Mayonnaise Roasted Turkey

This is going to be how I prepare a turkey in a week or so, sounds really good. This recipe calls for fresh herbs so unless you are in a big city, you may have to go with dried herbs.

Ingredients
  

  • 1 whole turkey, cleaned, I am going to try this with a 4 to 5 kilo turkey
  • 6-7 fresh sage leaves, rough chopped
  • 5-6 fresh thyme stems
  • 2-3 fresh rosemary sprigs
  • 2-3 fresh oregano sprigs
  • 1 1/2 cups mayo
  • salt and pepper, to taste, be generous
  • 3 stalks celery, go with the import for this
  • 1 large onion, rough chopped
  • 1/2 cup butter, melted, this is 1/2 of a standard block

Instructions
 

  • Preheat your oven to 230 C. Get out a baking pan, with a rack preferably. Set cleaned turkey in the baking pan.
  • Remove the leaves from the herb stems, mix together sage, thyme, rosemary, and oregano with the mayo, mix well. Rub the mayo mixture all over the outside and inside of the turkey. Salt and pepper the turkey generously.
  • Place the celery and onion inside and outside of the turkey, and insert that butter into the turkey as well.
  • Roast for 30 minutes, then insert an oven safe thermometer into the thickest part of the thigh, so you can read the temp from outside the oven, do not touch any bones, turn the heat down to 180 C and continue cooking for about 2 hours or until internal temp reaches 75 C, then check the thickest part of the breast, without touching bone as well, if 75 C, remove from oven and cover with foil and let rest for 20-30 minutes. Serve. Reserve the pan drippings for gravy, recipe listed below.

Notes

Based on initial pricing from the turkey farm here (yes, they are still free range, many come through my yard every day) the cost of a turkey of 4 kilo is 600 Baht, plus 100 Baht for cleaning the bird, which I have no problem with! So for 700 Baht, you have turkey to feed a truckload of people and even make additional recipes. Not a cheap meal, but overall, good value since you can get several recipes out of this! For 8 servings (figuring on the low end) this is about $2.58 per serving, not a cheap meal but excellent for friends and family once in a while.

Ingredients
  

  • 4-5 chicken breasts, amount depends on what you can fit in your pan, think cast iron as well, boneless and skinless
  • 6 slices bacon, thick cut preferred
  • Mozzarella Cheese, thin slices to cover the chicken
  • 1 cup heavy cream
  • 1/2 teaspoon black pepper
  • salt, to taste
  • 1/2 cup chicken stock, fresh or make from powder
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh parsley, chopped
  • 3/4 cup Parmesan cheese, grated
  • 1 cup spinach, fresh or frozen, chopped
  • 1/2 cup sun dried tomatoes, or go with 1/2 cup fresh, chopped
  • olive oil, as needed

Instructions
 

  • Cook the bacon in a large non stick pan until crispy, then remove the bacon and drain out the fat to a bowl to reserve. Chop the bacon and set aside. Using the same pan, add 1 tablespoon of bacon fat and a splash of olive oil, 2-3 tablespoons, and heat to medium.
  • Add the chicken and cook for about 4-5 minutes on each side or until browned on each side and cooked through. Remove the chicken and set aside. Same pan, add the heavy cream, chicken stock, garlic powder, parsley, salt and pepper, and Parmesan cheese. Whisk over medium heat until this begins to thicken then add in the spinach and tomatoes and turn heat to a low simmer.
  • Now add in the chicken one piece at a time and make sure it is coated with the sauce. then place Mozzarella slices on each piece and sprinkle some crumbled bacon over each one. Cover for a minute or two to melt the cheese. Server over pasta of your choice.

Notes

Boneless breasts run about 60 Baht/kilo (skin is on, takes seconds to remove the skin and trim away any fat), 4-5 breast might be 60-70 Baht. I will go with 70 Baht. For the Mozzarella cheese, sliced thin, this would be maybe 1/2 package so about 70 Baht for this. For the Parmesan cheese, figure about 140 Baht. For 4 servings, this is about $2.06 per serving. High cost but would be a good meal for visiting friends and family.

I have not had salmon in many years, I can get that in the city, it is costly so not a cheap meal, but this does sound good.

Ingredients
  

  • 750 grams salmon fillets, (I think the 140-160 gram / 5-6 oz fillets would be perfect)
  • â…“ cup soy sauce
  • â…“ cup brown sugar
  • â…“ cup water
  • ¼ cup olive oil
  • garlic powder, to taste
  • salt and black pepper, to taste
  • lemon zest, to taste

Instructions
 

  • Season salmon fillets with pepper, salt, lemon zest, and garlic powder to your liking. In a bowl, mix together the soy sauce, brown sugar, water, and olive oil until the sugar is dissolved. Place the seasoned fillets in a large resealable bag with the soy mixture, seal, and turn to coat, refrigerate for 2 hours, turning every 30 minutes.
  • Heat your grill to medium heat. Oil the grill and place the salmon on the grill flesh side down and discard the marinade. Cook salmon for about 6-8 minutes per side or until the flesh flakes easily with a fork. Serve.

Notes

For 6 servings, this comes out to about 1.60 per serving, as I make this and get more accurate pricing I will update this.
Simple Roasted Turkey

Simple Roasted Turkey

Yep, you read that right, Roasted Turkey! There is free range turkeys raised right here in Thailand. These are not like Butterball turkeys from the states, or the cost, looks more like a wild turkey when in the pan. This is a simple and basic roast turkey recipe. I made this on 17 Oct 2016 and it is good! Very tasty, and I would say the taste is better than a US pen raised turkey.

Ingredients
  

  • 1 whole turkey, cleaned, I am going to try this with a 4 to 5 kilo turkey
  • 1/2 cup butter, unsalted, softened
  • salt and pepper, to taste
  • 8 cups chicken stock, fresh or from powder
  • stuffing, see Step 2

Instructions
 

  • Preheat your oven to 220 C.
  • For the stuffing, you are free to use bread stuffing, or you can do what I will do and use carrots, radish, and onions.
  • With your cleaned turkey, place that on the rack in your baking pan, if you do not have a rack, cut a couple of carrots and radishes in half lengthwise and put those on the bottom of the pan, then put the turkey on that, this is to keep the turkey out of the stock and drippings. (The free range birds have big legs since they do have to walk and forage for food, not stuck in a pen.)
  • Fill the body cavity with bread dressing if you like, or carrots and radishes cut in half lengthwise and some onion wedges. Rub the entire outside of the turkey with soft butter then season with salt and pepper to your liking. Pour 2 cups of stock into the pan and place the turkey in the oven. Cover the turkey with a tent of aluminum foil.
  • Roast for 1 hour at 220 C, then reduce the temp to 170 C. Using the stock in the pan, baste the turkey every 30 minutes (sorry you do not get to relax for 4 hours), when the drippings in the pan run low, add more stock, 1-2 cups at a time. Remove the aluminum foil tent after about 2 hours of cooking.
  • Roast the turkey about 4-5 hours, start checking the internal temp at at about 3 hours, measuring from the thickest part of the thigh without touching bone, the target temp is 80 C or 180 F. When you have reached the target temp, remove the turkey from the oven, and either let it sit on the rack or move to a serving platter. Let the turkey rest for about 20 minutes, it will retain the temp, no issues there. (I apologize for this photo, I tested that right leg, it was very good.)
  • Now using the drippings, prepare the gravy. When the gravy is prepared, serve the turkey with mashed potatoes on the side. (I messed up the gravy and went with butter instead as a quick replacement.)

BBQ Chicken Dip

  • 500 grams Cream cheese, this is 2 blocks, softened
  • 1/4 cup mayo
  • 1/4 cup BBQ sauce, OR make from a shortcut
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup Mozzarella Cheese, shredded
  • 1 cup red onion, chopped, plus more for garnish
  • 1/2 cup cilantro, chopped, plus more for garnish
  • 2 cups chicken, cooked and shredded
  • 1/2 cup Cheddar cheese, shredded

Instructions
 

  • Preheat your oven to 180 C and get out a baking dish.
  • In a large bowl, mix together the Cream cheese, mayo, and BBQ sauce of your choosing, using the shortcut for this will save you some money. Once that is mixed, stir in the Mozzarella cheese, salt, garlic powder, onion, cilantro and shredded chicken. Once combined, spread this into your baking dish.
  • Sprinkle the Cheddar cheese evenly over the top. Bake for 20-25 minutes or until the the Cheddar cheese is melted, bubbly, and starting to brown up just a bit.
  • Remove from the oven, garnish by drizzling with some BBQ sauce then topping with a bit of cilantro and onion.
  • Serve as a dip with a big bowl of potato chips OR, spoon onto tortillas and roll up, then enjoy.

Notes

Chicken will run about 30-40 Baht/500 grams which should be good for 2 cups of shredded chicken. 30 Baht being thighs, 40 Baht being breasts, I would go with a bit of both, so I will say 35 Baht for the chicken. Cream cheese will run about 240 Baht, the Mozzarella cheese would cost about 90 Baht, and the 1/2 cup Cheddar cheese will run about 45 Baht. For 6 servings, this is about $2 per serving, a bit less for 8 servings. This sounds like a great dish for a every once in a while meal or appetizer.

This is truly a one meal, for the time it takes potatoes to cook, the meal is ready. You can tailor this for as many or as few people as you are serving. Ingredients
  

  • 1 kilo potatoes, cut into large pieces
  • 1 kilo smoked sausage, cut into 1 inch pieces
  • 4 ears sweat corn, cut each ear into 3 pieces
  • 1 1/4 kilos fresh shrimp, whole, or you can remove heads if you want
  • 4 bay leaves
  • 1/4 cup Old Bay seasoning, OR make from a shortcut, reserve 1 teaspoon aside
  • lemons, cut into wedges
  • melted butter
  • cocktail sauce, OR make from a shortcut, optional

Instructions
 

  • Fill a large pot with water, about 8 quarts (liters) and bring to a boil.
  • Add the Old Bay seasoning and bay leaves, reserve 1 teaspoon of Old Bay for use later. Place the potatoes in the water and cook for about 8-10 minutes or until they are just beginning to soften when pierced with a fork. Then add the sausage and cook for another 5 minutes. Then add the corn and the corn and cook for another 5 minutes. Finally, add the shrimp and cook for 3-4 or until the shrimp is pink and cooked through.
  • Remove everything and drain well and place on a large platter or two (or just put down some newspapers on a table if eating outside). Sprinkle the remaining Old Bay over the meal and drizzle with melted butter. Set out lemon wedges as well. For the butter, you can also serve melted butter in individual small bowls for each person. Optional, serve with cocktail sauce.

Notes

One kilo of smoked sausage is between 100 and 200 Baht depending on where you get it from, I will use 150 Baht as an estimate here. Shrimp go with about 150 Baht as well, much less if you can get from a local fisherman. Corn and potatoes, you can get them locally. This comes to $2.20 per serving for 4 servings, and about $1.50 per serving for 6 servings. Not a cheap meal but would be a hit for visiting friends and family.
Variants, add fresh clams, add fresh crabs or just large crab claws.

  • 1 kilo beef, any cut, cut into 1 inch cubes
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons garlic powder

  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 1 packet dry onion soup mix, OR make from a shortcut
  • 1 3/4 cups beef stock, fresh or from powder
  • 1 cup water
  • 1 teaspoon beef stock powder
  • 1 tablespoon Worcherstershire sauce
  • salt and pepper, to taste
  • dried parsley, for garnish

Instructions
 

  • In a large bowl combine flour, onion powder, garlic powder, salt and pepper. Coat eat piece of beef lightly in flour mixture. In a large skillet, heat olive oil as needed over medium-high heat. Brown beef in batches, Remove to a paper towel lined plate. When all beef is browned, add to your slow cooker.
  • In a small bowl combine soup, onion soup mix, beef broth, Worcestershire sauce, beef stock, beef stock powder, water, alt and pepper to your liking. Mix well and pour over beef. Cook on Low setting for 6-8 hours until gravy has thickened a bit and the beef is cooked through. Serve over egg noodles, rice, or mashed potatoes. Garnish with parsley if desired and a vegetable on the side.

Notes

The beef will cost about 200-250 Baht/kilo. Figuring 250 Baht, for 4 servings, this is about $1.84 per serving, less for 6 servings. Not a cheap meal, but would be a great meal for visiting friends and family.

  • 500 grams ground beef, OR minced pork
  • 1 onion, diced
  • 1 cup beef stock, fresh or from powder
  • 2 cups milk
  • 1 1/2 cups dry macaroni, or any bite site pasta
  • 1 tablespoon corn starch
  • 2 cloves garlic, smashed and minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cracked black pepper
  • 1 1/2 cups Cheddar cheese, shredded

Instructions
 

  • In a small bowl, mix the paprika, corn starch, pepper, and garlic powder.
  • In a large non-stick skillet, brown the ground beef, garlic, and onion until the meat is no longer pink. Drain the fat.
  • Add milk, broth, and pasta to the beef. Stir in cornstarch and spices. Bring to a boil, reduce heat and simmer covered for 9-12 minutes or until pasta is tender.
  • Remove from heat and stir in the cheese, mix until melted, serve.

Notes

Ground beef would cost about 150 Baht/500 grams, minced pork runs about 60 Baht/500 grams. The cheese would be about 140 Baht as not a full block would be needed. For 4 servings using beef, this is about $2.13 per serving, using pork, this is about $1.48, a bit more reasonable and would be a good meal with friends and family, once in a while.

This is an excellent dish! I made this on 3 Sep 2016, very easy to put this together with common and minimal ingredients. I found this recipe on a recipe site and read all the reviews and made a few changes based on the reviews. This recipe reflects those changes.   • 4 chicken breasts, boneless and skinless
  • 1/2 cup Dijon mustard
  • 1/2 cup mayo
  • 1/2 cup evaporated milk
  • 1/3 cup dry bread crumbs, OR use make with a shortcut on this site
  • 200 grams Mozzarella Cheese, shredded, this is one block, Caroline brand
  • black pepper, to taste

Instructions
 

  • Preheat your oven to 180 C (350 F). Lightly grease a 9x13 baking dish with butter, set aside. Pat the chicken dry with paper towels.
  • In a shallow dish, whisk together the mustard, mayo, and milk. In another shallow dish, mix together 2/3 the cheese and bread crumbs. Photo shows my cluttered counter, the cheese and bread crumb mix, the milk mix, and the greased baking dish. Set everything up like an assembly line to make this go very fast. And for those paying attention, I did swap the order of the plates, milk mix, breadcrumbs, then the baking dish.
  • Take each chicken breast and coat both sides in the milk mix, then coat in the bread crumbs mix, place in the baking dish.
  • Pour the remaining mustard and milk mixture over the chicken.
  • Then sprinkle on the remaining cheese. Add black pepper if desired.
  • Bake for 30 to 45 minutes until cooked through, cut one breast in half to check. Serve. On pasta is great with some of the sauce spooned over the pasta, and a vegetable on the side would make this a complete meal.

Notes

Chicken breasts will run about 67 Baht/kilo boneless with skin on, just remove the skin and you are set. 4 breasts would likely be less than that, but I will figure at 67 Baht. The block of 200 grams of cheese will cost about 142 Baht. This is about $1.55 per serving for 4 servings.

Slow Cooker Ham & Potato Dinner

Sounds great and easy! This is a classic old time dish just made in a pot on the stove and has been adapted to a slow cooker meal. On my to cook list for sure. Link to the shortcut is listed in the Recipe Notes section.

  • 2 cups ham, cubed
  • 5 cups potatoes, washed and skin on, sliced
  • 3 cups yard beans, cut into 1 inch pieces
  • 1 can condensed cream of chicken soup, OR make from a shorcut
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium onion, diced
  • 2 cups Cheddar cheese, shredded, divided

Instructions
 

  • Add to the slow cooker the soup, milk, salt, and pepper, whisk to combine.
  • Add in the potatoes, beans, ham, onion, and 1 cup of the cheese, stir to mix and coat everything, spread out make an even layer. Cover and cook on Low setting for 6 hours. When the time is completed, open the lid and pour on the last one cup of cheese, cover and let the cheese melt, about 15 minutes, serve.

Notes

Two cups of cubed ham is about 100 Baht when the ham is purchased from Makro (only place I can get it where I live). The cheese will run 180 Baht for a block of 250 grams, just use the whole block to be on the safe side. Cost for this meal would be about $1.65 per serving for 5 servings. Higher than the goal for the recipes, but not bad for a hearty meal.
