This is an easy and delicious casserole to put together. I made this on 4 Sep 2023, and the family and I really enjoyed this.

Ingredients
  

  • 500 grams dry macaroni, (1 lb)
  • 500 grams sour cream, (1 lb)
  • 3 eggs
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground nutmeg
  • 500 grams ham, cubed, (1 lb)
  • 2 cups frozen peas
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 2 cups Cheddar cheese, shredded

Instructions
 

  • Preheat your oven to 180° C (350° F), get out a 9x13 baking dish.
  • Heat a pot of salted water to boiling, then add the macaroni and cook until almost tender, drain.
  • While the macaroni is cooking, add the sour cream, eggs, pepper, and nutmeg to a mixing bowl and mix together.
  • To the mixing bowl, add the cubed ham and peas and mix together.
  • Heat the oil in a non stick pan, when hot, add the onion and garlic, sauté until onion is softened. Drain any oil, then add the onion to the mixing bowl and mix in.
  • When the pasta is cooked and drained, add the sour cream mixture to the macaroni and mix together.
  • Pour mixture into the 9x13 baking dish and spread out evenly.
  • Top with the Cheddar cheese evenly.
  • Bake for 30-35 minutes or until the top is just starting to brown.
  • Serve and enjoy.

Rice A Roni Casserole

Use chicken or ham when preparing this. I made this on 26 Jun 2023, using chicken thighs and my family and visiting friends and family, all loved this dish! This is highly recommended. Ingredients
  

  • 500 grams chicken thighs or breasts, boneless, skinless, chopped, or cubed ham, (1 lb)
  • 2 boxes Rice a Roni, chicken flavor, Shortcut
  • 1 head fresh broccoli, cut into bite size pieces, (frozen use 10 oz / 285 g)
  • 2 cans condensed creamy chicken mushroom soup, (10½ oz / 298 g each)
  • 250 grams Cheddar cheese, shredded, (8 oz)

Instructions
 

  • Cook the chicken your preferred way, such as boil, pressure cook, or bake, then chop the chicken, removing the bones, skin, gristle.
    If using ham, just cube that.
  • While the chicken is cooking prepare the Rice a Roni using the package instructions, or prepare 2 batches using the Shortcut, which is my preferred way.
  • While all that is cooking, steam or simmer the broccoli until it is tender crisp. Drain.
  • Preheat your oven to 180° C (350° F), and get out a 9x13 baking dish and grease with butter or non stick spray.
  • To a large mixing bowl or large pot, add the chicken or ham, Rice a Roni, and drained broccoli, and mix together.
  • Add the soup and mix that in.
  • Spoon mixture into the prepared baking dish and spread out evenly. Sprinkle with the cheese.
  • Bake for 30 minutes or until the cheese is starting to brown on top. Remove from the oven and let rest for 10 minutes.
  • Serve and enjoy.

Shortcut: Rice a Roni (Rice Cooker).
Variants: 1. Use cubed ham, cooked and chopped chicken thighs or chicken breasts. 2. For the soup, use 1 can of condensed cream of mushroom soup and 1 can of cream of chicken soup in place of the 2 cans of condensed creamy chicken mushroom soup.

Ingredients
  

For the Salad

  • 250 grams dry bow tie pasta, (8 oz)
  • 1 can pineapple, sliced or tidbits, reserve juice, (14 oz / 400 g)
  • 1 red bell pepper, diced
  • 2 cups cooked ham, diced
  • 2-3 spring onions, thinly sliced, green and white parts

For the Dressing

  • ½ cup mayo
  • cup pineapple juice
  • ¼ cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • salt and pepper, to taste, as desired

Instructions
 

  • Prep the ham, bell pepper, spring onion, and pineapple. Drain and reserve the juice from the pineapple as you will need some for the dressing. If you have tidbits, use them as is, if you have sliced rings, then cut them into pieces. Add the prepped ingredients to a mixing bowl.
  • Heat a pot of salted water to a boil, then add the pasta and cook until just tender. Drain and run under cold water to stop the cooking.
  • While the pasta is cooking, add the Dressing ingredients to a small mixing bowl and mix together until smooth.
  • Add the drained pasta and dressing to the salad ingredients, gently mix together. Cover and place in the fridge to chill for at least 2 hours.
  • Serve as a light lunch or dinner, enjoy.

With me being in Thailand, ready made meatballs are not a problem so the ingredients and instructions will reflect meatballs from scratch, Thai store bought, and US store bought. I made this on 31 May 2023 using Thai store bought meatballs.

Ingredients
  

For Meatballs from Scratch

  • 750 grams ground beef, (1½ lb)
  • teaspoons salt
  • teaspoon pepper
  • 1 egg
  • 1 tablespoon minced onion
  • ½ cup soft breadcrumbs

For Thai store bought Meatballs

  • 750 grams beef meatballs, (1½ lb)

For US store bought Meatballs

  • 750 grams frozen beef meatballs, thawed, Walmart or Kroger brands would be perfect, (1½ lb)

Remaining Ingredients

  • 1 tablespoon cooking oil
  • 3 tablespoons flour
  • 1 can diced tomatoes, undrained, (565 g / 20 oz)
  • 1 cup water
  • ½ teaspoon salt
  • 2 teaspoons sugar
  • 1 tablespoon dried basil
  • 3 medium potatoes, peeled and diced
  • 4 small carrots, peeled and diced
  • 1 onion, coarsely chopped
  • 1 stalk celery, sliced

Instructions
 

For Meatballs from Scratch

  • In a mixing bowl, add the ground beef, salt, pepper, egg, onion, and breadcrumbs.
  • Mix together then form into balls about 3 cm (1 inch) in diameter.
  • Heat the oil in a large non stick pan, when hot, add meatballs, working in batches if needed, and brown the meatballs. Removed browned meatballs to a 3 quart casserole.

For Thai store bought Meatballs

  • These are refrigerated and not cooked when bought, follow these steps for preparing these meatballs.
  • Heat a saucepan of water to boiling, when boiling add the meatballs and cook until cooked through, about 8-10 minutes. Drain meatballs.
  • To give the meatballs a little color, heat the oil in a large non stick pan, when hot, add the meatballs, and brown them. Removed browned meatballs to a 3 quart casserole.

For US store bought Meatballs

  • Kroger and Walmart Great Value Brands would be perfect for this. These come fully cooked and frozen. Just thaw and heat through in a hot pan with a little oil then drain and place in a 3 quart casserole.

Rest of the Instructions

  • While you are browning or cooking the meatballs, go ahead and prep the vegetables. I was out of celery so I just omitted that.
  • Once all the meatballs are browned and removed, drain off all but 3 tablespoons of fat, if using the store bought meatballs, just melt in some butter to make the 3 tablespoons of fat. Stir in the flour.
  • Add the rest of the Remaining Ingredients, bring mixture to a boil then lower heat to just a simmer and cook 10 minutes, adding additional water as needed. While mixture is simmering, preheat your oven to 180° C (350° F), place a sheet of foil or a foil lined baking sheet on the bottom rack to catch any spills.
  • Carefully pour the mixture into the casserole with the meatballs. Carefully mix the meatballs into the mixture.
  • Cover and place on the middle rack in the oven, bake for 1 hour or until vegetables are tender. Carefully remove the cover and give the stew a stir.
  • Serve and enjoy.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion, finely diced
  • 750 grams ground beef, lean, (1½ lb)
  • 4 cups water
  • 2 cups tomato sauce
  • tablespoons cider vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 3 tablespoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ½ teaspoon salt
  • 1 bay leaf

For Serving

  • hot cooked spaghetti
  • Cheddar cheese, shredded, optional
  • onion, diced, optional
  • beans, kidney or chili beans

Instructions
 

  • Heat the oil in a large pot, when hot, add the onion and cook until softened and translucent. While the onion is cooking, get everything else measured out and ready.
  • To the pot, add the remaining ingredients.
  • Bring to a boil then reduce heat and just simmer on low for 2 hours to thicken the sauce, stirring occasionally. Remove any fat that floats to the top.
  • When the sauce has thickened and you are ready to serve, remove the bay leaf. Cook your spaghetti according to package directions, and if serving with cheese, onion, and or beans, go ahead and get all of those ready.
  • To serve, ladle sauce over hot cooked spaghetti, then optionally top with beans, onion, and shredded cheese as you desire. Enjoy.

Notes

Beef would be the most expensive part of this dish, cheese would also add to the per serving cost, but for 6 serving, this is probably a Fair cost per serving.

Ingredients
  

  • 500 grams ground beef, (1 lb)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 eggs
  • cups heavy cream
  • 1 teaspoon mustard powder
  • 225 grams Cheddar cheese, shredded, (8 oz / 1-1½ cups)
  • salt and pepper, as desired

Instructions
 

  • Preheat your oven to 180° C (350° F), get out a 7x11 baking pan.
  • Heat a non stick skillet, when hot, add the beef, onion, and garlic. Cook, breaking up the beef with your spatula, until no pink remains, seasoning with salt and black pepper as desired. Drain any fat.
  • While the beef is cooking, add the eggs, cream, mustard powder, salt and pepper as desired, whisk together.
  • Add cooked and drained beef to the 7x11 baking pan, spread out evenly.
  • Top the beef with the cheese evenly.
  • Pour whisked eggs over the beef and cheese.
  • Bake for 50 to 55 minutes or until the eggs are set in the center and golden brown. When eggs are set, remove from oven and let set for 5 minutes.
  • Cut into squares, serve with sides of your choice, enjoy.

  • 1 kilo frozen chicken nuggets, you will not use them all, (2 lb)
  • 2 cups pasta sauce, Shortcut
  • 2 cups Mozzarella Cheese, shredded
  • hot cooked spaghetti, as desired, for serving

Instructions
 

  • Preheat your oven to 180° C (350° F), grease a 9x13 baking dish with butter.
  • Place frozen chicken nuggets in the prepared dish in a single layer.
  • Pour the pasta sauce over the nuggets and spread out evenly.
  • Sprinkle the cheese over the sauce.
  • Bake for 30-40 minutes or until the cheese is starting to brown on top.
  • While the casserole is baking, cook spaghetti or pasta of your choice, until tender, drain.
  • Serve casserole spooned over hot pasta, and a vegetable for a great meal. Enjoy.

Slow Cooker Honey Garlic Kielbasa

Slow Cooker Honey Garlic Kielbasa

Excellent tasting sauce with the sausage. Be careful not to overcook or you have have some sausage that is a little tough. This can be served as an appetizer or over rice, egg noodles, or potatoes for a main dish.

Ingredients
  

  • ¼ cup brown sugar, packed
  • cup honey
  • ½ cup ketchup
  • 2 tablespoons light soy sauce
  • 4 cloves garlic, minced
  • 1 kilo Kielbasa sausage, sliced ½ to ¾ inch slices, (or Polish sausage, or any precooked smoked sausage)

Instructions
 

  • To the slow cooker, add all the ingredients except the Kielbasa. Stir to mix together.
  • Add the sliced Kielbasa or smoked sausage of your choice. Stir into the sauce to coat the sausage slices.
  • Cover and set to Low setting, cooking 4 hours, stirring about every 30-40 minutes.
  • Serve with your choice of sides, and enjoy. We served this with rice and sautéed mushrooms on the side, but so good, no photo.

I like potatoes, cheese, and salmon, so I came up with this from a mix of recipes. I made this on 8 Nov 2022, and it is delicious! The family enjoyed this as a side dish with ham steaks, I enjoyed this as a main dish with a side of mixed veggies - excellent comfort meal.

Ingredients
  

  • 5-6 cups sliced potatoes, thinly sliced, mandoline is perfect for this
  • 4-5 cups Cheddar cheese, shredded
  • ½ cup onion, diced
  • 3 tablespoons all-purpose flour
  • 1 can salmon, drained, flaked, (15 oz / 425 g)
  • 1 can condensed creamy chicken mushroom soup, (10½ oz / 298 g)
  • ½ cup milk
  • salt and pepper, as desired

Instructions
 

  • Use a mandoline to get perfectly thin and even slices. This was from 4 potatoes.
  • Prep the onion and shred the cheese. Set aside ½ to 1 cup of cheese for the final step in baking. It was a big onion so I diced the whole thing and will store in the fridge for use in another recipe in a few days.
  • Preheat your oven to 180° C (350° F), grease a 9x13 baking dish with butter or cooking spray.
  • Whisk together the soup and milk in mixing bowl and set aside.
  • Layer the bottom of the baking dish with half of the potatoes.
  • Sprinkle with 1½ tablespoons flour and add salt and black pepper as desired.
  • Sprinkle on half the onion, half the salmon, and half the cheese.
  • Add the remaining potatoes in a layer. Then the remaining flour, salt and pepper, then the remaining onion, salmon, and ending with cheese.
  • Pour the soup mixture over the top
  • Cover with foil and bake for 45 minutes or until potatoes are tender, this may take longer than 45 minutes depending on the thickness of the potato slices. Remove foil.
  • Sprinkle with the reserved cheese.
  • Bake uncovered now for another 10 to 15 minutes until cheese is bubbly and starting to brown.
  • Serve as a side or a main dish, and enjoy .

Variants: 1. This would be equally as delicious using ham in place of the salmon.

Ingredients
  

  • 4 chicken breasts, boneless, skinless, cooked, shredded, (650 g / 1½ lb), Shortcut
  • cups cooked white rice
  • 5 slices bacon, diced
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth, Shortcut
  • 1 can artichoke hearts, I use Fiamma brand, imported from Italy, (14 oz / 400 g)
  • ½ cup Cheddar cheese, shredded
  • salt and black pepper, as desired, to taste

For the Topping

  • 2 tablespoons extra virgin olive oil
  • ¼ cup Parmesan cheese, grated
  • ½ cup panko breadcrumbs

Instructions
 

  • Cook the chicken your preferred way, boil, bake, or use leftover chicken if you have a lot. I prefer to use my pressure cooker and I can make broth at the same time. My preferred way to shred chick is to cut into large cubes the use my hands to pull the cubes apart, result is shredded chicken without the long pieces of chicken. Set the chicken aside.
  • Heat a large pan on medium to medium low heat, add the diced bacon and cook until crispy, stirring often. Remove the bacon with a slotted spoon to a plate lined with paper towels. My preferred pan is wok pan.
  • Drain from the pan all but 3 tablespoons of bacon fat, then add the onion. Sauté until softened and just starting to brown. Then add the garlic and sauté until frgrant.
  • Add the flour and stir for 2 minutes.
  • Add the broth and stir in. Now preheat your oven to 190° C (375° F) and get out a 7x11 inch backing dish.
  • Simmer for 6-8 minutes until mixture thickens and bubbles. Taste and season with salt and pepper as desired.
  • Now add the shredded chicken, drained bacon, artichokes, and rice.
  • Mix together and let simmer for a few minutes.
  • Pour mixture into the baking dish and spread out evenly.
  • Top with the Cheddar cheese.
  • In a small bowl, mix together the Topping ingredients, sprinkle on the top.
  • Bake for 35 minutes or until the top is golden brown and the casserole is bubbly.
  • Serve with your sides of choice, enjoy.
