Sounds good to me! On my to cook list. This is a Leftover recipe as well from making pizzas, using toppings as you would on a pizza, but keep in mind, you will have to flip this so use only 2-3 toppings.

Ingredients
  

  • 2 slices Mozzarella Cheese, or slices from a block to cover the bread
  • tomato sauce, leftover
  • 4 slices Pepperoni, leftover
  • mushrooms, leftover, sliced
  • black olives, leftover, sliced
  • 2 slices bread, of your choice

Instructions
 

  • Butter the bread like you would to make a normal grilled cheese.
  • Put a piece of cheese on the butter side down piece of bread. Spread some pasta sauce on the piece of cheese. Add the pepperoni, mushrooms, and olives, or use what ever pizza toppings you like but keep it to 2-3 items. Add another piece of cheese on top of the toppings. Butter the other piece of bread and put it butter side up on top.
  • Cook in a hot skillet until golden brown on each side. Enjoy.

Salami & Pickle Grilled Cheese

Salami & Pickle Grilled Cheese

Ingredients
  

  • 340 grams Swiss cheese, sliced
  • 8 slices bread, of your choice
  • 6 dill pickles, cut into 1/4 inch thick slices
  • 170 grams salami, thinly sliced, such as Genoa type salami
  • unsalted butter, room temperature

Instructions
 

  • Divide half of cheese among 4 slices of bread. Top with pickles, salami, and remaining cheese. Close sandwiches and spread butter evenly over top of bread slices.
  • Heat a large skillet, preferably cast iron, over medium-low heat. Place sandwiches, buttered side down, in skillet. Spread remaining butter over top of bread. Cook, pressing down with a spatula to encourage melting and turning once, until cheese is melted and bread is golden brown and crisp, 5–7 minutes. Serve.

Notes

I will have to locate soft salami before I can price this, for now, just based on the cheese, this will probably be a fair cost meal. I will update pricing once I gather up all the items needed.
Variants: Change the types of bread, change the types of cheese used.

Tuna Burgers

Tuna Burgers

This recipe uses fresh tuna that you will grind yourself, and sounds like a good tasting burger as well. Several good shortcuts for cost savings as well. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 600 grams fresh tuna
  • 1/4 cup spring onion, minced
  • 1 tablespoon ginger, peeled, grated, heaping
  • 2 cloves garlic, smahed and grated
  • 2 tablespoons mayo
  • 1 tablespoon grapeseed oil, or olive oil
  • 1 teaspoon sesame oil, toasted
  • 4 sandwich rolls, OR make from a shortcut
  • lettuce leaves
  • fresh tomatoes, sliced
  • tartar sauce, OR make from a shortcut

Instructions
 

  • Cut fish into 1 inch cubes. Place in a single layer on a rimmed baking sheet, cover with plastic wrap, and transfer to freezer. Chill until very cold (it should feel firm but still give when pressed with your finger), about 15 minutes.
  • Meanwhile, sterilize all grinding parts (the stand mixer's grinding attachment, including the dies, or the bowl and blade of the food processor), rinse, dry, and place in the freezer until very cold, at least 15 minutes. Assemble grinder attachment with chilled coarse die. Set a bowl in a large bowl of ice, arrange beneath the attachment to catch ground tuna and keep it cold.
  • Combine tuna, scallions, ginger, and garlic in a large bowl. Grind mixture in batches, with mixer on medium speed, and plunge gently to press through grinder. Add mayonnaise, grapeseed or olive oil, and toasted sesame oil to ground tuna mixture. Mix gently just to combine.
  • Form into four 1/2 in thick patties. Season with salt and freshly ground black pepper as desired. Grill or pan fry burgers over medium heat until just cooked through, 3-4 minutes per side.
  • Split and toast the rolls. Assemble with lettuce leaves on the bottom of the roll, top that with a tuna burger, then some tartar sauce, then sliced tomato. Top with the other half of the roll, enjoy.

I cannot price this until I get some fresh tuna, or catch my own.

Sausage Burgers

This solves your problem if you cannot decide between grilling burgers or sausage, and sounds very good. Couple of money saving shortcuts to prepare as well for cost savings. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 750 grams bulk pork sausage, OR make from a shortcut
  • 4 sandwich rolls, OR make from a shortcut
  • 2 tablespoons olive oil
  • 3 bell peppers, assorted colors, cut into 1/2 inch strips
  • 1 medium onion, sliced 1/2 inch thick
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey
  • salt and pepper, to taste

Instructions
 

  • Prepare your grill for medium heat.
  • Form sausage into four 1/2 inch thick patties. Grill patties, moving and flipping as necessary, until completely cooked through, about 5 minutes per side.
  • Heat oil in a large skillet over medium high heat. Add peppers and onions and cook, stirring often, until wilted and soft, about 8 to 10 minutes. Add the vinegar and honey and cook, stirring until slightly thickened, about 2 minutes, season with salt and pepper to taste.
  • Just before the peppers and onion is done, split and grill the rolls.
  • Serve patties on the grilled rolls, top with peppers and onion.

Notes

I can only estimate the pork sausage if made with the shortcut using ground pork, it is easier than you think, this would be about 75 Baht/750 grams. For 4 servings, this is about 55 cents per serving.

Vietnamese Sandwich (Banh Mi Cha Lua)

Vietnamese Sandwich (Banh Mi Cha Lua)

In Vietnamese, banh mi means bread, so the translation would be sausage sandwich. What makes this unique is what is added to the sandwich such as the pickled carrot and radish. I made these on 21 Nov 2017, excellent flavor, I really like the addition of the pickled carrot and radish. Cha Lua is a fully cooked sausage that is refrigerated when you buy them, so they can be eaten as is right from the fridge. Link to the shortcut is listed in the Recipe Notes section.

  • 1 baguette, or roll or just sandwich bread
  • Vietnamese sausage, sliced lengthwise about ¼ inch thick
  • cucumber, sliced lengthwise

  • fresh coriander leaves, chopped
  • mayo

Additional Fillings if Desired

  • cheese, sliced
  • chilis, sliced lengthwise
  • soy sauce
  • salt and pepper

Instructions
 

  • I pan fried the sausage, this is optional, in a splash of olive oil and seasoned with lemon pepper.
  • Cooked just to brown them up a bit. These are fully cooked when you buy them.
  • I used the shortcut to make the pickled carrot and radish.
  • Split the baguette or roll, or just use sandwich bread, spread mayo on both pieces, layer on some Vietnamese sausage, then the cucumber, pickled carrot and radish, coriander leaves, spring onions, top with the other half of the bread, enjoy.

Variants: 1. Cook the sliced sausage in soy sauce and black pepper, then add to the roll. 2. Cook the sliced sausage with olive oil and lemon pepper. 3. Use Cha Hue, the peppered version of Cha Lua.

Secret Ingredient Burgers

Secret Ingredient Burgers

Not sure how I found this recipe, but it makes sense. Fish sauce is the secret ingredient. I will certainly try this one. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 750 grams ground beef
  • 2 tablespoons fish sauce
  • 2 tablespoons Worcestershire sauce
  • 4 sandwich rolls, OR make from a shortcut
  • 2 tablespoons butter, for cooking, or oil
  • tomato, slices, as needed
  • lettuce leaves, as needed
  • dill pickles, sliced, as needed
  • ketchup, as needed
  • mustard, as needed
  • onion, sliced, as needed
  • Cheddar cheese, sliced, as needed

Instructions
 

  • In a large bowl, add the beef, fish sauce, and Worcestershire sauce. Using a fork or your hands, mix gently until just combined, do not over mix or you get a tougher burger.
  • Divide the mixture into 4 sections and using your hands, form into patties and place them on a baking sheet lined with foil. Do not pack the beef too tightly or compact it as this will result in tough burgers. Using your thumb, form a slight indent into the center of each patty. Cover the tray with plastic and refrigerate for at least half an hour, or up to a day.
  • When ready to cook, remove the burgers from the fridge. Heat a heavy bottomed skillet over high heat until quite hot, cast iron would be perfect. Add the butter or oil. Season the burgers with a sprinkle of salt (this helps form a nice crust) and place gently in the pan. They should sizzle violently if the pan is hot enough.
  • Cook, flipping every couple of minutes until desired doneness. 10-12 minutes for well done, less if you prefer medium/rare. Do not overcook or the burgers will dry out. Also, do not press down on the burgers while cooking or poke them or pierce them in any way, just let them cook in peace until nicely browned all over.
  • If using cheese, add on the top a minute before you remove from the pan.
  • Remove the patties from the pan to a plate to rest just for a couple of minutes, meanwhile return the pan to the heat and place your sliced buns in (cut side down) to toast for a bit and soak up all the lovely juices left in the pan from the burgers.
  • Assemble the burgers with toppings of your choice. Enjoy.

Notes

Figure about 150 Baht for 750 grams of good beef. For 4 servings, this is about $1.10 per serving.

Mediterranean Egg Salad II

Mediterranean Egg Salad II

Easy to make a recipe your own. No za'atar, same basic ingredients, but served on rye bread with a layer of sliced cherry tomatoes, delicious! I made this on 19 May 2017.

  • 1/4 cup olive oil
  • fresh lime juice, from 1 small Thai lime
  • 5-6 hard boiled eggs, peeled, chopped
  • 1/2 cup green olives, sliced
  • 3 tablespoons fresh cilantro leaves, chopped
  • 1 small red onion, diced
  • cherry tomatoes, sliced, or roma, sliced, as needed
  • salt and black pepper, to taste
  • 8 slices rye bread

Instructions
 

  • Whisk together the olive oil and lime juice. Toss with the eggs, olives, cilantro, and onion, season with salt and pepper to taste. Cover and refrigerate for an hour or two.
  • Place a layer of sliced tomatoes on 4 slices of rye, divide the egg salad evenly on top of the tomatoes, top with the remaining slices, serve.

Curried Egg Salad Sandwich

Curried Egg Salad Sandwich

Curry powder and fresh chopped chives, or spring onions, this sounds very good.

  • 2 hard boiled eggs, peeled, chopped
  • 1 spoon mayo
  • dash curry powder
  • sprinkle chives, chopped, or spring onion
  • 1 lettuce leaf
  • 2 slices rye bread
  • salt and pepper, to taste

Instructions
 

  • In a small bowl, add the mayo and curry powder, mix then add the chopped eggs and chives, season with salt and pepper to taste. Add mayo as needed.
  • Place a lettuce leaf on a slice of rye, top with the egg salad, top with the other slice, cut in half, serve with a dill pickle and potato chips.

Sliced Egg Sandwich II

Another version of a sliced egg sandwich, and it sounds good. The beauty of this recipe is use local grown and raised items to lower the cost.

  • Spread may on each slice of bread, on on slice, add a layer of onion, then cucumber, then sliced egg, season with salt and pepper to your liking, top with the second slice of bread.
  • Cut in half and serve. As simple as that.

  • 1-2 slices tomato
  • 1 lettuce leaf
  • 1 slice Cheddar cheese, or as needed if cut from a block
  • mayo, as needed, mustard works well also
  • 2 slices bread, or a sandwich roll
  • salt and pepper, to taste

Instructions
 

  • Spread mayo on each slice of bread or roll. Top one slice with lettuce, then tomato, then cheese,
  • Then add the sliced egg, season with salt and pepper to taste.
  • Then top with the other slice of bread, cut in half. I used a homemade sandwich roll for this. Enjoy.
