Seasoned Chicken, Yard Beans, and Potatoes
Easy and inexpensive meal cooked in a slow cooker. I made this yesterday on 27 Jul 2016, my comments below.
Ingredients
- 1 kilo chicken breasts, boneless and skinless
- 2 1/2 cups yard beans
- 3 cups potatoes, diced large
- 1/3 cup lemon juice, fresh only
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 2 cloves garlic, smashed and minced
Instructions
- Place the chicken in your slow cooker, in the center if possible. Next add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side. Or if the chicken covers the bottom of the pot, place the beans on one half the chicken, and the potatoes on the other half the chicken.
- In a bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic. Pour this over the chicken, green beans, and potatoes. Cover and cook on High setting for 4 hours or Low setting for 7-8 hours, do not open the lid during the cooking time. Serve.
- This was cooked on High for 4 hours.

Notes
Chicken breast will run about 62 Baht/kilo. Potatoes and beans are very inexpensive. For 4 servings, this is about 45 cents per serving. Excellent value for a complete meal.

Crock Pot Style Gyros II
Ok, after the Gyros I recipe, I figured out how to say this, is it "Year O". This does sound good as well and is just a variant. This is not traditional by any means as lamb is not used, but you are free to use that if you wish. This can be pork, beef, pork and beef, chicken, chicken and beef, chicken and pork. The original recipe stated lamb and turkey, lamb and turkey is costly but feel free to use that if you wish. Beef will be costly, chicken the least costly. This makes a smaller amount than the Gyros I recipe.
Ingredients
Meat
- 250 grams ground beef, OR minced pork
- 250 grams ground chicken, OR just use 500 grams of ground chicken
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1/2 cup onion, sliced
- 3 cloves garlic, smashed and minced
- juice from 1 lemon
Sauce
- 1 cucumber, small, peeled, seeded, and chopped
- 1 cup plain yogurt
- 1 tablespoon olive oil
- 3 cloves garlic, smashed and minced
- 2 tablespoons fresh mint, chopped
- juice from 1 lemon
To serve
- Pita bread, OR corn or flour tortillas
- lettuce, shredded
- tomatoes, optional, chopped
- Feta cheese, optional, crumbled
- olives, optional
Instructions
- Slice the onion and the mince the garlic, place in the bottom of your slow cooker. In a bowl mix the 2 types of meat (or just chicken) with the oregano and paprika.
- Form the meat into a meatloaf and place on top of the onions in the slow cooker. Cook, covered, on Low setting for 3 to 4 hours or High setting for 2 hours. Use of a meat thermometer would be good to check the internal temp.
- While the slow cooker is started, prepare your sauce. Just mix the sauce ingredients together in a small bowl, cover and refrigerate until the meat is done.
- When the meat is done, carefully lift this out of the pot and place on a cutting board and let it rest for about 5 minutes. Slice thinly and serve in tortillas (or pita bread) with the sauce and the desired optional fixings. Enjoy.
Notes
Ground beef will run about 50 Baht (that is a guess since I do not have that here), minced pork would be about 30 Baht/250 grams, and chicken about 20 Baht/250 grams (another guess). The costly item is the flour tortillas, store bought is about 230 Baht for a pack of 10 (I need to learn how to make these!) Using the beef price and chicken and the tortillas, and figuring 4 servings and roughly half the tortillas, this is about $1.40 per serving, it goes down with pork, and chicken, and if using chicken only (which sounds really good) this would be under $1 per serving.

To serve
- flour or corn tortillas
- lettuce, shredded
Instructions
- Place onion and garlic into your slow cooker. Mix together meat and Greek seasoning. Form into two small loaves and place on top of onions and garlic. Cook on Low setting for 4-5 hours or until done, use of a meat thermometer would be a bonus here.
- While the slow cooker is started, prepare your sauce. Just mix the sauce ingredients together in a small bowl, cover and refrigerate until the meat is done.
- When the meat is done, carefully lift this out of the pot and place on a cutting board and let it rest for about 5 minutes.
- Slice the meat thin and serve on tortillas with shredded lettuce and the sauce. Enjoy.
Notes
Ground beef will run about 100 Baht (that is a guess since I do not have that here), minced pork would be about 60 Baht/500 grams, and chicken about 40 Baht/500 grams (another guess). Chicken White Chili Mac & Cheese
Ok, I found the original recipe on the internet, and it was horrendous at best! And a totally misleading name. This is my rewrite, when I make this, I will update the recipe and make my report when I make this, it does sound good. This takes some time as noted in the first step.
Ingredients
For the Chicken
- 1 whole chicken, remove the head and feet and remove the giblets
- 1 onion, leave skin on and just cut in half
- 10 cloves garlic, just smash and leave skins on
For the Pasta
- 500 grams spaghetti
- 250 grams Cheddar cheese, shredded
- 1 cup chicken stock, you just made that, strain out the onion and garlic
- 3 cloves garlic, smashed and minced
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cans whole peeled tomatoes, diced and juice reserved (can use fresh but you need tomato juice)
- 1-2 green chilies, diced
- 1 cup fresh mushrooms, King Osyter or Shiitaki would be perfect
- 1 tablespoon chili powder
- salt and pepper, to taste
Instructions
For the Chicken
- Place whole chicken in large pot, add the onion, garlic and cover with water. Bring to a boil, reduce heat, and simmer 40 to 60 minutes, until tender. Remove from heat and let the chicken and stock cool to room temperature. Remove chicken from pot, reserving stock, discard the onion and garlic. Skin and bone chicken, set the skin and bones aside for your dog. Lightly shred the meat with forks or roughly chop. Set meat aside.
For the Pasta
- In a slow cooker, add the onion, chilies, garlic, bell pepper, mushrooms, chili powder, salt and pepper to taste, to your slow cooker. Then add chicken, diced tomatoes AND juice, cheese, and chicken stock. Cover and cook on Low setting for 3 hours.
- Before the 3 hours is up, cook your pasta in the chicken stock if you like or just water, then stir in cooked pasta before serving.
Notes
One whole chicken will run between 200 and 250 Baht. The cheese is one block for 180 Baht. This comes out to about $1.60 per serving for 8 servings. Not bad but high for what I would call a regular meal. The good thing is you have chicken stock for your next recipe.

Smoky Barbecued Pulled Chicken
This is a useful recipe that can be served as is or used as a base in other recipes. This is quick and simple. Link to the shortcut is listed in the Recipe Notes section.
Ingredients
- 4 chicken breasts, boneless and skinless, OR legs and thighs skin off bone in
- 3 tablespoons garlic powder
- 3 tablespoons onion powder
- 2 teaspoons smoked paprika
- 1 teaspoon mustard powder
- 1 teaspoon cayenne pepper
- 2 teaspoons salt
- 1 teaspoon course ground black pepper
- 1/3 cup BBQ sauce, OR make from a shortcut on this site
Instructions
- Combine all the ingredients except the chicken and the barbecue sauce to make a dry rub. Coat the chicken with the dry rub. Place the chicken in the bowl of a slow cooker, pour the barbecue sauce over the chicken and cover with a piece of baking paper. Put the lid on and cook on Low setting for 3 to 4 hours, or until chicken is tender.
- Cool slightly and remove the chicken from the slow cooker then shred the chicken with a pair of forks. If using thighs and legs, remove bones and any gristle on the ends of the legs, then shred. Ad the chicken back to the slow cooker and mix with the juices in the pot.
- Serve as is with buns, lettuce, and cheese available or use in other recipes.
Notes
Chicken breasts run anywhere from 60 to 75 Baht/kilo. 4 breasts should be less than that. This is about $1 per serving for 4 servings. Very reasonable and inexpensive meal.
The baking paper is used to keep the moisture in and keeps the chicken moist.

One-pot Creamy Smoked Chicken Penne
Sounds really good! Several steps involved but I think this will be great. On my to cook list! Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
For the Chicken
- 4 chicken breasts, boneless and skinless
- 3 tablespoons garlic powder
- 3 tablespoons onion powder
- 2 teaspoons smoked paprika
- 1 teaspoon dry mustard
- 1 teaspoon cayenne pepper
- 2 teaspoon salt
- 1 teaspoon ground black pepper
- 1/3 cup BBQ sauce, OR make from a shortcut
For the Pasta
- 2 tablespoons olive oil
- 1/2 onion, diced
- 2 cloves garlic, smashed and minced
- 1 red bell pepper, diced
- 1 zucchini, thinly sliced ad quartered
- 2 cups chicken stock, fresh or from powder
- 1 can condensed cream of chicken soup, OR make from a shortcut
- 1/2 cup cream
- 500 grams dry Penne pasta
- salt and pepper, to taste
- fresh parsley, chopped, for garnish
- chili flakes, for garnish
Instructions
For the Chicken
- Combine all the ingredients except the chicken and the barbecue sauce to make a dry rub. Coat the chicken with the dry rub. - Place a cover on the skillet and simmer the pasta for 10-15 minutes, stirring occasionally. If the liquid dries out too much, add a little water. Once the pasta is cooked, remove from heat and serve, garnish parsley and chili flakes if desired.
Notes

Creamy Chicken and Potatoes
Sounds really good and easy, and cooked in a slow cooker, even better.
Ingredients
- 500 grams potatoes, red potatoes if you find them, quartered
- 2 cups carrots, cut into 2 inch pieces
- 1 onion, chopped in large pieces
- 1 clove garlic, smashed and chopped
- 1 chicken, cut up, takes just a few minutes
- 1 cup chicken stock, fresh or from powder
- 3 tablespoons corn starch
- 1/2 teaspoon dried thyme
- salt and pepper, to taste
- 2 cups peas, fresh or frozen
- 1/2 cup cream, heavy or whipping
Instructions
- In your slow cooker, combine carrots, potatoes, onion, and garlic. Place chicken pieces on top of vegetables. In 2-cup measuring cup, mix chicken broth, cornstarch, thyme, salt and pepper to taste; pour mixture over chicken and vegetables. Cover slow cooker and cook on Low setting 8 hours or on High setting 4 hours.
- With tongs or slotted spoon (slotted spoon recommended), transfer chicken pieces to warm deep platter. With slotted spoon, transfer vegetables to platter with chicken pieces. Cover platter to keep warm. Stir peas and cream into cooking liquid; heat through. Spoon sauce over chicken and vegetables on platter and serve.
Notes
A whole chicken will cost 200 Baht, you need to remove the head, neck, feet, giblet pack before cutting into pieces. This is 98 cents per serving for 6 servings.

Slow Cooker Chicken & Mushrooms
Need to feed a lot of people, this may work! This recipe was originally called Herbed Chicken and Mushrooms, why? I have no idea! I changed it to Chicken & Mushroom for obvious reasons. This is a 2 step process here. This sounds really good!
Ingredients
- 1 1/2 kilos chicken thighs, and legs if you want, quarters would be perfect!
- 5 cups fresh mushrooms, sliced, think King Oyster, Shiitake, and Straw
- 1 onion, cut into wedges
- 1/2 cup carrot, shredded
- 1 red bell pepper, diced
- 1 cup chicken broth
- 1 teaspoon dried thyme, (should be increased to 1 tablespoon)
- 1/2 teaspoon dried basil, (should be increased to 1 tablespoon)
- 4 cloves garlic, smashed and minced
- salt and pepper, to taste
- olive oil
Instructions
- Remove the skins from the thighs and or legs.
- in a large skillet brown, not cook, the chicken pieces in hot oil until well browned, set chicken aside. In your slow cooker add the mushrooms, onion, carrot, garlic, and bell pepper, stir to combine. Pour broth over mushroom mixture in cooker. Sprinkle with thyme, basil, and season with sale and pepper to your liking. Add chicken pieces to the slow cooker.
- Cover and cook on Low setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours. Serve chicken and vegetables over hot cooked pasta; drizzle with cooking juices.
Notes
Chicken will run 56 Baht/kilo when buying quarters. Cut the quarters yourself, pull off the skin, trim excess fat. Easily under $1 per serving.

Easy Chicken Tetrazzini I
Sounds good, lot of possibilities. This recipe when I found it used canned mushrooms and jarred sauce, this is a rewrite to fresh mushrooms and home made sauce.
Ingredients
- 1 kilo chicken breasts, boneless and skinless, cut into 1 inch pieces
- 1 cup mushrooms, sliced, think King Oyster, Shiitake, or Straw
- 1 1/2 packages Cream cheese, 250 grams per package
- 1/2 cup butter, this is 1/2 block of butter
- 1 cup milk
- 1/4 cup chicken stock
- 1/4 teaspoon ground nutmeg
- 300 grams pasta, of your choice, spaghetti, spirals, fettuccine, etc
- 2/3 cup Parmesan cheese, grated
- 3/4 cup spring onions, thinly sliced
- salt and pepper, to taste
Instructions
- First thing, you need to make the Alfredo sauce, this is easy. Melt the Cream cheese and butter in a saucepan, stir in the milk, season with salt and pepper. See, that was easy.
- Add the sauce you just made to the slow cooker, then add the mushrooms, chicken stock, nutmeg, and season with salt and pepper as desired, mix.
- Add the chicken to the slow cooker and stir to coat. Cook on Low setting for 5-6 hours.
- Just before the chicken is done, cook your pasta and drain, splash a bit of olive oil on the pasta to prevent sticking and set aside.
- When the chicken is done, stir the Parmesan cheese into the slow cooker, serve over hot pasta, sprinkle each serving with sliced spring onion.
Notes
Chicken will cost about 100 Baht/kilo. Cream cheese will cost about 120 Baht. Easily under $1 per serving.

Slow Cooker Chicken Thighs, Tex-Mex Style
I cannot vouch for the name but these do sound good. This recipe screams of shortcuts and that means saving on cost. When I found this recipe 5 of the 7 ingredients were either canned or packaged, this is a rewrite. This would take some time but also would provide ingredients for other recipes. Lots of information in the steps. Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
- 500-750 grams chicken thighs, see Step 1
- 1 3/4 cups sweet corn, cooked, see Step 2
- 1 3/4 cups black beans, cooked, see Step 3
- 1/4 cup green chilis, chopped
- 1 cup salsa, OR make from a shortcut on this site
- 1 tablespoon taco seasoning mix, OR make from a shortcut on this site
- salt and pepper, to taste
Instructions
- You can buy individual thighs, but these are normally small. Buy quarters and cut the thighs from the legs and you have much larger thighs. Pull the skin off and use the edge of the knife to remove the excess fat.
- Sweet corn, fresh is preferred and this would be about 3 ears worth of corn, next choice would be frozen. If you want to use canned corn, look for a can from 12 to 15 ounces and drain the corn as well.
- Black beans, cook these from dry beans for cost savings. If you want to use canned beans, look for a 15 oz can, and drain this as well.
- Add the corn, beans, chilis, salsa, taco seasoning in the slow cooker and mix well.
- Salt and pepper the thighs on both sides and add to the slow cooker, stir a bit to coat the chicken.
- Cover and cook on Low setting for 5 to 7 hours or until the chicken is cooked through. If in doubt, use a meat thermometer to check for an internal temp of 74 C. Serve over hot rice and a salad on the side.
Notes
Chicken thighs will cost about 66 Baht/kilo, quarters cost 56 Baht/kilo. Buy a kilo of quarters and separate yourself. You will have more than 500 grams of thighs, and you get legs for use in another recipe. Use fresh sweet corn, dry beans, and use the shortcut for the taco seasoning. This meal would be well under $1 per serving.
