Ingredients
  

  • 4-5 breakfast sausage links
  • 2 slices Cheddar cheese
  • 2 slices bread, of your choice
  • butter, as needed, softened

Instructions
 

  • Fry the sausage in a pan until cooked through.
  • Butter the bread slices on one side only. Using the same pan the sausage was cooked in, fat drained and wiped with a paper towel, or another pan that is non stick,
  • Place a slice of bread, butter side down in the hot pan, and a slice of cheese and 4-5 sausage links, then the other slice of cheese, cover with the remaining slice of bread, buttered side up.
  • Cook until golden brown on the bottom, then carefully flip and cook the other side until gold brown. Cut in half and serve.

Notes

Low cost.
Variant: 1. If using thick links, after they are cooked through, slice in half lengthwise and position on bread, first on cut side down, next cut side up, next one cut side down, etc, until the bread is covered. 2. Add a fried egg before topping with the last slice of bread.

I love a good grilled cheese sandwich, and this seems to fit the bill for cheesy, on my to make list for sure!

Ingredients
  

  • 1/4 cup butter, softened, this is 1/4 standard block
  • 1 tablespoon Parmesan cheese, grated
  • 8 slices bread, your choice
  • 4 slices Provolone cheese
  • 4 slices Mozzarella Cheese

Instructions
 

  • In a small bowl, mix together the butter and Parmesan cheese.
  • Spread the butter mixture on all slices of bread, place 4 slices butter side down on wax paper, the other 4 slices, set aside butter side up.
  • Top the 4 slices that are butter side down with a slice of Provolone and Mozzarella, top that with the other 4 slices of bread and place those butter side up.
  • Heat a griddle or non stick pan, then working in batches, add a sandwich or two and cook until golden brown on the bottom, then flip and cook the other side until golden brown. Cut in half and serve.

In keeping with my theme of making things from scratch, plenty of shortcuts here if you wish to use those for cost savings.

Ingredients
  

  • pork shoulder, OR make from a shortcut
  • BBQ sauce, OR make from a shortcut
  • light rye bread, OR make from a shortcut
  • onion, sliced
  • dill pickle slices, OR make from a shortcut
  • Provolone cheese, sliced

Instructions
 

  • For tender and juicy pork, use of a pressure cooker is highly recommended. You can cook the pork anyway you prefer. There is a link in Recipe Notes for how I prepare pork shoulder/butt in a pressure cooker. Amount of pork is up to you, when I make this I use 1 1/2 kilos (3 lbs).
  • After the pork is cooked, place on a cutting board and use two forks to shred it, then place the pork in your slow cooker and set to Low setting.
  • Add BBQ sauce as needed to coat all the shredded pork. Leave the pork on Low for about 30 minutes to heat everything through.
  • When the pulled pork is good and hot, lay out a slice of rye bread, then add a slice of onion, as thick as you like it, add some pickle slices.
  • Scoop on some hot BBQ pulled pork.
  • Top that with sliced Provolone, as many slices as you like.
  • Top with another slice of rye and enjoy. (Great photo except for the fly on the sandwich, oh well, it happens.)

Bologna Salad Sandwich Spread

Bologna Salad Sandwich Spread

An excellent sandwich spread. Two ways to prepare this; 1. using a grinder, 2. finely chopped, then you have many variants, which I did, so my review of the original recipe is not accurate, but the variants are tasty though. If you are familiar with a German Meat Salad, this is basically the chopped version.

  • 4 hard boiled eggs, peeled
  • 500 grams bologna, (1 lb)
  • mayo, as needed
  • sweet pickle relish, as needed

Instructions
 

Prep with a Meat Grinder

  • Course chop the bologna and run through your meat grinder using the medium plate. Place in a large mixing bowl. This would be perfect for large bologna that is not sliced.

Prep with a Knife

  • Here is what I am working with, two stacks of sliced bologna, 200 grams each stack, so I am using just under 1 pound, about 14 oz, no harm there.
  • Cut the stack into 1/4 inch strips.
  • Turn the stack 90 degrees and cut again into 1/4 inch strips to dice the bologna, place in a mixing bowl, repeat with the other stack.

Prepare the Salad

  • To the mixing bowl, add about 1/4 cup of sweet pickle relish and about 1/2 cup of mayo. Mix into the bologna mixture, adding more mayo as needed to fully coat the mixture but not dripping with mayo either. Taste and add more relish as needed to taste.
  • I used some variants, so to the mixing bowl I add 4 sliced spring onions, 1/4 cup of green olives with pimentos, measure whole first then slice those, and 1/2 cup Japanese Kewpie mayo. Mixed that together and another squirt or two of Kewpie mayo.
  • Then decided to go with another variant and added 150 grams (5 oz) of three blend shredded cheese, and mixed that in. When the salad spread is mixed and adjusted to taste, cover and place in the fridge for 2-3 hours to chill.
  • Serve in a sandwich, spread on crackers, or just enjoy as is for a nice side salad.

Variants: 1. Add 1 finely diced onion or 4-5 sliced spring onions. 2. Add some finely diced or ground ham or smoked ham. 3. Mix in some shredded cheese of your choice. 4. Use chopped green olives with pimentos in place of pickles. 5. For those in Thailand, use chili bologna in place of plain bologna if you desire a spicy version. 6. For those in Thailand, add some diced cha lua.

  • 1 tin sardines in olive oil, (120 g / 4¼ oz, Ayam or any brand), Shortcut
  • 1 tablespoon mayo, and more for the bread
  • 1 tablespoon pickles, chopped, Shortcut
  • 4 slices bread
  • 1 tomato, sliced
  • lettuce leaves
  • 1-2 hard boiled egg, sliced, Shortcut
  • salt and pepper, to taste

Instructions
 

  • Drain the sardines and place in a bowl, add the mayo and chopped pickle. Mix with a fork, mashing up the sardines. If using homemade sardines, use about 3 pieces.
  • Lay out the 4 slices of bread, spread mayo on each slice. On 2 slices, add a layer of sliced tomato, divide sardine mixture on top of the tomato, top that with lettuce leaves, then add a layer of sliced egg, season with salt and pepper as desired. Top with a slice of bread, mayo side down. Cut in half and enjoy.

Notes

One tin of sardines in olive oil at Tesco is 59 Baht. For two sandwiches, 1 per serving, this is about 92 cents per serving.

Fried Bologna Sandwich

Fried Bologna Sandwich

I made these last night, have not had one in 12 years or so, true comfort food. Bologna is here, mainly just eaten as a snack item straight from the fridge. My wife very much enjoyed these. I did not make anything that is not here, just prepared it in a way the Thais are not accustomed to, the family really likes it when I use common items to make a "new" dish they have not had before. This is a nothing more than a guide, not a recipe. Keep in mind, Thai bologna is smaller diameter than in the US.

  • 2 slices bread
  • 5 slices bologna, plain, I used pork
  • lettuce leaves, as needed

Instructions
 

  • In a non stick pan, heat a tiny amount of olive oil and add the bologna slices, fry for a minute or two each side or until the edges are starting to brown.
  • Spread mayo on each slice of bread, add some lettuce to one slice, add the bologna slices on top of the lettuce, then add some cheese on top of the bologna. Top with the other slice of bread.
  • Cut in half and enjoy.

Notes

A pack of 10 slices of bologna will cost about 79 Baht, for 2 sandwiches (2 servings), this is about $1.25 per serving. Other items used are minimal.

Grilled Crab Sandwich

  • 2 slices bread, of your choosing
  • Thousand Island dressing, as needed
  • Swiss cheese, sliced, as needed
  • imitation crab, sliced, as needed
  • butter as needed

Instructions
 

  • Heat a non stick pan on low heat.
  • Lay out two slices of bread, spread Thousand Island dressing on each slice.
  • On one slice, place sliced Swiss cheese, then sliced imitation crab.
  • Place the second slice on top of the sandwich, Thousand Island dressing downwards onto the sandwich. Pick up sandwich and spread butter on each side.
  • Place the sandwich in the hot pan and cook until the bottom is golden brown, flip and cook the other side.
  • Remove from heat, enjoy.

Notes

Low cost.
Variants: 1. Add a slice or two of deli chicken or turkey. 2. Add a slice or two of deli ham.

No, this is not a sandwich with the crab and cream cheese wontons grilled between bread, think of the filling grilled between bread 😉 These are delicious! Inspired by a conversation with the recipe author at Spend With Pennies.

  • 125 grams Cream cheese, (4 oz)
  • 140 grams crab meat, see Step 1, (5 oz)
  • 1-2 spring onions, thinly sliced, white and green
  • ¼ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • sliced bread, as needed
  • mayo, or butter, as needed

Instructions
 

  • For the crab, you can use canned (drained), fresh picked, or even imitation. If using imitation, just cut each crab stick into 1/4 inch pieces and use your hands to break them apart, very easy.
  • Mix up the filling in a bowl, room temp, you want the filling to be good and soft as you are going to spread this on bread. Heat a non stick pan on medium low or low heat.
  • Spread some mayo or butter on two slices of bread, place one slice, mayo side down on parchment paper, spread some filling on that slice, be generous, then top with the second slice of bread, mayo side up. Place in the hot pan.
  • When the bottom is golden brown, flip and cook the other side until golden brown.
  • Remove from pan, cut in half from corner to corner, or best you can with homemade bread, serve.
  • Repeat for additional sandwiches.
  • Serve and enjoy.

Notes

The Cream cheese will cost about 60 Baht/125 grams. The imitation crab will cost about 50 Baht/140 grams. (When I buy fresh crab, I will price this once I pick 140 grams.) Figure 3 servings, this is about $1.08 per serving.
Avocado Egg Salad Sandwich

  • 7-8 hard boiled eggs, chopped
  • 1/4 cup mayo
  • 1 teaspoon lime juice
  • 2 tablespoons fresh cilantro, minced
  • 1 teaspoon sea salt
  • pepper, to taste
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 ripe avocado, chopped, mash to desired consistency
  • sliced bread, for serving

Instructions
 

  • Add everything except the avocado to a medium size bowl and mix to combine. Add the avocado and mix that in.
  • Spread on bread of your choice, top with another slice of bread, enjoy.

Ingredients
  

  • 500 grams ground beef
  • 500 grams ground pork
  • 1 1/4 cups ketchup
  • 1/4 cup Sriracha Chili Garlic sauce, mild or hot is up to your preference
  • 1/2 cup onion, shredded
  • 1/2 cup import celery, shredded
  • 1/2 cup carrot, shredded
  • 1/2 cup fresh parsley, chopped
  • 2 cloves garlic, smashed and minced
  • 3/4 cup panko breadcrumbs
  • 1 egg, beaten
  • salt and pepper, to taste

For Serving

  • 4-6 lettuce leaves
  • tomato slices
  • red onion, sliced as needed
  • 8 slices thick cut bread, or 4 sandwich rolls, toasted
  • mayo, optional, as needed

Instructions
 

  • Preheat your oven to 190 C and line a baking sheet with parchment paper. Mix together the Sriracha and ketchup in a small bowl, set aside.
  • In a large mixing bowl, add the ground meats, shredded onion, carrot, parsley, garlic, parsley, panko, egg, and salt and pepper as desired, mix together with a large spoon until just combined. Add 1/2 cup of the ketchup mixture and mix that in, use your hands for this.
  • Divide the meat mixture into 4 portions, place each portion onto the parchment paper and shape 1 inch high in either a square or circle. Spread 1 tablespoon of ketchup mixture on each patty and bake for 20 minutes.
  • Toast the sandwich rolls or one side of each slice of bread if using that. Assemble the sandwiches as, spread mayo on each slice of bread or roll, then lettuce leaves, meatloaf burger, another spoon of ketchup sauce, then onion and tomato, top with remaining bread or roll, serve.

Notes

Figure about 100 Baht/500 grams for beef and 60 Baht/500 grams for pork. For 4 servings, this is about $1.18 per serving.
