Tortilla Pizzas
This is a cheater recipe when you want a fast and simple pizza. This is a base recipe for 1 tortilla pizza, no quantities are listed, this is a make as much as you want guide. The use of a microwave makes this quickly with no heating up of your kitchen.
Equipment

Ingredients
- 1 flour tortilla, 8-10 inch size or so
- marinara sauce
- Mozzarella Cheese, shredded
- toppings, of your choice
- Italian seasoning, as desired
Instructions
- Place a tortilla on a microwave safe plate.
- Spread some sauce evenly on the tortilla, keeping about ½ inch from the edge. I also added some smoked, chopped, ham. Amount of sauce (or other topping) is up to you.
- Sprinkle with Mozzarella cheese. Amount of cheese is up to you.
- I added some thick cut pepperoni. Sprinkled the pizza with Italian seasoning (after I took the photo), and cook in the microwave for 1½ minutes. Microwaves can vary, so start with 1 minute first and check to make sure the cheese is melted and gooey.
- Remove from the oven, slice, and serve. Enjoy.

Sausage Gravy Breakfast Pizza
This sounds extremely good! This was shared by a friend in the US. You are going to do a little work here but I think the results will be well liked. This is on my to cook list and soon! Ingredients
For the Breakfast Sausage
- 500 grams ground pork, (1 lb)
- ¾ teaspoon ground sage
- ⅛ teaspoon salt
- ½ teaspoon black pepper
- ½ tablespoon brown sugar
- ⅛ teaspoon red pepper flakes
- pinch ground cloves
- ¼ teaspoon dried thyme
- ½ teaspoon dried parsley
- ⅛ teaspoon ground nutmeg
For the Gravy
- 500 grams breakfast sausage, (1 lb)
- 4 tablespoons butter
- 1½ cups evaporated milk
- 1½ cups water
- ¼ cup all purpose flour
- salt and pepper, to taste
For the Pizza Dough
- 1 cup all purpose flour
- ¼ teaspoon instant dry yeast
- ⅛ teaspoon salt
- ⅜ cup water
- ½ teaspoon Italian seasoning, Shortcut
- cornmeal, as needed
To Assemble
- 1 cup Pepper Jack cheese, shredded
- 1 cup Cheddar cheese, shredded, or 2 cups if no Jack cheese
- 3-4 spring onions, sliced
- 6 eggs
Instructions
For the Breakfast Sausage
- First thing we need to do is make the sausage. Very easy, just mix together all the Breakfast Sausage ingredients in a mixing bowl. Mix well. Cover and refrigerate while you prepare the rest, best to make this and refrigerate overnight to allow the flavors to blend.
- Fry the sausage in a non stick pan, breaking it apart with your spatula until browned and cooked through. Remove sausage with a slotted spoon, leaving the fat in the pan. Drain sausage on paper towels and set aside.
For the Pizza Dough
- Preheat your oven to 220° C (425° F).
- Next, we need to make the pizza dough. This is my thin crust pizza dough, the pre-baking has never failed me for a crust fully cooked through.
- Add the flour into a mixing bowl. Add the salt and dried Italian seasoning/herbs of your choice (if using) and yeast, whisk to combine.
- Make a well in the center of the flour and pour in the water. Use your fingers or a wooden spoon to combine everything together. When it comes together into a cohesive ball, turn it out onto the counter along with any extra flour in the bowl that hasn’t yet gotten worked in.
- Knead the dough until all the flour is incorporated and the dough is smooth/elastic to the touch, about five minutes. The dough should still feel moist and just slightly tacky. If it’s sticking to your hands and counter top like bubble gum, work in more flour one tablespoon at a time until it’s smooth and silky.
- I use a 12 inch pizza pan, sprinkle some corn meal around on the pan, the place the ball of dough in the center. Use the heels of your hands and working from the middle gently press the dough outward until it’s about ¼ of an inch thick or less, while rotating the pan.
- Bake the crust for 4 minutes, then rotate the pan 180 degrees and bake for 3 more minutes. Remove pan and set aside.
Let's Make This
- Sausage is made, crust is made, let's make the eggs then the gravy and get this pizza baked.
- For the gravy, using the Gravy ingredients, Add butter to hot pan and melt together with sausage fat. Whisk together the evaporated (canned) milk and water with the flour. Add to hot fat in skillet. Add salt and pepper to taste. Bring to a boil, stirring constantly until gravy starts to thicken. Add sausage back into gravy; heat until sausage is hot and gravy is thick. You want a thick gravy for this dish, after all, you are making a pizza. Set pan aside.
- Now prepare the eggs, crack all the eggs into another non stick pan, season with salt and pepper as desired. Cook and fold to scramble until just set, remove from heat.
- Take your pre-baked pizza crust and spread out the gravy evenly. Top with the scrambled eggs, then sprinkle on the shredded cheese, top that with the spring onion.
- Place in the oven for 15 to 20 minutes or until the top is nicely melted and just starting to brown up.
- Slice, serve, and enjoy.
Notes
Figure about 50 Baht for the pork, another 100 Baht for the cheese. Figuring 4 servings, this is about $1.10 per serving. I will verify this when I make it.

Ground Beef Pizza
Sounds really good and is a change up from the thick (think lots of fillings) pizzas that I normally make. On my to cook list. Link to the shortcut is listed in the Notes section.

Ingredients
- 1 package active dry yeast, or 2¼ teaspoons from a bottle
- ¾ cup warm water
- ½ teaspoon sugar
- 2 cups all purpose flour
- 1 tablespoon oil
- ½ teaspoon salt
- 250 grams ground beef, (8 oz)
- 1 cup pasta sauce, Shortcut
- 2 cups Mozzarella Cheese, shredded
- ¼ cup Parmesan cheese, grated
Instructions
- In a large bowl, add the warm water and sugar and stir to dissolve the sugar, then sprinkle in the yeast and stir in until that is dissolved. Let this stand for 5 minutes.
- Mix together the flour and salt then mix in the oil. When 5 minutes have passed, add the flour mixture to the yeast mixture and stir to form a soft dough. Turn out dough onto a floured work surface and kneed for about 5 minutes until dough is soft and elastic.
- Shape dough into a ball and place on a lightly oiled baking sheet, flatten lightly. Cover with plastic wrap and let rise in a warm place for 20 minutes.
- While the dough is rising, cook the ground beef in a non stick skillet and break it up as it cooks, season with salt pepper as desired. Drain then add the pasta sauce to the ground beef and mix together.
- Heat your oven to 250° C (480° F). Divide the dough into 4 equal parts, pat each one into about a 7 inch circle. Should be able to put 2 on each baking sheet.
- Top each pizza with ¼ of the meat sauce, then ¼ of the Mozzarella. Bake for about 18 to 20 minutes or until the cheese is melted and the crust is golden brown. Remove from oven, sprinkle with Parmesan cheese.
- Serve.
Notes
Figure about 170 Baht for the Mozzarella cheese, the beef about 50 Baht for 250 grams. For 6 servings, this is about $1.08 per serving, depending on the toppings you wish to add, this will increase the cost per serving.
Shortcut: Pasta Sauce.
Variants: 1. Add toppings of your choice, such as sliced bell pepper, onion, cooked bacon, cooked Italian sausage, chopped spring onion, slice green olives, pepperoni, etc. 2. Change the Mozzarella to a different cheese, like a 4 blend cheese.
Vegetable Calzones

- 500 grams pizza dough, (1 lb), Shortcut
- 1 cup Ricotta cheese, Shortcut
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 clove garlic, smashed and minced
- pinch crushed red pepper, optional
- 1½ cups broccoli, cut into small pieces
- 1 cup baby spinach, packed, chopped
- 1 cup Mozzarella Cheese, shredded
- 2 tablespoons Parmesan cheese, grated
- 1 egg
- salt and pepper, to taste
Instructions
- Place a rack on bottom shelf of oven; preheat to 230° C (450° F). Line a large baking sheet with foil and lightly grease with olive oil.
- Heat oil in a large skillet over medium heat. Add onion; cook until softened, about 10 minutes. Add garlic, and red pepper if desired. Cook for 30 seconds. Reduce heat to low. Add broccoli. Cook for 2 minutes. Cover and cook until broccoli is crisp tender, about 3 minutes. Remove skillet from heat and stir in spinach.
- In a large bowl, combine Ricotta, Mozzarella, and Parmesan, season with salt and pepper as desired. Stir in broccoli mixture. Working with 1 portion at a time, divide dough into 4 pieces, roll out dough on a lightly floured counter into 8 inch rounds. Divide filling among dough circles (about 3/4 cup each). Fold dough over to enclose filling; press to seal edges. Beginning in 1 corner, stretch sealed edge outward, pinching and rolling dough up and over to form a decorative edge.
- Transfer calzones to baking sheet. Whisk egg with 1 teaspoon of water. Brush top of each calzone with egg wash. Cut 3 small vents in each calzone. Bake until golden, 13 to 15 minutes. Serve with tomato sauce for dipping if desired.
Notes
Figure about 72 Baht for the Mozzarella cheese. For 4 servings, this is about 53 cents per serving.

Make It Your Own Grandma Pie
A Grandma Pie is a square/rectangular pizza that is easy on the toppings, not the huge monstrosities that I normally make. Keep the cheese as listed, no need to add extra. This is your base, Keep the toppings to 1 or 2 items, this type of pizza is not overloaded. Links to the shortcuts are listed in the Notes section.

(If dough springs back or is stiff to work with, let it rest 10 minutes before continuing. You may need to let it rest more than once.)
- Preheat your oven to 250° C (480° F).
- Cover dough on baking sheet tightly with plastic wrap and let sit in a warm place until it is puffed and full of air bubbles, 30 to 40 minutes.
- Once dough has risen in baking sheet, top with mozzarella, dot pie with tomato sauce, add toppings of your choice, add sea salt and red pepper flakes if desired.
- Bake until golden brown and crisp on bottom and sides, 20 to 30 minutes.
- Slice into squares and serve.
Notes
The Mozzarella cheese is about 220 Baht/for the 340 grams. For 6 servings, this is about $1.08 per serving. Some toppings will add to the overall cost.
The beauty of this, use what you like on a pizza, but keep it to 1-2 toppings.

Grandma Style Pie (Pizza) Dough
What is a Grandma Style Pie, anyways? Fair enough question, a Sicilian pie and a Grandma Pie are both stretched in a square/rectangular sheet pan with olive oil. Grandma pies are proofed (allowed to rise) for a shorter time than Sicilian pies. Grandma pies are thinner than Sicilian pies. This makes enough dough to cover one 18x13 inch rimmed baking sheet.
Ingredients
- 512 grams all purpose flour, plus more for surface, (4 cups if no scale)
- 2¼ teaspoons active dry yeast
- 2 teaspoons kosher salt
- 2 tablespoons olive oil or butter, plus more for the bowl
- 1½ cups warm water
Instructions
- Combine yeast and the warm water in a large bowl, let stand until yeast starts to foam, about 10 minutes.
- To the bowl, mix in the olive oil, then salt and half of the flour. Add about half of the remaining and mix, and add the remainder of the flour, mixing until incorporated and a shaggy dough forms.
- Turn out dough onto a lightly floured surface and knead until soft, smooth, and elastic, 10–12 minutes. Place dough in a lightly oiled bowl and cover with plastic wrap. Refrigerate for 24 hours.
- Use to make a Grandma Style Pie.

Two-Ingredient Pizza Dough
Sounds pretty straight forward, I will have to give this a try. This is the instructions for making the dough, to make pizzas, follow pizzas instructions of your choosing.

- 2 cups self rising flour, Shortcut
- 1 cup Greek yogurt, full fat
Instructions
- Put the flour and yogurt in a large bowl and mix with a fork until a shaggy dough forms. The dough may appear dry and crumbly at first, but it will come together as you mix it. Turn the mixture out onto a lightly floured work surface and knead until the dough is smooth and slightly elastic, about 8 minutes, dusting with more flour if necessary. If the dough feels too dry, add water, a tablespoon at a time and continue kneading until it is soft and pliable. Divide the dough in half, roll into balls and then use a rolling pin to roll out into two 10-inch pizzas. Dust a baking sheet or pizza peel with more flour or coarse cornmeal and place a circle of dough on top.
- Proceed with a pizza of your choice using any recipe you like.

BBQ Chicken Pizza
BBQ sauce used instead of tomato sauce, this sounds really good! On my to make list next time our daughter visits, she loves pizza! The pizza dough listed is to make TWO 12 inch pizzas, this recipe is for ONE BBQ Chicken Pizza, and the other pizza can be anything of your choice or you can double this recipe (not the crust part) and make two of these. Link to the shortcut is listed in the Notes section.

Ingredients
For the Pizza Dough
- 2 cups all purpose flour
- ½ teaspoon instant yeast
- ¼ teaspoon salt
- ¾ cup water
- 1 teaspoon Italian seasoning, optional
For the BBQ Chicken Pizza
- ¼ cup BBQ sauce, Shortcut
- 1 to 2 cups Mozzarella Cheese, shredded
- 1 cup chicken, cooked and cubed or shredded
- ¼ cup red onion
- ¼ cup cilantro, chopped
For the second Pizza
- sauce, of your choice
- toppings, of your choice
Instructions
- Preheat your oven to 200° C (400° F). Get out your 12 inch pizza pan or baking sheet, spread just a bit of cornmeal on it, this will prevent the crust from sticking, or just use a bit of flour.
- Divide the dough into two pieces. Using one piece, pat or roll this out to cover your pizza pan, spread the BBQ sauce over the dough to ½ inch of the edge, use more as needed, no one will complain.
- Spread the Mozzarella over the sauce to your liking, 1 to 2 cups. Spread the chicken over the cheese, and spread the onion over the chicken, then sprinkle on the cilantro.
- Bake for 10-15 minutes or until the crust is golden brown and the cheese is melted and bubbly. Remove from the oven and let cool 1-2 minutes then slice and serve.
- Repeat the steps with the sauce, cheese, and toppings of your choice for the second pizza.
Notes
No need for prices on this. This can be inexpensive or as costly as you determine by the amount of cheese and other toppings used for the second pizza. Pizzas make a great meal for visiting family, as I have not met a Thai that does not like pizza. Using the shortcut for the BBQ sauce and for another pizza, the tomato sauce, will save you money as well.
Note 1. I make a lot of pizzas here, I bake the crust with just the sauce first for about 8-10 minutes before adding cheese and or other toppings, then bake again to brown it all up. When I make this BBQ Chicken recipe, I will give the results on how the recipe is stated and how the baking first works.
