Banana Pancakes
Two ingredients only. Eggs and a banana, that is it, cannot go wrong here. Sounds good and easy.
Ingredients
- 1 banana
- 2 eggs
Instructions
- In a small bowl, mash the banana with a fork. Crack in the two eggs and whisk into the banana. Heat a pan with a splash of olive oil, pour the mixture in making 2-3 smaller pancakes (or more, smaller is easier to flip). When golden brown on the bottom, flip. Remove to a place when the other side is also golden brown.

Classic Shakshuka
This is a Middle Eastern recipe for basically "use what you have in your fridge and throw in a pan." Basically this is an onion, bell pepper, and tomato dish with eggs on top. Sounds delightful indeed! I made this on 14 Sep 2016, and it is a keeper! On the regular rotation, my comments below.
Ingredients
- 5-6 eggs
- 1 medium onion, diced
- 3 cloves garlic, smashed and minced
- 1 red bell pepper, chopped
- 4 cups tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- pinch red chili flakes, optional, to taste
- pinch cayenne pepper, optional, to taste
- pinch sugar, optional, to taste
- salt and black pepper, to taste
Instructions
- Cook the onion and garlic in a deep large pan until translucent. Then add the bell pepper and cook for another 5 minutes or so until the bell pepper is soft, then add the tomatoes and stir. You can at this point add in other items if you like, such as green chilies, parsley, mushrooms, spinach, etc.
- Reduce heat to a low simmer, add the tomato paste and stir until thickened. Add salt and pepper to taste, then add in chili flakes and/or paprika and/or cayenne for as much spice as you like.
- Once the mixture is thick to your liking, crack in eggs, making sure they are spread out from one another, then cover the pan and allow the mixture to cook and the eggs to set, about 8-10 minutes, depending on how you like your eggs.
- The egg on the left, broken yoke so it just sort of disappeared into the sauce. Other eggs are set but yolks are still runny, perfect.
- Serve with some toast on the side or like me, I served this with 2 Porcupine Meatballs I made another day, excellent meal.

Nothing expensive here, you might be looking at 30 cents per serving.

Eggs in Clouds
I just seen this posted today and it sounds really good, I will have to give this a try.
Ingredients
- 2 eggs
- salt and pepper, to taste
- 1 chilled metal bowl
Instructions
- Preheat your oven to 230 C. Lightly grease a baking sheet using butter.
- Crack the eggs into a bowl and separate the yolks from the white (use a empty water bottle for this) and place the yolks in separate small bowls. Pour the whites into the chilled metal bowl and whisk the whites until stiff peaks form. Mix in whatever you want, think chopped cooked bacon, chopped spring onions, shredded cheese, etc.
- Spoon the whites into even piles on a baking sheet and create a well in the center of each pile with the back of the spoon. Using 2 eggs, make 2 piles, if making 4 eggs, 4 piles. Bake in the oven for 3 minutes.
- Remove baking sheet, add a yolk into each well, bake another 3 minutes. Serve.
Notes
No need for math here, two eggs and added ingredients of your choice, under $1 per person with a serving of two eggs.

Eggs in a Basket
This is certainly nothing new, but this is a creative way to make eggs, and toast, at the same time. I thought this was a notable post just to post something a bit different. A number of years ago, my wife, I, and our daughter were in Pattaya on holiday from Japan (I worked in Japan). One morning when we got up, I asked my daughter if she wanted to go have breakfast with me, she said yes and away we went. We stopped at my favorite place opposite the beach and we were given menus. My daughter was about 6 years old at this point. I ordered my breakfast, and my daughter said she wanted Eggs in a Basket, they of course were not on the menu, the waitress was very nice and helpful and asked if something special was needed, I described Eggs in a Basket and away she went, big smile on my daughter's face. About 10 minutes later, Eggs in a Basket was placed in front of my daughter, she was happy to say the least!
Ingredients
- 2 slices bread, any kind you want, thick sliced is best
- 2 eggs
- butter
- salt and pepper, to taste
Instructions
- Heat a large frying pan to medium low or medium heat. Add a bit of butter.
- Take the bread and using the open end of a drinking glass, cut a hole in the center of each slice of bread. When the butter is melted and hot, add each slice, and crack an egg into the hole in the bread, place the round bread pieces in the pan as well.
- When the bottom is golden brown, like a slice of toast, flip and cook for a few more minutes until golden brown as well.
- Serve with bacon or sausage.
Notes
No math needed here, under $1 per meal of two eggs, even with bacon or sausage. A simple breakfast does not have to be hard.
Variant: 1. Use an egg and milk mix like making French Toast, cut the circles out first, use the egg wash, and put into the pan then add the egg in the center, egg wash the circle and cook that as well.

Sausage Muffins

Ingredients
- 1 cup Bisquick Mix, OR make from a shortcut
- 1/2 kilo sausage, cooked and crumbled, OR make from a shortcut
- 4 eggs, beaten
- 1 cup Cheddar cheese, shredded
- salt and pepper, to taste
Instructions
- Preheat oven to 180 C.
- Mix everything in a large bowl and spoon into a muffin pan filling each cell 2/3 full.
- Bake for 20 minutes.

Eggy Sausage Pie
Great for breakfast or dinner. Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
- 1 tablespoon olive oil
- 1 onion, coarsly chopped
- 6 thin beef sausages, sliced, OR make from a shortcut
- 1 carrot, coarsly grated
- 2 small zucchini, coarsly grated
- 1 cup Cheddar cheese, grated
- 1/4 cup flour
- 1 packet dry chicken and mushroom soup
- 1 1/2 cups milk
- 3 eggs
Instructions
- Preheat oven to 160°C and grease a baking dish.
- Heat oil in a frying pan over medium heat and add onion, cook stirring often for 2 minutes or until soft, remove and place in a bowl.
- Add sausages to frying pan and fry until cooked through, set aside to cool then slice.
- Spoon sausages, onion, carrot, zucchini, and cheese over bottom of baking dish.
- Whisk flour, dry soup, and milk in a bowl until smooth. Add eggs, and salt & pepper to taste, whisk until well combined. Pour over sausage and veggies in the baking dish.
- Bake for 50 to 60 minutes or until set. Allow to rest for 5 minutes before serving.
Notes
Most expensive item would be the beef sausage, probably not over 200 baht, which is about $5.90 or about $1 per meal per person, plus minimal costs for other ingredients, still makes this a very affordable dish.

Thai Omelet
Thai omelets are generally airy and fluffy cooked eggs, not folded over. This is quick and easy, served with rice on the side, is a simple and filling meal for 3 people. This is the basic recipe with no fillings, for fillings, use those of your choice and fold over to make a stuffed omelet, or just mix the fillings into the eggs and no folding over is required.
Ingredients
- 4-5 eggs, chicken or duck
- 1/2 tablespoon fish sauce, OR use a pinch of salt
- 1 teaspoon chicken stock powder, optional
- cooked rice, for serving
- cooking oil, as needed, DO NOT use olive oil!
Instructions
- Put a wok or non stick pan on high heat and add about 1/2 cup of cooking oil. For a non stick with the rounded sides, a 10 inch pan is perfect and you want about 1/4 inch of oil on the bottom of the pan.
- While the pan is heating, break eggs into a bowl.
- Add the fish sauce to the eggs, and chicken stock powder if using that, and beat with a fork until frothy.
- When the oil just starts to smoke, turn the heat to low and quickly pour in the beaten eggs, it will fluff before your eyes.
- Using a spatula, lift the edges to get the liquid part of the eggs onto the pan, do this several times.
- Keep checking the bottom and when getting nice and browned and set well (remember, from pouring into the pan to flipping takes only 45 seconds to a minute) flip the omelet over, 20-30 seconds later, the bottom should be browning nicely.
- Remove from the pan to a plate and serve with rice on the side.

Low cost.
Variants: 1. Add chopped spring onion, chopped tomato, cooked minced pork, cooked chopped chicken, etc, can be added to the egg mix or added to a side when cooking for a folded stuffed omelette. 2. Add a few drops of lime juice or vinegar for a even more fluffier omelette.

Thai Omelette Salad
Delicious Thai Omelete Salad that is hearty as a lunch or add a grilled fish for a great dinner.
Ingredients
- 4-5 eggs
- 3-4 plum tomatoes, quartered lengthwise
- 1 onion, quatered lengthwise
- Thai celery, chopped
- 2 limes
- spring onions, chopped
- fresh cilantro
- fresh red chili peppers
- fresh green chili peppers
- 1-2 teaspoons fish sauce
- 1 1/2-2 teaspoons powdered chicken stock
Instructions
- Chop roughly - celery and spring onions (ca 1,5 cm), divide each tomato in 8 long pieces, cut Onion in half and then into rough long slices (0,5 cm), chop chill very fine. This dish makes a nice lunch by itself, or with some steamed fish or fried chicken for diner.
- Beat the eggs and mix with fish sauce and chicken stock powder. Heat about 2 cups of vegetable oil in a pan or wok, deep-fry the beaten egg on both sides and take out when golden-brown, you might want to deep-fry the egg in two or three goes, put on paper towel to drip of the oil. When cooled out a bit, cut the omelette in to small stripes (1 x 7,5 cm) and mix with the vegetables.
- Press the limes and pour the juice over the eggs and vegetables, add one teaspoon of sugar and some more fish sauce and mix everything. Pull the leafs of the cilantro and put over the mixed salad.
Notes
Fresh vegetables on the local market at about 50-60 Baht (less than $2), 5 eggs at 25 Baht (less than $1). Easily under $1 per person.

Omelette Muffins
Very easy, fillings are up to you with what you have on hand! Can be refrigerated for up to a week and just microwaved to make a quick meal. I make this with homemade hash browns on the side. Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
- 12 eggs, beaten, may need more based on pan type
Fillings
- green bell pepper, chopped
- Cheddar cheese, shredded
- onion, chopped
- ham, chopped
- Italian sausage, cooked, crumbled, OR make from a shortcut
- bacon, cooked, crumbled
- button mushrooms, sliced, canned or fresh
Instructions
- Prepare the fillings of your choice, the ingredients list is just a suggestion of fillings. Any meat items need to be cooked first.
- If not using a non-stick muffin or mini meatloaf pan, lightly butter each cell, add 1 tablespoon or so of each of your fillings to each cell.
- Pour beaten egg into each cell to fill about 1/2 inch from the top. Figure about 2 eggs per cell with a muffin pan and 3 eggs per cell with a mini-meatloaf pan.
- Bake at 180 C (350 F) for 30-45 minutes, until the top is starting to brown. Serve with a side of homemade hash browns for a easy breakfast or dinner.
- I use a 6 cell mini metloaf pan, you may need more eggs if using one of these.
Notes
10 eggs is about 55 Baht, fillings you may or may not have on hand, either way, this is certainly less than $1 per person, even with homemade hash browns. The more fillings you add, adds to the cost per serving.
