Page 698, Zucchini Tart
I made this on 25 Aug 2021, forgot the mushrooms (they actually went into a different recipe) but the flavor excellent.
The recipe was halved and I used an 8×8 inch baking pan, perfect for 4 side dishes as it cuts and serves in squares. I did shred the zucchini as I have a lot on hand with tough skins so I opted to grate with skin on instead of peeling and slicing.
I modified the recipe to reflect using just grated, it is so much easier to work with and pretty much guarantees the zucchini will be cooked with no tough pieces to contend with.
For those with a lot of zucchini on hand during the gardening season, this is another great way to use them. Highly recommended.
