Yam Biscuits
This recipe is from a cookbook titled Casserole Cook Book by Better Homes & Gardens, printed in 1961. This recipe sounds very good, on my to make and taste list.
Ingredients
- 1 cup sweet potato, cooked, mashed
- ⅓ cup melted butter
- 1 egg, beaten
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- In a mixing bowl, mix together the mashed sweet potato, butter, and egg.
- Whisk together the flour, baking powder, and salt.
- Mix the flour mixture into the sweet potato mixture.
- Drop by tablespoons onto casserole, bake 30 minutes.
