Ingredients
  

  • 1 1/2 kilos beef, any cut
  • olive oil, as needed
  • 1 small onion, thinly sliced
  • 3 cloves garlic, smashed and minced
  • 1 teaspoon dried thyme
  • 2 cans condensed French onion soup, OR make from a shortcut
  • 8 slices Provolone cheese
  • 8 sandwich rolls, split
  • 8 salt and pepper, to taste

Instructions
 

  • Season the beef with salt and black pepper. Heat a splash of olive oil large non stick skillet over high heat. Add the beef and brown on all sides. Place the beef in your slow cooker slow cooker.
  • Add the onion, garlic, thyme sprigs and soup to the cooker. Cover and cook on High setting for 4 1/2 hours or until the beef is tender. NOTE about the beef, if using local raised beef from a village, you may want to cook for longer, check it at 4 1/2 hours then keep cooking and checking every hour after that.
  • When the beef is almost done, heat the oven to 180 C. Line a baking sheet with parchment paper. Place the rolls, cut-side up, onto the baking sheet. Divide the cheese among the rolls. Bake for 1 minute or until the rolls are toasted and the cheese is melted.
  • Remove the beef to a cutting board. Cut the beef into thin slices. Divide the beef among the rolls. Serve with the soup mixture from the slow cooker on the side for dipping.

Notes

Beef will run about 200 Baht for local raised beef, figure 300 Baht for the beef. For 8 servings, this is about $1.10 per serving, actually not that bad at all. I cannot price this with the cheese yet.

Sounds nice and sloppy, which would make a great Sloppy Joe, the sauce sounds excellent.

  • 500 grams ground beef
  • 1 medium onion
  • 1/3 cup celery, chopped
  • 1/3 cup green bell pepper, chopped
  • 1/3 cup ketchup
  • 1/4 cup water
  • 1 tablespoon Worcherstershire sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon hot sauce
  • 6 buns, split and toasted

Instructions
 

  • Cook beef and onion in a skillet over medium heat for 8 to 10 minutes, stirring occasionally, until beef is brown, then drain well. Stir in remaining ingredients except buns.
  • Cover and cook over low heat for 10 to 15 minutes or just until vegetables are tender. Fill buns with mixture and enjoy.

Notes

The beef will run about 100 Baht/500 grams. For 6 servings, this is about 50 cents per serving.

  • 1 packet au jus mix, OR make from a shortcut

Instructions
 

  • Prepare the au jus either from the packet instructions OR by using the shortcut on this site.
  • While that is heating up, heat the left over roast beef up in a microwave then slice thinly. Toast the sandwich rolls to your liking.
  • Pour the hot au jus in a bowl for dipping, load up a roll with roast beef and enjoy.

Notes

Low cost as the roast beef is already paid for from a previous meal.

Homemade Chick-Fil-A Sandwiches

This is a cheater recipe for Chick-Fil-A Sandwiches in the US, I have never had one but unlike deep frying these are baked in your oven. These sound really good and is a must try for me.

Ingredients
  

  • 2 chicken breasts
  • salt, pepper, and paprika, to taste
  • 1 cup dill pickle juice
  • 1 egg
  • 1/2 cup milk
  • 1 cup all purpose flour
  • 1 tablespoon powdered sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon mustard powder
  • 1/8 teaspoon cayenne pepper, optional
  • olive oil spray, as needed
  • butter, as needed
  • dill pickle, slices, as needed
  • cheese, slices, your choice of type, optional
  • 4 hamburger buns

Instructions
 

  • Cut each chicken breast in half and pound them to 1/2 inch thickness. Sprinkle each piece on both sides with paprika, salt, and pepper to your liking. Place them in a large zip lock bag or plastic bag, like a Tesco shopping bag, and pour the pickle juice over them. Press out the extra air by twisting the bag, then place that in a bowl and place the fridge for 6 hours our anytime up to overnight.
  • Preheat your oven to 230 C and place a wire rack on a baking sheet and set aside. While the oven is heating, stir together the flour, spices, sugar, and baking soda in a bowl and set aside. In another bowl whisk together the egg and milk. Take the chicken out of the fridge, dip each piece in the egg mixture, then coat well with the flour mixture making sure the entire piece is coated with flour.
  • Place the chicken on the wire rack and generously spray each piece with olive oil, coating the flour completely. Turn the pieces over and spray the other side with olive oil. Bake for 12 minutes, then turn the chicken over and bake another 15 minutes or until the chicken is golden brown, crispy, and cooked through. Remove from the oven and top with cheese of your choice and let these rest for 5 minutes.
  • Butter each bun and place on a sheet and bake for 3-4 minutes until toasted. Place 3-4 pickle slices on each bottom bun, top with a piece of chicken and the other toasted bun. Serve.

Notes

For 2 chicken breasts, this is low cost even if using cheese.

Sub Sandwiches

Sub Sandwiches

When I was growing up, these were a regular meal, sub sandwiches, this is a basic meal, filling, and can be made anyway you want. This is a starter recipe, tailor as you see fit. I am going to list what I use on one sandwich but I did enjoy two of these last night. Use any amounts of the ingredients as you see fit.

  • 1 hamburger bun
  • 2 leaves lettuce
  • onion, sliced
  • tomato, sliced
  • 3 slices smoked ham
  • 3 slices baloney with chilies, this is a great flavor, if not a fan of chilis, just push them out from the slices
  • Cheddar cheese, sliced
  • mayo, as needed

Instructions
 

  • Spread mayo on the bottom and top pieces of the bun. Starting on the bottom bun, add onion slices, lettuce, smoked ham, baloney with chilies.
  • Keep adding with cheese slices (I used real cheese, not the processed rubbish), tomato slices, top with the other piece of bun, enjoy.

Notes

Low cost meal.
Variants: Use spicy mustard instead of mayo, add cooked bacon, add or change the meats used, use sliced bell peppers, the combos are endless and up to your liking!

Ingredients
  

For the Burgers

  • 1 fillet Barramundi, cut in half to make 2 pieces
  • cracked black pepper, to taste
  • 2 buns
  • lettuce leaves, as needed
  • tomato, slices, as needed
  • 1/2 onion, sliced thick and seperated into rings
  • 1 cup tempura flour
  • 1/2 cup all purpose flour
  • cooking oil, as needed
  • olive oil, as needed

For the Sauce

  • 2 tablespoons ketchup
  • 1 teaspoon Sriracha Chili Garlic sauce
  • 1 teaspoon red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon BBQ spice
  • 1 tablespoon mayo

Instructions
 

  • Rub the fish pieces with the cracked black pepper, pan fry in a heated non stick pan with a splash of olive oil for about 3-4 minutes per side or until it flakes easily. Set aside.
  • While the fish is cooking, mix together the sauce ingredients in a small bowl, set aside.
  • In a pot, heat several cups of cooking oil for the onion rings. The temp should be 180 C, hot but not smoking. Mix the tempura flour with 1/2 cup of water, coat the onion rings in flour, then into the tempura mix and fry in the hot oil until golden brown and crispy. Remove and place on paper towels and season with salt and pepper to your liking.
  • Lightly toast the buns. Spread some sauce on the bottom bun, add some lettuce leaves, some tomato slices, a piece of fish, some onion rings, and spread some sauce on the top bun and cover the burger. Serve and enjoy.

Notes

Easily less than $1 per serving for 2 servings.

I love sardines in olive oil and since they are not available at my location, I make them using a slow cooker with small mackerel the fish of choice. This recipe is based on using homemade sardines in olive oil. If you use tinned sardines in olive oil, figure 2 tins per sandwich. Link to the shortcut is listed in the Recipe Notes section.

  • 6 pieces homemade sardines, split each piece in half lengthwise
  • 3 slices sandwich bread, toasted
  • 4 lettuce leaves
  • tomato, slices, as needed
  • 4 slices bacon, fried crispy
  • mayo, as needed

Instructions
 

  • Lay the 3 slices of toast on the counter in a row. spread mayo on slice of toast. Add a lettuce leaf to two slices, then lay sliced tomato over the lettuce, than split the sardine pieces in half and lay sardine pieces in a even layer on top of the tomatoes, then add two slices of fried bacon, break them up to fit, then add another lettuce leaf on top of the bacon. Lift up one slice of toast that has the lettuce, etc on it and place it on top of the other slice that has the lettuce, etc on it. Take the last piece of toast with just the mayo and place that mayo side down on the top. Done, enjoy.

Notes

Low cost if using homemade sardines. I make sardines using small mackerel which is sold per fish anywhere from 10 to 25 Baht each, so about 58 cents to $1.48 per sandwich. (I cut each fish into 3 pieces when making sardines.) I will say under $1 per sandwich if you shop around and get low priced mackerel to make your sardines from.
If using tinned sardines, figure 1 tin per 2 sandwiches at 59 Baht/tin, this is about 87 cents per sandwich.

This recipe is based on using homemade sardines in olive oil. If you use tinned sardines in olive oil, figure 1 tin per sandwich.   • Cream cheese, softened, or thinly sliced

  • Lay toast on a plate, spread softened Cream cheese on each slice, place the lettuce leaves on one piece of toast, split the pieces of sardines in half to make them thinner and lay on the lettuce in a single layer, top with the other slice of toast, enjoy as lunch or dinner.
  • An optional way to prepare this is spread mayo on each toasted slice of bread, lay the lettuce on once slice, top the lettuce with thinly sliced Cream cheese, I used a homemade sandwich roll.
  • Top the cheese with the split sardines, place the other slice of bread on the top. I used tinned sardines as they are now available here now.
  • Enjoy.

Mozzarella, Basil, and Tomato Sandwich

I like a good sandwich and this sounds really good! This recipe is written using a broiler or oven with a top coil.

Ingredients
  

  • 3-4 slices tomato
  • 1 teaspoon fresh basil, chopped
  • 1 1/2 teaspoons olive oil
  • 2 tablespoons Mozzarella Cheese, shredded
  • mayo
  • 2 slices bread, white, wheat, full grain, artisan, sourdough, up to you
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven or broiler to 250 C.
  • Put two slices of bread on the cooky sheet, spread mayo on both slices, on one slice, place tomato slices evenly, then the basil, then the cheese, dribble about 1/2 teaspoon of olive oil on the tomato slice, add a pinch of salt and pepper. Leave the other slice on the side and put in the oven or broiler for 30 seconds or so to melt the cheese. Then add the plain side to the tomato side and drizzle another 1.2 teaspoon of olive oil over that, back in the oven or broiler for about a minute until the top slice is toasted, remove from the oven or broiler, flip sandwich, drizzle the rest of the olive oil and cook again for about 1 minute. Serve.
