Page 40, Shrimp Stuffed Peppers
I made these on 7 Aug 2021, and was pleasantly surprised, these are delicious! And my parents liked them very much as well. The bell peppers are crisp and topped with the seasoned tomato sauce at the end worked perfectly.
The flavor is excellent, fairly quick to assemble, but there is prep time removing shrimp tails chopping the shrimp. For the photo, I used what I thought were medium bell peppers and increased the shrimp used but ended up short on filling. I have changed the recipe to 6 small or 3 medium peppers and increased the shrimp to 3 cups instead of 2 as originally stated.
This batch I used cooked white rice, as I continue to make this I will test out using various seasoned rice to replace the white.
Overall, excellent stuffed bell peppers, not a bad recipe considering it was written in 1961. This is a keeper.
