Instructions
  1. In a large bowl, combine flour and salt. Get out the ice water. And get some plastic wrap ready. You want everything ready and setup before adding the butter and keeping the butter cold is essential. The whole process takes only minutes to get ready for the fridge.
  2. Take the butter from the freezer, it should have been frozen in 1/2 block sections. Using a box shredder, largest holes, shred the butter. Do this carefully as the half block of butter will get very slippery!
  3. Add the butter to the flour and cut that in with a pastry cutter or large sturdy fork until mixture resembles coarse crumbs. Stir in water, 1 tablespoon at a time, until mixture forms a ball.
  4. Wrap in plastic and refrigerate for 4 hours or overnight.
  5. When you are ready, generously flour your work surface, the top of the ball, and your rolling pin, roll out dough just slightly larger than your pie dish, place crust into the dish and press the dough evenly into the bottom and sides of the dish. The dough will be a bit hard and while rolling it out, if it starts to tear apart, just gather it all up and form back into a ball with your hands, roll it out again and it will be much easier.
  6. Now follow your recipe for a type of pie you are making to determine whether you need to pre-bake the crust or not.
Recipe Notes

Note: If making just 1 crust, freeze an entire block of butter then when you need to shred the butter, remove from the freezer and unwrap just half the block and shred that, keeping the foil on the other half gives you something to hold. If making 2 crusts, freeze two blocks.
