Paul Prudhomme's Blackened Steak Seasoning
This is a copycat recipe for a popular seasoning mix in the US.
Equipment
- Mortar & Pestle
Ingredients
- ½ tablespoon paprika
- ½ tablespoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper, or to taste
- ¾ teaspoon white pepper
- ¾ teaspoon black pepper
- 2 teaspoons salt
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- 1 teaspoon fennel seeds
Instructions
- Mix together the first 8 ingredients in a small bowl.
- Place the last 3 ingredients (thyme, oregano, and fennel seeds) in a mortar and use a pestle to lightly crush and release the oils, do not use a food processor. Add this to the bowl and mix with the other ingredients.
- Use as a rub on steaks prior to grilling.
