Ingredients
  

  • 250 grams Cream cheese, this is 1 standard block, softened
  • 1 packet dry Italian salad dressing mix, OR make from a shortcut
  • 4-6 chicken breasts, boneless and skinless
  • 1 can condensed cream of chicken soup, OR make from a shortcut

Instructions
 

  • Spray your slow cooker with non stick spray or mist with olive oil, place the chicken in, place the Cream cheese in, pour in the can of soup and sprinkle the packet of Italian seasoning over the top. Cook on Low setting for 6-8 hours. Give it a gentle stir at about the 3 hour mark. At 6 hours, check the tenderness of the chicken, it is done when it falls apart.
  • Serve over rice or pasta.

Notes

Chicken breasts run about 60 Baht/kilo, that should be 4 to 6 pieces. Cream cheese will run 120 Baht. For 4 servings, this is about $1.33 per serving. Use the shortcuts for savings as well.

No Crust Chicken Pot Pie II

I like the idea of the potatoes used in this. There is one shortcut for additional savings.

Ingredients
  

  • 4 chicken breasts
  • 1/2 small onion, finely diced
  • 2 cans condensed cream of chicken soup, OR make from a shortcut
  • 3-4 potatoes, washed and cubed
  • 2 cups frozen peas and carrots
  • 1/2 cup heavy cream, OR use evaporated milk (my preference)
  • salt and pepper, to taste
  • biscuits, home made would be best, as needed

Instructions
 

  • Season the chicken with salt and pepper on both sides and place in the slow cooker, top with the diced onion, then pour in the contents of the soup over the top, then top that with the diced potatoes, salt and pepper the potatoes to your liking as well. Cover and cook on Low setting for 6 hours. Then use 2 forks and shred the chicken, it will be tender, will take just a minute or two.
  • Add the peas and carrots, and the heavy cream (or evaporated milk) and stir to mix. Cover and cook for an additional 20-30 minutes. While this is cooking, make your biscuits.
  • When the biscuits are ready, split each in half and place on a deep plate or large bowl and ladle on the pot pie mix from the slow cooker.

Notes

Chicken breasts cost 60 Baht/kilo, skin on but boneless, takes all of 3 seconds to remove the skin and trim any fat. Four breast may be about 700 grams, go with that, more chicken, no one is going to complain. For 4 servings, 60 Baht for the chicken, 100 Baht for the 2 cans of soup, this comes to about $1.18 per serving, if you make the soup yourself, you can reduce the soup price to about 45 Baht for both cans.

Sounds really good and a slow cooker dish as well, bonus! This is a simple recipe with few ingredients but you can save by making the shortcuts listed.

  • 4 chicken breasts, boneless and skinless
  • 250 grams Cream cheese, this is 1 standard block, softened
  • 2 cans condensed cream of chicken soup, OR make from a shortcut
  • 1 packet dry Italian salad dressing mix, OR make from a shortcut
  • 2 tablespoons garlic powder
  • 500 gram pasta, I would use fettuccine but any bite size pasta is ok

Instructions
 

  • In your slow cooker, add the soup, dry dressing mix, and garlic powder, stir to combine and add the chicken breasts, cook on Low setting for 4 hours. Remove the chicken carefully to a plate and shred, then return to the slow cooker. If the sauce is too thick, add a little milk to thin to your desired consistency.
  • Just before you are ready to serve, cook the pasta in a pot of boiling water until just soft, drain pasta well and add to the sauce and mix in, cook for another 10 minutes to heat the pasta through, serve.

  • 4 chicken breasts, boneless and skinless
  • 1 large onion, chopped
  • 2 cups cooked rice
  • 1 cup Cheddar cheese, shredded, if you like cheese, add a bit more
  • 1 can condensed cream of chicken soup, OR make from a shortcut
  • 1 3/4 cup corn, canned or cooked fresh, drained
  • 1 teaspoon powdered chicken stock
  • 1 tablespoon Italian seasoning
  • salt and pepper, to taste

Instructions
 

  • Place the chicken in the slow cooker, then add the onion, then pour the soup in, season with salt and pepper to your liking. Cover and cook on Low setting for 7 to 8 hours or on High setting for 3-4 hours.
  • When the cooking time is done, open the pot and using 2 forks, break up the chicken, it will fall right apart, then add in the corn, cooked rice, Italian seasoning, and chicken stock powder, give it a good stir, this will break up the chicken a bit more, then stir in the cheese. Cover and let cook for another 15-30 minutes. Serve as is or with a side.

Notes

Chicken will cost about 40-50 Baht for 4 breasts. The cheese will run about 90 Baht if you use half a 250 gram block and shred yourself. For 4 servings, this is about $1.05 per serving, make the soup shortcut additional savings.

  • 4 chicken thighs, bone in, skin off, trimmed of any fat
  • 1/2 cup orange juice
  • 1/2 cup orange marmalade
  • 1/4 cup soy sauce
  • 2 tablespoons tomato ketchup, OR make from a shortcut on this site
  • 1 clove garlic, smashed and minced
  • all purpose flour, to coat the chicken

Instructions
 

  • Roll the chicken thighs in flour to coat, then place them in your slow cooker. The flour will thicken the sauce. Go with quarters and separate the thighs from the legs, you get larger thighs and legs for another meal.
  • Add remaining ingredients to a bowl and mix, pour this over the chicken, move each thigh with a spoon to make sure the sauce is coating all parts of the thighs. Cover and cook on Low setting for 4 hours.
  • Serve with rice and steamed broccoli for a complete meal.

Notes

Chicken quarters run about 80 Baht/kilo (quarters have the largest thighs). 4 quarters would be about 1 kilo, then you have 4 thighs for this recipe and 4 legs for another recipe. So I will figure about 50 Baht for the thighs. This is about 37 cents per serving for 4 servings, add in the broccoli, you might be approaching 50 cents per serving. Outstanding value.

Garlic Whole Chicken

Garlic Whole Chicken

This is not an overwhelming flavor of garlic, it does season the chicken slightly. The chicken is indeed tender and juicy. The slow cooking of the garlic, much like roasting, reduces the garlic flavor but yield some great soft garlic you can just spread on the potatoes. Good chicken without a doubt. This is in my regular rotation. The plus side to this recipe is minimal ingredients, no olive oil, no water needed. The Thai family loved it, even the picky niece who normally refuses anything not Thai.

Ingredients
  

  • 1 whole chicken, remove the head, neck, feet, and giblets.
  • 40 cloves garlic, peeled but whole
  • 3 large shallots, palm size is perfect, 2 sliced, 1 quartered
  • salt, pepper, and paprika, to taste
  • 3 small potatoes, optional, cut into big bite size pieces

Instructions
 

  • Rinse the chicken and remove the feet, head, and neck. Trim any fat near the chest opening.
  • Peel the garlic, set aside. Peel the large shallots, slice 2 and quarter 1, set aside. Feel free to use onions in place of the shallots.
  • Place slices of shallot on the bottom of your slow cooker.
  • Take the bird and sprinkle salt, pepper, and paprika on the backside, rub it in well, flip the bird over and do the same, coating the front of the bird, legs and wings. Place in the slow cooker, backside down on top of the shallots. Stuff the cavity with several quarters of the shallot and as many garlic cloves as you can. Place the rest of the garlic under and on the sides of the chick, top with the shallot slices.
  • Cover and cook on High setting for 4 hours, then reduce to low setting and add the large cubed potatoes on the top, salt and pepper as you desire. Cook for another hour. At the 5 hour mark of total cooking time, use a meat thermometer in the thickest section and check the temp to be safe, ours was perfect at 5 hours. The potatoes were perfect. The chicken, fall off the bone tender, and juicy.
  • Serve, use a pair of tongs to grab the meat, as it is fall off the bone tender. Add some potatoes and some garlic. A vegetable on the side would make this a complete meal (I took the photo before I added some spinach.)

Notes

This chicken in the photo was 113 Baht, that is 83 cents per serving for 4 servings, and just 55 cents per serving for 6 servings. A delicious and hearty meal for very good value.

One Pot Honey Garlic Chicken

This makes a complete meal and is easy, your slow cooker the work. This sounds really good. On my to cook list.

  • 8 chicken thighs, skin on, bone in, fat trimmed off
  • 500 grams potatoes, washed, skin on, cut in large cubes
  • 500 grams carrots, washed, skin on, cut into large pieces
  • 500 grams yard beans, washed, cut into about 2 inch pieces
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 6 cloves garlic, smashed and minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes, OR 1/8 teaspoon of Cayenne powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper

Instructions
 

  • In a bowl, mix together the honey, soy sauce, garlic, basil, oregano, red pepper flakes, and black powder. Mix well, this is the sauce.
  • Place 4 thighs in your slow cooker, pour one half of the sauce over the chicken. then add the potatoes then the carrots. Place 4 more thighs on top of the carrots, pour the remaining sauce over the chicken. Cover and cook on Low setting for 7-8 hours or High setting for 3-4 hours.
  • 30 minutes before you serve, add the yard beans, cover and cook for another 30 minutes. If you want more crispy chicken, remove chicken at the end of the cooking time and place in your broiler for about 3-4 minutes. Serve, complete meal in your slow cooker.

Notes

Go with chicken quarters for 76 Baht/kilo, you may spend about 140 Baht for 8 quarters, you get larger thighs. cut the quarters yourself, and either freeze the legs for another meal, or give to the Thai family to make their own dish. I will use 90 Baht for the estimate since the legs are not used, just the thighs. For 6 servings, this would be about 45 cents per serving, less for more servings.
The original recipe called for baby red potatoes, I have never seen those where I live, I use the regulation potatoes found in Tesco or the open markets, works just as well.

  • 1-2 kilos fresh chicken, any cut, legs and thighs sound perfect for this
  • 1 large onion, sliced
  • 1 tablespoon olive oil
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 20-40 cloves garlic, peeled but left whole

Instructions
 

  • Place the sliced onion in your slow cooker.
  • In a large bowl, mix the chicken with the rest of the ingredients, use your hands. Place the chicken on top of the onions. Cook on High setting for 4-5 hours or Low setting for 7-8 hours. Serve. The onions and garlic go great over pasta.

Notes

The chicken will run you about 76 Baht per kilo for quarters, separate those yourself, leave the skin on and just trim away any excess fat. Using 1 kilo of chicken, this about 55 cents per serving for 4 servings, more servings, even less. Same cost for 2 kilos and 8 servings. This would be an excellent meal to serve when you have the Thai family visit, serve with corn on the cob or with pasta with the onions and garlic on the pasta.
A good variant would be to use some of the juices from the pot to make a chicken gravy and use that on mashed potatoes.

  • 1 whole chicken, remove the head and feet and remove the giblets
  • olive oil
  • seasoning salt, combination of salt, pepper, onion and garlic powder
  • paprika
  • 1 onion, cut in quarters

Instructions
 

  • Make 4 or 5 loose balls of aluminum foil and place in the slow cooker.
  • Clean the chicken inside and out, spray with olive oil, sprinkle on seasoning salt and paprika, place the onion quarters inside the cavity, place chicken in the slow cooker back side down. Cook on High setting for 4 to 6 hours, Feel free to use a meat thermometer, you are looking for a temp of min 82 C / 180 F when checked at the thigh without touching the bone.
  • Serve as is with a side of corn on the cob and mashed potatoes, use the liquid in the pot to make a gravy from. Or use in other recipes calling for cooked chicken.

Notes

A whole chicken will cost between 200 and 250 Baht. For 6 servings, this would be about $1.22 per serving, but more than likely you can easily make 2 other dishes from this chicken.
Variants: 1. Stuffing the cavity with carrot, celery, and onion. 2. Using seasonings of your choice. 3. Cooking with the skin removed.

  • 6 chicken breasts, boneless and skinless
  • 2 cups salsa, OR make from a shortcut listed on this site
  • 1 cup Cheddar cheese, shredded

Instructions
 

  • Place chicken breasts in your slow cooker, pour salsa over the top, cook for 1 1/2 to 2 hours on High setting. If you over cook it the chicken will fall apart.
  • When the chicken is almost done, preheat your oven to 220 C. Using a 9x9 or 9x13 baking dish, carefully place the chicken in the dish, spoon some of the salsa from the pot over the top of the chicken and sprinkle with the cheese. If you like cheese, use 1 1/2 or 2 cups. Bake for 15 minutes or until it is golden brown and bubbly. Serve with with a salad and a vegetable side of your choice.

Notes

Chicken will run 63 Baht/kilo, for 6 breasts I will estimate 90 Baht. For the cheese, if using just 1 cup of shredded, figure 90 Baht, if 2 cups, figure 180 Baht (180 is the cost of a block). Make the salsa yourself for savings as well. For the chicken and 1 cup of cheese, this is about 90 cents per serving for 6 servings.
