Cottage Pie

This is a casserole that is filling, made with ground beef (made with minced pork when I make it), and the variant is Shepherds Pie which is made from lamb. There is loads of recipes like this, all have little changes, this is the basic version that sounds really good. Feel free to use fresh or frozen vegetables. This is a cook everything then prepare casserole. On my to cook list.

Ingredients
  

Potato Topping

  • 5 large potatoes, diced, peel them if you like but not required
  • 5 cloves garlic, peeled
  • 1 cup fresh carrot, diced
  • 2 tablespoons butter
  • 1/8 cup milk

Beef Mixture

  • 750 grams ground beef, OR minced pork
  • 1 onion, diced
  • 1 celery stalk, diced, this would be imported celery
  • 2 tablespoons butter
  • 3 tablespoons all purpose flour
  • 1 1/4 cups beef stock, make from the powder
  • 1/2 teaspoon mustard powder
  • 2 tablespoons Worcherstershire sauce
  • oil for cooking, oil of your choice

Vegetable Filling

  • 1 cup fresh corn, OR frozen
  • 1 cup fresh peas, OR frozen

Instructions
 

Potato Topping

  • Cook the potatoes, carrots, and garlic cloves in a big saucepan with enough water to cover, simmering until tender. Drain and add to a large mixing bowl. Season with salt and pepper, a few tablespoon of butter, and about 1/8 cup of milk. The potatoes should be a thicker consistency than if you were eating them as is. Mash to potatoes until the potatoes are smooth, lumps of carrots are ok. Taste and season again if needed.

Beef Mixture

  • While the potatoes are cooking brown the ground meat in a large skillet. Drain fat. Remove from pan and set aside. In enough oil to cover the bottom of the skillet saute onion and celery until tender. Add two tablespoons butter, flour, and mustard, stir for a minute. Slowly add in stock and stir or whisk until smooth. Add ground beef and Worcestershire sauce. Season with salt and pepper. Bring to a simmer for 3-4 minutes. Taste and season further if needed.

Vegetable Filling

  • Steam the peas and corn, if you are using a pea, corn, carrot, and bean frozen mix, no worries, use those.

Assemble

  • Preheat your oven to 400 degrees. In a deep-sided 8×8 in light greased with butter casserole pan, spread the meat mixture evenly across the bottom, the sprinkle the pea and corn mixture over top. Dollop the potatoes over top of the vegetables and spread out, roughing up the top with fork. Bake for 30-35 minutes until golden brown on top and bubbly. Put a baking sheet on the rack underneath to catch any drips. Let rest 5 minutes before serving. A salad on the side would be a perfect meal.

Notes

Ground beef will run about 150 Baht/750 grams. Pork will run about 100 Baht/750 grams. For 6 servings, this is about 75 cents per serving. Very reasonable.

Ingredients
  

  • 500 grams spaghetti, OR linquini
  • 1/2 cup butter, softened, this is 1/2 a regular block of butter
  • 4 chicken breasts, boiled and diced
  • 2 cans condensed cream of chicken soup, OR make from a shortcut on this site
  • 2 cups sour cream, OR use plain yogurt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup chicken stock, fresh or from the powder
  • 2 tablespoons Parmesan cheese, grated
  • 2 cups Mozzarella Cheese, shredded

Instructions
 

  • Cook pasta until almost done, drain, and set aside.
  • Preheat your oven to 150 C, lightly butter a 9x13 baking dish.
  • In a large bowl, mix together the butter, cooked chicken, soup, sour cream, chicken stock, salt and pepper. When mixed, add in the pasta and mix to coat. Add mixture to the baking dish, sprinkle the cheeses on top, cover with foil and bake for 40 minutes. Remove foil and bake for 10 more minutes.
  • Remove from oven and let rest for 10 minutes, serve with a vegetable on the side for a good meal.

Notes

Chicken will be less than 100 Baht, the cheeses will run about 200 Baht. This comes to about $1.10 per serving. When I make this I will have a better price per serving. Use the shortcuts for savings as well.

Baked Ziti Casserole

Baked Ziti Casserole

This sounds really good and is on my to cook list. Do not get tied up in the type of pasta, Penne pasta is tubular with the ends cut at an angle, Ziti pasta is tubular with the ends cut squarely. When I make this, I am using Penne for sure because it is more common than Ziti. There is a chance to use 3 shortcuts in this recipe to reduce the cost considerably. Ingredients
  

  • 500 grams Italian sausage, this can be pork or chicken, OR use the shortcut on this site
  • 2 cups Ziti pasta, OR just use Penne, it is the same
  • 1 can tomato soup, 18 oz/510 grams, OR make from a shortcut on this site
  • 1 cup Ricotta cheese, OR make Cottage Cheese from a shortcut on this site
  • 1/4 cup Parmesan cheese, grated
  • 1 cup Mozzarella Cheese, shredded
  • 1/4 teaspoon black pepper
  • 1 egg
  • fresh basil leaves, chopped, for garnish, if desired

Instructions
 

  • Heat your oven to 190 C.
  • Cook and drain pasta as directed on package. In 12-inch skillet, cook sausage over medium high heat, stirring occasionally, until no longer pink; drain. Add soup (if making the soup from the shortcut on the site, use 2 1/3 cups of soup), pepper, and cooked pasta, stir well.
  • In a bowl mix the Ricotta (or Cottage cheese), Parmesan cheese, and egg.
  • Pour the pasta mixture into a 9x13 glass baking dish (or a 7x11 dish if you have that), spoon the cheese mixture over the top, sprinkle the Mozzarella cheese over the top, cover with foil and bake 25-30 minutes, remove foil for the last 10 minutes to brown the cheese. Sprinkle with basil and serve.

Notes

The pork for the sausage would cost about 65 Baht for 500 grams, even less if using chicken. The cheese is minimal as not complete packages are used, for the Ricotta, do your self a favor and make the Cottage cheese yourself as you would save a lot there. For the soup, that would cost minimum 52 Baht if purchased canned, if you make yourself, the cost is 17 Baht.
Going with store bought prices, the cost is about $1 per person for 6 people. If you make the shortcuts, you can get this down to probably 60 cents per person.

Chili Dog Casserole

Chili Dog Casserole

When I found this recipe, the chili and cheese were both listed as processed, such as canned and packaged shredded. This recipe I am going to show here is a mix of recipes from the site. These are easy to make recipes. The cheese will be real as well. That leaves tortillas, which are packaged, and I have not tried to make yet. And the hotdogs, buy quality dogs, they do in fact make them in Thailand and are not the chemical laden import dogs. This recipe takes time in the planning but you can make several other dishes in between. I made this on 2 Aug 2016, excellent! I modified this for using some canned items I used while in the US in May 2020.

Ingredients
  

  • 6 cups chili, see Step 1.
  • 500 grams beef hot dogs, (1 lb)
  • 8-10 flour tortillas, 8 inch tortilas are perfect
  • 250 grams Cheddar cheese, shredded, real cheese, (1/2 lb)

Instructions
 

  • You can make your favorite chili or use canned, with or without beans. I have made this with both. For canned, use two 24 oz (1 1/2 lb / 680 g) cans. When I made this in the US I used two 24 oz (1 1/2 lb / 680 g) cans of chili.
  • I have also made this with my homemade Pinto Bean Chili.
  • Preheat your oven to 200 C (400 F).
  • Spread 1 can of chili and beans (OR 3 cups of homemade chili) in the bottom of a 9x13 inch baking dish. Roll up franks inside tortillas and place in baking dish, seam side down, on top of chili and beans.
  • Top with remaining can of chili (OR another 3 cups of homemade chili), and sprinkle with cheese to cover.
  • Cover baking dish with foil, and bake for 30 minutes. Remove foil and allow to brown on the top, remove from oven and let rest 5 minutes, serve, and enjoy.

Notes

Low cost for the US and Fair to High cost per serving in Thailand based on quality hot dogs and quality cheese.

  • 1 cup milk
  • 2 eggs
  • 1/2 cup Bisquick Mix, OR make from a shortcut on this site
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 200 C. Lightly grease a glass pie pan with butter.
  • In a skillet, cook the ground beef and onion until beef is browned, season with salt and pepper while cooking. Drain the spread into the pie pan. Cover the beef with the cheese.
  • In a bowl, combine the rest of the ingredients with a fork or whisk, pour this into the pie pan. Bake for 25 minutes or until a butter knife inserted in the center comes out clean. Serve.

Notes

Ground beef will run about 80 Baht for 500 grams. Ground pork will run about 70 Baht for 500 Grams. Cheese will run about 150 Baht. For 230 Baht, this comes out to about $1.70 per person for 4 servings, or $1.15 per person for 6 servings. Overall, not a bad cost. Serve this with a potato or macaroni salad, and you have a great meal.
Variants. Replace the Cheddar cheese with Swiss, then top the cheese with sliced mushrooms. Top each slice with a slice of tomato and pickle.

Instructions
 

  • For starters, use the shortcuts to make the taco seasoning, beans, and Bisquick, not only will this save you money, you know what is in each one. Beans, cook the day before in a slow cooker per the recipe on this site, you will will like these better.
  • If cooking your beans, use 1 1/2 cups of beans to equal a can of beans.
  • Brown the ground beef (or pork, or chicken) along with onion and garlic, then drain well, mix in taco seasoning to packet instructions, and let simmer.
  • Mix Bisquick, water and refried beans in a small bowl. Place bean mixture into a greased 9×13 pan. Spread meat mixture over the top, then add both cheeses on top. Bake for 30 minutes at 180 C. Serve with a salad and a vegetable, you have a great meal.

Notes

Ground beef will run about 75 Baht/500 grams, if using minced pork, that will cost about 60 Baht/500 grams, chicken even less. Cheese will run 200-300 Baht. Everything else is minimal. For 6 servings this is $1.85 per serving, for 8 servings this is $1.40 per serving. Even less with pork or chicken. Over all, not a bad meal.

Instructions
 

  • Preheat your oven to 180 C. Grease a 13x9 baking dish with butter. If you use the shortcut to make the hash browns, follow the steps right up to before cooking.
  • Heat a pan and fry the bacon until crisp, drain, and set aside.
  • In a large bowl, mix all other ingredients, then add bacon and mix that in as well. Pour into the baking dish and spread out to flatten and evenly distribute the mixture.
  • Bake uncovered for 30 to 40 minutes or until you can insert a knife near the center that comes out clean, remove from oven and let rest for 10 minutes before cutting. Serve with toast on the side for a great breakfast.

Notes

The bacon will cost about 310 Baht/500 grams. The Cheddar cheese will cost 180 Baht/250 gram block which is good for 2 cups. The Swiss will cost about 90 Baht as you should only have to use 1/2 block of 250 grams. Cottage cheese I cannot price in a store as it is not carried over here where I am at. Just for the bacon and two of the cheeses, this meal, for 12 servings, comes out to about $1.42 per serving.

  • 1 cup water
  • 1 can mushrooms, sliced
  • egg noodles, cooked, OR or wide fettuccine noodles, OR mashed potatoes

Instructions
 

  • Preheat your oven to 160 C.
  • Add the cubed beef to a 13×9 baking dish.
  • Combine the cream of mushroom soup, onion soup mix, brown gravy mix and water in a bowl. Add the mushrooms and stir to combine. Pour over the beef and stir to mix thoroughly.
  • Cover with foil and bake for three hours. Uncover and serve on top of egg noodles, fettuccine noodles, or even mashed potatoes.

Notes

Beef will cost about 200 Baht/kilo. Just go with a large chunk from an open market and cube that. For 6 servings, this is about $1 per serving. Very reasonable on price for a hearty meal.

  • 2 chicken breasts, boneless and skinless, cut in half lengthwise
  • 1 cup dry white rice
  • 1 can condensed cream of celery soup, OR make from a shortcut
  • 1 packet onion soup powder mix, OR make from a shortcut
  • 2 onions, roughly chopped
  • 2 soups cans water, OR 2 1/2 cups of water if you made the shortcut soup

Instructions
 

  • Preheat your oven to 160 C. Get out a 9x13 baking dish.
  • Pour the dry rice into the dish and spread around to even cover the bottom of the dish. Add the chicken on top of the rice.
  • Pour the condensed soup into a large bowl or pot, add the onion soup mix then add two soup cans of water or 2 1/2 cups of water if you made the soup from the shortcut. Stir this to mix, add salt and pepper to taste to the mixture.
  • Pour the soup mixture over the rice. Sprinkle the chopped onion on the top.
  • Bake in the oven for 2 hours. Serve with a green vegetable for a complete meal.

Notes

Chicken breasts run about 60 Baht/kilo. Two breast would be around 40 Baht I would think, putting this meal, easily under $1 per serving.

  • 4 chicken breasts, boneless, skinless, cut into 1 inch cubes
  • 1 can condensed cream of chicken soup, OR make from a shortcut
  • 1/4 cup milk
  • 1 cup Swiss cheese, shredded, if you like cheese, you know what to do
  • 1 cup fresh mushrooms, slightly chopped, lightly fried in olive oil
  • 1 package egg noodles
  • salt and pepper, to taste
  • onion powder, to taste
  • garlic powder, to taste

Instructions
 

  • Preheat your oven to 190 degrees C. Lightly grease an 8 x 8 inch casserole dish. Add chicken pieces to the casserole dish. Season with salt, pepper, garlic powder and onion powder, to taste.
  • In a bowl, mix the soup and milk. Sprinkle cheese over the chicken. Pour soup and milk over the chicken. Sprinkle with mushrooms.
  • Bake for 30 minutes or until juices from chicken run clear and sauce is bubbly. Cook your noodles while baking. Serve over noodles with a green vegetable for a complete meal.

Notes

The chicken and cheese is the most expensive part of this meal. 4 chicken breasts will be about 100 Baht, cheese will run about 100 Baht for the 1 cup (buy a 250 gram block and shred yourself, that will be about 1/2 block for 1 cup of shredded). Make the soup yourself, dead easy and is half the cost of a canned soup and you know what is in it. Basically 200 Baht or about $1.50 per serving for 4 people.
Alternative would be to use chicken thighs (think skin on and bone in, as thighs are a bit more flavorful), or just quarters that are cut apart.
