Page 251, Stuffed Acorn Squash with Sausage Stuffing

I made these on 27 Sep 2021 after harvesting a big haul of acorn squash from my garden. I did a search on the wiki and found this.

These are excellent squash. I did modify the recipe from steaming the squash in a pan with water to using a steamer. The time for 15 minutes steaming is perfect for small to medium squash and 20 minutes for large.

I made these for my parents and they are the old school types who like butter and brown sugar in their squash, but they really liked these.

No long oven baking time as the steamer cooks them perfectly. This recipe is highly recommended if you like acorn squash and want a change of pace from the standard brown sugar recipes most commonly used to prepare these.
