Ingredients
  

  • 4-5 chicken breasts, boneless, skinless
  • 2 cans condensed cream of chicken soup, OR make from a shortcut
  • 3 1/2 cups chicken broth, fresh or from powder
  • 1/2 cup butter, 1/2 standard block of butter
  • 500 grams dry egg noodles, I will use Fettuccine
  • salt and pepper

Instructions
 

  • Place everything except the noodles in a slow cooker, cook on Low setting for 5-6 hours.
  • Remove chicken, it may fall apart, shred with forks and return to the slow cooker. Add the egg noodles and mix in, cook for 2 more hours. Add salt and pepper to taste. Serve.

Notes

The chicken breasts would be 80-100 Baht for 4-5. Going with 100, and 4 servings, this is about 74 cents per serving.

Slow Cooker Spicy Cashew Chicken

This is a twist to a common Thai dish. And it does sound good. Many Thai using chicken, the chicken will simmer all day, one to make a nice stock, and two, makes for flavorful and tender chicken, so the use of a slow cooker makes sense.

Ingredients
  

  • 3-4 chicken breasts, boneless, skinless, cut to 1 inch pieces
  • 1 red bell pepper, chopped
  • 1/2 onion, chopped
  • 2 spring onions, chopped, white and green
  • 1/3 cup cashews, halves if you can find them
  • cooked rice, for serving
  • olive oil, as needed

For the Sauce

  • 4 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons rice vinegar
  • 2 teaspoons sugar
  • 2-3 Bird's Eye Chilis, chopped
  • 4 tablespoons cold water
  • 2 teaspoons corn starch

Instructions
 

  • Heat a splash of olive oil in a large non stick pan, add the chicken and cook 1-2 minutes, just long enough to brown the outside. Transfer the chicken to your slow cooker, then add the bell pepper, onion, and spring onion to the to slow cooker.
  • In a small bowl, whisk together the soy sauce, fish sauce, vinegar, sugar, and chilies.
  • In another small bowl, mix together the cold water and corn starch until the corn starch is dissolved. Stir this into the soy sauce mixture. Then pour the soy sauce mixture into the slow cooker and stir to coat everything.
  • Cover and cook on Low setting for 3 to 4 hours. About 30 minutes before serving, stir in the cashews. Serve over steamed rice.

Notes

Chicken breasts run about 60 Baht/kilo, this should easily be 4 breasts. For 3 servings, this is about 59 cents per serving.

Ingredients
  

  • 4 chicken breasts
  • 2 cans condensed cream of chicken soup, OR make from a shortcut
  • 1 1/2 cups chicken stock, fresh or made from powder
  • 1/2 onion, diced
  • 3/4 cup peas, canned or frozen is fine
  • carrots, sliced, amount is up to you
  • celery, sliced, amount is up to you
  • bacon, cooked crisp and chopped, amount is up to you
  • dried parsley, to taste
  • salt and pepper, to taste
  • garlic powder, to taste

Dumplings

  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 tablespoons unsalted butter, melted
  • 3/4 cup buttermilk, OR make this with a shortcut on the site
  • 1 teaspoon dried parsley

Instructions
 

  • Place the chicken in your slow cooker, pour the broth and soup over them, then add the onion, carrots and celery, then sprinkle on garlic powder, salt and pepper to your liking. Cook on High setting for 3 hours.
  • Remove the chicken and shred with forks then add back to the slow cooker along with some cooked and crumbled bacon and the peas. Mix together.

Dumplings

  • Whisk together the flour, baking powder, baking soda, salt and pepper in a medium bowl. Whisk in the butter, buttermilk, and parsley. Drop the mixture into the pot in 8 large spoonfuls and continue to cook covered for 12 to 15 minutes or until the dumplings are firm.

Notes

Chicken breast run about 88 Baht/kilo, the chicken and the soup will run about 200 Baht max, for 4 people, this is about $1.45 per person, if you make the soup and buttermilk from scratch as listed on shortcuts here on the site, the price will be $1 or less per person.

  • Lightly grease your slow cooker with butter, then add the chicken. Mix the BBQ sauce with the pineapple and pour that over the chicken, cook on Low setting from 6 to 8 hours or High setting for 3 to 4 hours.
  • When cooked through, remove with slotted spoons and serve with rice, spoon some of the sauce over the chicken.

  • 4 chicken breasts, boneless and skinless
  • 1/2 cup soy sauce, low sodium if you can find
  • 1/3 cup honey
  • 1/3 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons fresh ginger, minced
  • 1/4 teaspoon red pepper flakes
  • 5 cloves garlic, smashed and minced
  • 1 small onion, finely diced
  • 2 tablespoons corn starch

Instructions
 

  • Put the chicken in your slow cooker. In a bowl, mix together the soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, ginger, garlic, onion, and chili flakes. Pour this over the chicken, cover and cook on Low setting for 4-5 hours.
  • Remove the chicken from the slow cooker, use a slotted spoon as it will be fall apart tender. Shred and set aside.
  • Mix together 3 tablespoons of water and the corn starch in a small bowl. Pour the liquid from the slow cooker into a saucepan and bring to a boil, while stirring, slowly pour in the corn starch mixture and stir until thickened. Pour over the chicken and mix with the sauce, serve with rice or pasta.

Notes

The chicken will cost about 61 Baht/kilo. For 6 servings, this is about 30 cents per serving, excellent value.

  • 1 1/2 kilo chicken breasts, boneless and skinless, cut into 1 inch cubes
  • 3/4 cup soy sauce, low sodium if you can find
  • 3/4 cup brown sugar, packed
  • 1/3 cup rice vinegar
  • 2 cloves garlic, smashed and minced
  • 3/4 teaspoon ground ginger
  • 4 teaspoons corn starch
  • 1/4 cup warm water
  • 1/4 cup spring onions, chopped

Instructions
 

  • Place the chicken in your slow cooker, whisk together the soy sauce, sugar, vinegar, garlic, and ginger, and pour this over the chicken. Cover and cook on Low setting for 4-5 hours.
  • When the chicken is tender and cooked through, remove from the slow cooker with a large slotted spoon, and turn the slow cooker to a keep or warm setting, mix together the corn starch and the warm water until smooth, then slowly add to the slow cooker, stirring to thicken the sauce. Return the chicken to the slow cooker and stir to coat the chicken and warm for another 15 minutes.
  • Serve with rice, garnish with spring onions.

Notes

Chicken breasts, boneless but skin on (takes just seconds to pull the skin off and trim some fat) is about 61 Baht/kilo. 91 Baht for 1 1/2 kilo. For 6 servings, this is about 45 cents per serving.

  • 750 grams chicken thighs, boneless and skinless, or use breasts
  • 8 cloves garlic, smashed and minced
  • 3 cups carrots, sliced
  • 1/2 cup onion, diced
  • 1/2 cup butter, this 1/2 of a standard block
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon red chili flakes, optional
  • 1 cup frozen peas
  • 500 grams dry pasta, any bite size pasta will work here
  • 1/4 cup fresh parsley, chopped
  • Parmesan cheese, as needed, to serve

Instructions
 

  • Place everything in your slow cooker except the pasta, peas, parsley, and cheese. Cook on Low setting for 6-8 hours or until the chicken is tender and cooked through.
  • Cook the pasta in a pot of boiling water until just done, drain, then add to the slow cooker when the chicken is tender, also adding the peas and parsley and stir to combine. Cook for another 10-15 minutes until the peas are heated through. Serve with Parmesan on the side to sprinkle on the top.

Notes

Chicken thighs will run about 75 Baht/kilo, but you will have to remove the skin and bone yourself (takes just seconds), using that figure, for 6 servings this is about 37 cents per serving.

  • 1/2 cup water
  • 1/4 cup red bell pepper, finely chopped
  • 125 grams Cream cheese, this is 1/2 of a standard block, cubed
  • 3 tablespoons Parmesan cheese, grated

Instructions
 

  • Add the soup and dressing mix to your slow cooker and mix, slowly whisk in the water and mix until little to no lumps are present then stir in the bell pepper. Add the chicken, cover and cook on Low setting for 6-8 hours or on High setting for 3-5 hours. Check the tenderness of the chicken at the first time shown.
  • When the chicken is tender, add the Cream cheese and the Parmesan cheese and cook for another 30 minutes, covered. Stir the sauce to ensure the Cream cheese is fully blended in. Serve over rice or pasta.

Notes

Chicken thighs (you would have to debone them and remove the skin) runs about 73 Baht/kilo, breasts would run about 61 Baht/kilo. The Cream cheese would be about 60 Baht for a 1/2 block, and the Parmesan would be about 50 Baht. For 4 servings this is about $1.35 per serving, less for 6 servings. Make the shortcuts for greater savings.

  • 200 grams Mozzarella Cheese, sliced

For the Sauce

  • 1 can whole peeled tomatoes, chopped, with juice
  • 1 can tomato paste, this is the really small can
  • 2 cloves garlic, smashed and minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon brown sugar

Instructions
 

  • Spray your slow cooker with cooking spray (shortcut listed below) or grease lightly with butter. Mix all of the Sauce ingredients in the slow cooker, then add the chicken and toss that a little to get the chicken coated. Cover and cook on Low setting for 4-6 hours or High setting for 3-5 hours.
  • When the chicken is cooked through and tender, place the cheese slices on the top and cook for another 15 minutes, covered. Serve on top of pasta.

Notes

Chicken breast fillets run about 77 Baht/kilo. The cheese will run 142 Baht for a 200 gram block. For 6 servings this is about $1.08 per serving.
