Parmesan Chicken & Broccoli

This is a oven cooked dish, and sounds great. One sheet pan used, easy clean up as well. Basic ingredients, this goes together quickly and is cooked in about 30 minutes. On my to cook list.

Ingredients
  

  • 6 chicken breasts, boneless, skinless
  • 340 grams fresh broccoli, cut into florets, plus stem
  • 2 tablespoons olive oil, divided
  • salt, pepper, garlic powder, as desired
  • 2 cloves garlic, smashed and minced
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped

Instructions
 

  • Preheat your oven to 220 C (425 F). Grease a rimmed baking sheet or shallow baking dish with 1 tablespoon of the oil.
  • Lay the chicken in the center of the sheet and place the broccoli around the chicken. Drizzle (or use an oil mister) the remaining 1 tablespoon of oil. Season everything with salt, pepper, and garlic powder to taste or as desired.
  • Bake for 30 minutes or until the chicken is cooked through and juices are clear. Use a thermometer for a target temp of 71 C (160 F) or sacrifice one piece and cut in half to check.
  • While the chicken is cooking, mix together the minced garlic, Parmesan, and parsley in a small bowl.
  • When the chicken is done, remove from the oven, top each piece of chicken with the mixture parsley mixture, then broil (top coil for counter top ovens) for 3 minutes until the cheese is melted and the broccoli nicely browned.
  • Remove from oven, tent with foil for 5 minutes.
  • Serve.

Lemon & Thyme Chicken

Lemon & Thyme Chicken

This sounds good, but when I make this, I will use limes.

Ingredients
  

  • 1-2 tablespoons olive oil
  • 5-6 cloves garlic, smashed and finely minced
  • 1/3 cup chicken broth, fresh or from powder
  • zest from lemon
  • juice from 1 lemon
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon fresh thyme leaves
  • 2 sprigs fresh thyme, or 1 teaspoon dried thyme
  • 3 chicken breasts, boneless, skinless
  • salt and pepper, as desired
  • 1 lemon, cut into 4 wedges

Instructions
 

  • Preheat your oven to 200 C (400 F). Grease a baking dish, say a 7x11 dish, with butter or olive oil using a oil mister.
  • Heat the olive oil in a non stick pan on medium heat, when hot, add the garlic and stir for 1 minute until fragrant. Do not burn the garlic, no one likes burnt garlic.
  • To the pan, add the broth, lemon zest and juice, oregano, and the thyme leaves, stir then pour this into the prepared baking dish.
  • Season each side of the chicken breasts with salt and pepper as desired, then place into the dish along with the lemon wedges and sprigs of thyme. If not using fresh sprigs, sprinkle some dried thyme over the chicken.
  • Bake for 30-40 minutes, spooning the liquid over the chicken 2 to 3 times. Cook until the juices run clear from the chicken and it is cooked through.
  • Remove from the oven and let rest for 5 minutes, serve and spoon the juices from the baking dish over the chicken.

Notes

I will price this when I get chicken breasts again at Tesco, for now, I will say this is easily Low cost per serving.

Ingredients
  

  • 500 grams ground chicken, (1 lb)
  • 2 potatoes, boiled, skin on is ok, chopped small
  • 1 egg, beaten
  • 3 tablespoons onion, shredded
  • 1 clove garlic, smashed and minced
  • 1 tablespoon celery, chopped
  • 1 teaspoon pepper
  • ½ teaspoon salt
  • 2 teaspoons ground nutmeg
  • 3 tablespoons beef broth, or chicken, fresh or from powder
  • breadcrumbs, Shortcut
  • butter, chopped, as needed

Instructions
 

  • Preheat your oven to 180° C (350° F). Lightly grease a 8x8 baking dish with butter.
  • In a mixing bowl, add the chicken, onion, celery, garlic, pepper, salt, nutmeg, and broth. Mix together with a large spoon.
  • Fold the potatoes into the mixture.
  • Add the chicken mixture to the baking dish and spread out evenly. Pour the beaten egg onto the chicken.
  • Sprinkle breadcrumbs over the top then add a few chunks of butter.
  • Place in the oven and bake for 30 minutes, check the doneness of the chicken and if not done bake for another 5-10 minutes.
  • Serve with rice for a simple and enjoyable meal.

Fajita Peppers

I have some bell peppers I need to put to good use so I thought up this idea last night, basically stir frying the chicken, onion, and bell pepper tops with fajita seasoning and stuffing into bell peppers with cheese and baking. I made this on 26 Apr 2018 and they are very good! Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 500 grams chicken breasts, (1 lb)
  • 1 packet fajita seasoning mix, Shortcut
  • 3 tablespoons lemon or lime juice
  • 2 tablespoons olive oil
  • 5 bell peppers, 2 red, 2 yellow, 1 green
  • 1 small onion, sliced
  • 1 1/2 - 2 cups Monterey Jack cheese, or a good 4 cheese blend, shredded

Instructions
 

To Marinate the Chicken

  • Cut the chicken breasts into 4 strips lengthwise, then cut each strip into 1 inch pieces, i.e., bite size 🙂
  • Place the chicken, olive oil, lemon juice, and seasoning mix in a large zip lock bag, squeeze out the air and squish everything to mix and coat the chicken. Place in the fridge for 1 hour or even overnight to marinate.

To Prepare

  • Cut the tops off the yellow and red bell peppers and empty out the seeds and remove the membranes as well. Place peppers in an 8x8 baking dish.
  • Preheat your oven to 180 C (350 F). Remove the stems from the tops and dice the tops. Dice the entire green bell pepper.
  • Drain off any liquid from the marinated chicken. Heat a large non stick pan with a splash of olive oil, when hot, add the sliced onion and the diced peppers, when starting to soften, add the drained chicken. Cook until the chicken is cooked on the outside and the onion and bell pepper is softened (the chicken cooks more in the oven).
  • Fill each bell pepper halfway with the chicken mixture, then add some shredded cheese, then top that and fill the peppers to the top, be generous and spoon some extra chicken on the top to round them off. Sprinkle with a bit more cheese.
  • Add about 1/2 inch water to the baking dish, cover with foil and bake for 30 minutes. Remove foil and continue to bake until the cheese is just starting to brown up, about 10 to 15 minutes.
  • Remove from oven and serve with your favorite vegetable side dish or a salad. Enjoy.

Notes

Chicken breasts will cost about 30 Baht/500 grams. The peppers are about 40 Baht for 2, so 5 peppers would be about 90 Baht. For 4 servings, this is about 94 cents per serving.

Phad Prik King Gai

Thai dish of chicken and long beans fried directly in red chili paste and garlic.

Ingredients
  

  • 500 grams chicken breasts, cut into bite size pieces, (1 lb)
  • 2 cups long beans, cut into 1 inch pieces, or green beans
  • 4 kaffir lime leaves, torn with center stems removed
  • 4 cloves garlic, smashed and minced
  • 4 tablespoons red chili paste, also called red curry paste
  • 2 tablespoons cooking oil, and as needed
  • 1 tablespoon fish sauce
  • 1 tablespoonq mushroom sauce, also called mushroom soy sauce
  • 1 1/2 tablespoons sugar
  • steamed rice, for serving

Instructions
 

  • Add the oil to a wok or non stick pan and heat on high then fry the garlic until fragrant but do not burn it, reduce heat to medium. Add the chili paste and and fry until fragrant, about 1 minute.
  • Add the chicken pieces and turn the heat to medium high, if the chicken appears to dry, add more oil a tablespoon at a time.
  • Fry the chicken until cooked halfway way through, stirring often, then add the long beans, and keep stirring often and cook for about 2-3 minutes then add the fish and mushroom sauces, and the sugar.
  • Continue to fry until the chicken is cooked through and the long beans are soft and tender, about 5 minutes.
  • Serve over jasmine rice and enjoy.

  • 2 cans condensed cream of chicken soup, Shortcut
  • 1 can water, or 1 1/4 cups if making the soup
  • 4 slices Swiss cheese
  • 1 box Stove Top stuffing, Shortcut

Instructions
 

  • Preheat your oven to 180 C (350 F).
  • Mix together the soup and water and pour into a 9x13 baking dish. Lay the chicken breast in the dish.
  • Place a slice of Swiss cheese on each chicken breast.
  • Add the dry stuffing mix covering the entire dish.
  • Cover the dish with foil and bake for 50 minutes to 1 1/2 hours.
  • Serve.

Notes

Not sure home many chicken breasts are in a kilo so I will price this when I buy 4 of them. If making the shortcuts, this is certainly Low cost.
Shortcuts: Condensed Cream of Chicken Soup, Stove Top Stuffing.
Variants: 1. Add frozen peas, corn, or carrots to the soup mix. 2. Combination of cream of chicken and cream of mushroom soup, or a combination of cream of chicken and cream of celery soup.

Ingredients
  

  • 1 kilo chicken breasts, (2 lb)
  • 250 grams Mozzarella Cheese, shredded, (8 oz)
  • 2 eggs, beaten
  • 1 cup Italian bread crumbs, OR make from a shortcut
  • 500 grams fresh mushrooms, Shiitake would be perfect, stems removed, sliced
  • 4 tablespoons unsalted butter
  • 1 cup chicken broth, fresh or from powder

Instructions
 

  • Preheat your oven to 180 C (350 F), get out a 9x13 baking dish. Spread half of the sliced mushrooms in the bottom of the dish.
  • Place the eggs and breadcrumbs in two separate bowls, you are making an assembly line for the chicken.
  • Heat a large non stick and 2 tablespoons of the butter. Now place a chicken breast in the egg, then into the breadcrumbs patting them on as well, add the chicken to the hot pan and cook to golden brown on both sides, about 5 minutes, not looking to cook the chicken through, just good and golden brown. Work in batches until all the chicken is browned, using additional butter as needed.
  • As the chicken is browned, place on top of the mushrooms in the baking dish. Add the remaining mushrooms on top of the chicken, then top with the cheese.
  • Pour the broth into the pan. Bake for 30 minutes or until the cheese is melted and starting to brown up and the chicken cooked through.
  • Remove from the oven and let rest for about 5 minutes, serve and enjoy.

Notes

One kilo of chicken breasts will cost about 60 Baht. The cheese will cost about 180 Baht for 250 grams. For 4 servings, this is about $1.90 per serving.

Larb = salad, Gai = chicken, there is your Thai lesson for the day 🙂 This is a Thai dish, and eaten often in Laos as well, in the US Thai restaurants, this may be called Spicy Thai Chicken Salad. Easy to prepare, can be served on a bed of lettuce if you desire, and normally served with sticky rice and fresh veggies such as cucumber, spring onion, long beans, and cabbage.

  • 500 grams ground chicken
  • 2 tablespoons shallots, sliced

  • 2 tablespoons fresh Thai chili, ground, or to taste
  • 3 tablespoons lime juice
  • 3 tablespoons fish sauce

Instructions
 

  • In a large non stick pan, cook the chicken and 2 tablespoons of lime juice on medium heat, and cook until done, stirring often until the chicken is cooked through.
  • Pour the chicken into a heat proof mixing bowl and add the remaining ingredients and mix together. Taste and season as desired with lime juice and or fish sauce.
  • Serve with stick rice and fresh vegetables.

This is an Indonesian dish from a good friend and sounds delicious, on my to cook list. This recipe uses basic, everyday readily available ingredients.

Ingredients
  

  • 800 grams chicken thighs, or legs, or wings, ( 1¾ lb)
  • 6 tablespoons cooking oil
  • 2 tablespoons white vinegar
  • 1 small red onion, diced
  • 1 teaspoon course ground black pepper
  • ½ teaspoon ground nutmeg
  • 3 cloves garlic, minced
  • 2 tablespoons sweet soy sauce

Instructions
 

  • Rub the chicken pieces well with the pepper and nutmeg.
  • Heat a large non stick pan on medium heat and when hot, add the chicken and cook until golden brown on the first side, then flip all the chicken over.
  • Add the onion and enough warm water so about â…“ of the chicken pieces are in the water.
  • Add the vinegar and sweet soy sauce. Cover partially with a lid and turn heat to low and let simmer for 25-35 minutes.
  • Turn off the heat and fully cover with the lid for 15 minutes.
  • Serve with rice, spoon some of the sauce over the rice, and sliced cucumbers.

This sounds good for a family get together, watching a sports game with friends, or even as a main dish served over rice or pasta with a salad on the side.

Ingredients
  

  • 2 teaspoons cooking oil
  • 2 chicken breasts
  • 8 slices bacon, chopped
  • 4 jalapeno peppers, finely diced
  • 2 cloves garlic, smashed and minced
  • 3 cups whipping cream
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 2 1/2 cups Cheddar cheese, shredded
  • french fries, cooked
  • spring onion, chopped, for garnish

Instructions
 

  • In a large non stick pan, heat the oil then add the chicken, cook for about 4-5 minutes each side, remove from pan.
  • Add the bacon and cook until just crisp, then add the garlic and jalapenos and fry until just fragrant. While the bacon is cooking, dice the chicken.
  • Stir in the cream, salt, and pepper and let it simmer on low heat.
  • Then stir in the cheese, then the chicken. Simmer for a few minutes to melt the cheese into the sauce.
  • Pour the sauce over a large tray of hot french fries, hand everyone a fork, and dig in.

Notes

For the number of servings, this is low cost, only thing costly would be the cheese at about 180 Baht, but 10 servings, low cost overall.
Variant: 1. Make this a main dish served over rice or pasta and a salad on the side.
