Excellent dish, easy to prepare, and a filling meal! I made this on 7 Oct 2016 and took a few photos as well. My comments below.

Ingredients
  

  • 12 eggs, hard boiled, peeled
  • 1/4 cup butter
  • 1/2 cup all purpose flour
  • 3 cups milk
  • 1 tablespoon powdered chicken stock
  • toast, as need, 1-2 slices per serving
  • salt and black pepper, to taste

Instructions
 

  • Cut the eggs in half, Separate the egg whites from the egg yolks. Place the egg yolks into a bowl and mash with a fork, set aside. Chop the egg whites into small pieces into another bowl, and set aside.
  • Melt the butter in a saucepan set over medium heat. Stir in flour until smooth. Gradually mix in the milk and chicken bouillon so that no lumps form and stir constantly until the mixture comes to a boil and thickens, reduce heat, add the egg yolks and mix until dissolved into the sauce. Stir in egg whites. Serve over toast and season with salt and white pepper.

Notes

Eggs come in 6 packs, 10 packs, 15 packs, and 30 packs, and prices vary as well. For this recipe I am just going to use 77 Baht for a 15 pack of eggs. For 6 servings, this is about 38 cents per serving. Great value.
I think a good variant would be to add cooked chopped bacon or cooked and crumbled sausage to the sauce.

Two ingredients only. Eggs and a banana, that is it, cannot go wrong here. Sounds good and easy.

  • 1 banana
  • 2 eggs

Instructions
 

  • In a small bowl, mash the banana with a fork. Crack in the two eggs and whisk into the banana. Heat a pan with a splash of olive oil, pour the mixture in making 2-3 smaller pancakes (or more, smaller is easier to flip). When golden brown on the bottom, flip. Remove to a place when the other side is also golden brown.

Classic Shakshuka

Classic Shakshuka

This is a Middle Eastern recipe for basically "use what you have in your fridge and throw in a pan." Basically this is an onion, bell pepper, and tomato dish with eggs on top. Sounds delightful indeed! I made this on 14 Sep 2016, and it is a keeper! On the regular rotation, my comments below.

Ingredients
  

  • 5-6 eggs
  • 1 medium onion, diced
  • 3 cloves garlic, smashed and minced
  • 1 red bell pepper, chopped
  • 4 cups tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • pinch red chili flakes, optional, to taste
  • pinch cayenne pepper, optional, to taste
  • pinch sugar, optional, to taste
  • salt and black pepper, to taste

Instructions
 

  • Cook the onion and garlic in a deep large pan until translucent. Then add the bell pepper and cook for another 5 minutes or so until the bell pepper is soft, then add the tomatoes and stir. You can at this point add in other items if you like, such as green chilies, parsley, mushrooms, spinach, etc.
  • Reduce heat to a low simmer, add the tomato paste and stir until thickened. Add salt and pepper to taste, then add in chili flakes and/or paprika and/or cayenne for as much spice as you like.
  • Once the mixture is thick to your liking, crack in eggs, making sure they are spread out from one another, then cover the pan and allow the mixture to cook and the eggs to set, about 8-10 minutes, depending on how you like your eggs.
  • The egg on the left, broken yoke so it just sort of disappeared into the sauce. Other eggs are set but yolks are still runny, perfect.
  • Serve with some toast on the side or like me, I served this with 2 Porcupine Meatballs I made another day, excellent meal.

Nothing expensive here, you might be looking at 30 cents per serving.

This is a simple recipe and it is excellent. I have made this several times, it is fool proof and I get great reviews from my Thai family and friends. I use the small bananas grown right here in our yard for this.

Ingredients
  

  • 1/2 cup butter, softened, (1 stick or 1/2 block)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs, lightly beaten
  • 1 1/2 cups banana, mashed, small bananas if you have them
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 180° C (350° F). Lightly grease with butter the bread pan.
  • Cream together the sugars and butter. Mix in eggs and vanilla.
  • Add the mashed bananas and mix in. Mix in the flour, then mix in the baking soda. (This looks like a lot as I doubled the recipe to make two loaves.)
  • Pour batter into the prepared bread pan.
  • Bake for 1 hour or until a toothpick inserted in the center comes out clean. Remove from oven and place the pan(s) on a wire rack to cool for 30 minutes.
  • After 30 minutes, roll out onto the rack and let rest until cooled.
  • Slice and enjoy!

Minimal cost and a great tasting bread.

I just seen this posted today and it sounds really good, I will have to give this a try.

Ingredients
  

  • 2 eggs
  • salt and pepper, to taste
  • 1 chilled metal bowl

Instructions
 

  • Preheat your oven to 230 C. Lightly grease a baking sheet using butter.
  • Crack the eggs into a bowl and separate the yolks from the white (use a empty water bottle for this) and place the yolks in separate small bowls. Pour the whites into the chilled metal bowl and whisk the whites until stiff peaks form. Mix in whatever you want, think chopped cooked bacon, chopped spring onions, shredded cheese, etc.
  • Spoon the whites into even piles on a baking sheet and create a well in the center of each pile with the back of the spoon. Using 2 eggs, make 2 piles, if making 4 eggs, 4 piles. Bake in the oven for 3 minutes.
  • Remove baking sheet, add a yolk into each well, bake another 3 minutes. Serve.

Notes

No need for math here, two eggs and added ingredients of your choice, under $1 per person with a serving of two eggs.

Eggs in a Basket

Eggs in a Basket

This is certainly nothing new, but this is a creative way to make eggs, and toast, at the same time. I thought this was a notable post just to post something a bit different. A number of years ago, my wife, I, and our daughter were in Pattaya on holiday from Japan (I worked in Japan). One morning when we got up, I asked my daughter if she wanted to go have breakfast with me, she said yes and away we went. We stopped at my favorite place opposite the beach and we were given menus. My daughter was about 6 years old at this point. I ordered my breakfast, and my daughter said she wanted Eggs in a Basket, they of course were not on the menu, the waitress was very nice and helpful and asked if something special was needed, I described Eggs in a Basket and away she went, big smile on my daughter's face. About 10 minutes later, Eggs in a Basket was placed in front of my daughter, she was happy to say the least!

Ingredients
  

  • 2 slices bread, any kind you want, thick sliced is best
  • 2 eggs
  • butter
  • salt and pepper, to taste

Instructions
 

  • Heat a large frying pan to medium low or medium heat. Add a bit of butter.
  • Take the bread and using the open end of a drinking glass, cut a hole in the center of each slice of bread. When the butter is melted and hot, add each slice, and crack an egg into the hole in the bread, place the round bread pieces in the pan as well.
  • When the bottom is golden brown, like a slice of toast, flip and cook for a few more minutes until golden brown as well.
  • Serve with bacon or sausage.

Notes

No math needed here, under $1 per meal of two eggs, even with bacon or sausage. A simple breakfast does not have to be hard.
Variant: 1. Use an egg and milk mix like making French Toast, cut the circles out first, use the egg wash, and put into the pan then add the egg in the center, egg wash the circle and cook that as well.

Easy to make, and very good, I have made this on several occasions, I need to make this more often. Keep in mind, the longer you refrigerate this, up to 24 hours before cooking, the flavors will blend together better. Sage is the key ingredient in breakfast sausage.

Ingredients
  

  • 1 kilo minced pork, OR you can use chicken, (2 lbs)
  • 1 1/2 teaspoons ground sage
  • 1/4 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon brown sugar
  • 1/8 teaspoon red pepper flakes
  • pinch ground cloves
  • 1/2 teaspoon thyme
  • 1 teaspoon parsley
  • 1/4 teaspoon nutmeg

Instructions
 

  • Add the pork and all the other ingredients to a mixing bowl.
  • Mix everything together, use your hands and mix well. Refrigerate for 6 to 24 hours to allow the spices to blend well. The 24 hours is highly recommended.
  • I was going to stuff sheep casings to make links but could not find my small funnel, so I went with patties instead, and are equally as good. I made 8 patties, layered with parchment paper and froze this batch, simply take out the patties you wish to use the day before and thaw in the fridge overnight. (For patties I use a ½ cup measuring cup to measure and press in a 4¼ inch, 11 cm, patty press.)
  • Fry in a skillet over medium heat for about 5 minutes per side or until juices run clear.
  • And in link form using cellulose casings. These casings will be removed after poaching.

Notes

Minced pork will run about 100 Baht/kilo, making this about 50 cents per person for 6 people, add some fresh homemade hash browns and a couple of eggs, you have a nice breakfast for under $1 per person.

This is another recipe where everything was processed, I changed it up here to reflect fresh ingredients. I made this on 29 Sep 2016 using diced ham in place of the bacon, and this is very good and highly recommended! Now since all slow cookers are different, this one you need to keep an eye on regarding the time then you can make adjustments based on your particular slow cooker.   • 4-6 potatoes, washed, skin on
  • 250 grams Cheddar cheese, shredded, (8 oz)
  • 500 grams cooked bacon, see Step 1, (1 lb)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 12 eggs
  • 1 cup, milk

Instructions
 

  • For any meat used, it needs to be cooked first. Good choices would be cubed chicken, minced Italian sausage, minced or sliced breakfast sausage, or diced ham, or any combination.
  • For your hash browns, wash, peel if you desire, then grate. Take the shredded potatoes and rinse them in cold water, and really squeeze them to get the water out, do this 3-4 times until the water is clear, this removes the starch, then your potatoes are ready. This photo shows the potatoes, bell peppers, onion, and ham ready. Only about ¾ of the potatoes were used.
  • Now with your slow cooker, add this in layers, in this order: half the hash browns, half the bacon or meat of your choice or omit, half the onions, half the bell pepper, and half the cheese.
  • Now add the remaining hash browns, remaining bacon or meat of choice, remaining onion, remaining bell pepper, and the cheese. If you like cheese, you know what to do. When you get done adding everything, it will look like this.
  • In a medium sized bowl, whisk together the eggs and milk, pour this over the contents of the slow cooker, add salt and pepper to taste.
  • Cook on low for 8 hours. IF YOU HAVE NOT MADE THIS BEFORE IN YOUR SLOW COOKER, THIS IS WHERE YOU NEED TO WATCH THE TIME NEEDED. SO PLAN ON THIS FOR A DINNER FIRST BEFORE YOU COOK OVER NIGHT FOR A BREAKFAST. AT THE 4 HOUR MARK, INSERT A BUTTER KNIFE IN THE MIDDLE AND PULL OUT, IF CLEAN, THE EGGS ARE SET AND IT IS DONE, IF RUNNY EGGS, YOU NEED TO COOK MORE, ADJUST YOUR TIME AS NEEDED. I was hungry so I took two scoops out of the pot before I thought of taking the photo when the dish is done.
  • Variations, you can figure this out as well, whatever you like in an omelet can go in here, think mushrooms, tomatoes, Swiss cheese, chilis, asparagus, etc. Serve with some toast and you have a meal.
  • Two scoops in my bowl, ready for dinner. The peppers and onion are crunchy, excellent flavor overall.

  • 1 tablespoon olive oil
  • 1 onion, coarsly chopped
  • 6 thin beef sausages, sliced, OR make from a shortcut
  • 1 carrot, coarsly grated
  • 2 small zucchini, coarsly grated
  • 1 cup Cheddar cheese, grated
  • 1/4 cup flour
  • 1 packet dry chicken and mushroom soup
  • 1 1/2 cups milk
  • 3 eggs

Instructions
 

  • Preheat oven to 160°C and grease a baking dish.
  • Heat oil in a frying pan over medium heat and add onion, cook stirring often for 2 minutes or until soft, remove and place in a bowl.
  • Add sausages to frying pan and fry until cooked through, set aside to cool then slice.
  • Spoon sausages, onion, carrot, zucchini, and cheese over bottom of baking dish.
  • Whisk flour, dry soup, and milk in a bowl until smooth. Add eggs, and salt & pepper to taste, whisk until well combined. Pour over sausage and veggies in the baking dish.
  • Bake for 50 to 60 minutes or until set. Allow to rest for 5 minutes before serving.

Notes

Most expensive item would be the beef sausage, probably not over 200 baht, which is about $5.90 or about $1 per meal per person, plus minimal costs for other ingredients, still makes this a very affordable dish.
