Ingredients
  

  • 8 chicken breasts, boneless, skinless
  • 250 grams Cream cheese, cut into 1/2 inch slices
  • 250 grams Cheddar cheese, cut into 1/2 inch slices
  • 1 cup milk
  • 1 1/2 cups seasoned breadcrumbs, OR make from a shortcut
  • 1/2 cup Parmesan cheese, grated
  • 4 clove galic, smashed and minced
  • 3/4 cup butter, melted, this is 3/4 regular block
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoons garlic salt, or to taste
  • 1/2 teaspoon paprika

Instructions
 

  • Preheat oven to 180 C. Lightly grease a large, shallow baking dish with butter.
  • Butterfly each breast by slicing in half horizontally through the center, cutting almost but not completely through. Place one slice each of Cheddar and Cream cheese in the center of each breast. Close again as if placing between the pages of a book. Set aside.
  • Pour the milk into a shallow bowl. In a separate bowl, combine breadcrumbs and Parmesan cheese. Carefully dip each breast first in milk, then in breadcrumb mixture, patting lightly to firmly coat. Place breasts side by side in a single layer in the prepared baking dish, tucking edges under to seal.
  • Melt butter in a small saucepan over medium heat. Stir in lemon juice and garlic, and drizzle evenly over chicken. Season breasts with garlic salt and paprika, if using. Bake for 30 minutes, or until no longer pink in center and juices run clear. Let rest for 5 minutes, serve.

Notes

The chicken, for 8 breasts, will cost about 150 Baht. The cheeses, Cream cheese will cost about 120 Baht, the Cheddar will cost about 180 Baht. For 8 servings, this is about $1.65 per serving.

Wedges, Bacon, and Cheese Casserole

This sounds good, probably not the most healthy thing to dine on every day for sure, and not low cost either based on the cheese alone.

Ingredients
  

  • 2 large potatoes
  • 100 grams bacon
  • cooking oil, for frying
  • 200 grams Mozzarella Cheese, shredded
  • 1/4 cup Cheddar cheese, shredded
  • 3 tablespoons fresh dill, chopped
  • salt, to taste

Instructions
 

  • Preheat your oven to 180 C. Get out a square baking dish, 8x8 or 9x9 is fine.
  • Cut the potatoes into wedge shapes and deep fry until golden brown. Drain on several layers of paper towels.
  • Chop the bacon and fry in a separate pan until crispy. Drain on paper towels.
  • Layer half of the potatoes in the square baking dish. Sprinkle half of the Mozzarella cheese over the potatoes. Sprinkle half of the dill over the cheese. Add all of the bacon in a layer on of the dill. Add all of the Cheddar cheese in a layer over the bacon. Add the remaining potato wedges in a layer and sprinkle with some salt to taste. Top with the remaining Mozzarella.
  • Bake for 20 minutes or until the cheese is melted and just starting to brown. Serve and enjoy.

Notes

The Mozzarella cheese will cost 140 Baht/200 gram block, the Cheddar cheese, if you buy a 250 gram block and shred 1/4 of that, the cost would be about 45 Baht. The bacon will cost about 75 Baht/100 grams. For 2 servings, this would cost about $3.82. Not cheap but sounds good.

This is an old recipe that is very commonly used to make pot roasts in a slow cooker using just two season packets and a gravy packet. Optionally you can add potatoes, carrots, and celery. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 1 beef roast, or any large cut or two
  • 1 packet dry ranch dressing mix, OR make from a shortcut
  • 1 packet dry gravy mix, OR make from a shortcut
  • 1 packet dry Italian salad dressing mix, OR make from a shortcut
  • 1 cup water
  • potatoes, optional, washed and quartered
  • 1 cup celery, optional, chopped
  • carrots, optional, washed and sliced

Instructions
 

  • Place beef in your slow cooker. Combine the mixes in an small bowl and sprinkle over the roast. Pour in water on the side of the pot into the bottom of the pot. Cook on Low setting for 6-8 hours or until fork tender.
  • During the last 3 hours, add the potatoes, carrots, and celery, if using, to the pot.

Notes

Figure a 2 kilo roast, or any large cuts of beef at 200 Baht/kilo. For 6 servings, this is about $1.96 per serving. Many times you may be able to get local raised beef for 150 Baht/kilo.

  • 1 loaf sourdough bread, unsliced
  • 250 grams Cheddar cheese, thinly sliced
  • 200 grams smoked bacon, chopped, fried crispy
  • 1/2 cup butter, melted, 1/2 standard block
  • 1 tablespoon dry ranch dressing mix, OR make from a shortcut

Instructions
 

  • Preheat your oven to 180 C.
  • Using a sharp bread knife cut the bread going both directions. Do not cut through the bottom crust. Place slices of cheese in between cuts. Sprinkle cooked bacon on bread, making sure to get in between cuts. Mix together butter and Ranch dressing mix. Pour over bread. Wrap loaf in foil and place on a baking sheet. Bake for 15 minutes. Unwrap. Bake for an additional 10 minutes, or until cheese is melted.

Notes

The cheese would cost about 180 Baht/250 grams, the bacon would cost about 130 Baht/200 grams. I will take a guess at 6 servings, this would cost about $1.52 per serving, not cheap but but sounds really nice for a once in a while appetizer for visiting family and friends.

I love sardines, and I love eggs, this is a win win right here. I have changed this to reflect using individual Pyrex dishes. I made this on 6 Aug 2017, and it is yummy! This makes a very filling breakfast, lunch, or dinner. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 1 tin sardines in olive oil, (120 g / 4¼ oz), see Step 2, Shortcut
  • 1 small shallot, sliced
  • fresh parsley, chopped
  • 2 cloves garlic, minced
  • black pepper, to taste
  • 2 eggs, chicken or duck

Instructions
 

  • Preheat your oven to 220°° C (425° F). When the oven is hot, heat a small baking dish for 5 minutes in the oven. I used a Pyrex serving dish, the 1¼ cup size dish.
  • For the sardines, use a tin of sardines in olive oil, Ayam brand is the only one I found with oil and is highly recommended. Or use 2-3 pieces of sardines from a homemade batch of sardines. Drain the tin and place the sardines in another small bowl and use a spoon and just break the sardines into chunks. Add the shallot, garlic, and parsley and mix together, season with black pepper as desired.
  • Remove the baking dish from the oven, add the sardine mixture to the heated dish and return to the oven for 5-6 minutes.
  • Remove the dish from the oven, crack two eggs into a bowl, and slide them into the heated dish, season with salt and pepper to your liking, return the dish to the oven for another 7 minutes or until the whites are set. Remove the dish and place on the counter and cover with a lid for 5 minutes (the eggs will continue to cook, and it needs to cool, can actually let it sit for 10 minutes and you will have hot sardines and eggs).
  • Serve with toast for a good breakfast or with a salad for a dinner.

Notes

If using tinned sardines, 1 tin per serving at 59 Baht, this is about $1.74 per serving. If making sardines at home, the cost will only be slightly less due to the cost of the olive oil needed. Not a inexpensive meal but certainly healthy.

Mashed Potato Mac & Cheese

Ingredients
  

  • 2-3 cups mashed potatoes
  • 2 cups Cheddar cheese, shredded, divided
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon unsalted butter
  • 250 grams dry elbow macaroni, or shells
  • 1 cup bacon, cooked and crumbled
  • 1/4 cup spring onion, chopped
  • milk, as needed

Instructions
 

  • Preheat your oven to 180 C and bring a pot of water to a boil. Cook the pasta in the boiling water until just tender, drain and stir in the butter to prevent the pasta from sticking together. Cook and crumble the bacon.
  • Reheat mashed potatoes in your microwave or on the stove top. If potatoes are dry, add a little milk. Transfer to a large bowl for mixing. Fold in the Parmesan cheese, bacon, and 1 cup of Cheddar cheese and stir to combine.
  • Gently fold in noodles until just incorporated then pour mixture into a greased 9x9 baking dish and top with remaining Cheddar cheese.
  • Bake for 10-15 minutes or until cheese topping is bubbling and golden brown. Remove from oven and sprinkle with green onions.

Notes

The bacon and cheese would be the only thing expensive here. Figure maybe two 200 gram packs for 260 Baht, and for the Cheddar cheese, 1 block of 250 grams is 180 Baht, and the Parmesan about 200 Baht. For 6 servings, this is about $3.14 per serving, costly for a leftover meal but does sound good for a once in a while dish.

Grilled Browned Butter Honey Garlic Salmon

Sounds like a very nice way to prepare salmon. Minimal ingredients. This is a fast meal to put together.

Ingredients
  

  • 4 tablespoons butter
  • 4 tablespoons honey
  • 1 tablespoon fresh lemon juice, or lime juice
  • 2 cloves garlic, minced
  • 4 salmon fillets
  • salt, to taste
  • lemon wedges, if desired

Instructions
 

  • Preheat your oven to grill/broil.
  • Place butter in a oven proof pan, cast iron would be ideal, or a regular pan and heat the butter over medium heat, stirring continuously for about 3 minutes, or until the foam settles, then the butter will change in color to a golden brown. Add the honey, lemon juice, and garlic, stir to combine and cook for about 30 seconds to 1 minute.
  • Pour half of the butter to a dish and set aside. Then add the salmon to the pan and sear one side, if one side has skin, then sear that side for 3-4 minutes or until golden brown.
  • Now at this point, if you have a oven proof pan, flip each fillet and place the pan in the oven to broil for another 6 minutes, OR, if you do not have an oven proof pan, flip and place each fillet in a preheated baking dish and pour the liquid from the pan into the baking dish as well, then broil for 6 minutes.
  • To serve, season fillets with salt to taste, drizzle the reserved brown butter over each fillet and serve with steamed vegetables, rice, and a salad.

Notes

For 69 Baht per fillet, this is about $2.03 per serving. High cost but ok for a once in a while meal.
Mushroom Chicken

Ingredients
  

  • 1 whole chicken
  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 2 cups sour cream, OR make from a shortcut
  • 2 cups Mozzarella Cheese, shredded
  • milk, as needed

Instructions
 

  • Preheat your oven to 180 C.
  • Prep the chicken by cutting into the standard 8 pieces; 2 legs, 2 thighs, 2 wings minus the tips, and 2 breasts. Use the carcass to make chicken stock, link provided in the Recipe Notes.
  • Place the chicken pieces in a baking dish in one layer and bake for about 30 minutes.
  • Mix the soup and sour cream together, if it is too thick, thin it out with a bit of milk, this needs to be pourable. Pour the mixture over the chicken.
  • When the chicken is near done (maybe about 30 minutes), sprinkle the cheese over the top and bake until the cheese is melted and starting to brown.
  • Remove from oven, let rest for 5-10 minutes, serve.

Notes

The whole chicken will cost about 180 Baht at a Tesco, more than likely less at a fresh market near you. The cheese will be about 70 Baht for 100 grams. For 4 servings, this is about $1.84 per serving.
Variants: Fry the chicken to brown before baking.

This is a true German dish and if you have ever had pork knuckles, this is a good way to prepare them compared to just roasting, which is also very good.

Ingredients
  

  • 2 pork knuckles, or 4 ham hocks
  • 3 cups sauerkraut, rinsed and drained
  • 4 cups beef stock
  • 1 cup dark beer
  • 1 medium onion, diced
  • 2 teaspoons juniper berries
  • 3 bay leaves
  • 3 tablespoons Worcherstershire sauce
  • salt and pepper, to taste
  • mashed potatoes, to serve

Instructions
 

  • Place the pork knuckles in your slow cooker.
  • Mix together remaining ingredients except the mashed potatoes and pour over the knuckles. Cover and cook on Low setting for 8 hours without removing the lid.
  • Remove the knuckles from the slow cooker. Scoop out some sauerkraut and place on one side of each plate, place a pork knuckle on top of the kraut, then place a scoop of mashed potatoes on the other side of the plate. Serve.

Notes

These are available at Makro, frozen, each is 800 grams and cost is 200 Baht each. And I recently seen them 4 in a bag, frozen in Tesco, cannot remember the price. If serving one knuckle for 2 people (easily done),  the cost would be about $2.95 per person. I will add  the cost of sauerkraut when I find that. More expensive than other meals listed here but is a great treat for yourself.

  • 1 cup mushrooms, fresh sliced, and sauted, or canned
  • 3 1/2 cups tomato pasta sauce, OR make from a shortcut
  • 750 grams Mozzarella Cheese, shredded, divided
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 180 C.
  • Meanwhile, brown ground beef and Italian sausage in a large pot over medium heat, ass salt and pepper as desired. Drain the fat then stir the mushrooms, pasta sauce, half of the cheese, and cooked pasta into the meat in the pot. Once mixed, pour into a baking dish, or two. Sprinkle with remaining cheese.
  • Bake until the cheese is browned and bubbly, about 20 minutes. Lest rest for 5 minutes, serve.

Notes

The beef will cost about 100 Baht/500 grams, the pork about 50 Baht/500 grams, the cheese, that will cost about 425 Baht/600 grams. For 8 servings, this is about $2.12 per serving.
