One-Pan Lemon Butter Chicken

One pan dinner, sounds good, this can be finished in the oven or just on the stove top. On my to cook list.

Ingredients
  

  • 4 chicken thighs
  • 2 teaspoons paprika, smoked paprika would be best
  • salt and pepper, to taste
  • 1 tablespoon unsalted butter
  • 2-3 cloves garlic, smashed and minced
  • 1/2 cup chicken broth, fresh or from powder
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 2 cups spinach
  • juice from 1 lemon, or 3 tablespoons
  • 1 teaspoon dried thyme

Instructions
 

  • Preheat your oven to 200 C if you are going to use the oven to finish the dish, me personally, I will just use a lid and on the stove top.
  • Season the chicken thighs with paprika, salt, and pepper to taste.
  • Melt 1 tablespoon of butter in a large oven safe skillet (if using that method to finish) over medium high heat. Add the chicken, skin-side down, and cook it for 3 to 4 minutes per side, or until it’s golden brown. Remove the chicken and set it aside. Reserve 1 tablespoon of fat in the pan and drain the excess.
  • Add the minced garlic and cook, stirring constantly, until fragrant, about 1 minute. Stir in the chicken broth, heavy cream, and Parmesan cheese.
  • Bring the mixture to a simmer and add the baby spinach. Cook until the spinach is wilted and the sauce has thickened slightly, about 3 to 5 minutes.
  • Stir in the lemon juice and thyme. Return the chicken to the skillet, and transfer it to the oven. Bake for 15 to 25 minutes, or until the internal temperature of the chicken reaches 73 C. Serve.
  • OR, Stir in the lemon juice and thyme. Return the chicken to the skillet and put a lid on the pan, Simmer for 15-20 minutes or until juices run clear from the chicken. Serve.

Notes

Four thighs would be under 1 kilo, so less than 75 Baht. For 4 servings, this is about 50 cents per serving.

Ingredients
  

  • 3-6 chicken thighs, boneless, skinless
  • salt and pepper, to taste
  • 500 grams fresh asparagus, root ends trimmed
  • 3 tablespoons butter, divided
  • 6 cloves garlic, smashed and minced
  • 1 1/2 teaspoons Italian seasoning, OR make from a shortcut
  • 1/2 teaspoon onion powder

Instructions
 

  • Season chicken with salt and pepper on both sides. Melt 2 tablespoons butter in a large pan over medium high heat. Stir in garlic and seasoning and cook for about a minute or so until the garlic is fragrant.
  • Reduce heat to medium, add chicken to the pan, and cook for 5-7 minutes, then flip and cook another 5-7 minutes.
  • Scoot the chicken over the sides and add remaining 1 tablespoon butter to the empty portion of the pan. Once the butter is melted, add the asparagus. Season asparagus with salt and pepper to taste. Cook, rotating throughout, for 4-6 minutes until tender and chicken is completely cooked through.
  • Serve.

Notes

Six thighs would be under 1 kilo, so less than 75 Baht. For 4 servings, this is about 55 cents per serving.

Ingredients
  

  • 2 tablespoons all purpose flour
  • 1 clove garlic, smashed and finely minced
  • 1 teaspoon Italian seasoning, OR make from a shortcut
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 chicken breasts, boneless, skinless
  • 2 tablespoons cooking oil
  • 1/2 cup chicken stock, fresh or from powder
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar, packed

Instructions
 

  • Mix flour and seasonings in shallow dish. Moisten chicken lightly with water. Coat with flour mixture.
  • Heat oil in large nonstick skillet on medium heat. Add chicken in batches; cook 2 to 3 minutes per side or until browned and cooked through. Remove from skillet.
  • Stir stock, vinegar and brown sugar into skillet. Bring to boil. Reduce heat to low; simmer 5 minutes or until liquid is reduced by half. Return chicken to skillet. Spoon glaze over chicken and serve.

Notes

Chicken is very reasonable in cost, 4 breast is just about a kilo, which is about 72 Baht. For 4 servings, this is about 53 cents per serving.

Chicken thighs, mushrooms, and beer, sounds like a winner. Simple, easily available ingredients as well. Start to finish in as little as 30 minutes.

Ingredients
  

  • 4 chicken thighs, bone in, skin removed
  • 3 1/2 tablespoons all purpose flour, divided
  • 2 teaspoons fresh thyme, chopped, or 1/4 teaspoon dry
  • 1/4 teaspoon paprika
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 250 grams fresh cremini mushrooms, halved
  • 3/4 cup dark beer
  • 3/4 cup chicken stock, fresh or from powder
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup fresh parsley, chopped
  • 250 grams dry egg noodles

Instructions
 

  • Combine 3 tablespoons flour, thyme, and paprika in a large zip-top plastic bag. Sprinkle chicken with salt to taste. Add chicken to bag; seal. Turn and shake bag to coat the chicken well.
  • Heat a large nonstick skillet over medium-high heat. Add oil to pan, swirl to coat. When the oil is hot, remove chicken from flour mixture and discard flour. Add chicken to pan and cook 4 minutes or until browned. Turn chicken and cook 2 minutes. Remove chicken from pan to a plate, you are just browning, not cooking all the way through.
  • Add onion and mushrooms to the same pan and cook 5 minutes or until mushrooms are browned, stirring occasionally. Stir in remaining 1/2 tablespoon flour, beer, stock, Worcestershire sauce, and season with salt and pepper to taste. Bring to a boil, cook 2 minutes.
  • Return chicken to pan and reduce heat to a simmer and partially cover, cook for 15 minutes or until chicken is done.
  • While the chicken is simmering, bring a pot of water to a boil and cook the egg noodles until tender, drain and set aside.
  • To serve, plate noodles on a plate, top with a chicken thigh, spoon on some sauce and mushrooms from the pan, sprinkle with parsley.

Notes

Maybe 60 Baht for 4 thighs, for 4 servings, this is about 44 cents per serving.

Ingredients
  

  • 500 grams chicken tenders, or cut from breasts
  • 1/2 cup Ranch dressing, more for serving, OR make from a shortcut
  • juice from 1 lemon
  • 4 cups potato chips
  • black pepper, to taste
  • spring onions, chopped, for garnish

Instructions
 

  • Preheat your oven to200 C. line a baking sheet with foil and lightly grease with olive oil. In a large bowl, whisk together ranch dressing and lemon juice and season with pepper. Add chicken and toss until completely coated.
  • Place potato chips in a Ziploc bag and crush with your hands or a rolling pin. Add chicken to bag, seal tightly, and shake vigorously until coated in crumbs.
  • Place the chicken on the baking sheet in a single layer and bake until chicken is golden and cooked through, 20 minutes, flipping once halfway through.
  • Garnish with spring onion and serve with ranch dressing.

Notes

The average boneless but skin on chicken breasts will cost about 40 Baht/500 grams. For 4 servings, this is about 30 cents per serving.

Baked Chicken Wings

I like chicken wings, and I like easy, these sound like the fit the bill perfectly.

Ingredients
  

  • 1 1/2 kilos chicken wings
  • 1/4 cup olive oil
  • 3/4 teaspoon garlic powder
  • 3 teaspoons baking powder
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 220 C. Separate the wings into drumettes and middle sections, boil the wing tips in a pot of water to make some stock for future use and the tips make a good snack for your dog as well.
  • Dry the wing pieces chicken thoroughly with paper towels and place in a medium bowl, add the olive oil and toss to coat. Season with salt, pepper, garlic powder, and baking powder. Mix well.
  • Line baking sheets with foil and grease with additional olive oil and spread chicken in a single layer. Bake for 20 minutes, then broil, or use the top coil for a counter top oven, until golden brown, 7 to 10 minutes. Serve with rice and a vegetable for a complete meal.

Notes

Chicken wings will cost about 135 Baht/1 1/2 kilos. For 4 servings, this is about 99 cents per serving.

This is delicious! This is a great alternative to regular stuffed peppers. Not a $1 per serving meal due to the cheese used, but is certainly worth it. I made this on 1 June 2017 Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 3-4 bell peppers, any colors, halved, seeded
  • 3-4 chicken breasts, boneless, skinless, cubed
  • 3 cups Mozzarella Cheese, shredded, divided
  • 1/2 cup Parmesan cheese, grated
  • 3 cloves garlic, smashed and minced
  • 1 1/2 cups pasta sauce, OR make from a shortcut
  • 1 teaspoon dried parsley
  • pinch red pepper flakes
  • 1/2 cup chicken stock, fresh or from powder
  • salt and pepper, to taste
  • olive oil as needed

Instructions
 

  • Preheat your oven to 200 C (390 F). Get out a 9x13 baking dish.
  • Heat a skillet with a splash of olive oil and add the cubed chicken, season with salt and pepper as desired.
  • Cook until just cooked through for tender chicken, drain any oil, I use a colander for this and just let the chicken sit in the colander until it is needed.
  • Cut bell peppers in half and remove the stem and seeds. Place in a 9x13 baking dish, fit them in there tight.
  • In a large bowl, combine 2 cups Mozzarella, Parmesan, garlic, pasta sauce, parsley, and red pepper flakes, and season with salt and pepper to your liking. Stir until combined, then gently fold in chicken.
  • Spoon chicken mixture into halved bell peppers and sprinkle with remaining 1 cup Mozzarella cheese.
  • Pour chicken broth into baking dish to help the peppers steam and cover the dish with foil.
  • Bake until peppers are tender, about 1 hour. Uncover and broil 2 minutes.
  • Garnish with fresh chopped parsley and Parmesan cheese, serve.

Notes

Chicken will cost about 75 Baht/kilo, that should be 5-6 breasts, get a kilo and use the rest in another recipe. The Mozzarella will cost about 280 Baht for two 200 gram blocks. For 4 servings, this is about $2.60 per serving.

Old Fashioned Chicken Wings

Not 'old fashioned' like regular wings, the sauce here is based on the cocktail, Old Fashioned. Sounds like a great sauce for chicken wings. Serve as an appetizer or a main dish with sides such as coleslaw and corn on the cob.

  • 1/2 cup cherry juice
  • 2 tablespoons sugar
  • 2 ounces bourbon
  • dash bitters
  • salt and pepper, to taste
  • orange zest, to taste

Instructions
 

For the Wings

  • Preheat oven to 220 C. Prepare a parchment lined or foil lined baking tray with a baking rack on top.
  • Use paper towels to thoroughly pat dry the chickens wings. In a bowl, mix together the baking powder, salt, and pepper. Add chicken wings and fully coat with the mixture.
  • Place wings across the baking rack, without overlapping. Bake for 30 minutes. Remove from oven, flip over the wings, and bake again for another 30 minutes, or until fully cooked and golden.

For the Sauce

  • In a pan, combine all ingredients except orange zest. Reduce on medium heat until thickened. Toss with wings. Top with orange zest.

Notes

Wing prices can vary from 90 Baht/kilo for whole wings, 80 Baht/kilo for drumettes, and 125 Baht/kilo for middle wing sections. I like the drumettes as they have more meat on them, I will price this on 80 Baht. For 2 servings, this is about $1.17.
