These sound incredibly good, very straight forward recipe and common ingredients.

Ingredients
  

  • 6 medium potatoes, skin on or off your preference
  • 1 1/2 cups chicken stock, fresh or from powder, or beef stock
  • 2 tablespoons butter
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1/3 cup Parmesan cheese, grated

Instructions
 

  • Preheat your oven to 200 C.
  • Cut the potatoes into 1 inch cubes and place in a large bowl, add the olive oil, pepper, garlic and onion powders and toss to coat the potatoes.
  • In a large pot, add the stock and butter and bring to a simmer. Add the potatoes and bring to a boil for 5-8 minutes, stirring gently until the potatoes are just slightly tender.
  • Transfer the potatoes and the stock to a large baking dish. Sprinkle with the cheese and gently mix to coat all the potatoes.
  • Bake for 45 minutes to 1 hour or until the all the potatoes are browned and crisp. During baking, flip the potatoes once to ensure even crisping. Season to taste with salt and pepper and serve as a side dish.

Ingredients
  

  • 1 head green cabbage, coursely chopped
  • 4 slices bacon, cut into 1 inch pieces
  • 1 small onion, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 cup chicken stock, fresh or from powder, or just water

Instructions
 

  • In a large skillet over medium heat, cook the chopped bacon until just before crispy. Add the cabbage, onion, and salt and stir to coat the cabbage with the bacon fat.
  • Add the chicken stock or just water and reduce heat to medium low, cover and cook for about 30 minutes, stirring occasionally until the cabbage is tender and lightly browned. Serve as a side dish.

Mashed Potato Pie

This sounds really tasty as a side dish with meatloaf or a roast chicken or turkey. This is what I call a Leftover dish, using left over mashed potatoes, even the cottage cheese can be from a previous meal. On my to cook list. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 2 cups mashed potatoes, leftovers are perfect, room temp
  • 2 eggs
  • 1/4 cup Cottage cheese, OR make from a shortcut
  • 1/4 cup sour cream, OR make from a shortcut
  • 2 spring onions, chopped, white and green
  • 2 slices bacon, chopped, fried crisp
  • 1/4 teaspoon garlic powder
  • 1/2 cup Cheddar cheese, shredded

Instructions
 

  • Preheat your oven to 190 C. Lightly butter a baking dish.
  • In a mixing bowl, beat the eggs and add in the cottage cheese and sour cream. Stir to combine and add the potatoes and remaining ingredients. Mix together well and pour into the baking dish.
  • Bake for 20 minutes on the center rack, then move the dish to the upper rack and cook for another 6-7 minutes or until it begins to get golden brown. Let sit for a couple minutes before slicing, serve as a side.

Fried Rice with Bacon

Fried Rice with Bacon

There is as many ways to prepare fried rice as there is shades of green. There is no right or wrong way. The original use for fried rice was to use up left over rice and left over items from a meal, so this one is a little more creative and sounds really good.

Ingredients
  

  • 1 teaspoon sesame oil
  • 3-6 slices bacon, chopped
  • 1/2 teaspoon sugar
  • 1 tablespoon soy sauce
  • 6 eggs
  • 1/2 teaspoon salt
  • 1 cup grape tomatoes, halved or use cherry tomatoes
  • 1 tablespoon fresh ginger, peeled, minced
  • 3/4 cup snow peas, trimmed and cut in half
  • 1 bell pepper, color is up to you
  • 1 bunch spring onions, thinly sliced, white and green
  • 4 cups cooked rice

Instructions
 

  • Heat the oil in a large non stick skillet over medium high heat. Add the bacon and cook, until almost crispy. Add the sugar and 1 teaspoon soy sauce; stir-fry until the bacon is glazed, about 1 minute. Transfer to a bowl using a slotted spoon; reserve the drippings in a separate bowl. Wipe out the skillet.
  • Heat 2 teaspoons of the drippings in the skillet over medium heat. Whisk the eggs and 1/2 teaspoon salt in a medium bowl and add to the skillet and cook, undisturbed, until just set, about 3 minutes. Transfer to a plate and break up the eggs into large pieces.
  • Heat the remaining drippings in the skillet over medium high heat. Add the tomatoes and ginger and stir-fry until the tomatoes are softened, 2 to 3 minutes. Add the snow peas, bell pepper, and scallions; stir-fry until crisp-tender, about 3 minutes. Add the rice and the remaining 2 teaspoons soy sauce; stir-fry until warmed through, about 2 minutes. Stir in the eggs and cook 1 minute. Top with the bacon. Serve as a side with pork or a prawn dish.

Instructions
 

  • The only thing I have around me is small to medium potatoes, so figure two potatoes per serving.
  • Preheat your oven to 220 C. Cover a baking sheet with foil.
  • Slice the potatoes thinly but not all the way through, drizzle with olive oil, melted butter, sprinkle on some sea salt and black pepper. Bake for 40 minutes. Serve as a side.

This is always good, I have made this many times, and so easy, great side dish for any pasta.

  • 1 loaf French bread, cut into 1/2 inch thick slices
  • 1/2 cup butter, softened, this is 1/2 standard block
  • 1 1/2 tablespoons garlic powder
  • 1 tablespoon dried parsley

Instructions
 

  • Preheat your oven to 180 C.
  • Mix the garlic powder and parsley into the softened, room temperature butter to make a paste. Spread butter paste on each slice of bread and place the bread on a baking sheet.
  • Bake for about 10 minutes until the bread is lightly toasted.

Potato Collops

Potato Collops

This is a traditional Irish dish and sounds like a great side dish. A collop is small portion of any food or a slice of meat. I am planning to make this with small 1 serving baking dishes I have my eye on.

Ingredients
  

  • 2-3 potatoes, washed, thinly sliced
  • 1 small onion, diced
  • 2 tablespoons fresh parsley, chopped
  • 100 grams bacon, diced
  • 2 tablespoons butter
  • 1 cup milk, scalded
  • 1/4 cup Cheddar cheese, shredded
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 180 C. Lightly grease a small baking dish with butter.
  • Place a layer of potatoes and onions in the baking dish, vegetables on a greased baking dish, sprinkle with parsley, salt and pepper, and some diced bacon.
  • Repeat with more layers until all are in the dish. Sprinkle cheese over the top, then pour the hot scalded milk over the cheese.
  • Cover with foil and bake for 45 minutes, then uncover and continue baking until the potatoes are cooked through and the top is nicely browned. Serve as a side.

Basic Simmered Cabbage I

Sounds like an excellent side dish. I bought some cabbage today and when I got it in the house first thing I did was weigh it, just under 500 grams, this recipe is from the US, a medium head of cabbage there is about 1 kilo. Since this is mainly for myself, I will use just one head of cabbage in this recipe and will adjust the other ingredients when I do make this and will edit the recipe with my results.

  • splash olive oil
  • 1 cup chicken stock, fresh or from powder
  • 1 head cabbage, coarsely chopped, cored
  • 1 small onion, diced
  • salt and pepper, to taste

Instructions
 

  • Heat a splash of olive oil in a large non stick skillet and add the onion and cook until soft. Add the chicken stock and bring to a boil, then add the cabbage, mix, and reduce to a simmer, cover and simmer for about 15-20 minutes, stirring occasionally until the cabbage is tender.
  • Drain any chicken stock and reserve for another recipe, season the cabbage with salt and pepper, serve the cabbage as a side dish.

Basic Fried Rice

Fried rice was started as a way to use up cooked rice and leftovers, so the possibilities are endless with vegetables and meats. The only requirement is that vegetables are diced and meats cut into bite size pieces. This sounds like a a good recipe to start with and make it your own.

Ingredients
  

  • 4 cups cooked rice
  • 250 grams meat, of your choice, see Step 1
  • 1 cup frozen peas and carrots
  • 1 onion, chopped
  • 2 cloves garlic, smashed and minced
  • 2 eggs
  • 3 tablespoons sesame oil
  • 1/4 cup soy sauce

Instructions
 

  • For the meat, can be chicken, pork, beef, or even shrimp, squid, or fish, or what is called seafood fried rice which is shrimp, squid, and fish together. Main thing to keep in mind, what ever you use, needs to be cooked first, then cut into bite size pieces.
  • Heat sesame oil in a large skillet on medium heat. Add onion, garlic, peas, and carrots. Stir fry until tender. Crack eggs one at a time into a bowl, adding each one after being cracked, to the pan and scramble, mixing throughout vegetables.
  • Add rice, meat of your choice and soy sauce to the pan. Stir to combine all ingredients and remove from heat. Serve as a main dish or a side dish.

  • 6 slices bacon, chopped
  • 1 large onion, diced
  • 2 cloves garlic, smashed and minced
  • 1 head cabbage, cored and sliced
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground black pepper
  • 1/8 teaspoon paprika

Instructions
 

  • Place the bacon in a large stockpot and cook over medium high heat until crispy, about 10 minutes. Add the onion and garlic; cook and stir until the onion caramelizes; about 10 minutes. Immediately stir in the cabbage and continue to cook and stir another 10 minutes. Season with salt, pepper, and paprika. Reduce heat to low, cover, and simmer, stirring occasionally, about 30 minutes more. Serve.
