Ingredients
  

  • 15 eggs
  • 500 grams Cheddar cheese, shredded, this is 2 250 gram blocks
  • 4-6 big green chilies, diced

Instructions
 

  • Preheat your oven to 180 C. Lightly grease a 9x13 baking dish with butter.
  • In a large bowl, add the eggs and lightly beat them, then add the cheese and chilies and stir that in. Pour into the baking dish.
  • Bake for 20-25 minutes, IMPORTANT! DO NOT OVER BAKE! When the middle of the dish is set, checked by inserting a knife and it coming out clean, remove from the oven. The eggs will cook for a few more minutes when it is removed.
  • Cut into squares and serve with hash browns and sausage on the side. Nothing easier.

Notes

Most expensive items is the cheese. This will cost about 180 Baht per 250 grams, so 360 for the 500 grams needed. This comes out to about $1. 32 per serving for 8 servings. Overall not a bad cost as what this can be served with very low cost, possibly even stretching it to 10 or 12 servings.

Ingredients
  

  • 2 1/2 cups egg noodles, cooked, OR use Fetticcine pasta
  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 1/2 cup milk
  • 1/4 cup water
  • 2 cups cooked ham, cubed
  • 1 cup Swiss cheese, shredded
  • 1 cup dry seasoned stuffing, OR make from a shortcut
  • ground black pepper, to taste

Instructions
 

  • Preheat your oven to 190 C, lightly grease a 9x13 baking dish with butter.
  • Heat a pot of water to boiling, add the egg noodles or pasta and cook until just done, about 5 minutes. Drain and set aside.
  • In a large bowl, mix the soup, milk, and water, then mix in the noodles, ham, and cheese, season with black pepper to your liking. Pour this into the baking dish and top with the dry stuffing. Bake uncovered for 30 minutes or until the casserole is bubbling and browned on top. Remove from oven and let rest 10 minutes, serve. Steamed broccoli or asparagus as a side would complete this meal.

Notes

The cheese will cost about 180 Baht for a 250 gram block of New Zealand import cheese, brand is Mainland. The ham slices, 2 thick slices was about 100 Baht from Makro. If you make the soup yourself, as well as the seasoned stuffing, you get more savings. For the cheese and ham, 6 servings, this is about $1.33 per serving.
Variants, keep in mind adding variants will also increase the cost as well. Add sliced fresh mushrooms, peas, pea pods, or even baby corn chopped into 1 inch pieces.

Ingredients
  

For the Casserole

  • 500 grams chicken breast, boneless and skinless, cooked, shredded
  • 250 grams Swiss cheese, one block, sliced
  • 250 grams ham, sliced

For the Sauce

  • 1/4 cup butter, this is 1/4 of a standard block of butter
  • 4 tablespoons all purpose flour
  • 3 1/4 cups milk
  • 2 tablespoons lemon juice
  • 1 1/2 tablespoons brown mustard
  • 1/2 teaspoons paprika
  • 1/4 teaspoon ground black pepper

For the Topping

  • 1/4 cup butter
  • 1 1/2 cups panko breadcrumbs
  • 1/4 cup butter, this is 1/4 of a standard blcok of butter
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon fresh parsley, minced
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat oven to 180 C. Lightly grease a 9x13 baking dish with butter. Place the shredded chicken on the bottom of the dish, next place the ham slices, the Swiss cheese over the ham.
  • For the sauce, over medium heat, melt the butter in a large sauce pan. Whisk in the flour until smooth. Continue to whisk mixture while slowly adding milk, whisk until sauce thickens, about 10 minutes. Add lemon juice, brown mustard, paprika, and black pepper. Bring sauce to a low simmer again, whisk continuously. Once it has reached desired thickness, remove from heat and pour sauce evenly over the casserole.
  • For the topping: In a small sauce pan, melt the butter and stir in panko breadcrumbs, garlic, parsley, and black pepper. Sprinkle topping mixture over the top of the casserole.
  • Bake for 35 minutes until topping is golden brown. Let res for 5-10 minutes before cutting and serving. Any green veggy on the side would go perfect with this dish.

Notes

Chicken will cost about 32 Baht/500 grams. Swiss cheese will cost 180 Baht/block of 250 grams, slice it thin. The ham will cost about 75 Baht. This comes out to about $1.05 per serving for 8 servings. This is a far price for a great meal.

  • Preheat your oven to 180 C. Lightly grease with butter, 9x13 baking dish.
  • Cook the egg noodles or pasta in boiling water until just done, drain, and add to the baking dish. Add the chicken, ham, and Swiss cheese, mix together. Add salt and pepper to your liking.
  • Mix the soup, milk, and sour cream together in a bowl, spoon this mixture over the top of the baking dish.
  • Melt the butter in a skillet, add the breadcrumbs and Parmesan cheese until the bread is coated and the cheese is melted. Sprinkle this mixture over the baking dish. Bake about 30 minutes or until the casserole is lightly browned and bubbling. Let rest for about 10 minutes before serving. Steamed broccoli would be good as a side with this.

Notes

The chicken might be 100 grams, about 40 Baht. The ham would be about 75 Baht. The Swiss Cheese about 180 baht. Make the soup yourself for greater savings (25 Baht instead of 55 Baht). For 8 servings, this is about $1.28 per serving. Over all, not a bad price.

Ingredients
  

  • 500 grams minced pork, OR ground beef, OR ground chicken
  • 1 can tomato pasta sauce, OR make from a shortcut listed on this site
  • 125 grams Cream cheese, softened, this is 1/2 a standard block
  • 500 grams dry Penne pasta, OR any bite size pasta
  • 2 cups spinach, I used frozen that was thawed, perfect
  • 400 grams Mozzarella Cheese, shredded, this is 2 standard blocks
  • 1 teaspoon dried thyme
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 180 C (350 F). Get out 2 baking dishes.
  • Cook the pasta in boiling water until just done, drain and place in the baking dish or dishes.
  • While the water is heating for the pasta, brown the minced pork (or meat of your choice) in skillet (feel free to use more meats as well), drain any fat. Add the tomato sauce and softened cream cheese that has been cut into cubes, and the thyme, season with salt and pepper to taste. Cook, stirring occasionally until the cheese is melted or nearly melted.
  • Spoon the meat sauce over the pasta layer in the baking dish or dishes. Then add the spinach over the meat sauce.
  • Now layer the shredded cheese over the spinach. One block of cheese per dish.
  • Bake for 30 minutes or until the cheese starts to brown. Remove from oven and let rest for 5 minutes before serving.

Notes

Minced pork is about 62 Baht/500 grams. The Cream cheese is 60 Baht for half of a 250 gram block, and the Mozzarella cheese is about 280 Baht for two 200 gram blocks. Make the tomato sauce from paste for greater savings. This comes out to about $1.20 per serving for 10 servings. Using chicken this would be less, using beef would be more.

Breakfast Potato Casserole

This recipe sounds very good but I had to question some of the ingredients listed in the original recipe, such as "country style" shredded hash browns, and the use of corn flakes. I aim for minimum processed and corn flakes are about as processed as you get, so this recipe is modified from the start. Also asked for in this recipe is condensed cream of chicken soup, 1/2 can only, for starters, use the shortcut to make this, you will get good soup, not chicken flavored water.   • 1/2 cup butter, this is half a standard block, divided
  • 500 grams hash browns, OR make from a shortcut
  • 1/4 cup spring onion, chopped
  • 1/2 cup sour cream, OR make from a shortcut
  • 1 cup Cheddar cheese, shredded, Sharp preferred
  • 1/2 can condensed cream of chicken soup, OR make from a shortcut
  • 1 cup bread crumbs

Instructions
 

  • Preheat your oven to 180 C. Put 1/4 cup of butter in a 8x8 baking dish (or a 9x13 if that is all you have), and place in the oven while it heats to melt the butter.
  • Meanwhile combine hash browns (if making from the shortcut, follow the steps right up to the point before cooking them), green onion, sour cream, shredded cheese, and soup in a large bowl and mix well. Transfer mixture to the casserole dish after the butter has melted. Bake uncovered for 30 minutes.
  • While this is cooking, melt the other 1/4 cup of butter in a sauce pan and mix in the bread crumbs. At 30 minutes, pour the bread crumb mixture over the casserole and bake for another 15 minutes. Serve with some fried eggs and some sausage on the side, this can be a breakfast, lunch or dinner.

Notes

Most expensive item, even though this is a side, is the cheese at about 90 Baht for 1/2 block. Make the soup yourself and the buttermilk to replace the sour cream. This is about 67 cents per serving for 4 servings. Add some cooked eggs, you have a meal.

Potato & Chicken Casserole I

With cheese and bacon, my favorites, this is a must try.

Ingredients
  

  • 1 kilo chicken breasts, boneless and skinless, cubed
  • 8 potatoes, washed and skin on, cubed
  • 1/3 cup olive oil
  • 1 1/2 teaspoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon paprika
  • 2 tablespoons garlic powder
  • 3 tablespoons hot sauce, or to taste
  • 2 cups Cheddar cheese, shredded
  • 1 cup cooked bacon, crumbled
  • 1 cup spring onion, chopped

Instructions
 

  • Preheat your oven to 250 C, lightly grease a baking dish with butter, set aside.
  • In a large bowl mix the olive oil, salt, pepper, paprika, garlic powder, and hot sauce. Add the cubed potatoes and let marinate for 10 minutes. Using a strainer and another bowl, drain the potatoes and set the sauce aside.
  • Spread the potatoes in the baking dish, the size of the dish was not stated in the original recipe, when I make this I will use a 9x13 dish, and have my large pie dish ready as well. Bake this for 45 minutes and stir the potatoes every 15 minutes.
  • While the potatoes are cooking, fry the bacon, shred the cheese, and chop the spring onion. Using the bacon fat, brown the chicken cubes and add them to the leftover sauce the potatoes were in, coat the chicken in the sauce.
  • When the potatoes are done, drain the sauce from the chicken and spread the chicken over the potatoes, sprinkle all the cheese on top of the chicken, then add the bacon on top of the cheese, and then half of the spring onion over the top. Bake for 3-5 minutes or until the cheese is melted. Remove from the oven, sprinkle on the rest of the spring onion, serve.

Notes

Chicken breasts will cost about 60 Baht/kilo. The bacon will cost about 80 Baht, that should make a cup of crumbled bacon. The cheese will cost about 180 Baht for a 250 gram block of real Cheddar. For 6 servings, this comes out to about $1.57 per serving, for 8 servings, this is about $1.18 per serving. Overall, not a bad price for a casserole with chicken, bacon and cheese.

Creamy Chicken Spaghetti Casserole

This sounds like a wonderful meal, but does take some time, this recipe will take you through cooking a whole chicken, making the sauce, and baking.

Ingredients
  

For the Shredded Chicken and Broth

  • 1 whole chicken, remove the head and feet and remove the giblets
  • 1 onion, leave skin on and just cut in half
  • 7 cloves garlic, just smash and leave skins on
  • 1-2 sprigs fresh rosemary

For the Sauce

  • 110 grams butter
  • 1/2 onion, diced
  • 3 cloves garlic, smashed and minced
  • 400 grams fresh button mushrooms, sliced
  • 1/4 cup dry white wine, OR use chicken broth you just made
  • salt and pepper, to taste
  • 1/4 cup all purpose flour
  • 2 cups chicken broth, this is from the chicken you just cooked
  • 1 1/2 cups milk
  • 1/4 cup dry white wine, OR use chicken broth you just made
  • 1 cup Parmesan cheese, grated, plus additional for the topping
  • 1 cup pitted black olives, sliced
  • 500 grams spaghetti, broken in half

Instructions
 

For the Shredded Chicken and Broth

  • In a big pot, place a chicken that had been cleaned. Add the halved onion (no need to remove the skin) as well as about 7 cloves of smashed garlic (also no need to remove the skin) and a sprig or two of rosemary. Simmer this for about 40 minutes.
  • At the end of 40 minutes, you should have an aromatic broth and a chicken that is completely cooked through. Discard the onion, garlic and rosemary and place the chicken in a bowl to cool. Once the chicken has cooled, remove the skin and bones and shred the meat. Set this aside. (For juicier chicken, let the chicken cool while in the pot, then remove it to debone.)

For the Sauce

  • In a large skillet, add some butter and olive oil. Saute the onions until they became soft and slightly translucent. Add the minced garlic, stir for about 30 seconds then add the mushrooms. Once the mushrooms have softened a little, add the white wine (or stock) and continue cooking the mushrooms until almost all the water has evaporated. Set this aside.
  • Bring the broth back to boil and cook the broken spaghetti for 10 minutes (3 minutes less than the time stated on the pack). Once cooked, drain the spaghetti (reserve the stock) and set it aside.
  • Now for the fun part. In a large skillet, add the butter. Once the butter has melted, add the flour. With a hand whisk, whisk the flour to allow the flour to cook through. Then add the stock, then the milk, whisking all the while. Then add the wine (or stock), and salt and pepper to taste.
  • Leave the sauce to cook and thicken. Turn off the heat and add the cheese. Stir continuously until all the cheese has melted. Then add the mushrooms and chicken to the sauce and mix. Then add the spaghetti. Mix well.
  • Transfer the spaghetti and sauce to a 9×13-inch casserole dish. Sprinkle additional Parmesan cheese on top. Bake at 180°C for about 30 minutes, or until the top has turned a delicious shade of golden brown.
  • Scatter some chopped parsley on the spaghetti casserole if desired. Serve it with a salad or warm crusty chunks of garlic bread. Or just enjoy a as it is.

Notes

A whole chicken costs between 200 and 250 Baht depending on where you get it from. The 1 cup of Parmesan will run about 200 Baht. Using the high end of the chicken at 250 Baht, this comes out to about $1.65 per serving for 8 servings. Not an overly expensive meal.

  • 1 cup fresh tuna, cooked, OR use 2 cans of tuna in brine, drained
  • 1 1/2 cups frozen mixed vegetables, OR fresh
  • 1 can condensed cream of chicken soup, OR make from a shortcut
  • 1/2 cup milk
  • 2 tablespoons dill pickle, chopped, OR make from a shortcut
  • 1 teaspoon lemon juice
  • 1 cup Bisquick Mix, OR make from a shortcut
  • 1/3 cup cold water
  • paprika, to taste

Instructions
 

  • Heat your oven to 200 C. Lightly grease a baking dish with butter.
  • In medium size saucepan, stir frozen vegetables, tuna, soup, milk, pickle, and lemon juice until well mixed. Heat over medium heat 6 to 8 minutes, stirring occasionally, until vegetables are thawed and mixture is hot and starts to bubble. Pour into baking dish.
  • In medium bowl, stir Bisquick mix and cold water with a fork until soft dough forms; beat vigorously 30 seconds. Drop dough by 4 spoonfuls onto tuna mixture; sprinkle with paprika if desired.
  • Bake uncovered 20 to 25 minutes until biscuits are golden brown. Serve.

Notes

Using fresh tuna and the shortcut for the soup this is under 60 cents per serving for 4 servings. If using canned tuna and canned soup, this is just a bit over $1 per serving for 4 servings. Use local caught fish and use the shortcuts and fresh veggies when you can.

  • 125 grams Cream cheese, 1/2 block, softened
  • 1 cup sour cream, or 1 cup plain yogurt
  • 3-4 spring onions, chopped
  • 1 cup Cheddar cheese, shredded
  • salt, pepper, Italian seasoning, to taste

Instructions
 

  • Preheat your oven to 180 C. Spread cooked noodles in the bottom of a medium casserole dish.
  • In a frying pan, brown ground beef and garlic. Drain fat. Add tomato sauce to the meat, heat and simmer for 15 minutes. Season with salt, pepper, and Italian seasonings to taste. Pour meat the mixture over the noodles in the casserole dish.
  • In a small bowl combine the cream cheese with the sour cream and mix until smooth. Stir in spring onion. Spread over meat mixture. Sprinkle Cheddar cheese over top of the cream cheese mixture. Bake, uncovered, for 35 minutes or until the cheese is golden brown.

Notes

Beef will run about 150 Baht/kilo. The block of Cream cheese will cost about 120 Baht, you will need 1/2 of that. The Cheddar will cost about 180 Baht for a block, you will need 1/2 of that. Going with 300 Baht, this comes to about $1.47 per serving for 6 servings, for 8 servings, this is about $1.11 per serving. Not bad for a once in a while meal.
