Page 697, Zucchini, Italian Style

I made this on 9 Aug 2021, exactly as written. For the bread I used 3 slices of whole wheat and that worked perfectly.

This goes together quickly but the bacon and prepping the zucchini takes a few minutes, but well worth it. The tomato sauce was interesting as this is the first zucchini casserole I have made with that. The Cheddar and Parmesan cheeses, the bread cubes, and the bacon makes this an excellent side dish.

This was very well liked by my parents as well.
