Ingredients
  

  • 2 salmon fillets, these are the 140-160 gram each
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ½ cup soy sauce
  • 2 teaspoons Dijon mustard
  • 1 carrot, cut into matchsticks
  • ½ red bell pepper, cut into thin strips
  • 1 cup fresh broccoli, cut into bite size pieces
  • 1 cup snow peas, trimmed
  • salt and pepper, to taste
  • olive oil, as needed
  • 2 spring onions, sliced for garnish

Instructions
 

  • Preheat your oven to 200° C (400° F).
  • Mix together the marinade of brown sugar, garlic, ginger, soy sauce, and mustard in a shallow bowl. Place the salmon in the marinade and marinate for 15 minutes.
  • While the salmon is marinating, lay down two sheets of foil on a baking sheet. On the first sheet, lay down the carrot sticks to make a layer about 2 sticks deep and about 6 inches across, on top of the carrots place the bell pepper cross way. On one end of the carrots place the broccoli, and on the other end, place the snow peas. Drizzle with a little olive oil and salt and pepper to taste and fold the foil over the veggys to make a sealed packet. set that packet off to one side of the next sheet of foil.
  • Drizzle some olive oil on the second sheet. Remove the salmon from the marinade and shake off excess and place on the olive oil on the foil.
  • Bake for 8-10 minutes or until the salmon easily flakes with a fork. Plate the vegetables and place the salmon on top, sprinkle with chopped spring onion, serve.

Notes

For 69 Baht per fillet, this is about $2.03 per serving. High cost but I think ok for a once in a while, healthy meal.
Patty Melts

Patty Melts

Grilled sandwich with beef, onions, and Swiss cheese, I love everything about this. And easy to make. On my to cook list.

Ingredients
  

  • 1/2 cup butter
  • 1 large onion, sliced
  • 750 grams ground beef
  • 1/2 teaspoon Worcherstershire sauce
  • salt and black pepper, to taste
  • 8 slices rye bread
  • Swiss cheese, sliced

Instructions
 

  • In a medium skillet, melt 2 tablespoons of the butter over medium low heat. Add the sliced onions and cook slowly until the onions are golden brown and soft, 20 to 25 minutes, stirring occasionally.
  • While the onions are cooking, In a medium bowl, mix together the ground beef, Worcestershire and salt and pepper to your liking, form into 4 patties.
  • I use block cheese, Swiss, from New Zealand, excellent cheese, so slice your cheese while the onions are cooking as well. You can slice as thin or as thick as you want, figure about 3 slices per side.
  • When the onions are done, melt 2 tablespoons of the butter in another skillet over medium heat. Cook the patties on both sides until totally done in the middle, 3 minutes or so each side.
  • To assemble each sandwich, slice of bread, slices of cheese to cover bread (about 3), hamburger patty, a quarter of the cooked onions, more slices of cheese and another slice of bread.
  • Using a griddle or a large skillet over medium heat, cast iron would be perfect, melt 2 tablespoons of the butter and grill the sandwiches until golden brown on the first side in the pan. Remove the sandwiches and add the remaining 2 tablespoons butter to the skillet. Return the sandwiches to the skillet, but flip them to the other side. Cook until golden brown and crisp, and until the cheese is melted. Slice in half and serve immediately!

Notes

Not a cheap meal based on cheese alone, figure about 180 Baht/block of 250 grams. For the beef, this will be about 150 Baht. For 4 servings, this is about $2.43 per serving.

  • 500 grams sausage, OR make from a shortcut
  • 250 grams Cream cheese, softened, this 1 standard block
  • 1 1/4 cups Bisquick Mix, OR make from a shortcut
  • 110 grams Cheddar cheese, shredded

Instructions
 

  • Preheat your oven to 200 C.
  • Mix all ingredients until well combined, roll into 1 inch balls. bake for 20-25 minutes. Serve as an appetizer or in main dish in a pasta sauce over spaghetti.

Notes

Minced pork will cost about 50 Baht/500 grams if making the sausage yourself. The Cream cheese will run about 150 Baht/250 grams, and the Cheddar will run about 90 Baht for half a 250 gram block. For all the meatballs, this is about $8.53, I will break this down to per meatball when I make these. I will state high cost for now.

This is a stand alone recipe, once you make this, you can make any burgers of your choice. I wanted to add this tip as it is excellent! There is 3 options here. This tip is for grinding your own beef or at a minimum, grinding the optional ingredients. You can grind these items together or do as I did and just grind separate and mix together by hand.

Beef with Bacon

  • 500 grams beef, any cut
  • 200 grams smoked bacon

Beef with Sausage

  • 500 grams beef, any cut
  • 250 grams beerwurst sausage, bratwurst, smoked sausage, etc

Beef with Green Chili

  • 500 grams beef, any cut
  • 200 grams smoked bacon
  • 1-2 large green chilies, also called large green peppers, roasted

  • Cut the beef into strips and place in the freezer to chill for about 20-30 minutes, place the bacon in the freezer as well. Thoroughly clean the grinder parts then sterilize in bleach water for a few minutes, then RINSE the parts completely, dry, and assemble the grinder. Grind the beef with the bacon, or grind separate and mix. Immediately chill the ground meat in the fridge until use. This makes 4-5 patties.

  • Cut the beef into strips and place in the freezer to chill for about 20-30 minutes, place the sausage in the freezer as well. Thoroughly clean the grinder parts then sterilize in bleach water for a few minutes, then RINSE the parts completely, dry, and assemble the grinder. Grind the beef with the sausage, or grind separate and mix. Immediately chill the ground meat in the fridge until use. This makes 4-5 patties. This one I have done and it makes a great burger!

Beef with Green Chilies

The beef will cost about 100 Baht/500 grams, bacon can go up to 150 Baht/200 grams and is normally more than sausage. For 4 burger patties, this is about $1.84 per burger patty. High cost but great for a once in a while meal.

  • 500 grams ground beef, (1 lb)
  • lasagna noodles, as needed
  • 3 cups pasta sauce, Shortcut
  • cups Cottage cheese, Shortcut
  • cups Mozzarella Cheese, shredded
  • 2 tablespoons Parmesan cheese, grated

Instructions
 

  • Brown ground beef in a skillet, drain, and set aside.
  • Pour 1 cup of sauce in the slow cooker and spread around to coat the bottom. Mix remaining sauce with the ground beef.
  • Place 2 uncooked lasagna noodles on sauce in slow cooker. Spread ⅓ of the meat mixture on top of the noodles. Spread ¾ cup of cottage cheese over the meat. Sprinkle ½ cup Mozzarella over the cottage cheese.
  • Add another layer of uncooked noodles, ⅓ meat mixture, the remaining cottage cheese and ½ cup mozzarella cheese.
  • Place another layer of uncooked noodles, remaining meat mixture, then remaining Mozzarella cheese. Sprinkle Parmesan cheese over top. Cook on low for 4 hours. Serve.

Notes

Figure about 100 Baht for the ground beef, and 140 Baht for the Mozzarella cheese. For 4 servings this is about $1.76. Not a bad price for lasagna.

Ingredients
  

  • 500 grams crab claw meat
  • 1/2 cup unsalted butter, this is 1/2 standard block
  • 3 cups corn
  • 1 tablespoon garlic, smashed and minced
  • 3/4 cup fresh parsley, chopped
  • 2 cups spring onion, chopped
  • 340 grams cherry tomatoes
  • 1 cup frozen mixed vegetables
  • 2 cans diced tomatoes
  • 4 cups shrimp stock, fresh or from powder, OR water
  • 4 tablespoons Old Bay seasoning, divided

Instructions
 

  • Melt the butter in a large pot or Dutch oven, and the spring onion, garlic, corn, mixed vegetables, cherry tomatoes, and 2 tablespoons Old Bay.
  • Cook on medium high heat until the tomatoes are soft and can be crushed with a wooden spoon. Then stir in the diced tomatoes and bring to a slow boil.
  • Add the stock or water, parsley, crab claw meat, and remaining Old Bay. Simmer uncovered for 30 minutes.

Notes

I cannot price this until I get to Makro to get prices on the crab meat.
Variants: Add chopped bacon, chopped zucchini, pinch of cayenne pepper.

Sounds like a great way to prepare salmon. Salmon fillets are available in Tesco, weigh between 140 and 160 grams each. One fillet is one serving.

Ingredients
  

  • 2 salmon fillets
  • 1 egg
  • olive oil, as needed

For the Breading

  • cup almonds, crushed
  • cup Parmesan cheese, grated
  • 1 tablespoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • This is the type of fillets I get from Tesco.
  • Mix breading ingredients together in large bowl. Whisk egg in a separate bowl.
  • Heat some olive oil in a non stick skillet on medium heat. Once the pan is ready, dredge the salmon in the egg, then the breading mixture and add to the hot pan, skin side down and let the fillets cook on one side for 3-4 minutes or until golden brown, flip and cook for an additional 2-3 minutes or until golden brown.
  • Plate with skin side down, serve with your favorite vegetable or even with pasta.

Notes

Garlic Bread Lasagna

Garlic Bread Lasagna

If nothing else, this does sound interesting. On my to cook list. No measurements are given and I will sort that out when I make this, but it is pretty straight forward on how to assemble this. Use the shortcuts as well. Links to the shortcuts are listed in the Recipe Notes section.

  • olive oil, as needed
  • ground beef
  • 3 cloves garlic, smashed and minced

  • garlic bread, OR make from a shortcut
  • Mozzarella Cheese, sliced
  • Parmesan cheese, grated

Instructions
 

  • Preheat your oven to 200 C. Get out a baking dish, 7x11 should work, or even a 9x13 if making a lot of sauce and you have lots of garlic bread on hand.
  • Heat a large non stick pan with a splash of olive oil and add the garlic and onion, when the onion starts to soften, add the ground beef and break that up and mix in with the onions.
  • When the beef is cooked through, drain well then stir in the tomato sauce and let that simmer for 10-15 minutes. Remove from heat.
  • Toast the garlic bread following the shortcut. Once toasted, use your hand and flatten down each slice.
  • To assemble this concoction. Spread half the sauce on the bottom of the baking dish. Then place slices of toasted and flattened garlic bread in an even layer. Cover that layer with slices of Mozzarella in an even layer. Spread the remaining sauce over the cheese, add another layer of garlic bread, another layer of Mozzarella, then sprinkle Parmesan over the top.
  • Bake for 40 minutes or until the top is starting to brown. Remove from oven and let rest for 10 minutes, serve.

Notes

The beef will run about 100 Baht/500 grams. I will have to give a per serving cost after I make this.

Ingredients
  

  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1 packet dry ranch dressing mix, OR make from a shortcut on this site
  • 14 medium potatoes, cubed, about 2 - 2 1/2 kilos of potatoes
  • 3 chicken breasts, boneless, skinless, cut into bite size pieces
  • 2 1/2 cups Cheddar cheese, shredded
  • 1 cup bacon, fried crisp and crumbled
  • 1 cup spring onions, chopped, white and green parts
  • 1 teaspoon pepper

Instructions
 

  • Preheat your oven to 250 C. Lightly grease a 9x13 baking dish with butter.
  • In a large mixing bowl, combine the olive oil, salt, ranch dressing mix, and pepper. Add the cubed potatoes and toss well to coat all the potatoes. Spoon the potatoes into the backing dish, leaving as much of the oil mixture in the bowl. Roast until the potatoes are crispy, about 1 hour, stirring every 15 minutes.
  • While the potatoes are roasting, add the chicken to the bowl with the oil mixture and toss to coat and set aside. In a separate bowl, mix together the cheese, bacon, and spring onion and set aside.
  • When the potatoes are crispy, remove from the oven and lower the temp to 200 C. Add the chicken to the top of the potatoes then top that with the cheese mixture and bake for another 15-20 minutes or until the cheese is melted. Remove from the oven and let this rest for 10 minutes. Serve with sour cream or ranch dressing.

Notes

For the cheese, figure about 180 Baht for a 250 gram block. For the bacon, I estimate about about 300 grams which for average bacon, figure 130 Baht total. The chicken runs about 60 Baht/kilo, 3 pieces will be less than that but I will use 60 Baht for the pricing here. For 6 servings, this is about $1.82 per serving.

Orange Shrimp & Broccoli with Rice

Orange Shrimp & Broccoli with Rice

Sounds really good and is made along side and served on top of a light garlic sesame fried rice. The recipe I found included how to cook rice, we'll skip that, make use of your rice cooker.

Ingredients
  

For the Shrimp & Broccoli

  • 750 grams white shrimp, peeled, deveined, and tails removed (or any shrimp you want)
  • 3 cups fresh broccoli, cut into bite size pieces, include stem
  • 2 teaspoons olive oil
  • 1 cup orange juice
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons sugar
  • 1 teaspoon corn starch
  • 2 tablespoons spring onion, sliced, use the green and white parts
  • 2 teaspoons white sesame seeds
  • salt and pepper, to taste

For the Rice

  • 4-6 cups cooked white rice
  • 1 tablespoon garlic, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons white sesame seeds
  • 1 teaspoon olive oil
  • salt, to taste

Instructions
 

  • Heat a large non stick pan over medium high heat, add the broccoli along with 2 tablespoons of water and cook for about 5 minutes or until broccoli is tender. Season with salt and pepper to taste and remove when cooked and place in a large bowl and set aside.
  • Same pan, wipe out any water and the 2 teaspoons of olive oil and heat that up on medium heat, then add the shrimp in a single layer (cook in batches if needed) and season with salt and pepper to taste. Cook for 2-3 minutes per side until pink and opaque. After the shrimp is cooked, remove and place in the bowl with the broccoli, toss together lightly, and set aside.
  • Same pan, wipe out any of the olive oil and add the orange juice, soy sauce, and sugar. Bring to a boil then reduce to a simmer and cook until the mixture has reduce to about half. Mix the corn starch with 2 teaspoons of cold water and add that mixture to the pan and mix and bring to a boil or until the sauce has thickened. Pour the sauce over the broccoli and shrimp and toss to coat. Cover with foil to keep warm.
  • To make the fried rice heat 1 teaspoon of olive oil in a large pan over medium heat. Add the garlic and cook for 1 minute. Add the cooked rice, sesame oil, and sesame seeds to the pan and cook, stirring often, for 5 minutes. Add salt and pepper to taste.
  • To serve, place some rice and ladle the broccoli and shrimp mixture over the top. Garnish with sliced spring onion and sesame seeds.

Notes

White shrimp at Tesco will about 210 Baht/750 grams. For 4 servings this is about $1.54 per serving. High cost but would be nice for a once in a while meal. If you can source the shrimp local ever lower cost.
