Wisconsin Edam and Beer Spread

Adapted from a recipe card in ''Cooking With Beer''.
For Christmas 2019 my Mom gave me a cookbook, specifically 'Cooking With Beer' recipe card set and that is where this recipe comes from. This sounds very good, on my to make and taste list.

Ingredients
  

  • 4 cups Edam cheese, shredded, (16 oz / 500 g)
  • 3/4 cup butter, cubed and softened, (1 1/2 sticks / 3/4 block)
  • 2 tablespoons fresh chives, chopped
  • 2 teaspoons Dijon mustard
  • 1/2 cup beer, amber or dark, room temperature
  • rye cocktail bread, for serving, as desired
  • assorted crackers, for serving, as desired

Instructions
 

  • To a large mixing bowl, add the cheese, butter, chives, and mustard. Mix together until blended.
  • Stir in beer until blended in. Cover and place bowl in the fridge until serving.
  • Serve with cocktail bread and or assorted crackers, enjoy.

Notes

Variant: 1. Substitute for Edam can be Gouda.
