3-Ingredient Crockpot Ranch Pork Chops I
This is a quick to put together meal with only 3 ingredients and two you can make from shortcuts for cost savings. I made this yesterday 14 Sep 2017 and used bone in pork chops I found in Tesco, thick cut as well, and wow is this good! I think thick cut pork loin would equally as well. Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
- 4 pork chops, bone in, thick cut
- 1-2 tablespoons dry ranch dressing mix, OR make from a shortcut
- 2 cups chicken gravy, OR make from a shortcut
Instructions
- Lightly butter the slow cooker insert. Place chops in the slow cooker.
- Sprinkle chops with the ranch dressing mix.
- Pour the gravy over the top. Cover and cook on low for 6 to 8 hours. Do not remove the lid before 6 hours, check for tenderness, if tender, serve, if not continue cooking until 7 or 8 hours.
- Serve with mashed potatoes and gravy from the slow cooker and a vegetable for a complete meal.
Notes
The pork chops I found at Tesco, thick cut, bone in, 250 grams each, were 160 Baht each making this about $4.70 per serving but these are so good I will make this once every 3 months, when I go to the city for my address report, I will look in Makro for these and the cost should be less. I will also test this recipe with just thick cut pork loin, which would make this a low cost meal.
Shortcuts: Ranch Dressing Mix, Chicken Gravy.

Slow Cooker Sausage & Potatoes II
Potatoes and sausage, not only does this sound good, it is delicious! Use any sausage you like, use any potatoes you like. I made this on 7 May 2022 and was very well liked by the family! For this dish I use my large 6 quart slow cooker. Link to the shortcut is listed in the Recipe Notes section.
Equipment
- Slow Cooker (6+ quart)
Ingredients
- 1 kilo sausage links, cut into 1 inch pieces, (2 lb)
- 1 kilo potatoes, peeled, cut into 1 inch pieces, (2 lb)
- black pepper, as desired
- 1 large onion, chopped
- 6-12 cloves garlic, minced
- 1 can condensed cream of chicken soup, Shortcut
- ¾ cup chicken stock, fresh or from powder
- 2 tablespoons Worcestershire sauce
- hot cooked spaghetti, for serving, optional
- 1-2 carrots, peeled and chopped, optional
Instructions
- Lightly oil or butter your slow cooker insert. Add the potatoes and spread out to make an even layer. Season with black pepper as desired. Optionally, you can add 1-2 chopped carrots along with the potatoes.
- Sprinkle the onions and garlic, over the potatoes.
- For those in Thailand, I use BMP brand, Combination Sausage Scrap, which I get Makro. It is three types of sausage and is good quality.
- Add the sausage in the final layer.
- In a mixing bowl, add the soup, broth, Worcestershire sauce and mix together. Pour the mixture over the sausage.
- Cover and cook on Low setting for 6-8 hours. Checking the tenderness of the potatoes at 6 hours, and continue cooking if needed for tender potatoes.
- Serve and enjoy.
- As a variant, serve with cooked spaghetti. This was requested by a niece living with us, and I must say, it is a great addition.
Notes
Figure about 150 Baht for good sausage. For 8 servings, this is about 50 cents per serving.
Shortcut: Condensed Cream of Chicken Soup.
Variants: 1. Serve with hot cooked spaghetti (highly recommended). 2. Add 1-2 chopped carrots.

Root Beer BBQ Pork Ribs
Sounds good, and the ribs I would use are the short ribs found in any Tesco or even fresh markets but watch the cook time. I will verify this when I make them. This is a slow cooker recipe that will also need your broiler as well. Link to the shortcut is listed in the Recipe Notes section.
Ingredients
- 1 1/2 kilos pork ribs
- 2 cans Root Beer, OR Ginger Ale aka Ginger Beer
- 2 cups BBQ sauce, OR make from a shortcut
- salt and pepper, as needed
- spring onions, thinly sliced, for garnish
Instructions
- These are the ribs I get at Tesco. Look for the strips that are meaty, remove the distorted bones on the ends and save for a soup if you wish, and just go with the nice straight bones. The bones are only about 3 inches long.
- Remove silver skin from the back of the ribs if that is present. Cut the ribs into 3 bone sections, sprinkle generously with salt and pepper and place in the slow cooker.
- Pour the root beer into the slow cooker, cover, and cook on Low setting for 5 hours, do not remove the cover.
- Check the ribs at 5 hours, if very tender, you are almost done, if not tender, continue cooking and checking each hour. Once the ribs are tender, carefully remove from the pot and set on a foil lined baking sheet.
- Brush the ribs with BBQ sauce and broil for a few minutes, charring a bit is ok, then flip the ribs over, brush more sauce, and broil for a few more minutes, again, a bit of char is ok. Remove to a serving tray, sprinkle some thinly sliced spring onion on, and serve.
Notes
Pork ribs are about 115 Baht/kilo. 1 1/2 kilo would be about 173 Baht. For 4 servings, this is about $1.27 per serving, over all good price for a quality meal, after all, who does not like ribs.
Shortcut: BBQ Sauce.

Pork Knuckles & Sauerkraut (Kombes mit Eisbein und Kartoffelbrei)
This is a true German dish and if you have ever had pork knuckles, this is a good way to prepare them compared to just roasting, which is also very good.
Ingredients
- 2 pork knuckles, or 4 ham hocks
- 3 cups sauerkraut, rinsed and drained
- 4 cups beef stock
- 1 cup dark beer
- 1 medium onion, diced
- 2 teaspoons juniper berries
- 3 bay leaves
- 3 tablespoons Worcherstershire sauce
- salt and pepper, to taste
- mashed potatoes, to serve
Instructions
- Place the pork knuckles in your slow cooker.
- Mix together remaining ingredients except the mashed potatoes and pour over the knuckles. Cover and cook on Low setting for 8 hours without removing the lid.
- Remove the knuckles from the slow cooker. Scoop out some sauerkraut and place on one side of each plate, place a pork knuckle on top of the kraut, then place a scoop of mashed potatoes on the other side of the plate. Serve.
Notes
These are available at Makro, frozen, each is 800 grams and cost is 200 Baht each. And I recently seen them 4 in a bag, frozen in Tesco, cannot remember the price. If serving one knuckle for 2 people (easily done), the cost would be about $2.95 per person. I will add the cost of sauerkraut when I find that. More expensive than other meals listed here but is a great treat for yourself.

- 1 teaspoon dried oregano

- Serve with mashed potatoes with some of the juice spooned over the top.
- Serve in a tortilla with Cheddar cheese.
- Serve with cilantro lime rice and black beans.

Variants: 1. Use pork loin in place of the pork shoulder. 2. Use a pork roast in place of the pork shoulder.

Pork Tacos (Slow Cooker)
I found this recipe as originally stated as roast in the oven with the meat stacked on a skewer and called for achiote paste, which I am not going to find nor do I think I can make that here. I am going to write this as a slow cooker recipe as well.
Equipment
- Slow Cooker
Ingredients
For the Marinade
- 1 tablespoon chili powder
- 1½ teaspoons garlic powder
- 1½ teaspoons dried oregano
- 1½ teaspoons ground cumin
- 1 teaspoon salt
- 1½ teaspoons black pepper
- 6 tablespoons vinegar
- ½ cup pineapple juice, from a carton, not fresh
- 1½ kilos pork shoulder, cut into ¾ inch cubes, (3 lb)
To Prepare
- 6-10 tortillas, corn or flour
- onion, chopped
- fresh cilantro, chopped
- salsa, of your choice, Shortcut
Instructions
- In a mixing bowl, mix together the marinade ingredients except the pork.
- Cube the pork and add to the mixing bowl, and mix together with the marinade. Cover and place in the fridge to marinate for 2-24 hours.
- After marinating, place the pork in your slow cooker and cook for 6-10 hours on Low setting, remove and drain the meat, place a few spoons of meat on a tortilla, top with some onion, cilantro, and salsa, fold and enjoy!
Notes
The pork would cost about 100 Baht/kilo, so 150 Baht for that. The tortillas, flour, import from the states (actually good quality) will run 240 Baht/pack of 10. For 10 servings, this is about $1.15 per serving, not bad for visiting friends and family.
Shortcut: Salsa.
