Sliders are essentially small burgers/sandwiches, often made using dinner rolls. Tesco has the 12 pack of rolls. This slider recipe sounds great.

Ingredients
  

  • 1 12 pack rolls
  • 9 eggs, scrambled
  • 6 slices ham
  • 6 slices white Cheddar cheese
  • 8 slices bacon, chopped, cooked crispy
  • 85 grams baby spinach, blanched and squeezed dry
  • 2 tablespoons butter, melted
  • black pepper, to taste

Instructions
 

  • Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  • Spread the scrambled eggs on the layer of rolls, then the ham slices, then the cheese slices, then the bacon.
  • Place the top layer of the rolls on the top, brush with melted butter and sprinkle with black pepper to your liking. Bake for 20 minutes.
  • Slice into individual sliders, serve, and watch your fingers!

Notes

The rolls at Tesco are 40 Baht, the bacon, maybe 50 Baht. Cheese I will estimate at 50 Baht. For 4 servings, this is about $1.03 per serving.

  • 1/3 cup BBQ sauce, OR make from a shortcut
  • 1/2 red onion, thin sliced
  • 6 slices Pepper Jack cheese, see Step 1
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons butter, melted

Instructions
 

  • For those in Thailand, the big cities may have Pepper Jack cheese, for those not in the big cities (such as myself), use a mix of shredded Cheddar and Mozzarella and add a pinch of red pepper flakes, aka, Thai Chili Powder, which a is crushed type, not a powder.

Salmon Pasta Salad

This sounds really good, a must try for me. For those in Thailand, make use of your rice cooker and steam salmon instead of the high priced small cans of salmon. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 250 grams spiral pasta, cooked and drained
  • 2 cups cooked salmon, canned OR make from a shortcut
  • 1 1/2 cups cherry tomatoes, quartered
  • 1 medium cucumber, quartered and sliced
  • 1 small red onion, sliced
  • 1/2 cup canola oil, or rice bran, or corn oil
  • 1/3 cup lemon juice, or lime juice
  • 1 1/2 teaspoons dill
  • 1 clove garlic, smashed and finely minced
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 head lettuce, torn

Instructions
 

  • In a large bowl add the pasta, salmon, tomatoes, cucumber and onion.
  • To make the dressing combine the canola, rice bran, or corn oil, lemon or lime juice, dill, garlic, salt and pepper and whisk well. Pour over pasta salad. Cover and chill for at least 2 hours.
  • Serve over lettuce leaves.

Notes

Figure 3 salmon fillets, you need to skin these yourself, to make the 2 cups of cooked salmon. The salmon fillets I get are 69 Baht each. For 6 servings, this is about $1.02, good value overall.

One Pot Smoked Sausage Dinner

One Pot Smoked Sausage Dinner

Sounds like a great meal, in Thailand, Makro has some excellent smoked sausage at times. All slow cookers are different so the first time you make this, you may need to adjust the liquid needed. On my to cook list.

Ingredients
  

  • 500 grams smoked sausage, cut into 2-3 inch pieces
  • 6-8 medium potatoes, washed only
  • 2 heads small cabbage, quartered
  • 2-3 large carrots, cut in half, 2-3 inch pieces
  • 1 1/2 cups beef stock, fresh or from powder

Instructions
 

  • Oil or butter your slow cooker crock. Wash and prep the veggies as indicated.
  • Place in the slow cooker, first potatoes, then carrots, then cabbage, then sausage. Pour in the stock. Cover and cook on High setting for 4-7 hours.
  • When the potatoes and carrots are fork tender, the meal is ready.

I cannot price this until I make it, I need to go up to Makro for sausage and I can get accurate pricing information then. I will say Fair value for right now and will update this.

Italian Marinated Pork Chops

Italian Marinated Pork Chops

Sounds good, and only two ingredients!

Ingredients
  

  • 4 pork chops, boneless, about 1 1/2 inches thick
  • 1 bottle Italian dressing

Instructions
 

  • Marinate the pork chops with the Italian dressing, cover and place in the fridge for 2-4 hours.
  • Prepare your grill for medium hot coals. Remove the chops from the dressing and discard the dressing. Grill for 12-16 minutes, turning once, about 6-8 minutes per side, remove the chops from the grill and let them rest for 3 minutes, serve.
  • You can also broil the chops for 12-16 minutes, turning once half way through, if you have no access to a grill.

Notes

I cannot price this yet. I will use a large pork loin and slice chops from that. For now I will estimate this is fair value.

Easy Garlic Shrimp

This sounds really good, this is a basic garlic shrimp recipe, can be served over pasta, rice, or as with with some garlic bread.

Ingredients
  

  • 500 grams fresh shrimp, see Step 1
  • 1/2 cup fresh parsley, chopped
  • 3-4 cloves garlic, smashed and minced
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon paprika
  • 1 tablespoon lemon juice, or lime juice
  • salt and pepper, to taste

Instructions
 

  • Key is fresh shrimp, not frozen, shrimp can be medium in size or large, that is up to you. Peel, devein, and remove the tails.
  • Heat up a pan to medium high heat with the olive oil, butter, and garlic,. Constantly stir allowing the garlic to cook and become fragrant, not browned, for about 1 minute.
  • Add the shrimp, paprika, and lemon juice. Stir the shrimp allowing all sides to turn pinkish-orange, about 2-3 minutes. Turn off the heat, add the parsley, season with salt and pepper. Stir a few times making sure the parsley is well mixed.
  • Serve as is with bread, over pasta, or over rice.

Notes

Figure 150 Baht/500 grams for large shrimp. For 3 servings, this is about $1.47 per serving.

One Pan BBQ Pork Ribs

I just use the pork rib term freely as the only ribs I have seen here is the short pork ribs, and they tender and delicious as well. This is the oven cooked type of ribs, and it sounds tasty. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 1 1/2 kilos pork ribs
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 2 teaspoons dried oregano
  • 1/4 cup brown sugar
  • 1 cup BBQ sauce, OR make from a shortcut
  • 500 grams fresh long beans, cut into 1 to 1 1/2 inch pieces

Instructions
 

  • Preheat your oven to 140 C. Line a baking sheet with foil.
  • In a bowl, mix together the salt, black pepper, paprika, cayenne pepper, oregano, and brown sugar.
  • Trim the ends of the strip of ribs to remove any odd or cartilage pieces, lay the strips on the baking sheet, cut the strips in half if needed. This is the type of ribs I use from Tesco.
  • Season both sides of the ribs with the seasoning, arrange meaty side up, cover with another sheet of foil. Bake for 2 hours.
  • Increase the oven temp to 200 C, carefully remove the foil covering the ribs, spread BBQ sauce evenly over the top of the ribs, place the long beans along the sides of the pan, season the long beans with salt.
  • Bake for another 10 minutes. Cut the ribs into single bone pieces.
  • Serve the ribs with the long beans, complete meal.

Notes

Pork ribs are about 115 Baht/kilo. 1 1/2 kilo would be about 173 Baht. For 4 servings, this is about $1.27 per serving, over all good price for a quality meal, after all, who does not like ribs.

Ingredients
  

  • 1 kilo lean beef, thinly sliced
  • 2 cups bell pepper, cut into 1 inch squares
  • 1/2 onion, sliced
  • 1 cup beef stock, fresh or from powder
  • 2 cloves garlic, smashed and minced
  • 1/3 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Sriracha Chili Garlic sauce
  • 1/2 cup water
  • 2 tablespoons corn starch

Instructions
 

  • Place the meat on the bottom of the slow cooker. Top with sliced onion. For even better flavor, sauté onion in skillet until golden brown, then add it to the slow cooker. Top with cut up bell pepper. Sprinkle with salt, pepper and garlic.
  • Mix the broth with Sriracha, pour over the peppers and beef. Cook on Low setting for 7-8 hours or High setting for 3 1/2 to 4 hours.
  • Mix the 1/2 cup water and corn starch. Add 1 cup of liquid from the meat & pepper mixture and cook on medium heat until boiling, then cook 2 minutes past boil to remove the cornstarch flavor. Add this mixture back to the meat and bell peppers. Sprinkle with chopped parsley and stir.
  • Serve hot over rice, pasta, or mashed potatoes.

Notes

The beef will cost about 200 Baht/kilo, if you can source from a local village market, you may get it for less. For 4 servings, this is about $1.47 per serving.

For the Beef

  • 1 kilo beef, cut into 1 to 1 1/2 inch pieces
  • 4 cups beef broth, fresh or from powder
  • 1 onion, chopped
  • 2 teaspoons Italian seasoning, OR make from a shortcut
  • 2 teaspoons salt, or to taste
  • 1 teaspoon black pepper, or to taste

To Make the Gravy

  • 1/4 cup cold water
  • 3 tablespoons corn starch

To Serve

  • 4-6 cups cooked rice
  • fresh parsley, chopped, for garnish

Instructions
 

  • Add the beef, broth, onion to your slow cooker, sprinkle with salt, pepper, and the Italian seasoning. Cover and cook on Low setting for 8 hours.
  • About 15 minutes before serving, transfer the contents of the slow cooker into a large pot on your stove and bring it to a boil. Whisk together the corn starch and water, add to the pot and stir in until thickened.
  • Serve over rice and garnish fresh chopped parsley if desired.

Potato Ham & Cheese Soup

Sounds great, I like a good potato soup. Very simple ingredients as well, perfect, on my to cook list.

Ingredients
  

  • 3 cups potatoes, cubed
  • 3 tablespoons butter
  • 1 small onion, diced
  • 3 tablespoons all purpose flour
  • 3 cups milk
  • 1 1/2 cups Cheddar cheese, shredded
  • 1 cup ham, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Boil the potatoes in a stock pot until desired tenderness then drain off the water reserving 1 cup for later use.
  • Melt the butter in a small pan and cook the onion until soft.
  • Now add the cooked onion, butter and flour to the stock pot and stir to mix together over low heat. Keep stirring until you get the thickness desired then remove from the heat.
  • Now mix in the potatoes, milk, the cup of liquid from the potatoes, cheese, and ham to the stock pot stir to mix and simmer over medium heat for 30 to 40 minutes stirring from time to time until it thickens.
  • Serve.

Notes

I cannot price the ham yet until I go back to Makro and buy some, reasonable price though. The cheese is costly, so for now I will state this as fair value and will update pricing when I get some ham.
