Vermicelli Rice (Rice Cooker)

This is a Middle Eastern/Lebanese dish, sort of, and for those in Asia, this does not use vermicelli rice noodles, this uses vermicelli pasta noodles. If you don't have vermicelli pasta noodles, angle hair pasta will work just as well, in a pinch, spaghetti works too.

Ingredients
  

  • cups dry Jasmine rice, or your choice of long grained white rice
  • ½ cup dry vermicelli pasta, broken into ½ inch or smaller pieces
  • cups water
  • ½ onion, diced
  • 2 tablespoons butter
  • 2 tablespoons extra light olive oil
  • 1 teaspoon salt

Instructions
 

  • Rinse the rice several times until the water runs clear, this is removing some of the starch. When rinsed well, set aside.
  • Heat your rice cooker by pressing the Cook switch, add the oil and onion, cook, stirring often the onion until soft.
  • Add the butter, when melted, add the vermicelli pasta and stir constantly, until nicely toasted and golden brown. The smell will be that of popcorn.
  • When the pasta is golden brown, add the rice and salt and stir to coat with the butter and oil.
  • Add the water and stir together, add the lid and let the rice cooker cook a normal cycle. When the rice cooker switches to Warm mode, unplug and leave the rice cooker covered for 15-20 minutes, don't worry, you will still have hot rice.
  • Fluff the rice with a rice paddle and serve.

Variants: 1. Use chicken or beef broth in place of water.

Ingredients
  

  • 1 cup dry Jasmine rice, rinsed and drained
  • 1 tablespoon extra light olive oil
  • ½ teaspoon lemon pepper, or more to taste
  • ¼ teaspoon dried basil
  • cups chicken stock, homemade or from powder, Shortcut
  • 2 tablespoons lemon juice, or lime juice if no lemons availalble
  • 1 tablespoon unsalted butter, room temperature
  • pinch salt
  • 1 tablespoon ponzu sauce, optional, Shortcut

Instructions
 

  • To your rice cooker, add the oil, rinsed and drained rice, lemon pepper, and basil, set the rice cooker to Cook. You are NOT using the cover yet. Stir to mix the oil into the rice, and stir often as the cooker heats and the rice turns translucent. This will take 3-5 minutes once the the cooker comes up to temperature.
  • Now pour in the chicken stock, lemon juice, butter, and a pinch of salt as desired. If using the ponzu sauce, add that now as well. Give everything a stir to combine.
  • Cover with the lid, leaving the setting on Cook.
  • When the rice cooker switches to Warm setting, leave the cooker covered for 3-5 minutes, then turn off, fluff with a rice paddle.
  • Serve as a side dish with any meal.

  • cups dry Jasmine rice, rinsed and drained

  • 1 pinch saffron threads, (6-8 threads)
  • 1 tablespoon madras curry paste, or 1½ teaspoons of yellow curry powder

Instructions
 

Stovetop Method

  • In a saucepan, add all the ingredients and stir together.
  • Heat the saucepan to boiling, stirring occasionally. Reduce heat to low and cover for 10 minutes.
  • Remove from heat, fluff rice, serve as a side dish with any Asian dish.

Rice Cooker Method

  • Add the rinsed rice, curry powder, and saffron to your rice cooker.
  • Add the broth and stir together.
  • Cover and set the cooker to Cook setting and let it complete the cook cycle and automatically switch to Warm setting.
  • Unplug the cooker and fluff rice with a rice paddle. Serve as a side dish.
  • Serve as a side dish, enjoy.

Notes

Shortcut: Chicken Broth (Pressure Cooker).
Variant: 1. Use yellow curry powder in place of the madras paste, excellent curry flavor with a bit less heat.

  • 1 recipe homemade rice a roni, Shortcut
  • 2 cups chicken gravy, homemade or from a packet, Shortcut

Instructions
 

For the Boxed Rice A Roni

  • Melt the butter in a large non stick pan, when hot, add the package of rice a roni, not the seasoning packet, saute until the pasta is golden brown.
  • Add the water and seasoning packet, and simmer for 2-3 minutes.
  • Add the gravy and stir in, bring to a boil, then cover and remove the pan from heat.
  • Let the pan sit for 5 minutes, covered, no peaking.
  • Serve as a side dish with any meal.

For the Homemade Rice A Roni

  • Prepare the rice a roni per the recipe instructions, either the skillet method or the rice cooker method.
  • Just before the rice a roni is done cooking, prepare the gravy, either from homemade or from a packet.
  • When the rice a roni is done, add the gravy and stir in.
  • Serve as a side dish with any meal.

Notes

Low cost (for Thailand) if making the Rice A Roni from homemade and I prefer to use the rice cooker method.

Yep, fancy name, it is French for the herb mixture. You can buy the dried herb mixture in grocery stores, but look for one that does not have lavender, that is an American addition, not the true French version, so skip the lavender. Ingredients
  

  • 1 tablespoon unsalted butter
  • ½ small onion, finely diced
  • 1 cup dry Jasmine rice, or any long grain white rice
  • cups chicken stock, fresh or from powder
  • ½ teaspoon salt
  • ½ cup fresh cilantro leaves, minced, stems are no problem as well

Instructions
 

  • Add the butter to your rice cooker and place on Cook. When the butter is melted, add the onion and cook until the onion is softened and translucent, about 5 minutes.
  • Add the rice, stock, salt, and cilantro, and stir together. Place the lid on the cooker and allow to cook until it switches to Warm setting. Leave on Warm for 10-15 minutes.
  • Fluff with rice paddle, serve as a side dish and enjoy.

Notes

Variant: 1. Add a diced poblano chili which will add to the green color of the rice, and the chili and cilantro can be optionally puréed, provided by H. Stave, United States.

Or use a rice cooker, which is what I did and this is great rice! This is from a good American friend, Brian, who lives in northeastern Thailand, and he makes this often. This has a twist to it, flavored with star anise and cardamom.

Ingredients
  

  • 2 cups dry white rice, rinsed
  • cups cold water
  • 2 whole star anise
  • 3-4 cardamom pods, or ⅛ teaspoon ground, see Step 1

Instructions
 

  • For the cardamom pods, you can use fresh, dried, or even ground. Fresh would be preferred, If using dry, soak the pods for at least an hour before use. For ground cardamom, use ⅛ teaspoon. You can also use ⅛ teaspoon of cinnamon in place of cardamom.

Stovetop Method

  • Place everything in a pot and bring to a boil, reduce heat to a simmer and cook for 8 to 10 minutes.
  • Remove the star anise and cardamom pods, fluff with a fork and serve as a side with any Asian dishes.

Rice Cooker Method

  • Add everything to your slow cooker, stir together. Cover and set to Cook setting.
  • When rice cooker switches to Warm, unplug, remove the star anise and cardamom pods, fluff, serve as a side dish. Enjoy.
