This recipe was prepared for me by our good friends we had over as house guests. Very tasty and easy to prepare. This recipe uses large prawn so it is not an inexpensive meal. This can be an appetizer, at a pot luck meal, or as a main dish. This recipe is listed for what is shown in the photos, 14 large prawn.

Ingredients
  

  • 14 fresh large prawn, whole, unpeeled and head on
  • 1/2 cup butter, softened, this is 1/2 a regular block of butter
  • 6 cloves garlic, smashed and minced
  • Cheddar cheese, 14 small slices
  • spring onion, chopped for garnish

Instructions
 

  • Preheat your oven to 200 C (390 F), line a 9x13 baking dish with foil.
  • Split the body of each whole prawn, including the head, to nearly through and gently spread apart and place in the baking dish. Photo shows the size of prawn used.
  • With the room temp butter, mix in the garlic, using a spoon and your fingers, put some garlic butter into each prawn as shown in this photo.
  • Place in the oven then reduce the temp to 180 C (350 F). Bake for 5-10 minute or until the shells turn orange, remove from the oven and add a small slice of cheese to each body of the prawns and bake for another 5 minutes or until the cheese is melted, remove from oven, sprinkle with some chopped spring onion or chives, serve.

Notes

The cost break down is hard with this recipe as I do not know how many large prawn are in a kilo. One kilo is 350 Baht. I will say this is between $1 and $1.50 per serving. When I make this again I will provide more accurate pricing information. This is listed as an appetizer as well as a main dish.

This is an old school recipe that has been around for well over 50 years. Cannot find baking German Sweet Chocolate? Just go with any sweet baking chocolate, if you can use even semi-sweet in a pinch just add a 2 tablespoons more sugar to this recipe. Ingredients
  

  • 120 grams German sweet chocolate
  • 1/4 cup butter, this is 1/4 of a regular block of butter
  • 1 2/3 cup evaporated milk
  • 1 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 unbaked pie shell, OR make from a shortcut
  • 1 1/3 cups flaked coconut
  • 1/c cup pecans, chopped, OR go with almonds

Instructions
 

  • Preheat your oven to 190 C. Make the pie crust using the shortcut on this site or use your own recipe, you may have to refrigerate the dough first so note the time for that and adjust the recipe the based on that time and get that ready in a pie pan or get a get a ready made pie shell ready.
  • Melt chocolate with butter over low heat; stir until blended. Remove from heat; gradually blend in milk.
  • Mix sugar, cornstarch, salt then beat in eggs and vanilla. Gradually blend into the chocolate mixture, then pour into your pie shell.
  • Mix coconut and pecans (or almonds) then sprinkle this over the pie filling.
  • Bake for 45 minutes or until top is puffed up. Filling will be soft, but will set while cooling. Cool at least 4 hours before serving.

Notes

I cannot price this until I get a price on the chocolate so I will say this is a fair price for now.

Easy Slow Cooker Beef And Shallots Stew

This is right up my alley, simple, just two main ingredients, beef and shallots, does not get any easier. This was listed as a stove top recipe and I mentioned to the author of this recipe that I will make this into a slow cooker recipe. This recipe as it is now is a guide for use in a slow cooker, once I make this, I will refine the instructions and times.

Ingredients
  

  • 1 kilo beef, cut into large cubes
  • 400 grams shallots, ends removed and peeled
  • 2 teaspoons salt
  • 1 teaspoon coursely ground black pepper
  • 2 teaspoons cornstarch
  • 8 cloves garlic, lightly crushed
  • 2 1/4 cups beef stock, fresh or make from powder
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • cornstarch slurry, 1 tbsp cornstarch + 1 tbsp water

Instructions
 

  • Cut the beef into large cubes and add to a large bowl, add the salt, pepper, and cornstarch and toss to coat. In a large non-stick pan, on medium heat and and splash of olive oil, sear the beef to a light brown color then put in the slow cooker, you will have to do this in batches.
  • Once the beef is done, add the shallots to the pan and cook to lightly brown those, then remove and add to the slow cooker. Add the garlic and thyme to the slow cooker and give this a gentle stir to mix everything, add the bay leaves, pour in the beef stock. Cook on Low setting for 6-8 hours or on High setting for 3-4 hours or until the beef is for tender.
  • Once the beef is cooked and tender, season with additional salt and pepper and stir in the cornstarch slurry to thicken the broth. Serve with rice, or what I will do, is serve with mashed potatoes and a vegetable.

Notes

Beef will cost 200-250 Baht/kilo, I will use 250 Baht for the estimate but for those in rural areas, you should be able to get beef for a bit less. For 4 servings this is about $1.84 per serving, or about $1.22 per serving for 6 servings. Overall, not a bad cost for a hearty meal.

BBQ sauce used instead of tomato sauce, this sounds really good! On my to make list next time our daughter visits, she loves pizza! The pizza dough listed is to make TWO 12 inch pizzas, this recipe is for ONE BBQ Chicken Pizza, and the other pizza can be anything of your choice or you can double this recipe (not the crust part) and make two of these. For the Pizza Dough

  • 2 cups all purpose flour
  • ½ teaspoon instant yeast
  • ¼ teaspoon salt
  • ¾ cup water
  • 1 teaspoon Italian seasoning, optional

For the BBQ Chicken Pizza

  • ¼ cup BBQ sauce, Shortcut
  • 1 to 2 cups Mozzarella Cheese, shredded
  • 1 cup chicken, cooked and cubed or shredded
  • ¼ cup red onion
  • ¼ cup cilantro, chopped

For the second Pizza

  • sauce, of your choice
  • toppings, of your choice

Instructions
 

  • Preheat your oven to 200° C (400° F). Get out your 12 inch pizza pan or baking sheet, spread just a bit of cornmeal on it, this will prevent the crust from sticking, or just use a bit of flour.
  • Divide the dough into two pieces. Using one piece, pat or roll this out to cover your pizza pan, spread the BBQ sauce over the dough to ½ inch of the edge, use more as needed, no one will complain.
  • Spread the Mozzarella over the sauce to your liking, 1 to 2 cups. Spread the chicken over the cheese, and spread the onion over the chicken, then sprinkle on the cilantro.
  • Bake for 10-15 minutes or until the crust is golden brown and the cheese is melted and bubbly. Remove from the oven and let cool 1-2 minutes then slice and serve.
  • Repeat the steps with the sauce, cheese, and toppings of your choice for the second pizza.

Notes

No need for prices on this. This can be inexpensive or as costly as you determine by the amount of cheese and other toppings used for the second pizza. Pizzas make a great meal for visiting family, as I have not met a Thai that does not like pizza. Using the shortcut for the BBQ sauce and for another pizza, the tomato sauce, will save you money as well.
Note 1. I make a lot of pizzas here, I bake the crust with just the sauce first for about 8-10 minutes before adding cheese and or other toppings, then bake again to brown it all up. When I make this BBQ Chicken recipe, I will give the results on how the recipe is stated and how the baking first works.

  • 1 pie crust, uncooked, bought, OR make from a shortcut on this site
  • 500 grams ground beef, I would not use ground pork for this
  • 1 onion, diced
  • 5 slices bacon, chopped
  • 1/3 cup panko breadcrumbs
  • 1 teaspoon prepared yellow mustard
  • 3 tablespoons BBQ sauce, OR make from a shortcut on this site
  • 1 tablespoon tomato ketchup, OR make from a shortcut on this site
  • 2 teaspoons Worcherstershire sauce
  • 1/2 teaspoon black pepper
  • 2 cups Cheddar cheese, shredded, this is about 1 standard block of cheese
  • 1 egg
  • 1/4 cup milk

Instructions
 

  • Preheat your oven to 205 C. Get out a 9 inch pie dish and get your crust placed in the dish.
  • In a large non-stick skillet, brown the ground beef, onion, and bacon until cooked through. Drain this in a colander would be good to drain the best. Place in large bowl and stir in the bread crumbs, mustard, BBQ sauce, ketchup, Worcestershire sauce, and pepper, pour this mixture into the prepared pie crust.
  • Using the same bowl, mix the cheese, milk, and egg (why dirty another bowl?) and spread this over the pie mixture. Cover the edges of the crust with foil (to prevent over cooking those) and bake for 15 minutes, remove the foil and bake for anther 15 minutes. Let rest for 5 minutes and serve with a side of your choice, corn on the cob sounds excellent here or even just a dill pickle on the side.

Notes

The ground beef, or beef in general is costly. Depending on your location, you may be able to get ground beef and will pay top dollar for it. Getting large cuts of beef and grinding (or chopping) yourself is preferred and most cost effective. For ground beef, I will go with about 100 Baht/500 grams. The Cheddar cheese will run about 180 Baht for a 250 gram block. For 6 servings this about $1.37 per serving, less for 6 servings. Overall, not a bad cost.
Variants, keep in mind variants can add cost to the meal. Add sliced, cooked mushrooms to the top. Replace the Cheddar with Swiss Cheese.

Ingredients
  

  • 2 cups milk
  • 125 grams Cream cheese, this is 1/2 a stand block, softened
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 6 cloves garlic, minced
  • 1 cup Mozzarella Cheese, shredded
  • 1/3 cup Parmesan cheese, grated
  • pepper, to taste
  • 500 grams medium shrimp, peeled and deveined
  • fresh parsley, chopped, for garnish
  • 500 grams pasta, cooked, of your choice, Fettuccine would be a good choice

Instructions
 

  • Mix together the milk, cream cheese, flour, and salt until smooth, set aside.
  • In a saucepan, melt butter and add garlic. Cook garlic for about a minute, then add the shrimp, cook 3-5 minutes, or until pink, and just barely cooked through, then remove shrimp, leaving the garlic and butter drippings in the saucepan.
  • Add milk mixture to the pan, and stir for 4 minutes on medium heat. Bring to a simmer, and keep stirring for about 6 more minutes until is starts to thicken. Remove from heat, add cheeses and mix. Cover, let stand for about 5 minutes.
  • Add shrimp into sauce and let stand another 5 minutes to heat through. Serve over pasta of choice, garnish with some parsley.

Notes

The Cream cheese will cost about 60 Baht for 1/2 250 gram block. The 1 cup of Mozzarella will cost about 50 Baht for 1/2 200 gram block. The shrimp, that price can very from store bought to fresh local caught from fishermen. Medium Whites in Tesco will run about 135 Baht/500 grams. Fresh local caught will run about 100 Baht/500 gram or less. Going with store bought shrimp, for 4 servings this is about $1.80 per serving, for 6 servings, about $1.20 per serving, overall, not a bad cost.

One Pot Sausage Pasta

This is a one pot pasta dish that can be prepared any number of ways so it is never the same meal twice. Only rule to follow is to add a liquid for the pasta to cook. Meat, veggies, and spices are up to you to flavor the dish as you see fit. This is a base recipe that you can use to tailor at will.   • 2 tablespoons olive oil
  • 2 cloves garlic, smashed and minced
  • 1/2 onion, minced
  • 6 smoked sausage links, sliced, see Step 1 for other items you can use
  • 4 tomatoes, chopped
  • 1/2 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup heavy cream, OR use milk, OR make from a shortcut
  • 250 grams dry Penne pasta, OR any bite size pasta
  • 2 cups water
  • 3-4 spring onions, chopped, white and green parts
  • Parmesan cheese, grated or shredded, for garnish if desired

Instructions
 

  • For the sausage, go with 250-500 grams, think spicy smoked sausage (Makro), brats, beer brats, English beef or pork bangers, or even large, quality hotdogs. If you choose to use homemade bulk sausage, think meatballs, such as Italian sausage, plain pork sausage, or even chicken sausage.
  • In a large pot, heat the oil and cook the garlic and onion until the onion is starting to soften, then add the sausage, salt and pepper.
  • When the sausage is browned up, add the tomatoes, sugar, heavy cream, and mix. Then add the pasta and water and mix well, cover and cook on simmer for 15 minutes, stirring every 5 minutes or so.
  • After 15 minutes or when the pasta is tender, remove from heat, stir in the spring onion, cover and let sit for 5 minutes, serve with Parmesan cheese on top if desired.
  • Served.

Notes

Sausage will be the costly item here if you buy it, much cheaper if you make it. For store bought smoked sausage, figure about 150 Baht for 500 grams. For 4 servings this is about $1.10 per serving, good value overall, and less for 6 servings.

  • 750 grams ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 1/2 cup evaporated milk
  • 1 cup sour cream, OR make from a shortcut
  • 2 1/2 cups egg noodles, cooked
  • salt and pepper, to taste

Instructions
 

  • Heat a pot of water and when boiling, cook the noodles until tender. Drain and set aside.
  • Meanwhile, heat a large non-stick skillet and brown the ground beef and season with salt and pepper to your liking, just before beef is done, add in the onion and bell pepper and cook until tender. Stir in the soup and milk and simmer for 10-15 minutes, stirring occasionally.
  • Remove the skillet from heat and stir in the sour cream then add the noodles or pasta, mix well and serve.

Notes

The beef will cost about 200-250 Baht/kilo. Figuring 200 Baht, for 4 servings, this is about $1.47 per serving, less for 6 servings. Using minced pork at about 80/kilo, this is about 60 cents per serving, less for 6 servings. Good value overall.

  • 1 cup water
  • 1 small onion, chopped

Instructions
 

  • Put everything in your slow cooker and give it a mix. Cook on Low setting for 7-8 hours or until fork tender. Serve over hot rice or pasta.

Notes

The beef will cost about 200-250 Baht/kilo. Figuring 250 Baht, for 6 servings, this is about $1.23 per serving. Good value.

Ingredients
  

  • 6 cups potatoes, diced, skin on or off is up to you
  • 1 1/2 cups Cheddar cheese, shredded, this is one 250 gram block
  • 2 spring onions, sliced, white and green parts
  • 3 cups evaporated milk
  • 2 cups eggs, beaten, start with 8 eggs
  • salt and pepper, to taste
  • olive oil
  • 2-3 cups ham, diced

Instructions
 

  • Preheat your oven to 190 C. Get out a large casserole dish, or two if all you have are small ones.
  • Heat a splash of olive oil in a large non stick or cast iron pan on medium heat, add potatoes and cook until lightly browned, then add the potatoes to the bottom of the casserole dish. Layer the ham, cheese, and spring onions over the potatoes.
  • In a large bowl, mix the eggs with the evaporated milk, salt and pepper. Pour this evenly into the casserole dish. Bake for 45-55 minutes or until the egg is set (use a butter knife inserted into the center, if it comes out clean, set, if there is runny egg on it, continue cooking). Serve.

Notes

Bacon and cheese would be most expensive here. Cheese figure 180 Baht/250 gram block, for the ham figure 100 Baht for 2 cups and 150 Baht for 3 cups. For 8 servings, this is about $1.22 per serving, not bad for a complete meal.
