Seasoned Chicken, Yard Beans, and Potatoes

Easy and inexpensive meal cooked in a slow cooker. I made this yesterday on 27 Jul 2016, my comments below.

Ingredients
  

  • 1 kilo chicken breasts, boneless and skinless
  • 2 1/2 cups yard beans
  • 3 cups potatoes, diced large
  • 1/3 cup lemon juice, fresh only
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 cloves garlic, smashed and minced

Instructions
 

  • Place the chicken in your slow cooker, in the center if possible. Next add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side. Or if the chicken covers the bottom of the pot, place the beans on one half the chicken, and the potatoes on the other half the chicken.
  • In a bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic. Pour this over the chicken, green beans, and potatoes. Cover and cook on High setting for 4 hours or Low setting for 7-8 hours, do not open the lid during the cooking time. Serve.
  • This was cooked on High for 4 hours.
  • Plated.

Notes

Chicken breast will run about 62 Baht/kilo. Potatoes and beans are very inexpensive. For 4 servings, this is about 45 cents per serving. Excellent value for a complete meal.
