Crab Omelet

Adapted from several Asian style recipes.
For this, I will use imitation crab meat, it is just fish, and I like it. This is based somewhat on Filipino and Thai Omelets. Some Filipino omelets cook the filling first and later added, and many Thai omelets are just flat with fillings added with the eggs, not folded, so let's combine these methods.

Ingredients
  

  • ¾ cup imitation crab, slice at an angle, about ¼ inch thick slices
  • ½ onion, halved and thinly sliced
  • 2 tablespoons spring onion, sliced
  • 4 tablespoons butter
  • 3 eggs, whisked
  • salt and pepper, as desired

Instructions
 

  • Prep the crab meat, onion, and spring onion. Add the eggs to a bowl and whisk.
  • Heat the butter in a nonstick pan on medium high heat, when hot, add the onion, saute until almost soft.
  • Add the crab meat and spring onion, stir to mix together.
  • Pour in the whisked eggs to cover the pan and contents.
  • Cook for a few minutes to set the bottom, lift the sides to check and move the pan around. When the eggs are set, flip the omelet and cook the other side until golden brown.
  • Slide to a plate, serve with rice or toast, and enjoy.

These are great deviled eggs, great taste. Feel free to use lump crab meat or imitation crab. This recipe assumes you have hard boiled eggs already prepared. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 12 hard boiled eggs, peeled, Shortcut
  • 1 can lump crab meat, drained, (250 g / 8 oz)
  • cup mayo, of your choice
  • 2 tablespoons fresh dill, chopped, plus additional for garnish
  • 2 teaspoons lemon pepper
  • 2 teaspoons Dijon mustard
  • 1 teaspoon prepared horseradish

Instructions
 

  • For the crab meat, after you drain can, place that in a shallow bowl, remove any shell fragments, then flake it apart with a fork. If using imitation crab (crab sticks, my preference), chop the sticks into 1/4 inch pieces and crumble them with your hands.
  • Slice the eggs in half lengthwise, remove the yolks to a mixing bowl, mash the yolks with a fork and place the whites on a serving tray, flat side up. Eggs, yolks, and crab all prepped.
  • Add the crab meat to the yolks, and add remaining ingredients.
  • Mix together well.
  • Spoon mixture into the egg whites, top each egg with additional dill for garnish, as desired. Chill for an hour, serve and enjoy.

Italian Deviled Eggs

Italian Deviled Eggs

These sound good and another alternative deviled egg. On my to make and taste list. This recipe assumes you have hard boiled eggs already prepared.

Ingredients
  

  • 6 hard boiled eggs, peeled
  • 1/3 cup mayo, of your choice
  • 1/3 cup Parmesan cheese, shredded
  • 2 tablespoons carmelized onions
  • 2 tablespoons proscuitto, cooked and crumbled, or bacon
  • 1/2 teaspoon dried basil
  • fresh basil leaves, chopped, for garnish, as desired

Instructions
 

  • Slice the eggs in half lengthwise, remove the yolks to a mixing bowl, place the egg whites, flat side up on a serving tray.
  • Mash the yolks with a for then add mix in the mayo, onion, cheese, dried basil, and the prosciutto.
  • Pipe or spoon the yolk mixture into the egg whites and garnish each egg with a bit of chopped fresh basil. Enjoy.

Easiest Deviled Eggs, Ever!

For a basic deviled egg, the egg yolks are mixed with mayo and mustard, well we are not going to do that. So actually, you could call this the laziest way to make deviled eggs, ever. This recipe assumes you already have hard boiled eggs available, and if someone else prepared those, and peeled them, bonus for being even more easy (or lazy). Basically if you have hard boiled eggs, this is just another way to enjoy them.

Ingredients
  

  • 2 hard boiled eggs, peeled
  • Kewpie mayo, or mayo of your choice in a squirt bottle
  • mustard, of your choice, in a squirt bottle is preferred
  • black pepper, as desired

Instructions
 

  • Slice eggs in half lengthwise and place on a plate flat side up.
  • Squirt some mayo all over the top of each egg, be generous. Then squirt a small amount of mustard on top of the mayo, and add a sprinkle of black pepper as desired. Enjoy.

Egg Lettuce and Tomato Sandwich (ELT)

A straightforward sandwich with many variants. This recipe assumes you have hard boiled eggs already on hand.

  • 2 hard boiled eggs, chicken or duck, sliced
  • lettuce leaves, as desired
  • fresh tomato, sliced, as desired
  • 4 slices bread, toasted
  • mayo, or mayo of your choice, as desired
  • salt and pepper, as desired

Instructions
 

  • Prep the lettuce and tomato. slice the hard boiled egg.
  • Toast the bread then spread some mayo on each slice, to two slices, add a layer of tomato slices and season with salt and pepper as desired. I used Tor tomatoes.
  • Top with lettuce leaves.
  • Top the lettuce with egg slices.
  • Top with the other slice of bread, mayo side down, slice in half, enjoy.

Ingredients
  

  • 2 chicken breasts, boneless, skinless, diced
  • 2 hard boiled eggs, peeled
  • 3 tomatoes, chopped
  • 2 medium onions, grated
  • 2 tablespoons ghee, or cooking oil
  • ¼ teaspoon ground cumin
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder, if using Thai, use ¼ teaspoon
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ½ teaspoon salt
  • ½ cup water

Instructions
 

  • In a large non stick pan on medium heat, add the ghee or oil, when hot, add the diced chicken, cook, stirring often, until no longer pink. Use a slotted spoon and remove the chicken to a bowl.
  • To the pan, add the cumin and onion, stir fry until the onion is golden colored and soft, about 5 minutes or so.
  • Add the garlic, chili powder, coriander, turmeric, and salt, stir fry for 30 seconds.
  • Stir in the tomatoes, reduce heat to low, cover, and simmer for about 20 minutes.
  • To the pan, add the water, eggs, and chicken, cover again and simmer on low heat for 20 minutes.
  • Serve with rice, enjoy.

Croissant Breakfast Casserole

This recipe came highly recommended and I will say hands down, this is an excellent casserole! This can be tailored many ways to your liking.

Ingredients
  

  • 6 large croissants, cut in half like a hamburger bun
  • 500 grams bacon, cooked crispy, broken into 1 inch pieces, (1 lb)
  • 6 slices Provolone cheese
  • 1 1/2 cups Cheddar cheese, shredded
  • 8 eggs, lightly beaten
  • 2 tablespoons butter, melted

Instructions
 

  • Preheat your oven to 190 C (375 F) and lightly grease the bottom of a 9x13 baking dish with butter.
  • Place the bottom halves of the croissants in the baking dish, top each with a slice of Provolone then top with Cheddar. (I bought the croissants I used from Tesco, excellent croissants but only 5 in a bag.) Place in the oven and bake for 5 minutes or until the cheese starts to melt.
  • Add the bacon pieces to each croissant, then pour in the eggs over the bacon. Place in the oven and back for 15-20 minutes or until the eggs are set.
  • Place the tops of the croissants on the casserole and brush each with the melted butter. Place back in the oven for another 5 minutes or until the tops are lightly toasted.
  • Use a spatula and cut the casserole between the croissants, into 6 sections, serve and enjoy.

Variants: 1. For the sliced cheese, in place of Provolone, use Gouda or Swiss. 2. Use diced ham or cooked and crumbled sausage in place of or with the bacon. 3. Add some diced bell pepper.

An excellent alternative to just plain hard boiled eggs. These turned out perfect, the family loved these. This recipe already assumes you have hard boiled eggs ready.

Ingredients
  

  • 1 1/2 quarts water, (6 cups)
  • 1 packet Bah Kut Teh, herbal seasoning
  • 10 fresh Shiitake mushrooms
  • 2 whole star anise
  • 4 cloves, or 1/8 teaspoon ground
  • 1 2 inch cinnamon stick
  • 1 1/2 inches fresh ginger, peeled
  • 1 head garlic, peeled
  • 1 teaspoon cumin seeds, or 1 teaspoon ground cumin
  • 1 teaspoon fennel seeds
  • 1 tablespoon dark soy sauce
  • 10 hard boiled eggs, peeled
  • 2 tablespoons light soy sauce
  • 2 tablespoons brown sugar, or cane sugar

Instructions
 

  • Most everything ready, mushrooms were in the fridge.
  • In a large pot, add the first 10 ingredients, bring to a boil. reduce heat to a low boil and boil for 30 minutes.
  • Once you have the pot boiling, add the eggs to a mixing bowl and add the dark soy sauce, mix the eggs around to coat them and stain them evenly. Mix the eggs occasionally and set them aside while the pot is boiling.
  • When 30 minutes have passed, add the brown sugar, light soy sauce, and the eggs along with the dark soy sauce from the mixing bowl. Bring to a boil then reduce to a simmer, simmer for 45 minutes.
  • Remove eggs and drain, allow to cool, then place in an airtight container and store in the fridge for up to 3 days.
  • Enjoy as a snack or with a meal for lunch or dinner.

This is not a recipe, this was a spur of the moment sandwich, and it is brilliant. Omelet fillings of your choice, here is what I used.

Ingredients
  

  • 4 eggs, chicken or duck
  • 4 slices bread, your choice
  • 1 spring onion, sliced, white and green parts
  • 1 plum tomato, diced
  • 1/4 cup Cheddar cheese, shredded
  • 1-2 teaspoons fish sauce, or to taste
  • white pepper powder, as desired
  • butter, as needed

Instructions
 

  • Prep the spring onion, tomato, and cheese.
  • Crack the eggs into a bowl, add the fish sauce, and a good shake of white pepper or as desired. Mix with a fork.
  • Heat a tablespoon of butter in a non stick pan, when hot, pour in the mixed eggs. I use a wok pan so I rotate it around a bit to spread out the egg mixture. When the eggs are almost set, sprinkle in the spring onion, tomato, and top with the cheese, (or fillings of your choice) on one half of the eggs, use a large spatula and fold the other half over the filling, cook for another 30 seconds and remove from heat.
  • Toast the bread then butter the slices. Cut the omelet in half with the spatula and top a slice of toast with the half an omelet and top the sandwich with another slice of toast, butter side down. Enjoy!

This recipe comes from my good friend, Brian, in northeastern Thailand. This was his creation that follows keto diet rules and is based on simple intuitive cooking, which is how many cooks come up with new dishes. Keto or not, this sounds absolutely delicious! The Egg Pizza part of the name comes from my wife. I made this on 3 Mar 2019 exactly as written and we absolutely loved it, this recipe is a keeper! Ingredients
  

  • 10 eggs
  • 8 strips bacon, cooked crispy, crumbled
  • 1 bell pepper, diced, your choice of color
  • 1 onion, diced
  • 3-4 spring onions, whites sliced, greens chopped
  • 125 grams Cream cheese, softened, ½ block, (4 oz)
  • marinara sauce, or pizza sauce, as desired, Shortcut
  • Mozzarella Cheese, shredded, as desired
  • Italian seasoning, as desired, Shortcut

Instructions
 

  • Preheat your oven to 180° C (350° F). Lightly grease a 9 inch pie dish with butter.
  • Onion, bell pepper, and spring onions prepped while the bacon is frying.
  • In a mixing bowl or pot, add all the ingredients except the marinara sauce, cheese, and Italian seasoning.
  • Mix to combine, if there is a few lumps of cream cheese, no worries.
  • Pour the mixture into the prepared baking dish and bake for 20-30 minutes or until the center is set (when a toothpick comes out clean), remove from the oven. Now at this point you have a great frittata, now we're going to take it up a notch.
  • Spread the top with marinara sauce as desired, top that with Mozzarella cheese as desired, and sprinkle on some Italian seasoning. I got snap happy with the camera and took the photo before adding the Italian seasoning.
  • Place back in the oven until the cheese is melted.
  • Slice, plate, add another light sprinkling of Italian seasoning as desired, and enjoy!

Variants: 1. Replace the marinara sauce with salsa and replace the Mozzarella cheese with Cheddar cheese and sprinkle with oregano or even taco seasoning - there, you have a Mexican variant, like a Breakfast Burrito without the tortilla. 2. Use plain tomato sauce, oregano, and Cheddar cheese, highly recommended. 3. Add more bacon and use a 7x11 baking dish, highly recommended. 4. Serve with choice of toast, biscuits, or crescent rolls.
