Ellen's Beef Manhattans

This comes from a friend and is an old fashioned dish and was common in school cafeterias. Years ago, utilizing leftovers an another meal was very common as well as adding some items to extend the leftovers further. The beauty of this recipe, is the leftovers. I have written this to use leftovers. If you need to make mashed potatoes I have a shortcut in the Recipe Notes section or make mashed potatoes your preferred way. Ingredients
  

  • 2 cups leftover roast beef, shredded
  • 1 cup leftover mashed potatoes, warmed, OR make from a shortcut
  • 1 large onion, sliced
  • 1 tablespoon butter
  • 1 1/2 cups beef gravy, homemade or from packets
  • 4 slices bread
  • salt and pepper, as desired

Instructions
 

  • In a non stick pan, melt the butter on low heat, when hot, add the onion and saute until tender, about 10 minutes.
  • Stir the shredded beef into the onion and let this simmer for a few minutes. Season with salt and pepper as desired.
  • Now stir in the gravy and let this simmer. Heat up the leftover mashed potatoes, or mash your fresh cooked potatoes, if making mashed, flavor them up with splash of milk, butter, and some black pepper.
  • To serve, place a slice of bread on a plate, spoon some beef and gravy over the bread, top with another slice of bread, add some mashed potatoes to the bread, spoon some more beef and gravy over the top, season with salt and pepper as desired. Serve and enjoy.

Cowboy Stew

Ground beef, bacon, and baked beans, sounds delicious! I used my homemade baked beans for this but if wanting to use canned, that is stated as well. Great comfort meal. Links to the Shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 250 grams bacon, (1/2 lb)
  • 500 grams ground beef, (1 lb)
  • 1 onion, diced
  • 2 medium potatoes, scrubbed and diced
  • 4 cups baked beans, or 2 15 oz cans, (Shortcut)
  • 1/3 cup BBQ sauce, (Shortcut)
  • 1/4 teaspoon liquid smoke

Instructions
 

  • In a large pot (I like to use my pressure cooker pot) add the baked beans. I used homemade and they were quite thick so I added 1 cup of water as well. Bring that to a simmer.
  • In a pot add the diced potatoes and cover with water by 2 inches, bring to a boil and cook the potatoes until just fork tender. Drain, and add to the baked beans.
  • While the potatoes are cooking, in a large non stick pan, cook the bacon until near crispy. Remove the bacon and drain on paper towels. When cooled, chop into bite size pieces and add the bacon to the baked beans.
  • For the bacon fat in the pan, drain off most of it, then add the ground beef and onion. Cook the beef until no longer pink and the onion is soft. Drain and add to the baked beans.
  • Add the BBQ sauce and liquid smoke to the pot and stir into the beans, bring to a boil then reduce to a simmer.
  • Simmer the stew for 10-15 minutes. While simmering consider making some biscuits to ladle the stew over or heating some nice dinner rolls to go with this. Corn bread muffins would be perfect as a side as well as fried corn.
  • Serve and enjoy.

Ground Beef Stroganoff

Easy, and delicious! I made this on 15 Apr 2020 and was extremely pleased with the result, this is tasty and was enjoyed by the family. Highly recommended.

Ingredients
  

  • 500 grams ground beef, or ground pork, (1 lb)
  • 1 small onion, diced
  • 1 clove garlic, smashed and minced
  • 350 grams fresh button mushrooms, sliced, (Ā¾ lb), or 1 can, drained and sliced
  • 3 tablespoons all purpose flour
  • 2 cups beef broth, fresh or from powder
  • 2 teaspoons Worcestershire sauce
  • Ā¾ cup sour cream,
  • fresh parsley, chopped, to garnish
  • salt and black pepper, as desired
  • egg noodles, cooked, for serving

Optional - to thicken more

  • cornstarch
  • cold water

Instructions
 

  • Heat a pot of salted water to boiling, then add egg noodles and cook until tender for the desired number of servings, once tender, drain and set aside. Feel free to use mashed potatoes in place of the egg noodles, your choice.
  • While the noodles are cooking, heat a large non stick pan on medium heat and when hot, add the ground beef, onion, and garlic. Break up the meat a little, goal is a good chunky beef sauce. Cook the beef until no longer pink. Drain off any fat.
  • Add the mushrooms to the pan and cook 3-4 minutes.
  • Stir in the flour and cook 1 minute more.
  • Add the beef broth, Worcestershire sauce, and season with salt and pepper as desired.
  • Bring to a boil then reduce to a simmer. Simmer for 10-15 minutes. (To thicken the sauce more or to your desired consistency, make a slurry with equal parts cornstarch and cold water and stir into the sauce.)
  • Remove the pan from heat, stir in the sour cream and parsley if using.
  • Serve over the egg noodles or mashed potatoes if you wish. Enjoy.

Notes

Fair cost per serving depending on where the beef is sourced. I use local raised beef and grind myself for savings.
Variants: 1. Use 1 can of whole button mushrooms, drain and sliced in place of fresh mushrooms. 2. Add 1 can of cream of mushroom soup after adding the beef broth and stir into the mixture.
Tasty Ground Beef & Celery Stir Fry

Tasty Ground Beef & Celery Stir Fry

This is Chinese in origin and sounds just down right tasty, and quick to prepare. On my to cook list for sure! The only item uncommon in the ingredients, unless you do a lot of Asian cooking, would be the Shaoxing Rice Wine, available in the US in Asian markets and if all else fails, on Amazon.

Ingredients
  

  • 250 grams ground beef, (1/2 lb)
  • 2 cups celery, diced
  • 4 cloves garlic, smashed and sliced
  • 4 dried chilies, chopped
  • 2 tablespoons vegetable oil, divided
  • 1 tablespoon Shaoxing rice wine
  • 1/4 teaspoon salt
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons oyster sauce

Instructions
 

  • Heat 1 tablespoon of the oil in a wok or non stick pan on medium heat, when hot, stir fry the beef until it starts to change color, about 2 minutes, then add the rice wine and stir fry for another minute. Remove the beef from the pan and set the beef aside.
  • Same pan, add the other 1 tablespoon of oil, when hot, add the sliced garlic and chilies, stir fry until fragrant, about 1/2 a minute.
  • Add the celery and season with the salt, as desired and saute for 5 minutes or until the celery is soft, then return the beef back to the pan and toss in the soy sauce and oyster sauce, stir fry for another 1 to 2 minutes.
  • Serve.

Hamburger Noodle Supper

This sounds good for a quick dinner, and can be tailored endless ways, consider this just a base recipe. On my to cook list.

Ingredients
  

  • 500 grams ground beef, (1 lb)
  • 2 packets ramen noodles, beef flavor
  • 1 cup beef stock, fresh or from powder
  • 1 cup water
  • 2 cups frozen mixed vegetables, thawed

Instructions
 

  • Heat a large skillet on medium heat and add the ground beef, breaking it up with the spatula, and cook until no longer pink then drain.
  • While the beef is cooking, heat a sauce pan with the beef stock and when boiling, add the ramen without the seasoning pack, and cook until tender, drain and set aside.
  • To the beef, place on low heat add the vegetables and mix in the two seasoning packs as well.
  • When the ramen is done, drain, then add to the beef mixture. Mix and heat until everything is heated through.
  • Serve.

Variants: 1. Use ground pork and pork flavored ramen. 2. Use egg noodles in place of ramen. 3. Use fresh cooked corn and diced carrots. 4. Add onion and garlic powder when cooking the beef or fresh diced and minced. 5. Add fresh blanched broccoli.

Hamburger Helper Shortcuts

Hamburger Helper Shortcuts

I grew up on Hamburger Helper, and many times the hamburger (hamburger meat for all my friends in the deep south of the US) was substituted with ground venison. My early years in the Navy, my wife and I made Hamburger Helper to stretch those dollars between paydays. This boxed kind basically hamburger, pasta (maybe potatoes), spices, milk, water, load of salt and sugar, and a load of preservatives. So I did a bit of research on the internet and found a site that replicated all of the dishes available. Cheesy Jambalaya

  • 500 grams ground beef, (1 lb)

  • 1 teaspoon dried basil

Instructions

  • In a large non stick pan, brown the ground beef and drain off any fat. (Instead of onion powder and garlic powder, I added a diced onion and 2 cloves of minced garlic when I browned the beef.)
  • Add the remaining items except the cheese.
  • Stir together. Let it come to a near boil.
  • Reduce heat to a simmer and stir occasionally until the macaroni is tender.
  • Stir in the cheese and let it melt in.
  • Serve and enjoy.

Lasagna

  • In a large non stick pan, brown the ground beef and drain off any fat.
  • Add the remaining items except the two cheeses. Reduce heat to a simmer and stir occasionally until the egg noodles or lasagna noodles are tender.
  • Stir in the Mozzarella cheese and sprinkle the Parmesan cheese on the top. Cover for 5 minutes to let the Mozzarella melt in, serve and enjoy.

Cheesy Beef Taco

  • In a large non stick pan, brown the ground beef and drain off any fat.
  • Add the remaining items except the cheese and Fritos. Reduce heat to a simmer and stir occasionally until the rice is tender.
  • Stir in 1 cup of the Cheddar cheese, sprinkle the remaining cheese on the top then the Fritos, Cover and let sit for 5 minutes, serve and enjoy.

Beef Stroganoff (Featured Image)

  • In a large non stick pan, brown the ground beef and drain off any fat.
  • Add the remaining items and mix together. (Mushrooms I used were Straw mushrooms, quartered.)
  • Reduce heat to a simmer and stir occasionally until the egg noodles are tender.
  • Serve and enjoy.

  • Add the remaining items.
  • Stir together and let it come to a near boil.
  • Reduce heat to a simmer and stir occasionally until the potatoes are tender and the sauce has thickened.
  • Serve and enjoy.

Salisbury

  • In a large non stick pan, brown the ground beef and drain off any fat.
  • Add the remaining items. Reduce heat to a simmer and stir occasionally until the egg noodles are tender. Serve and enjoy.

Cheesy Italian Shells

  • In a large non stick pan, brown the ground beef and drain off any fat.
  • Add the remaining items except the cheese. Reduce heat to a simmer and stir occasionally until the pasta shells are tender.
  • Stir in the Cheddar cheese and cook for another 5 minutes or so to let the cheese melt in, serve and enjoy.

Notes: 1. If using true Thai chili powder, cut the amount back by 1/3 to 1/2 as it is quite hotter than chili powder in the US. 2. The salt and sugar are OPTIONAL! I have made several of these and you can certainly leave out the sugar. Salt is used in the boxed version of this much the way McDonald's uses salt, sugar is used in the box version much the way cereals in the US are made, to get you to not like the meal, but love the meal, and buy more. When I make these, I do not add sugar, but I do add salt, a touch less than what is stated.

This recipe is from none other than, a Swiss person, so I think it is pretty safe to assume, this is about authentic as this gets. And it is so simple!

Ingredients
  

  • 1 thin beef steak
  • 1 egg, beaten
  • all purpose flour, as needed
  • bread crumbs, as needed

Instructions
 

  • Heat a skillet on medium heat. Beat the egg in a shallow bowl or plate, place some flour on another plate, and some bread crumbs on another plate.
  • When the skillet is hot, coat the steak in beaten egg, then coat with flour, back into the egg to coat it again, then into the bread crumbs, and finally into the hot skillet.
  • Cook until golden brown on the bottom, flip the steak and cook the other side.
  • Serve with a lemon wedge on top and sides of your choice.

Ingredients
  

  • 350 grams ground beef, (3/4 lb)
  • 1/4 cup onion, diced
  • 1 clove garlic, smashed and finely minced
  • 1/2 cup tomato sauce, OR make from a shortcut
  • 1 1/2 teaspoons ground cumin
  • 1/2 cup green chilies, canned or fresh roasted
  • cooking oil, for frying
  • 12 small corn tortillas

To Serve, as desired

  • salsa, OR make from a shortcut
  • sour cream, OR make from a shortcut
  • guacamole

Instructions
 

  • In a large non stick pan, cook the ground beef and break up with a spatula as you cook, when no longer pink, drain the fat then add the onion and garlic and cook until the onion is soft.
  • Add the cumin, chilies, and tomato sauce to the pan and mix in, simmer on low heat for 5 minutes, stirring often. Remove from heat and set aside.
  • In a large, flat pan, cast iron would be perfect, heat a little oil and warm each tortilla for a minute or two on each side, this makes them very soft so you can roll them.
  • Lay a tortilla on your work surface and add some beef filling at about the point mid way between the edge and the center, make a line of filling across the tortilla.
  • Roll the tortilla tightly, goal is a nice cigar sized taquito. Repeat this for each tortilla.
  • Heat about 1/3 inch of oil in pan, when the oil is hot, quickly fry the taquitos to brown them, light golden color is the goal, about 1 minute each.
  • Serve with dipping sauces as you desire, salsa, sour cream, and guacamole would be great choices.

Ingredients
  

  • 500 grams ground beef, (1 lb)
  • 1 1/2 cups dry macaroni
  • 1 medium red onion, diced
  • 3 cloves garlic, smashed and minced
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas and carrots
  • 6 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Italian seasoning, OR make from a shortcut
  • 2 1/2 teaspoons seasoning salt, OR make from a shortcut
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 can whole peeled tomatoes, chopped plus juice
  • 2 1/2 cups chicken broth, fresh or from powder
  • 2 bay leaves
  • 1 cup Cheddar cheese, shredded, sharp if you have that

Instructions
 

  • Brown the ground beef in good sized pot with the onion and garlic, drain fat.
  • Add the peas, carrots, corn, seasoning salt, pepper, cumin, and give it a quick mix. Then add the Worcestershire sauce, tomato paste, and chopped tomatoes with their juice, another quick mix.
  • Add the broth, bay leaves, and macaroni. Give it a quick mix and set heat to just simmer. Cover pot and simmer until the pasta is cooked and tender, stirring occasionally.
  • Top with the cheese, cover, and remove from heat for 10 minutes.
  • Give it a stir and serve.

Notes

Beef will cost about 125 Baht/500 grams. For 4 servings, this is about 92 cents per serving.

Ingredients
  

  • 500 grams ground beef, (1 lb)
  • 1 packet taco seasoning mix, OR make from a shortcut
  • 3/4 cup water
  • 6 eggs, chicken or duck
  • 1 cup whipping cream
  • 2 cloves garlic, smashed and minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup Cheddar cheese, shredded

Optional Toppings

  • sour cream, OR make from a shortcut
  • fresh tomatoes, chopped
  • fresh avocado, chopped

Instructions
 

  • Preheat your oven to 180 C (350 F) and grease glass pie dish with butter and set aside.
  • Heat a large non stick pan and brown the beef until no pink is visible. Break up the beef as it cooks with the spatula. Just starting with the beef here.
  • Add the taco seasoning and water and reduce heat, cook for a few minutes to reduce the liquid and makes a thick sauce.
  • Add the beef to the prepared pie dish and spread to make an even layer.
  • In a mixing bowl, add the eggs, cream, garlic, salt, and pepper, mix together then pour over the beef. (Yes, I was making two pies.)
  • Top with the cheese.
  • Bake for 30 minutes or until the egg is set and the cheese starting to brown. Let rest for 5 minutes before slicing.
  • Serve with toppings of sour cream, chopped tomatoes, chopped avocado, or toppings of your choice. Enjoy.

Figure about 125 Baht for the beef and about 90 Baht for the cheese. For 6 servings, this is about $1.05 per serving.
