Ingredients
  

  • 4 chicken breasts, boneless and skinless
  • 1 packet dry ranch dressing mix, OR you can make from a shortcut listed on this site
  • 1/4 block of butter, this is the standard 228 gram block, this is 1/4 cup butter, or 1/2 a stick

Instructions
 

  • Place the chicken breasts in your slow cooker, sprinkle with the dressing mix. Cut the butter into 8 pieces and place on top of the dressing mix.
  • Cook on Low setting for 4 to 6 hours. Check at 4 hours, juices should run clear, meat should be very tender. Serve with corn on the cob and maybe some yard beans for a nice meal.

Notes

The butter and liquid from the chicken is enough for the slow cooker.
Chicken breasts, boneless and skinless is 85 Baht/kilo, bone in and skin is about 63 Baht/kilo. Going with 85 Baht for 4 breasts, for 4 meals, this is about 65 cents per meal.

Slow Cooker BBQ Chicken

Ingredients
  

  • 4 chicken breasts, boneless and skinless
  • 1/2 can Root Beer, OR coke
  • 1 bottle BBQ sauce, OR make from a shortcut listed on this site
  • salt and pepper, to taste

Instructions
 

  • Place chicken breasts and root beer in a slow cooker and cook for about 3 hours on High Setting.
  • Shred in the pot and drain most of the liquid but leave a little so chicken doesn’t get dry. Add salt & pepper to taste.
  • Pour in a bottle of BBQ sauce and let cook another 20-30 minutes in slow cooker. Serve on buns, rolls, or bread.

Notes

Chicken breasts, boneless and skinless run about 87 Baht/kilo, 4 breast is under that, if you go with skin on and bone in, the cost is about 58 Baht/kilo. Go with skin on and bone in, remove the skin and excess fat before putting in the slow cooker, when done, remove from pot and remove bone (easy) then return to pot to shred, the bone in will add more flavor. For serving 4 people, this is well under $1 per meal per person.

Slow Cooker Beer Chicken

Two of my favorites, beer and chicken. This is easy and delicious and is truly fall off the bones tender and juicy. I took the photos last night, 1 March, when I made this, report is in the comments section.

Ingredients
  

  • 1 whole chicken, OR chicken pieces
  • 1 can beer, any type, room temperature
  • 2-3 cloves garlic, smashed and chopped
  • 1 onion, peeled and cut into quarters
  • 1 teaspoon salt
  • 1 teaspoon parsley
  • 1 teaspoon basil
  • 1/2 teaspoon black pepper

Instructions
 

  • Wash chicken inside and out, remove giblets if in the cavity, if a local market bought chicken, remove the neck, feet, and trim the fat from the gut opening. Place chicken in slow cooker breast side down, add the garlic and onion in the gaps on the sides of the chicken.
  • Pour beer over the chicken, sprinkle on the spices.
  • Cover and cook on Low setting 7-8 hours or High setting for 3-4 hours.
  • When chicken is cooked through (does not hurt to use a meat thermometer at this point), remove the whole chicken carefully from the pot as it may fall apart. If using chicken pieces, use a large slotted spatula.
  • Make a gravy from the juices from the pot, enjoy. Serve with boiled or mashed potatoes or rice and a vegetable for a complete meal.

Notes

A whole chicken will cost about 150 to 200 Baht. This is a $1 meal for 6 people, less for 8 people.

Slow Cooker Cola Chicken

Not a fan of coke or any soft drinks, but I will have to try this. Very easy recipe and can be adapted in many ways with the meat used. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 1 whole chicken
  • 1 lemon, cut into quarters
  • 1 onion, peeled and cut into quarters
  • 1 bottle BBQ sauce, OR make from a shortcut listed on this site
  • 1 can cola

Instructions
 

  • Wash the chicken inside and out, remove giblets if present inside. If the chicken if from a local market, remove the neck and feet, trim excess fat at the gut opening, place chicken in the slow cooker breast side up.
  • Toss in the onion and lemon quarters, pour in the entire bottle of BBQ sauce and the entire can of cola.
  • Cover and cook on Low setting for 6-8 hours or High setting for 3-4 hours.
  • Serve with boiled buttered potatoes and a salad for a meal.

Notes

A whole chicken will cost about 150 to 200 Baht. BBQ sauce if store bought will run about 90 Baht. For 6 people, this is about $1.50 per meal per person, very reasonable. Less for 8 people.

Slow Cooker Chicken & Gravy I

This is good and really easy. Keep in mind folks, use the shortcuts listed on this site for the gravy mix and soup, not only will this reduce the cost a lot, you eliminate the extra salt and preservatives. I did not take photos when I made this, just think of a slow cooker pot with gravy in it covering the chicken, you get the idea. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 1 kilo chicken breasts, boneless and skinless, OR skinless thighs
  • 2 packets dry chicken gravy mix, Shortcut
  • 1 can condensed cream of chicken soup, Shortcut
  • 1 3/4 cups water
  • 1/8 teaspon ground black pepper

Instructions
 

  • Put the gravy packets, cream of chicken soup (or cream of mushroom soup), water, and pepper in your slow cooker and whisk until the gravy and soup are smooth as possible, any lumps will cook out.
  • Add the chicken breasts OR thighs.
  • Cook on Low setting for 5-6 hours.
  • When the chicken is done, use a large spoon to remove chicken to plates, it will be fall apart tender. Serve with mashed potatoes with gravy ladled over the top. Serve with a vegetable for a complete meal.

Notes

Chicken breasts will cost about 88 Baht/Kilo, thighs even less. For 4 people this is about 75 cents per meal, even less for 6 people. Make the gravy mix and soup yourself for a greater savings. If you do not want to make the gravy shortcut, just use 2 tablespoons of flour and 1 rounded teaspoon of chicken stock powder.
Variants would include using thighs or legs instead of breasts. Also adding a handful or two of fresh or canned, sliced mushrooms about an hour before it is done would work well also.

3-Ingredient Chicken Cacciatore

Ingredients
  

  • 6-8 chicken thighs
  • 1 large jar spaghetti/tomato sauce, OR make yourself from tomato paste and herbs, OR 2 cans of sauce
  • 500 grams spiral pasta, OR any pasta of your choosing

Instructions
 

  • Add chicken to the slow cooker pot, pour sauce over chicken, stir to coat all the chicken. Season with salt and pepper. Cover and cook on Low for 4-5 hours until chicken is cooked through. Do not open the lid until 4 hours have passed, then check chicken. I added a diced green bell pepper as well.
  • About 30 minutes before the chicken is done, cook your pasta, drain, place back in the pot you cooked them in and drizzle with some olive oil to prevent sticking. Photo shows cooked after 4 1/2 hours.
  • To serve, plate up pasta, add a chicken thigh, and spoon some sauce over the chicken and pasta, feel free to sprinkle grated Parmesan on the top, I know I will. Serve with a vegetable for a complete meal.

Notes

For chicken, use thighs bone in and with skin (this adds flavor) or you can use boneless and skinless, totally up to you. You can also use a combination of legs and thighs cut from quarters (most cost effective way, do yourself a favor, buy quarters, use the thighs, save the legs for another recipe like a BBQ or for other family members). For 8 quarters, you may spend about 150 Baht, sauce in a can is about 40 Baht, but if you use paste and make yourself, considerably lower cost. About 230 Baht or about $1.30 per person if serving 6, or  90 cents per serving is serving 8. Make the sauce yourself and you can reduce the cost of the sauce by well over half.
Variants: Add any or all of chopped mushrooms, chopped onions, chopped bell peppers, herbs when you add the sauce to the slow cooker.

  • 8 chicken thighs, boneless and skinless, cut into bite size pieces
  • 3 tablespoons flour
  • 1/3 cup orange marmalade
  • 1/3 cup barbecue sauce, OR make from a shortcut listed on this site
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh grated ginger

Instructions
 

  • Add chicken to the slow cooker pot and sprikle with the flour, mix to coat the chicken.
  • Add all other ingredients and light stir to combine. Cover.
  • Cook on Low setting for 6-8 hours or High for 3-4 hours. Serve over rice with some green beans on the side for a complete meal.

Notes

You can get chicken thighs or quarters at almost every market, about 60-65 Baht/Kilo, the thighs on quarters are larger, so get those and cut your self and debone and remove skin, takes a mater of seconds. Chicken cost would be about 120-150 Baht (with quarters, you have legs left over to put on a grill and BBQ for another meal). Make the BBQ sauce your self for greater savings. At 150 Baht, this is about $1.10 per serving for 4 people, and for 6 people it is about 75 cents per serving. All other ingredients are minimal.

Use your favorite brand of pasta sauce, make from tomato paste, use or tinned chopped tomatoes. Add chicken, green peppers, onion, garlic and mushrooms and you're done (at least for 7-9 hours).   • Place all ingredients in the slow cooker. Cover, and cook on Low for 7 to 9 hours. Check at 7 hours for tenderness. How easy is that?
  • Serve with roast potatoes, mash, rice, or pasta.

Notes

A kilo of Chicken Breast is about 88 Baht, 6 breasts would run about 120 to 140 Baht, for 140 Baht, for 6 servings, that is about 70 cents per meal.

  • 4-6 chicken breasts, skinless, boneless, cut in half
  • 1 packet dry Italian salad dressing mix, OR make from a shortcut
  • 1/2 cup water
  • 250 grams Cream cheese, softened
  • 1-2 cans condensed cream of chicken soup, OR make from a shortcut
  • handful fresh mushrooms, think Tesco variety pack, chopped
  • cooked rice or pasta, to serve

Instructions
 

  • Place the chicken breast halves in the slow cooker. Combine the Italian dressing mix and water until smooth, pour over top of chicken. Cover and cook on Low setting for 3 hours. NOTE: since there is very little liquid during this step, it is important to not remove the lid for the 3 hours of cooking, the lid holds in the steam and heat.
  • Remove chicken to a plate, mix soup and cream cheese in the slow cooker along with liquid in the pot, then mix in mushrooms, add chicken back to the pot and spoon mixture over chicken pieces to make sure they are covered. Cover and cook 2-3 more hours on Low setting or until chicken is cooked through. NOTE about the soup: If using only 4 chicken breast OR 4 thighs, use only 1 can of soup. If using 5-6 breasts or 5-6 thighs, use 2 cans of soup, all other ingredients remain the same.
  • Serve over rice or pasta.

Notes

Chicken breasts run about 88 Baht/kilo, and if you make the Italian seasoning mix and soup from shortcuts listed on this site, this is easily under $1.00 per person. If you use thighs, which would be ideal, the cost is even lower with thighs at about 65 Baht/kilo.

Ingredients
  

  • 1 cup dried Pinto beans, rinsed
  • 1 1/2 cups salsa, OR make from a shortcut on this site
  • 2 tablespoons canned chipolte chiles, OR what ever chilis you have on hand, seeds removed
  • 2 tablespoons all purpose flour
  • 8 chicken thighs, bone in and skin on, it's flavor
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • salt and pepper, to taste

Instructions
 

  • In a slow cooker, add beans, salsa, chiles, flour, and 1 cup water, and stir to mix. Season chicken with salt and pepper; arrange on top of bean mixture. Scatter onion and bell pepper on top of chicken.
  • Cover and cook on low heat for 8 hours. Do NOT open lid or stir.
  • Remove chicken from stew; remove skin and bones (save for your dog), shred meat into large pieces and return to stew. Serve topped with sour cream and cilantro if you desire.

Notes

Chicken thighs will run about 65 Baht/kilo, 8 thighs is probably about a kilo. Beans will run about 55 Baht/500 grams. 120 Baht, the rest is minimal, comes to about 89 cents per person per meal if serving 4 people.
