Classic Club Sandwich

A Classic Club Sandwich is a double decker sandwich with fillings consisting of mayo, lettuce, tomato, bacon, chicken (or turkey), that's it, nothing more. This recipe is a guide only and no pricing will be given for this, think leftover roast turkey or chicken. This would be great for a good sandwich for lunch or a light dinner, or even making many for a group of friends over to watch a sports game. Variants to the Classic Club are listed in the Recipe Notes section.

Ingredients
  

  • 3 slices white bread
  • mayo, as needed
  • bacon
  • lettuce leaves, as needed
  • tomato slices, as needed
  • chicken, cooked and sliced, or turkey, as needed
  • salt and pepper, to taste

Instructions
 

  • Get your tomato sliced, some leaves of lettuce pulled off the head, then fry up your bacon, figure 4-6 slices per sandwich. and while the bacon is frying, slice up some cooked chicken or turkey, roasted would be preferred but is not a show stopper. When the bacon is nearly done, toast the 3 slices of bread but let them cool for a few minutes before you start building the sandwich.
  • Lay the 3 slices of toasted bread out in a row, spread some mayo on each slice. On EACH of the first two slices, place 2 or so lettuce leaves, crossing each layer, keep it neat, no stuff hanging over the sides of the bread, then place some tomato slices to cover the lettuce, season with salt and pepper to your liking. Now place 2-3 slices of crispy fried bacon over the tomatoes, again, no sloppiness, break up the bacon nothing hanging out, then place some sliced chicken or turkey over the bacon, season with salt and pepper to your liking.
  • Pick up the first slice of bread and set that on top of the second one, now pick up the third slice and place that third slice, mayo side down on the top, almost done.
  • Insert a long tooth pick or cocktail skewer in each place where you see the red dots, then after that, cut the sandwich along where you see the dashed lines, cut the sandwich in half, then cut each half in half, done. Serve with a pickle and some potato chips or fries, you have a lunch or light dinner.

Notes

No prices given as a lot depends on quantities of ingredients used. Over all, it is very minimal in cost.
Variants. These will change the cost per sandwich but is minor.
Breakfast Club - Bottom slice: fried egg, 2-3 slices of fried bacon. Middle slice: tomato slices topped with lettuce leaves.
Ham Club - Replace the bacon with several slices of ham on bottom and middle slices of bread, everything else is the same.
Ham & Cheese Club - Replace the bacon with several slices of ham and some real slices of Cheddar or Swiss cheese on bottom and middle slices of bread, everything else is the same.
Avocado Club - Add avocado slices on top of the chicken or turkey on the bottom and middle slices of bread, everything else is the same.
Roast Beef Club - Replace the sliced chicken or turkey with a good portion of thinly sliced roast beef, everything else is the same. A great way to use up left roast beef!

Monte Cristo Sandwiches

A Monte Cristo sandwich is a cross between a grilled cheese sandwich and French toast in my opinion, but they are delicious none the less. For people in larger cities with a deli, you should be able to find sliced cooked turkey or chicken, or just substitute with leftover roasted turkey or chicken that you sliced or shredded.

Ingredients
  

  • 8 slices thick cut bread
  • deli ham, thin sliced
  • Swiss cheese, thin sliced
  • deli turkey, thin sliced
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup butter
  • 1/4 cup olive oil
  • mayo, optional
  • mustard, optional

Instructions
 

  • In a shallow dish, mix together the eggs and milk. Heat a large non stick pan to medium heat and add the butter and olive oil.
  • Build the sandwiches (optional to spread mayo on one slice of bread and mustard on the other slice, top and bottom), add some ham, cheese, and turkey, amounts are up to you.
  • Now take a sandwich, dip one side in the egg mixture and remove, flip over and dip the other side, place in the hot pan. Cook until gold brown on one side then flip over and brown that side. Patience is needed, don't flip too early. Serve with home made fries for a complete meal.

Notes

I cannot price this as I am not sure of the amounts used, essentially you can make these from leftovers so this is really an economical meal. Be generous on the deli ham and turkey. If you cannot find deli turkey, go with left over turkey or chicken and just shred that.

Ingredients
  

  • 750 grams ground beef
  • 3 tablespoons Teriyaki sauce
  • 1/4 cup panko breadcrumbs
  • 4 canned pineapple rings, OR try fresh (my choice)
  • 1 red bell pepper
  • 4 hamburger buns

Instructions
 

  • Place the beef in a large mixing bowl. Fold in the Island Teriyaki sauce and panko. Cover and chill in the fridge for 1 hour or until ready to cook.
  • Prepare a charcoal grill for direct cooking over medium-high heat. Seed the bell pepper and cut it into 4 pieces. When the meat mixture is ready, shape the meat into 4 burger patties.
  • Grill the burgers to desired doneness. Also grilling the bell pepper, pineapple rings, and lightly toasting the buns.
  • Serve the burgers on top of lettuce, bell pepper and then topped with the pineapple ring. Include a side and you have a meal.

Notes

I am going to go with 200 Baht/kilo for beef (would only need 750 grams, but a kilo would make better burgers), how you get that beef may involve you grinding it yourself. For 4 servings, this is about $1.48 per serving. If you was to make this from pork which could very well be done, the cost would be about half of this per serving, chicken would be less.

Egg in a Hole Burgers

Ingredients
  

For the Burgers

  • 500 grams ground beef, OR minced pork, OR bulk Italian sausage
  • 8 strips bacon
  • 2 tablespoons butter
  • 4 eggs
  • 4 hamburger buns
  • salt and pepper, to taste
  • lettuce
  • Cheddar cheese, use real cheese, sliced

For the Sauce

  • 3 tablespoons mayo
  • 1 tablespoon Sriracha Chili Garlic sauce

Instructions
 

  • Make the sauce by mixing together the may and Sriracha sauce, set aside.
  • Fry the bacon strips and drain them on paper towel, set aside.
  • Form the meat into 3 equal sized patties, use a small drinking glass to cut out the center of each patty so you have 3 donut shaped patties, use the meat from the three circles and make a 4th donut shaped patty. Season with salt and pepper.
  • Heat a heavy non stick pan or a cast iron pan and melt the butter. Add the patties and cook for 2 minutes, then flip. Crack an egg into the center of each patty then cover and cook until the egg whites are set.
  • Toast the buns if desired, spread with the sauce. Build the burgers as bottom bun, lettuce, burger patty, 2 bacon slices, Cheddar cheese, top bun. Serve with a side of your choice.

Notes

Ground beef would cost about 150 Baht/500 grams, minced pork runs about 70 Baht/500 grams. The bacon and cheese is probably no more than 60 Baht total. For 4 servings, this would be about $1.55 per serving if using beef, and about 96 cents per serving if using pork. Overall, not bad.

Sloppy Joe Grilled Cheese

Sloppy Joe Grilled Cheese

Or Grilled Cheese Sloppy Joe. I normally have a thick slice of onion with my Sloppy Joe sandwich, some people use a slice of cheese. But cooking like a Grilled Cheese, this is interesting. This recipe, more of a guide than a recipe, is for one sandwich. Think leftovers.

Ingredients
  

  • 1/2 cup Sloppy Joe mix, leftovers are perfect for this, cold
  • Cheddar cheese, real cheese, sliced thin, as needed
  • 2 slices bread
  • butter

Instructions
 

  • Spread butter on one side of each piece of bread. Place one piece of bread, butter side down in your heated frying pan.
  • Place on slices of real cheese on the piece of bread. Top with leftover Sloppy Joe mix (cold works best, so that you can spread it evenly without it sliding out). Top with remaining slices of cheese and piece of bread, butter side up.
  • Cook until the first side is golden brown. Flip sandwich and cook until the second side is equally golden brown. Enjoy.

Notes

Actually, not that really an inexpensive meal, real cheese is the costly part, as the Sloppy Joe mix was already prepared. This would be about 75 cents to $1 per sandwich.

French Onion Dip Sandwiches I

This sounds really good, I am looking forward to making this.

Ingredients
  

  • 1 1/2-2 kilos beef roast, any cut will work
  • 3 3/4 cups beef stock, OR consomme
  • 1 onion, thinly sliced
  • 8 sandwich rolls
  • 8 slices Provolone cheese
  • salt and pepper, to taste
  • dried thyme, to taste

Instructions
 

  • Heat a splash of olive oil in a non stick pan on med heat, add the sliced onion and cook until translucent but not browned. Add the cooked onion to the beef stock, season with salt, pepper, and thyme.
  • Place the roast in your slow cooker, pour the stock over the top of the roast. Cover and cook on Low setting for 8 hours or High setting for 4 hours. Leave the cover on, you want this to be falling apart beef!
  • Preheat your oven to 180 C.
  • Remove 3 cups of liquid from the slow cooker and add to a sauce pan. Heat on medium and bring to a boil, then reduce to a simmer and cook until reduced by half, about 10 minutes.
  • Remove beef from the slow cooker and place on a plate and shred with a fork.
  • Place the sandwich rolls on baking sheet and spoon meat on to the rolls, top each roll with Provolone cheese. Cover with foil and bake for 5 minutes or until the cheese is melted. Serve with the sauce on the side for dipping.

Notes

Beef will run from 150 to 200 baht/kilo. The cheese I do not have a price for, yet. When I make this I will give a much better estimate on the cost per serving. I will go with 300 Baht for the beef, and 100 Baht for the cheese. This comes out to about $1.50 per serving for 8 servings.

Slow Cooker Sloppy Joes

Slow Cooker Sloppy Joes

This is an easy recipe, brown the meat, and add that and all ingredients to a slow cooker for 4 to 6 hours, done. The time in the slow cooker lets the flavors blend, resulting in a better tasting meal, unlike cooking in a skillet. You can use ground beef, pork, or even chicken. I like Sloppy Joes, this is a must try for me. Link to the shortcut is listed in the Recipe Notes section.

Ingredients
  

  • 500 grams ground beef, OR minced pork, OR ground chicken
  • 1/2 onion, diced
  • 2 cloves garlic, smashed and minced
  • 1 teaspoon prepared yellow mustard
  • 3/4 cup tomato ketchup, OR make from a shortcut on this site
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Brown the ground beef (or pork, or chicken) in a pan with a splash of olive oil, along with the onion and garlic, brown it, no need to cook it all the way through. Drain fat and put into the slow cooker pot.
  • Add all other ingredients, mix well and cook on Low setting for 4-6 hours. Serve on toasted buns.

Notes

Ground beef will run about 75 Baht/500 grams, if using minced pork, that will cost about 60 Baht/500 grams, chicken even less. Everything else is minimal. For 4 servings this is 55 cents per serving, even less for 5-6 servings.
Variations, try 1/2 BBQ sauce and 1/2 ketchup. Added diced bell pepper.

Cheesy Sloppy Joe Burgers II

This a variant of Cheesy Sloppy Joe Burgers I and is worthy of a new recipe. I made this last night and it is delicious. Add mustard to a bun, add a scoop of this mix and top with a few pickle slices, and it tastes just like a cheese burger. The major departure from the first recipe is that you make the sausage as you cook the meat.

Ingredients
  

  • 500 grams ground beef, OR minced pork, OR ground chicken, (1 lb)
  • 1 medium onion, diced
  • 300 grams Cheddar cheese, shredded, (10 oz)
  • 1 teaspoon ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried parsley
  • olive oil, as needed

Instructions
 

  • In a large pot heat a bit of olive oil then add the onion, when it starts to soften.
  • Add the meat and all the spices, mix with a spatula to break up the meat and mix in the spices and onion. (I tripled the recipe, and used 2 lbs beef and 1 lb pork.)
  • Cook the meat well until no longer pink. Drain well. Add the meat back to the pot. (I missed taking a photo of this and went right to adding the cheese.)
  • Reduce the heat to a low simmer and add the cheese and mix well, mix often to prevent burning. When the cheese is melted and heated through, remove from heat.
  • Serve on buns. some pickles and a squirt or two of mustard, and these are delicious!

Notes

The cheese alone is pricey at about 130 Baht/250 grams, ground beef will run about 75 Baht/500 grams, if using minced pork, that will cost about 60 Baht/500 grams, chicken even less. This is about $1.80 per person for 4 meals.

Cheesy Sloppy Joe Burgers I

I am not a fan of "sliders", you know the tiny hamburgers on the tiny buns. I like normal size burgers. The original recipe I seen was for slider sized buns. This is like a cross between a cheese burger and a Sloppy Joe sandwich, which are equally good. The original recipe I seen called for onion powder (I will use real onion in the recipe), and Velveeta cheese, which is one of the most horrendous things you can actually put into your body, I will use real cheese and regular size buns. This is a must try for me! This is not a $1 meal mainly because of the real cheese you use.

  • In a large sauce pan or preferred is a slow cooker (Low setting), combine the cooked meat with the shredded cheese and allow the cheese to melt into the meat and heated through.
  • Serve on toasted buns.

Notes

You can make the sausage from a shortcut on this site for about 60 Baht/500 grams. Big Mac Burgers

Big Mac Burgers

This is the home made version of the famous burger served all over the world. With this, you know what is in it, not the assembly line product that has an ingredient list longer than your arm. This a a double decker burger with a Big Mac sauce. I made these on 16 Feb 2017, very very good! I made the classic double decker for myself and just a jr Big Mac for my wife with just one burger. Highly recommended to make these with just one burger, much easier to handle. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

Sauce

  • 2/3 cup mayo
  • 1/3 cup sweet pickle relish
  • 2 teaspoons prepared yellow mustard
  • 3/4 teaspoon white vinegar
  • 1/2 teaspoon paprika
  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon onion powder

Burgers

  • 500 grams ground beef, OR make from a shortcut
  • salt and pepper, to taste
  • 2 sesame seed buns, sliced into 3 pieces

Toppings

  • 4 teaspoons onion, finely chopped
  • 2 cups lettuce, shredded
  • Cheddar cheese, use real cheese, not processed
  • 8 slices dill pickles, OR make from a shortcut on this site

Instructions
 

  • Mix together the sauce ingredients and set aside. Refrigerate for a while is even better.
  • Mix the salt and pepper into the beef, split the mixture into 4 parts and roll into balls. Flatten each ball and shape into a patty.
  • Place patties into a non stick pan with 1 teaspoon of olive oil and cook the patties for 3 minutes each side. Meanwhile, slice the burger buns into 3 parts and slightly toast them. (I do not mess around with burgers, I make thick large burgers.)
  • To assemble, spread the sauce over the base and middle bun. Add onion and lettuce on both buns. On the bottom bun add cheese and one of the burger patties, on the middle bun add 4 pickle slices and burger patty. Lift the middle bun onto the top of the base and finally add the top of bun.
  • To make a Jr. Big Mac, use only 1 burger and no middle bun. On the bottom bun add sauce, lettuce, onion, and cheese, and one of the burger patties, top that with 4-5 pickle slices, add sauce to the top bun and cover the top with that.
  • Serve immediately and enjoy!
  • And the Jr. Big Mac.

Notes

Ground beef runs about 100 Baht/500 grams. For 2 servings, this is about $1.47 per serving. If you went the route with just 1 burger patty and made 4 Jr. Big Macs, you could stretch this to 4 servings at a cost of 74 cents per serving.
