2 cups Cheddar cheese, shredded
  • 1 can refried beans, OR make from a shortcut, 2 cups
  • 1 cup cooked rice
  • 1 cup Mexican corn, OR make from a shortcut
  • 4 large flour tortillas, 8 inches, or even corn tortillas
  • 1 cup thick salsa, OR make from a shortcut

Instructions
 

  • Preheat your oven to 180 C. Grease a 8 inch spring form cake pan with butter or olive oil spray.
  • Brown ground beef and onion, drain, then add the taco seasoning and cook according to package direction.
  • To assemble, place 1 tortilla in the bottom of the cake pan, spread 1/3 of the refried beans on it, top with 1/3 of the meat and sprinkle on some cheese.
  • Add the 2nd tortilla, top that with 1/2 the rice, 1/2 the salsa, 1/2 the corn and cheese.
  • Add the 3rd tortilla, top that with 1/3 of the refried beans, 1/3 the meat, and sprinkle on some cheese.
  • Add the 4th tortilla, top with the remaining refried beans, then the meat, then the corn, then rice, then the salsa and top with the cheese.
  • Bake covered with foil for about 40 minutes, uncover and bake 10-15 minutes longer, let sit 5 minutes before cutting. After baking top with sour cream, diced onion, and shredded lettuce if desired.

Notes

The beef will cost about 100 Baht, the cheese about 180 Baht. The tortillas would cost about 120 Baht for 4. Make the shortcuts for savings as well. For 6 servings, this is about $1.96 per serving.
Shortcuts: Taco Seasoning, Refried Beans, Mexican Corn, Salsa, Sour Cream.
Variants: Very easy to use leftover chili in place of the refried beans, or to use cooked chopped red bell pepper, use corn tortillas in place of flour tortillas, use cottage cheese in place of the salsa, you get the idea. You could make this a different meal each time you make it.

  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder, or to taste
  • 3/4 cup BBQ sauce, OR make from a shortcut
  • 1 bag tortilla chips, 13 oz or about 370 grams
  • 2 cups Sharp Cheddar cheese, shredded, or a blend
  • 1/2 red onion, thinly sliced
  • 1 tomato, diced
  • 8 slices bacon, cooked and crumbled
  • 2 tablespoons fresh parsley, finely chopped
  • 1/2 cup sour cream, OR make from a shortcut
  • 1 avocado, diced

Instructions
 

  • Preheat oven to 180 C. Heat the oil in a pan over high heat. Cook the chicken with salt, pepper, garlic powder, and chili powder for two to three minutes. Add the barbecue sauce and cook until the sauce has reduced by about half, about five minutes. Remove from heat.
  • In a large baking dish, spread out two large handfuls of tortilla chips. Layer with half of the barbecue chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients. Bake for 15 minutes.
  • Drizzle the sour cream and sprinkle the avocado on top. Serve.

Notes

The chicken might cost 35 Baht, the cheese would be about 180 Baht, and the bacon about 120 Baht. For 4 servings, this is about $2.46 per serving.
