English Muffin Bread I (Bread Machine)
This comes from the King Arthur Flour website, it does have good reviews. I like English Muffins, and this toasted, screams of ham, egg, and cheese. I made this on 19 Oct 2017, mild taste similar to that of an English muffin when toasted, overall, not a bad recipe.
Equipment
- Bread Machine
Ingredients
- 1 teaspoon white vinegar
- ¼-⅓ cup water
- 1 cup lukewarm milk
- 2 tablespoons butter or vegetable oil
- 1½ teaspoons salt
- 1½ teaspoons sugar
- ½ teaspoon baking powder
- 418 grams all purpose flour, 3½ cups if not using a scale
- 2¼ teaspoons instant dry yeast
Instructions
- Place all of the ingredients into your bread machine in the order listed. Use the smaller amount of water in the summer, or during humid conditions; use the larger amount of water in winter, or if you're in a dry climate.
- Set your bread machine for basic white bread, 750 gram (1½ lb) loaf, light crust. Midway through the second kneading cycle, check the dough; it should be soft, smooth and slightly sticky. Adjust the dough consistency with additional flour or water, if needed.
- If you would like a true English muffin effect, remove the dough after either the final kneading or before the final rise and roll it in cornmeal, and place it back in the machine to rise and bake, this is totally optional.
- After the baking cycle, remove the bread to a rack and allow to cool.
- Slice, toast, and use as you would for English muffins.

I made this as written on 19 Oct 2017, and overall, not bad in taste when toasted, like a very mild English muffin.
