Sounds good, easy, and inexpensive. Local raised eggs, local grown parsley, and homemade bread, this is my kind of meal. On my to prepare list.

Ingredients
  

  • 1 tablespoon mayo
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 2 slices bread, homemade preferred
  • 2 hard boiled eggs, peeled, sliced
  • 2 lettuce leaves
  • salt and pepper, to taste

Instructions
 

  • In a small bowl, mix the mayonnaise, mustard, and parsley and spread evenly over both slices of bread.
  • Add the lettuce to one slice, layer on the sliced eggs, season with salt and pepper to taste, top with the second slice, enjoy.

Notes

Low cost.
Variants: Use any or a combination with the mayo; fresh basil, dill, chives, or spring onions.

Egg in a Hole Sandwich

Egg in a Hole Sandwich

With Bacon and Cheddar Cheese. This is a twist on my Eggs in Basket recipe. This is a knife and fork type sandwich, and sounds good!

Ingredients
  

  • 2 slices smoked bacon
  • 2 slices thick cut bread, sourdough would be perfect
  • 2 eggs
  • 2 slices Cheddar cheese
  • 1 tablespoon butter
  • salt and pepper, to taste
  • hot sauce, optional, to taste

Instructions
 

  • Cook the bacon in a large skillet over medium heat until crisp, about 8-10 minutes.
  • Use a drinking glass and cut a hole in the middle of each slice of bread.
  • When the bacon is cooked, remove from pan and cut in half crosswise and set aside. Pour out half of the bacon fat into a small bowl. Place the two slices of bread in the pan cook until the bottom side is just getting golden brown, about 2-3 minutes.
  • Crack an egg into each hole in the bread, season eggs with salt and pepper to your liking and cook until the underside is set, about 2 minutes.
  • Flip each slice over to set the whites and cook for about 1 minute. The intention is to have set whites and a runny yolk. Add the butter to pan and tilt the pan back and forth to distribute the butter evenly.
  • Flip the bread over again and top one slice with the cheese slices, then the bacon, and add the other slice on top. Transfer to a place, cut in half through the yolk, enjoy.

Japanese Egg Sandwich

Japanese Egg Sandwich

Every convenience store I have been in in Japan (I lived there 13 years) had packaged egg sandwiches, and these were a staple when heading back home after out a night out with the boys.

  • 1 hard boiled egg, chicken or duck, peeled
  • 1 tablespoon mayo
  • salt and pepper, to taste
  • 2 slices bread
  • prepared yellow mustard, as needed
  • butter, as needed
  • 2 lettuce leaves, more as desired

Instructions
 

  • In a small bowl mash together the egg and mayo, add salt and pepper to your liking. Spread butter and mustard on each slice of bread, place a lettuce leaf on one slice of bread, spread the egg mixture on top of the lettuce leaf, top that with the other lettuce leaf, top that with the other slice of bread, butter and mustard side down, enjoy.

One egg is 5 Baht, you get the idea, this is really low cost.
Been making egg sandwiches like this for years with the lettuce, yesterday I was researching egg recipes and found this, I thought it would be humorous to post a very common sandwich.
The Filipino Burger

The Filipino Burger

A good friend sent me this recipe, and it does sound good just based on the meat used, ground beef mixed with Longanisa sausage. This does sound like a sloppy mess but that is the fun part with burgers. The measurements are approximate until I can make this. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 500 grams ground beef
  • 100 grams bulk longanisa sausage, this is an estimate, OR make from a shortcut
  • avocado, sliced, as needed
  • Cheddar cheese, sliced, as needed
  • 4 eggs, fried sunny side up
  • french fries, cooked, as needed
  • kimchi coleslaw, as needed, OR make from a shortcut
  • 4 sandwich rolls, OR make from a shortcut
  • mayo, as needed
  • salt and pepper, to taste

Instructions
 

  • Mix the ground beef and the sausage together.
  • Fry the patties, season with salt and pepper to taste, since it has pork in it make sure it is fully cooked. Just before removing from the pan, add the cheese on top of each patty and the avocado slices.
  • While the patties are cookie, fry the eggs in another pan, sunny side up is perfect. Place a fried egg on each patty.
  • Prep the rolls as follows; bottom bun, mayo, french fries, kimchi coleslaw, then the patty with the avocado and fried egg. Top bun with mayo.
  • Enjoy!

Notes

Figure about 100 Baht/500 grams of beef and about 50 Baht for the sausage. Cheese would be minimal. For 4 servings, this is about $1.10 per serving.

Oklahoma Fried Onion Burgers

These sound mouth watering to say the least, pair these with some sourdough buns, that would be a perfect match! On my to cook list. And these were in fact created in Oklahoma, well done Oklahoma!

Ingredients
  

  • 1 large onion, peeled, halved and thinly sliced
  • 500 grams ground beef
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • Cheddar cheese, sliced, as needed
  • mayo, mustard, pickles, for serving
  • 4 sandwich rolls, sourdough would be perfect!
  • salt and pepper, as needed

Instructions
 

  • Combine the onion slices and 1 teaspoon of salt in a bowl and toss to combine. Transfer the onions to a colander and let sit for 30 minutes, tossing occasionally. Transfer the onions to a clean dish towel, gather the edges together and squeeze out as much liquid as you can from the onions. Do this over the sink or a large bowl since the onions will have quite a bit of liquid in them.
  • Divide the onions into 4 separate mounds on a rimmed baking sheet. Form the beef into 4 lightly packed balls. Place the beef balls on top of the onion mounds and flatten the beef firmly (use your palm) so the onion adheres to the beef. The patties should measure 4 inches in diameter. Season the beef generously with salt and pepper.
  • Melt the butter with the oil in a 12-inch skillet over medium heat, cast iron would be perfect. Using a large spatula, transfer 2 patties to the skillet, onion side down. Cook for 6-8 minutes, until the onions turn a deep golden brown and begin to crisp around the edges. Flip the burgers, then increase the heat to high and cook until well browned on the second side, about 2 minutes. Repeat for the remaining burgers.
  • Add 1 or 2 slices of cheese to each burger and allow to melt. Dress the burgers with what you like, such as mayo, mustard, ketchup, pickles, lettuce, etc. Serve.

Notes

Figure about 100 Baht/500 grams ground beef. For 4 servings, this is about 75 cents per serving, pretty good considering it is a beef hamburger. What you add, particularly cheese, will of course increase the cost per serving, but it is well worth it.

Grilled Salami & Cheese Sandwich

I was wanting to test out a rye bread recipe for my bread machine, and try something new with Provolone cheese and real German salami that I had brought back with me from Phuket, so after making a loaf of rye bread, turned out perfect, I made these for myself, my wife, and a visiting niece. These are excellent sandwiches! Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 2 slices rye bread, OR make from a shortcut
  • 2 slices Provolone cheese
  • salami, sliced, as needed
  • green bell pepper, sliced, lightly fried, as needed
  • butter, as needed

Instructions
 

  • In a small pan lightly fry the thin sliced green bell pepper in just a bit of olive oil, when just getting soft, remove from the pan to a plate lined with paper towels. Set aside.
  • Heat a heavy flat bottomed pan, cast iron is perfect, with about a tablespoon of butter. Lay down a slice of rye bread on the counter, place a slice of Provolone cheese on it, add several good layers of salami, on top of the salami add some of the green bell pepper, then top that with another slice of cheese. Take the other slice of bread and butter one side, place that on top of the sandwich with the buttered side facing up.
  • When the pan is hot, pick up the sandwich and place in the pan. Watch the bottom closely, takes only a minute or so to turn golden brown, then using a large spatula, carefully flip the sandwich over and cook the other side. When golden brown, remove to a plate and cut in half. Enjoy.

Tomato Bacon Grilled Cheese

Tomato Bacon Grilled Cheese

In the old time diners in the US and some even to this day are known for three main items ordered, breakfasts, burgers, and soup and a sandwich. And that soup would be tomato soup and the sandwich would be a grilled cheese. Not sure how I came across this recipe, maybe doing a search for bacon. This sounds very good and will be made very soon.

Ingredients
  

  • 4 slices bread
  • 6 slices bacon
  • Cheddar cheese, sliced as needed
  • fresh tomatoes, sliced, as needed
  • butter, as needed

Instructions
 

  • Fry the bacon until crispy, then place on a paper towel to drain. A cast iron pan would be perfect for bacon.
  • While the bacon is frying, slice the tomato(s) as needed, all I get here is plum or Roma tomatoes, so for those I would figure about 3-4 slices for each sandwich. Then thinly slice your cheese, I use Mainland brand and it takes 3 slices to cover the bread, if using the same, you will need 12 slices. Feel free to use processed slices if you wish, then will need 4 slices.
  • When the bacon is cooked and drained and the tomato(s) and cheese sliced, time to assemble.
  • Heat another large pan on medium heat, I always use a non-stick for grilled cheese sandwiches. You want a pan large enough to place 2 slices of bread in the bottom.
  • While the pan is heating, spread butter on one side of all 4 slices of bread, lay them butter side up on the counter near your stove, and position the cheese slices, bacon, and tomato slices near the stove as well.
  • When the pan is hot, lay down 2 slices of bread, butter side down in the pan, top each slice top each with a cheese slice or if using cheese from a block, slices to cover the bread, then add 2-4 tomato slices, then add 3 strips of bacon, another slice of cheese, and finally the bread slice butter side up.
  • When the sandwiches are golden brown on the bottom, carefully flip and cook the other side until golden brown, this takes just a minute or two for each side. Remove from pan, plate and cut in half diagonally, serve.

Notes

Low cost overall, but I will verify this when I make these.
An ideal soup to serve with this would be tomato or mushroom soup for a light dinner.

Sausage, Egg, Cheese Sandwiches

Everyone has heard of the well know biscuits and muffins that contain these ingredients from McDonald's. I liked those those as well. I decided to step these up a bit from a small biscuit or muffin and went with homemade dinner rolls, homemade breakfast sausage, and real cheese. And they are very good! Ingredients
  

  • patties breakfast sausage, OR make from a shortcut
  • dinner rolls, OR make from a shortcut
  • eggs
  • Cheddar cheese, sliced, or cheese of choice
  • olive oil, as needed
  • mayo, as needed
  • white pepper powder, as desired

Instructions
 

  • Cook the patties in a non stick pan with splash of olive oil, 2-3 minutes per side. Remove from pan and set aside.
  • I used a ring to cook the eggs, lightly scrambled and seasoned with white pepper. (I had two rings, one seems to have walked away.)
  • Cut the rolls in half, spread mayo on each piece, add cheese to the bottom, then a sausage patty, then the egg, add the top part of the roll.
  • Enjoy.
  • This was for my wife, when I asked her if she wanted 1 or 2 slices of cheese, she asked what kind, I said Provolone, so she took a bite of the cheese, and said oh that cheese, two slices!

Grilled sandwich with beef, onions, and Swiss cheese, I love everything about this. And easy to make. On my to cook list.

Ingredients
  

  • 1/2 cup butter
  • 1 large onion, sliced
  • 750 grams ground beef
  • 1/2 teaspoon Worcherstershire sauce
  • salt and black pepper, to taste
  • 8 slices rye bread
  • Swiss cheese, sliced

Instructions
 

  • In a medium skillet, melt 2 tablespoons of the butter over medium low heat. Add the sliced onions and cook slowly until the onions are golden brown and soft, 20 to 25 minutes, stirring occasionally.
  • While the onions are cooking, In a medium bowl, mix together the ground beef, Worcestershire and salt and pepper to your liking, form into 4 patties.
  • I use block cheese, Swiss, from New Zealand, excellent cheese, so slice your cheese while the onions are cooking as well. You can slice as thin or as thick as you want, figure about 3 slices per side.
  • When the onions are done, melt 2 tablespoons of the butter in another skillet over medium heat. Cook the patties on both sides until totally done in the middle, 3 minutes or so each side.
  • To assemble each sandwich, slice of bread, slices of cheese to cover bread (about 3), hamburger patty, a quarter of the cooked onions, more slices of cheese and another slice of bread.
  • Using a griddle or a large skillet over medium heat, cast iron would be perfect, melt 2 tablespoons of the butter and grill the sandwiches until golden brown on the first side in the pan. Remove the sandwiches and add the remaining 2 tablespoons butter to the skillet. Return the sandwiches to the skillet, but flip them to the other side. Cook until golden brown and crisp, and until the cheese is melted. Slice in half and serve immediately!

Notes

Not a cheap meal based on cheese alone, figure about 180 Baht/block of 250 grams. For the beef, this will be about 150 Baht. For 4 servings, this is about $2.43 per serving.

Ingredients
  

For the Burgers

  • 500 grams ground beef
  • 1 cup Shiitake mushrooms, chopped
  • 1/3 cup fresh cilantro, chopped
  • 2 spring onions, chopped, white and green
  • 2 tablespoons soy sauce
  • 2 teaspoons Chinese 5 Spice
  • 2 teaspoons fresh ginger, minced
  • olive oil, as needed
  • 4 hamburger buns, OR make from a shortcut
  • 2 cups cabbage, thinly sliced or chopped

For the Tomato Garlic Jam

  • 2 medium tomatoes
  • 1/4 cup sugar
  • fresh lime juice, from 2 limes
  • 1/2 cup red bell pepper, diced
  • 5 cloves garlic, smashed and minced
  • 1 Bird's Eye Chili, minced
  • 2 tablespoons fish sauce, to taste

Instructions
 

  • Peel tomatoes by slicing a small X in the base of each tomato. Place tomatoes in a pot of boiling water for 30 to 45 seconds or until skin loosens. Remove tomatoes with a slotted spoon and slip skins off when cool enough to handle. Chop tomatoes.
  • To make tomato garlic jam, combine sugar and lime juice in a small saucepan. Warm over medium heat until sugar dissolves. Add chopped tomatoes, red bell pepper, garlic, and chili. Bring to a boil, reduce heat and simmer uncovered for 30 minutes or until mixture has reduced by about half. Stir in fish sauce (if using) and allow to cool to room temperature.
  • In a large bowl, gently mix together ground beef, shiitake mushrooms, cilantro, scallions, soy sauce, Chinese 5 spice, and ginger. Form into 4 equal-size patties.
  • Add a splash of olive oil to a non stick skillet over medium heat. Place patties in the pan. Cover and cook 4 minutes. Then flip and cook 3 to 4 more minutes. Serve burgers on buns topped with tomato garlic jam and shredded cabbage or coleslaw mix.

Notes

The beef would cost about 100 Baht/500 grams, for 4 servings, this is about 74 cents per serving.
