The is an old school baked dish to use vegetables from the garden and some sausage from the market. This could be a new regular dish here after I try this version. This is a straightforward recipe. We know the green beans as yard beans.

Ingredients
  

  • 500 grams smoked sausage, sliced
  • 500 grams potatoes, washed, skin on, cut into 1 inch pieces
  • 350 grams yard beans, cut into 1 inch pieces
  • 1 medium onion, cut into wedges
  • 2 cloves garlic, smashed and minced
  • 2 teaspoons olive oil
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 220 C. Get out a 9x13 inch baking dish.
  • In a large bowl, add all ingredients and toss to coat. Pour this into the baking dish, cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes or more until the potatoes are tender. Serve.

Notes

Figure about 150 Baht for the smoked sausage from Makro. For 6 servings, this is about 75 cents per serving, good value.

This is truly a one meal, for the time it takes potatoes to cook, the meal is ready. You can tailor this for as many or as few people as you are serving. Ingredients
  

  • 1 kilo potatoes, cut into large pieces
  • 1 kilo smoked sausage, cut into 1 inch pieces
  • 4 ears sweat corn, cut each ear into 3 pieces
  • 1 1/4 kilos fresh shrimp, whole, or you can remove heads if you want
  • 4 bay leaves
  • 1/4 cup Old Bay seasoning, OR make from a shortcut, reserve 1 teaspoon aside
  • lemons, cut into wedges
  • melted butter
  • cocktail sauce, OR make from a shortcut, optional

Instructions
 

  • Fill a large pot with water, about 8 quarts (liters) and bring to a boil.
  • Add the Old Bay seasoning and bay leaves, reserve 1 teaspoon of Old Bay for use later. Place the potatoes in the water and cook for about 8-10 minutes or until they are just beginning to soften when pierced with a fork. Then add the sausage and cook for another 5 minutes. Then add the corn and the corn and cook for another 5 minutes. Finally, add the shrimp and cook for 3-4 or until the shrimp is pink and cooked through.
  • Remove everything and drain well and place on a large platter or two (or just put down some newspapers on a table if eating outside). Sprinkle the remaining Old Bay over the meal and drizzle with melted butter. Set out lemon wedges as well. For the butter, you can also serve melted butter in individual small bowls for each person. Optional, serve with cocktail sauce.

Notes

One kilo of smoked sausage is between 100 and 200 Baht depending on where you get it from, I will use 150 Baht as an estimate here. Shrimp go with about 150 Baht as well, much less if you can get from a local fisherman. Corn and potatoes, you can get them locally. This comes to $2.20 per serving for 4 servings, and about $1.50 per serving for 6 servings. Not a cheap meal but would be a hit for visiting friends and family.
Variants, add fresh clams, add fresh crabs or just large crab claws.

This sounds really good, to extend the servings, serve over mashed potatoes. On my to cook list. Minimal ingredients makes this a must try.

Ingredients
  

  • 1 kilo smoked sausage, sliced
  • 1 head cabbage, coarsley chopped
  • 1 large onion, coarsley chopped
  • 3 cloves garlic, smashed and minced
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 2 teaspoons rice wine vinegar, OR 1 teaspoon apple cider vinegar
  • 1 1/2 teaspoons brown mustard
  • olive oil, as needed

Instructions
 

  • Heat a splash of olive oil in a large nonstick pan over medium-high and add the smoked sausage and cook, stirring occasionally for about 5 minutes to get a light browning to them. Remove from the pan to a plate with a slotted spoon and drain the fat back into the pan.
  • In the same pan with the sausage fat, add the cabbage, onion, garlic, sugar, salt, and pepper. Stir to combine and cook for about 10 minutes, stirring occasionally until the cabbage is tender. Mix in the vinegar and mustard and give a stir, then add the sausage back to the pan and cook for another 2-3 minutes to heat through. Taste and adjust seasoning if desired. Serve as is or over mashed potatoes to get more servings.

Notes

Smoked sausage would be the most expensive part of this dish but you have to look around. I bought smoked sausage at Makro a few months ago for about 150 Baht/500 grams, yesterday however, I bought smoked sausage at Tesco for 99 Baht/1 kilo, so I will figure the sausage at 150 Baht/1 kilo until I check the new sausage I bought yesterday. For 4 servings this is about $1.10 per serving, not bad really, for 6 servings, this is about 75 cents per serving, very good cost.

Ingredients
  

  • 500 grams spicy smoked sausage, sliced
  • 1 1/2 kilos small potatoes, leave skin on and just cut into chunks
  • 2 tablespoons butter
  • 2 onions, quartered and thinly sliced
  • 1 clove garlic, smashed and minced
  • 3/4 teaspoon cracked black pepper
  • salt, to taste
  • 1 1/2 teaspoons paprika
  • 1 1/2 cups chicken stock, fresh or from powder
  • 1 tablespoon fresh parsley, chopped
  • olive oil

Instructions
 

  • Place a medium sized over medium-high heat, and add in about 1 tablespoon of oil; once the oil is hot, add in the sausage and cook them a few minutes until they become a browned then remove the sausage from the pan with a slotted spoon, and set aside.
  • In the same pot, add in the butter, and allow it to melt then add in the sliced onions and cook those in the butter and sausage drippings until a rich, golden brown, about 5-7 minutes. Next, add in the garlic, plus a pinch of salt to your liking, the cracked black pepper and the paprika, and stir to combine with the onions, cook just until the garlic becomes aromatic.
  • Next, add in the potatoes, and fold them into the onions/garlic to coat them well, then add in the chicken stock and stir to combine, then push the potatoes down into the stock/onion mixture as much as possible to allow them to cook evenly, cover the pot with a lid that is askew to allow some steam to escape, and simmer on medium-low heat for about 15 minutes, stirring gently once or twice. Uncover the pot and allow the potatoes to continue to simmer for another 10 minutes, or until they are tender and the sauce a bit thickened, stirring once or twice during that time.
  • When the potatoes are tender, add in the sausage and parsley and gently mix together, add a drizzle of olive oil and season with additional salt and pepper if desired. Cook on a low simmer until heated through, serve with bread.

One-Pot Cajun Shrimp & Sausage Pasta

  • 500 grams dry linguine, OR spaghetti, OR Fettuccine
  • 4 tablespoons butter, divided, this is 1/4 of a standard block
  • 1 tablespoon Cajun spice mix, OR make from a shortcut
  • 500 grams fresh shrimp, peeled, deveined, and tails removed
  • 500 grams spicy smoked sausage, sliced
  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 2 cloves garlic, smashed and minced
  • 1 teaspoon red pepper flakes, optional and to taste
  • 1 teaspoon dried thyme
  • 1 cup chicken stock, fresh or from powder
  • 1 cup heavy cream, OR use milk, OR make from a shortcut

Instructions
 

  • In a large pot, cook the pasta of your choice in boiling water until just tender, drain then set aside.
  • Using the same pot, heat the half the butter and the Cajun seasoning and mix the spice with the butter, then add in the shrimp and cook until they turn pink, then remove the shrimp from the pot and set aside.
  • Add the remaining butter to the pot and once it is melted, add the onion and bell pepper and cook for about 3-5 minutes, until the onion is translucent, then add the sausage and cook for another 1-2 minutes, then add the garlic, red pepper flakes if desired, and the thyme. Mix well. Then stir in chicken stock and heavy cream, mix well and cook for 3 minutes or until the sauce is starting to thicken. Then add in the shrimp and pasta and mix well to combine everything. Serve.

Notes

The sausage would cost about 150 Baht/500 grams (this is about 5 large links). Shrimp will run about 100 Baht/500 grams from a grocery store, for those along the coast, you can normally buy local ocean cast net caught shrimp for a bit less. For 4 servings, this is about $1.84 per serving. For 6 servings, this is about $1.23 per serving. Overall, not a bad cost for visiting friends, or even with Thai family (with the Thai family, up the Cajun spice and red pepper flakes).

  • 3 clove garlic, smashed and minced
  • 1/2 teaspoon black pepper
  • 500 grams spicy smoked sausage, sliced
  • 4 large potatoes, cubed

Instructions
 

  • Preheat your oven to 190 C. Get out a 9x13 baking dish.
  • In a large bowl, mix the soup, milk, garlic, and pepper, then stir in the potatoes and sausage. Once mixed, spoon this into your baking dish. Bake for 90 minutes or until the potatoes are tender. Remove from oven, let rest 5 minutes, cut and serve. A green salad and vegetable on the side would make this a complete meal.

Notes

The sausage would cost about 150 Baht/500 grams (this is about 5 large links). Make the soup yourself, it takes only 5 minutes. For 8 servings, this is about 55 cents per serving. Good value.
Variants, keep in mind adding any of these, increases the per serving cost. Add cabbage. Add a chopped onion. Add some shredded cheese on the top.

For the Biscuits

  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk

For the Gravy

  • 500 grams breakfast sausage, OR make from a shortcut
  • 2 tablespoons butter
  • 6 tablespoons all purpose flour
  • 3 1/2 cups milk
  • 1/4 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • In a bowl combine flour, baking powder, and salt. Combine milk and butter and incorporate into dry ingredients just until blended. Drop by rounded spoonfuls onto a greased cookie sheet. Bake for 10-12 minutes, or until golden brown.
  • Meanwhile, brown the sausage in a medium saucepan over medium heat, until cooked through. Add the butter and stir until melted. Sprinkle the flour over the sausage mixture and mix, then gradually add the milk, salt, and pepper. Stir over medium heat until it thickens to desired consistency. Serve over warm biscuits. Serve as is, with a side of fried or scrambled eggs, hash browns, and or toast.

Notes

Make the sausage yourself from minced pork will cost about 50 Baht/500 grams. For 4 servings, this is about 37 cents per serving.

Sausage, Peppers, and Onion

This is an old school recipe that has been a mainstay for years of many folks. This used to be considered poor folks food, but sometimes the simplest recipes are the best. I have been making this for years but stopped when I got to my present location due to availability of the sausage, now that I have found the sausage, this is a excellent dish and low cost. You can change this up to your liking. You can use any sausage you like, chicken, beef, or pork.

Ingredients
  

  • 500 grams smoked sausage, sliced about 1/4 inch thick
  • 1 onion, cut into 1 inch pieces
  • 3 cloves garlic, smashed and minced
  • 1 yellow bell pepper, cut into 1 inch pieces
  • 1 green bell pepper, cut into 1 inch pieces
  • 1/2 teaspoon dried oregano
  • 1/2 cup Parmesan cheese, grated
  • salt and pepper, to taste

Instructions
 

  • In a large non-stick skillet on medium high heat, add the sliced sausage.
  • Brown the sausage, about 5-10 minutes.
  • Then add the onion, garlic, and bell pepper.
  • Season with oregano, and salt and pepper to your liking. When the pepper and onion are tender, remove from heat. (I cover with a lid while it is cooking and just mix it every few minutes.)
  • Sprinkle on the cheese and mix to coat everything, serve.
  • Serve as is, or over hot rice or pasta.

Notes

The sausage at Makro will cost about 125 Baht for 500 grams. This comes to about 90 cents per serving for 6 servings. From my experience, Makro has sales on this sausage, buy 1 kilo get 500 grams free so there is even more savings.
Variants: 1. Use more sausage and add a red bell pepper. 2. Add a good handful of sliced mushrooms, King Oyster or Shiitake would be good, and I think Straw mushrooms sliced in half lengthwise would be excellent.
Another variant, provided by good friend John Petersen, United States, serve this on a bed of freshly cooked hash browns and top with a couple of sunny side up eggs. (This I will do!)

This is a an old Pennsylvania Dutch recipe that in my opinion is very good, an acquired taste really. Recipe is based on making your pork sausage. Link to the shortcut is listed in the Notes section.

Ingredients
  

  • 750 grams pork sausage, Shortcut
  • 1 can evaporated milk
  • 1 cup yellow corn meal
  • ¼ teaspoon ground black pepper

Instructions
 

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and rinse in colander under cold water, breaking sausage into pea sized pieces. Return to skillet along with the condensed milk, and heat over medium until just bubbling. Immediately stir in the cornmeal and pepper and reduce heat to simmer. Continue cooking, 5 minutes total; mush will be stiff.
  • Remove from heat and pack into 8x4 loaf pan, cover and chill overnight, pack tightly. To serve, cut into ¼ to ½ inch slices and sauté until golden in nonstick skillet.
  • Removed from the fridge the next morning, the end piece fell apart when I floured it, the other pieces, cut about â…œ inch thick, held together well for the most part.
  • I did the optional step and floured the slices and fried them in bacon fat.
  • Browning in the pan.
  • Served.

Notes

Minced pork is about 130 Baht/kilo, 750 grams would be about 98 Baht. For 8 servings minus sides (like eggs and hash browns), this is about 37 cents per serving.
Optional, slice about ¼ inch thick, roll in flour then fry, also, slice thin for crispy fried slices or slice a bit thicker for a softer less crispy variant.

Ingredients
  

  • 500 grams breakfast sausage, OR make from a shortcut
  • 1/4 cup butter, this is 1/4 of a regular block of butter
  • 1 1/2 cups evaporated milk
  • 1 1/2 cups water
  • 1/4 cup all purpose flour
  • salt and pepper, to taste

Instructions
 

  • Crumble sausage into hot skillet. Cook until browned. Remove sausage from skillet, let drain on paper plate or paper towels. Add butter to hot skillet and melt together with sausage fat.
  • Whisk together the evaporated (canned) milk and water with the flour. Add to hot fat in skillet. Add salt and pepper to taste. Bring to a boil, stirring constantly until gravy starts to thicken. Add sausage back into gravy; heat until sausage is hot and gravy is thick. Remove from heat. Ladle over biscuits, toast, or potatoes. This would be perfect with the Drop Biscuit recipe listed in Sides - All Others.

Notes

500 grams of minced pork is about 65 Baht if you make the sausage yourself, it is so easy! Minced chicken for a chicken sausage, even less. Pre-made breakfast sausage, more than likely an import would be costly. Going with home made breakfast sausage, 65 Baht is well under $1 per serving. I will say that with store bought bulk sausage this would be a Fair Value item.
