250gramsdry pasta, bowtie, penne, macaroni, would be fine
250gramsfresh pineapple, cleaned and cut into chunks
1red bell pepper, diced
1spring onion, thinly sliced
2cupsham, cubed
For the Dressing
1/2cupmayo
1/4cupsour cream, OR plain yogurt
1tablespoonDijon mustard
1/3cuppineapple juice
1teaspooncider vinegar
1teaspoonhoney
1/4teaspoongarlic powder
cracked black pepper, to taste
Instructions
Cook pasta in a pot of boiling water until tender, then drain and rinse under cold water then put in a large bowl.
Mix the dressing ingredients until combined well, then pour over the pasta and gently mix to coat with the dressing, refrigerate for at least an hour before serving.
Notes
