Lebanese 7-Spices

A common spice mix used in Lebanese cooking, and is very easy to prepare this yourself as you probably have everything on hand for this.

Ingredients
  

  • allspice
  • black pepper
  • white pepper
  • ground cinnamon
  • ground cloves
  • ground nutmeg
  • corriander

Instructions
 

  • Mix all the spices together in equal quantities and store in an air tight container.

This is a shortcut to make your Italian seasoning instead of buying the ready made in the small bottles for a huge price.

  • 2 tablespoons dried basil
  • 2 tablespoons dried organo
  • 2 tablespoons dried rosemary
  • 2 tablespoons dried marjoram
  • 2 tablespoons dried thyme

Instructions
 

  • Add everything to a small container, mix, and store tightly sealed until needed. Use as you would the premade seasoning.

Substitute Old Bay Seasoning

I do have some in the spice cabinet since I found some in Phuket so I bought a bottle for use in some other recipes, then I came across this recipe to make a substitute.

  • 3 teaspoons celery salt
  • 2 teaspoons mustard powder
  • 1½ teaspoons black pepper
  • 1½ teaspoons paprika
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • ¾ teaspoon red pepper flakes
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • ½ teaspoon cayenne pepper

Instructions
 

  • Mix everything and store in an airtight container, use in place of Old Bay Seasoning. This makes approximately ¼ cup of seasoning.

This is a shortcut to make this seasoned salt, I have not tried this but some cooks swear by it.

  • 2 tablespoons salt
  • 2 teaspoons sugar
  • ½ teaspoon paprika
  • ¼ teaspoon ground tumeric
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon corn starch

Instructions
 

  • Combine all ingredients in a small bowl and mix well. Pour the blend into an empty spice bottle to store. Use where ever Lawry's Seasoned Salt is required in a recipe.
Cajun Seasoning Mix

This is an easy recipe and is much cheaper than the store bought product.

  • 3 tablespoons smoked paprika
  • 1½ tablespoons salt
  • 2½ tablespoons garlic powder
  • 1½ tablespoons ground black pepper
  • 1½ tablespoons onion powder
  • 1½ tablespoons cayenne pepper
  • 1 tablespoon dried oregano
  • 1½ tablespoons dried thyme

Instructions
 

  • Put everything in a screw top jar, I used a 1 pint Mason jar, shake to mix. When a recipe calls for Cajun seasoning, use as directed, such as 1 tablespoon in a recipe is 1 tablespoon of mix. See, that was easy.

Can be used as an ingredient to a recipe or as a rub. This recipe makes a lot, just store in an airtight jar and use as desired.

  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons dried oregano
  • 2 tablespoons dried basil
  • 1 tablespoon dried thyme

  • 1 tablespoon white pepper powder
  • 1 tablespoon cayenne pepper
  • 5 tablespoons paprika
  • 1 tablespoon salt

Instructions
 

  • In a medium bowl, combine all ingredients. Store in an airtight container.

Notes

If a recipe calls for say, 1 tablespoon of creole seasoning, use 1 tablespoon, if a recipe calls for a rub, then use this as a rub, as easy as that.
Enchilada Sauce Mix

Finding Enchilada Sauce packets can be a challenge unless one is in a big city. So I checked on the internet and came up with this, works great! This makes the equivalent of what 1 packet makes.

Ingredients
  

  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 2 teaspoons corn starch
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon corriander
  • 1½ cups water
  • 170 grams tomato paste, this the really small can

Instructions
 

  • In a small sauce pan, add all the ingredients and simmer on low heat, and whisk to combine until thickened. Use as recipe requires.
