Seasoned Chicken, Yard Beans, and Potatoes

Easy and inexpensive meal cooked in a slow cooker. I made this yesterday on 27 Jul 2016, my comments below.

Ingredients
  

  • 1 kilo chicken breasts, boneless and skinless
  • 2 1/2 cups yard beans
  • 3 cups potatoes, diced large
  • 1/3 cup lemon juice, fresh only
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 cloves garlic, smashed and minced

Instructions
 

  • Place the chicken in your slow cooker, in the center if possible. Next add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side. Or if the chicken covers the bottom of the pot, place the beans on one half the chicken, and the potatoes on the other half the chicken.
  • In a bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic. Pour this over the chicken, green beans, and potatoes. Cover and cook on High setting for 4 hours or Low setting for 7-8 hours, do not open the lid during the cooking time. Serve.
  • This was cooked on High for 4 hours.
  • Plated.

Notes

Chicken breast will run about 62 Baht/kilo. Potatoes and beans are very inexpensive. For 4 servings, this is about 45 cents per serving. Excellent value for a complete meal.

    A must-try for me, but I will definitely pan sear the chicken in order to retain some of the moisture and to add color 😉

    • Yep, agree with the pan searing first, I made the recipe as is to test it, when I make again, and I will, I will pan sear first, and if better, then will change the recipe to reflect my findings 🙂 On another note, just the beans and potatoes would make excellent side dishes on their own.

    I made this yesterday, 27 Jul 2016, and it turned out very good. I made this like the recipe except cut the potatoes down to 3 cups which was the perfect amount. The seasoning is spot on, very nice, however, even though the chicken is sitting in liquid for the 4 hours cooking (I used High setting), it was tender enough to fall apart, but it was dry. The beans and potatoes, perfect, chicken was dry. I could have spooned some of the liquid over the chicken, or even made up a quick batch of chicken gravy, but I wanted to give results as I see it. Tonight I will spoon some of the liquid over the chicken. Over all, a very good meal, easy to put together, and very low cost.
